I hope everyone is enjoying their summer and remembering to stay hydrated while running. I have been very busy! I just finished the Porter County Fair in Valpraiso, Indiana, where NICA hosted a Get Involved Rally with myself and Randy Reichert, CCE, 1st Vice President, leading the discussion, and Elkhart County 4-H Fair in Goshen, Indiana, where NICA participated in a Concessions and Fair Management meeting (page 20). These Fairs and their events had a great turnout and I am looking for an even greater outcome at my next stop, Erie County Fair.

At the Erie County Fair I will be joined by

Yachika Smith, NICA’s Office Manager, to give her a chance to experience what it’s like to be on the Fairgrounds in New York since she saw what it was like out West in July (page 18). Everyday I am pleased to interact with current Concessionaires while meeting new ones. There has been a great increase in new members joining NICA as well; the office reports that over 20 new memberships came in last month and we are very pleased since that’s the most we’ve had since the beginning of the year! Our renewals have kept a steady rate as well. Thank you to everyone who is helping spread the good word of NICA and reinforcing our foundation and connection to the Fair industry. Our organization would not be where it is today without your continued support.

I look forward to seeing what the rest of this Summer has in store as we transition into our Fall routes. I hope everyone continues to Rock and Roll!

Greetings NICA Members! It has been a busy month for the office as usual, preparing for the Membership Directory, upgrading our phone system, and preparing for this year’s Board of Directors Election.

If you’ve called the office at (813) 438-8926 in the last month, you’ll notice that our phone system has changed from a traditional landline setup to a prompt system. We believe that this will increase efficiency in the office while also putting the choice in the hands of the callers.

Heather Sattler, CCE “I feel that communications and good management is key to success in our industry.

By communicating, we are able to keep up with the change and concerns of our events. By communicating, we learn what our events are looking for. Things are constantly changing (minimum wage, labor laws, background checks, etc.) and it is important to stay up to date. By using tools such as the NICA magazine, websites, sessions, and round tables, a concessionaire is able to do so.

Communicating is so important to everyday management of our own concessions and employees. Good management can make or break a business. The image you and your employees set forth can be a major part of a successful business. We unfortunately are prejudged with a negative image. By being friendly and professional we can change that image.

When my husband and I started dating, I was shy and didn’t know what to do. By talking to others, I learned so much about this business.

I also started observing the people I viewed as successful managers/owners. From my observations, I developed my own ideas of good management. I have found that presenting a good clean image is always the number one rule. I also feel that everyone deserves a fair chance.

However, it is important to set ground rules and clear ideas of what is expected. I have found that many times our employees feel like family. We have an understanding and try to make the most fun of a work day. I encourage my staff to treat the public as they like to be treated in a store. By working together (as vendors, owners, employees, etc.), we can change our image and make the customers experience one to remember!” ▲

Tom Sattler, CCE “I feel that with proper communication we can continue to advance the relationship with all in this industry. By taking the time to address the concerns of vendors the events can show that they are concerned about the quality of their event. The same can be said for the vendor by correcting any problems that arise. This can only be achieved by working closely with each other, which is where NICA has made the largest difference in our industry. I feel that NICA has been the leader in communication between events, carnivals, and vendors. As a NICA Member, I have attended many events and participated in round tables and sessions that have been very helpful in this.

“Thoughts” continued from page 11 ►► I have used this model in my own business from my employees to my product suppliers.

My employees must be made aware of what is expected of them and the boundaries of their job.

This can only be done with proper communication which includes employee meetings and continued on site training to keep up on the requirement for each event as they all have their own unique set of rules. With our suppliers we must keep in constant communication months and even years ahead of events so that the product is available.

As vendors, we need to provide a positive image to the public by having clean and professional stands and helpful employees to aid the customer in their shopping experience. If this is done, we can create a loyal customer base for the event and the vendor this will help ensure a successful event and make it a tradition rather than a one time visit. In the end, this is what we as an industry are striving for.” ▲

The CCE Program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism.

The applicant must have a minimum of seven years as a full-time chief operating manager of an independent concession business and be a current member of NICA, at least one State Association, and of one of the following associations: IAFE, IFEA, or the WFA. The applicant must then complete a lengthy questionnaire and a 150-200 word personal philosophy of communication and management as it relates to the fair industry.

Member’s Voice We love to hear from our Members! Their Voice is what helps our organization move forward. The NICA Office has been continuing their survey of responses from Renewing Members.

Associate Member Derek Tipsword, Hoelting Foodservice, Inc. of Decatur, Illinois, said that his company relationship with NICA is unique.

Because so many of the traveling Concessionaires use NICA, it is a good resource to help his company to find new business. They support the cause for better pricing. He has made use of the Sherwin Williams benefit. He enjoys reading the NICA News with special attention going to the advertising and watching for any new products or trends. When ask what could be added, he suggested a “spotlight” article on new products from vendors. He also volunteered to do an article on “product education” in the near future.

Bob Walsh, Bellinwart dba Baskin Robbins of Muncie, Indiana, described his relationship with NICA as “very good.” He has attended the Florida Week twice and especially liked the Food Show and getting to see new items. Participation in events such as the Auction has always been fun.

He makes the most use of the Coca-Cola pricing benefit. Bob enjoys reading and looking at what goes on across the country as shown by the NICA News. He works only in the Mid West so the NICA News helps keep him up to date with the trends and whats new. The weather has created some problems with the rain and having to change locations and/or being pulled out, but he was pleasantly surprised that he had done as good as he has.

Rosemary Scirrotto, Scirrotto’s Cinnamon City, of Cape Coral, Florida, felt that her relationship with NICA has been very good. She stated that any time she called with any kind of problem or needing information, ​everyone was always very helpful. Admitting that she does not make good use of most of the benefits, she does use CocaCola “the most.” Rosemary enjoys reading the

articles about and by other concessionaires. She glances at the advertising to see what is new. She makes it a point to attend NICA events at Fairs and usually always makes it to the annual Food Show and Business Expo. She likes the way that NICA Members are helpful when they are around.

Blaine and Debbie Jones, BJ’s Concessions of Greenville, Ohio, described their relationship with NICA as “great.” They got into the Concessions Business after Debbie lost her job after 25 years by buying a unit from Blaine’s brother. Blaine has continued his job full-time. Working in Ohio and Indiana, they now have four units. They make use of the Pepsi, AutoZone, and Sysco benefits.

The NICA News is a favorite as it provides them an excuse to “sit down.” They both enjoy reading about other concessionaires and new things or trends across the country.

Lynette Rawlings, Rawlings Concessions of Atwater, California, said that her family business is in the sixth generation. It has been interesting since she first joined in 2000 which was before NICA West. She has been to several

September is here, which means that it is at the peak of the election season for NICA’s Board of Directors. This year there are three nominees: Sandy Class, San-Jon Enterprises, Dan Lusenhop, Jeanne’s Artichokes, and Brad Ribar, CCE, Loret Foods. We asked them each a few questions:

What is the single most important challenge facing Concessionaires today?

As any one business person would tell another, “Do we ever not face a challenge greater than another?” We face many challenges and so for me this is a hard question to answer. The rising cost of doing business, wrestling with raising our price to help meet the bottom line, inflation of percentages or footage, the everagonizing accomplishment of finding quality help, and this is just to name a few.

Whether it be on a street corner, in a storefront, or in a trailer with wheels that moves from one state to the next, we all face the same hurdles.

As a Board Member, how would you help overcome this challenge?

The key is communication and talking with management. If a voice is not spoken, then it will not be heard. We need to continue to share ideas and the challenges we face as successful business people.

Where do you see NICA in five years?

I would like to see the membership base continue to grow for NICA. The organization was founded and formed based on Independent Concessionaires wanting to be a voice in our industry. The industry already had great organizations such as OABA (Outdoor Amusement Business Association) and the IAFE (International Association of Fairs & Expos) with many members and great leaders that represented the Fair industry. NICA too has many members and a board that is driven to be a voice for idependent concessionaires.

What would you plan to help NICA get there?

As a Board Member, I will emphasize the importance of unity and communication, and will continue to encourage a Get Involved Rally at local events, County Fairs, or State Fairs. We must continue to reach out to people for unity and a promising future for our industry. Remember, a voice can be a powerful thing!

Dan Lusenhop Jeanne’s Artichokes What is the single most important challenge facing Concessionaires today?

After reflecting on the question, I can’t seem to narrow it down to any single item. As I’ve traveled to different events and met and talked with fellow Vendors, I have learned that we all struggle with similar issues such as rising labor costs and maintaining quality trained employees, controling food costs, and the ability to transfer ownership when it’s time to retire, just to name a few.

As a Board Member, how would you help overcome this challenge?

As Independent Operators, we all bring a different view of such challenges; as a Board Member, it’s our duty to be open to all opinions & options and develop a model or policy that best serves our members needs.

Where do you see NICA in five years?

I feel that membership growth is the key to our success; an increase by 25% is on target for a five year plan. Also, we should continue to collaberate with sister organizations to promote and strengthen our common goals, leading the charge to continue to be the professional voice in the industry!

What would you plan to help NICA get there?

Continue to be involved with Communication Commitees and bring our own professional expriences and lead by example.

Brad Ribar, CCE Loret Foods What is the single most important challenge facing Concessionaires today?

There is no one challenge facing Concessionaires today; that would be too simple! For one Operation, it may be labor concerns. For another, it may be rents, travel expenses, or insurance. For others, it may be the health department, electrical inspectors, and ever-changing DOT challenges. It may also be competing with Carnivals that have the ability to hold exclusive rights to foods at an event or even transition out of the business.

As a Board Member, how would you help overcome this challenge?

Education! We need to provide education, focused on issues our Members can control. We can also provide education to Fairs and Festivals on things that will help them become better events. We as a group have a lot of knowledge to share and much to learn.

Where do you see NICA in five years?

I hope to see NICA focus on the “Independent“ Concessionaires and to reach out more to the Festival industry, similar to how they already communicate to the Fair industry.

What would you plan to help NICA get there?

I would push for more awareness of NICA to the Festivals. In addition, we need to have articles in other trade publications along with them offering articles for NICA News.

She also has attended NICA meetings at different Fairs and encouraged Concessionaires to join the organization. Lynette feels that NICA does cover more for its Concessionaires than most of the other organizations. She believes it is necessary

to belong to such an organization. She said she stays connected through her granddaughter who serves on the NICA West Council. She suggested that it would be helpful to have a contact with “instate laws for the various states, not just for the DOT.” The NICA Office plans to continue these calls to our renewing members throughout 2015 and beyond. First, denial sets in. Then panic.

Then grief. Yes, its like a death in the family. Then starts the planning of how to make it the rest of the season with a major unit missing.

Our 2005 Hitchhiker trailer and Dodge truck were stolen from the Comfort Suites parking lot in Southgate, Michigan, early in the morning of July 12, 2015. Dr. Vegetable, Inc. worked the Wyandotte Street Art Fair all week and the crew, myself included, returned to the motel after the Festival. The truck and trailer were stolen early Sunday morning and I made the police report. The security cameras showed two guys walking onto the motel parking lot, quickly breaking into the truck, and driving off around the backside of the motel, away from the cameras. I rented a car and drove around the area looking for it for a while, but then drove back to Indiana as I had to get my crew to the next fair in LaPorte, Indiana. I called Mike Rasmussen (son-in-law of Dave Matthewson), who also worked the Wyandotte Festival, and told him the trailer had been stolen. I asked if he could keep an eye out for it since he works a lot of festivals in the Detroit area.

Unbelievably, we got word on Monday morning that the trailer had been located in a lot in Southwest Detroit. The truck was gone.

The picture above shows the trailer as it sat in the field where it was located by Scott Legas, a retired fireman who recently started a Corn Roast Operation. He sent the picture to Jim Salulidis and said “Look at this!” Scott also sent a message to our Facebook page. Jim is in the Pretzel Business and also was at Wyandotte. He recognized the trailer, but he didn’t know how to reach me, so he sent the picture to Dave Matthewson, who had Elephant Ears, Corn Dogs, and Butterfly Chips at the Wyandotte Festival. Dave and I have been friends for years and he is the one who told me about the Festival about six years ago.

The field where the stolen trailer was found

Dave suggested that he go pick it up because the trailer was sitting in a run down area of Detroit. Like on a mission from God, Dave Matthewson and Mike Rasmussen drove into the city, snatched the trailer out of the field, and took it to their house near Monroe, Michigan. That took some cahoonas! I can’t thank them enough for getting that trailer to their yard.

I drove back up to Michigan on Monday night with Josh Nicholson, my step-son who is operations manager of Dr. Vegetable, and well known out on the circuit as our main guy. We got back to Indiana about 3:00 am on Tuesday morning. Later that day, we contacted our local police who reported back to Michigan that we recovered the trailer.

The trailer is back with minor damage. They stole the fountain drink machine and carbonator, 150 foot of 4-4 electrical cable, water hoses, and did some damage to the signs hanging up inside the trailer, along with some major scratches and dings to the inside. The crank post was tweaked and one corner of the outside was damaged, as well as a lot of broken chaser bulbs. It could have been worse, but the trailer will be back in operation this season for the big Fairs.

NICA Rallies Are Happening Everywhere Rey O’Day, Interim Executive Manager

The West Coast kicked off their first Get Involved NICA Rally with the visit of NICA Office Manager Yachika (Chika) Smith to Fairplex, home of the LA County Fair and the Orange County Fair.

Rey O’Day, NICA Interim Executive Manager, picked Chika up at the Ontario airport on July 23rd and whisked her off to tour the 400 acres at Fairplex before Chika Smith, NICA Office Manager, touring Fairplex with the Fair moves Sherry Flores in. Sherry Flores, Fairplex Food and Beverage Contracts Manager, and Scott Shacklett, Cornucopia Foods Manager, showed her the grounds, pointing out utility hookups, warehouses, site locations, stock storage, and even demonstrating how trailers are set up. Seeing empty grounds caused Chika with Scott Shacklett, Chicka to observe, Cornucopia Foods Manager “I’m amazed at learning how much you Concessionaires have to pull, load, and take with you when traveling.”

The OC Fair in Costa Mesa, California was the next day’s destination. At 10:00 AM, 30 NICA Members gathered for the Get Involved Rally at which Chika was the “guest of honor.” Rich Chika being greeted by Noel Brander, Brander Arrendondo, Noel’s Foods & Bob Hutchins, Rainbow Concessions Enterprises, 18

Meeting up at the Elkhart County Fair Gayle McGrath, Past Director & The Best Around Every year during the Elkhart County 4-H Fair, Concessionaires take an hour out of one morning to get together and meet with each other and Fair Management. This year at the meeting it was a great opportunity to formally greet the new Fair Manager Bryan Blair. Bryan took time to talk about some ideas and the approach to future planning of the ground that had been recently acquired. Tim Yoder, Past President and Concession Manager, talked about the importance of sharing information and ideas.

It was nice to see Joe Potillo, Jr. and Randy Reichert who came from a nearby Fair to visit with NICA Members. ▲

Fun-tastic Fair Facts!

This year, Elkhart County 4-H Fair’s dates were July 24-August 1, 2015 with a total attendance of 255,253 and a theme of “Planning Toward a Bright Future!“ This Fair was originally held in 1851 with an original goal of giving local farmers a place to learn about new farming techniques and compete for excellence; its mission has not changed much in the interceding years, but they have added other Fair staples such as food operations, a midway, and other attractions during the course of its history. The Fair’s dates for next year are July 22-30, 2016. For more information, visit their website at 4hfair.org.

Ormic Concessions Brownsville, TX - Mickey Neck started Ormic Concessions with her late husband Oran over 20 years ago, specializing in grilled beef, chicken and pork kabobs, beef BBQ, smoked turkey legs, and Dippin’ Dots ice cream throughout the South and Midwest.

NICA News: Thank you for being able to speak to us! How long have you been a Concessionaire and member of NICA? Mickey Neck: I’m happy to say that my husband Oran and I had been in the business for 23 years.

It has been quite a learning experience to say the least. We’ve been proud NICA Members for a little over 20 years.

NN: What made you join NICA? MN: Oran and I met two great people who are known as Linda and Bill McKinney, who told us about NICA and how helpful they could be. As an association created to protect and support Concessionaire members by keeping the lines of communication open with product vendors and Fair Managers alike is a value we couldn’t afford not to have. It was obvious that becoming a member was a must and we have benefited from these connections by staying current on the latest trends, laws, or regulations that affect Concessionaires in the industry.

NN: How and why did you get in to the concession business?

MN: When Oran retired after 25 years of working for the government, we had a friend who had been in the Concession business and was successful selling giant cinnamon rolls. We bought our very first novelty unit from him, which was an oversized Coca-Cola can with a hydraulic headset that moved up and down while music played. We had some good times in that unit but outgrew it quickly. We are thankful for our time in that unit though, because we learned so much about the business and how being unique in a competitive industry is so essential.

NN: What do you like most about being a Concessionaire?

MN: Well, I would be lying if I didn’t say that getting to count all of those “George Washington” notes at the end of the night, which absolutely makes all of the challenges and sacrifices of this business very much worth all of the effort! But for the most part, we have completely enjoyed the friendships that we have forged over these years. Getting to know good, hardworking folks who are in this business for prosperity is a fact, but we surely have found the friendships to be the true by-product and the best part of being a Concessionaire!

NN: What are your most popular or best selling products?

MN: Of course, the basis of our business has been founded on our giant turkey legs. These have never failed to be a big sell-out for us over

the years. When our little yorkie, Bubbles, was still with us, she was one of our biggest fans, preferring them for dinner in the evenings over Kibbles ‘n Bits—that’s a no brainer! Our other hot seller is, of course, the novelty Dippin’ Dots ice cream, which comes in many forms and is a kid and adult favorite alike.

NN: Do you have any new items coming to your menu this year?

MN: Ormic has experienced success with our menu since inception with only a few changes, which has proven successful for us. We may add an item at a certain Fair since we’ve featured it and found that it works. But typically, we try to keep our menu simple for the ease of stocking Ormic Concessions’ Dippin’ Dots unit logistics and, of course, for our patrons who often seem to experience indecision at the ordering made us stronger and we forged two excellent window otherwise. Keeping the Washington State Fair Relevant The September Event Offers Tradition & Contemporary Highlights Karen J. LaFlamme, APR, Public Relations Counsel, Washington State Fair Who would have known in 1900 that a dream of some local farmers and businessmen in the Puyallup Valley would grow to be an event in September that draws over one million guests?

Fast forward 116 years, and the Washington State Fair looks entirely different than the first Valley Fair in the turn of last century.

Over the years many things have stayed consistent: animals, agriculture, education, and family fun. As times have changed, so has the name. The fourth, and most recent name change was in 2013, when the Puyallup Fair was rebranded to become the Washington State Fair. This name better represents the guests and participants who take part in the Fair throughout the state. Following State Fair naming tradition, it is the largest Fair in the state, and hosts the State Fair competition for 4-H and FFA.

The Board of Directors of this private, not-forprofit corporation understand the importance of being relevant. That is why they made the name change, and continue to make tweaks to keep the facility an important part of the community for years to come. In fact, there are currently four construction plans ready to ramp up soon, including a new agriculture barn, a 60,000 square foot exhibition center, renovation of the restaurant building, and a youth education facility.

While the Fair has been a 17-day event in September for decades, things are changing. In 2016, the Washington State Fair will be a 21-day event, starting the Friday before Labor Day. This adds another weekend for always-busy families to find time to attend this fair, like generations before them. Added to the mix is a dark day on Tuesdays, for the change over of animals and exhibits, and an opportunity for vendors to rest, relax, and do some laundry and banking!

This year, the Vendor Services Department is adding something new, according to Dan Sharp, Vendor Services Manager. A secret shopper 26

program is being established to make sure that quality control maintains a high level. Vendors will be visited on a random basis.

Vendor Services also offers two areas, exclusively for vendors. The first is an office where vendors can drop by and ask questions, gather information, and be kept up-to-date with daily activities. They can also take a breather in the vendor services lounge, a place to grab a cup of coffee, and get away from the crowds.

“This is the second year of our food supplier changes,” mentioned Sharp. “Last year we instituted a more open plan for food Concessionaires, where they can select suppliers of their choice.” In the past, Food Concessionaires purchased product from a short list of Fairapproved suppliers. Quality standards are still firmly in place, including meat, which must be USDA approved.

The Washington State Fair is ever-changing. In this world of competition for the public’s attention, one of the few things that will stay firmly in place is the requirement to keep the Washington State Fair relevant.

The Deschutes Get Involved Rally begins!

The next Get Involved NICA Rally spot was the Deschutes County Fair in Redmond, Oregon at 2:00 PM on July 29th. NICA West Council Members Kim Barr, Pacific Crest Concessions, Daryl Whicheloe, CCE, Southern Oregon Food & Beverage, and Judy Buermann, Concessions Consultant, organized the event and provided enough door prizes that every person present won one. Dan Lusenhop, Jeanne’s Artichokes and NICA Board Member, and Rey O’Day coBrian McKay, Inland hosted the meeting.
