President’s Message

What a week! We visited several fairs and festivals. All were having great crowds and terrific weather. This year is flying by and I have to admit that it has been a wonderful experience meeting with so many different people in the industry and discussing ways to make it better for all of those involved. When this year started, Greg Miller told me you don’t understand until you sit in the seat. What an understatement! It has been both great and trying - but completely worth every minute that has been invested in it. We have been working on a few new benefits that will hopefully be available in the near future. The Board and our Executive Director have been discussing several ideas with Fair Boards on ways to help concessionaires be recognized in the same manner that standard brick-and-mortar businesses are, from the financial aspect to community involvement. We have had a great response at the meetings. The Board is working diligently on the many committees that help move us forward. We are always looking for volunteers to help organize meetings and events. If you would like to help or just want more info on what we are working on, please don’t hesitate to call me or the office. Remember it takes all of us to accomplish great things. As always “Together We Can”
Executive Director's Report As I sit down to write my article this month, many things come to mind. Thoughts of our members who are on the road from one Fair or Festival to another, of how many of you close one night and open the next day or two or three days at another event. I’ve listened to you talk about the Fair committees like they are your family, about the local businesses you deal with in each town, the best places to eat, places of interest to visit when there’s time and don’t forget the shopping, just ask any Concessionaire, within a few hours of arriving on the Fairgrounds, they can locate places that many of the locals don’t even know about.

On a recent flight, I thought of all the things that have changed in our lives since September 11, 2001, a day that still reminds us how precious life is and how quickly everything can change. Here we are 12 years later, the reminders are still there and for many the heartbreak is as fresh as if it were yesterday. If there is to be a positive message found in this tragedy, it will be that we hold our family and friends closer, never miss the opportunity to spend the time together, prepare for the day a loved one passes away and to support and appreciate those who serve and protect our country. We, in this industry, are so very fortunate to work and have the time with our families, to travel, take our families places that so many people only dream about. Continued on Next Page>>

(Continued Executive Director’s Report) We have watched our young people grow up and start families of their own. It never ceases to amaze me how those babies are now found working in the family business, selling pizza, serving up the perfect funnel cake, even creating a different set up for Dad’s stands that will be more inviting. Our kids are growing up with an education and experience that can only be found in our industry. Recently I called one of our members, I knew who she was, but didn’t know her well. When I got off the phone, I felt guilty. Guilty because no one from the NICA office had ever called her. Jill, Kaitlyn, SanDee and I have started making calls to our members, just to say “ Hello, we appreciate you as a member and how can we serve you better.” NICA is about you as an Independent Concessionaire. NICA is about creating a greater buying power, NICA is about presenting ourselves as Professionals who are educated and trained. NICA is about having a voice in the industry, one where we are included in State and National meetings. In short, NICA is for and about YOU. I encourage you to share your thoughts, take part in Concession meetings held at the Fairs you work. If a question is asked or an issue comes up that you need help with, please call us. Did you ever see the movie, We Are Marshall? It was about the plane crash that took the lives of 75 members of the Marshall University Football team, Coaching Staff and University Staff. Marshall University is located in Huntington, West Virginia. The movie told the story of the heartbreak the entire community suffered and of the obstacles the new coach and the University had to overcome just to put a team on the field. I especially liked the part when a request had to be made for a waiver, and the response was I’ll call them in the morning and the Coach said “when you asked your wife to marry you, did you send her a message?” When it just seemed that all avenues had been exhausted, a new coach, an inexperienced team and a proud community rose from the ashes to bring life back to the University and the Team. I’ve always been impressed with the determination of the team, the coaching staff and the community. They were focused on one goal. It was personal to each one, they were invested.

The phrase “Teamwork is the fuel that allows common people to reach uncommon results” has been exemplified many times because it is so true. As the community marched up the hill on a cool, foggy Fall morning, the chant could be heard before the people came into view, “WE ARE MARSHALL”. Those three words said it all, this is who we are, this is what we will do and we believe, much like NICA says “Together We Can.”

We all have songs that remind us of events in our lives. One that comes to mind is by the Fox Brothers, a group who have been dear friends for many years. I first heard “The Red, White and Blue” in Hot Springs, Arkansas at the Fair Convention. There were people from all walks of life who rose to their feet because they felt the message and believed in the message.

A MESSAGE FROM DAVID PENN Director’s Voice Article
COMMUNICATION. A man and a woman had been married for 50 years when the husband passed away. The lady called to order the headstone and told them write “Rest in Peace, and if there is room, I’ll see you in Heaven”. And of course when they delivered the tombstone that is exactly what it said … “if there is room I’ll see you in Heaven” COMMUNICATION. We take it for granted, but communication is the most important thing we do in our everyday lives. When you tell a worker to do something, they will most likely do exactly what THEY HEAR you say. And that is not always what you wanted. When you ask a question the answer you get may depend more on what the other person heard you say than what you wanted to know. Only you hear what is in your head and even that is based on the significant events and experiences you have had in your life. The other person may even misinterpret a word you use based on their life experience. COMMUNICATION. So make sure when you speak, the other person has completely understood what you meant, not just what you said. When I talk with my wife … um maybe that isn’t the best example here … It is way better to ask the person you are speaking with to repeat back what ‘they heard’ you say. Put it that way and they will understand you are just wanting to clarify and not insulting their hearing ability. Then when you both have agreed what is being said you both will be happier later on. Don’t underestimate the power of writing things down, either on paper or electronically. It is much easier to go back later and see what was said. You may think this all sounds unnecessary, but just remember it the next time you thought you were clear on what you wanted, but didn’t get the results you were expecting.
As a NICA member you should be the one out there leading the charge on communicating. And while you are communicating, tell everyone about the many good reasons they should join NICA. We need members. Not because we need their money, in some ways it costs NICA more money to have a member than what they actually pay (but that is another conversation). No, the more members we obtain results in more new and better benefits. More members help tell our story to Congress when we need legislation changed. Members contribute ideas that make all our lives better. They are not just food concessionaires, think about every vendor at your event and what NICA benefits would be helpful to them. It helps when our fairs and festivals are members as well, because we all benefit. COMMUNICATION. It can make your life better or worse, it all depends on how you use it. Finally I want to give a shout out to our friends at the Kansas State Fair. This is their 100th year of providing fun and smiles for the good folks in Hutch and all over NW Kansas. Congrats - you must be doing it right! ■
COMMUNICATION. NICA has encouraged our members over the years to establish a Communications Committee at their events. I know, I know some of you are saying “Yeah but I tried that.” (My kids invented that saying). Maybe you can’t have an official committee, but you can communicate. Get out and talk to everyone, including the folks who work/volunteer at your event. Talk to the guy who picks up the trash. Talk to the lady who takes the tickets at the entrance. Talk to the fair management. LISTEN to what everyone has to say, and then follow-up on what your heard. Everyone has an idea about how to improve on even the best event.

Excellence Accreditation Applications Due October 1st
One of NICA’s long term strategic goals is to be recognized as both a professional voice and leader in the events industry. One of the ways we will accomplish this is for our members to visibly meet excellence standards by completing the Certified Concessionaire Executive (CCE) program.
Further, they will have been a full time operating manager of an independent concession business for a minimum of seven (7) years. If you qualify, WE WANT YOU!! to please fill out an 11 page questionnaire that also asks for a 150200 word personal philosophy of communication and management as it relates to the events industry. (FYI -From here to the beginning is approximately 200 words). Whew!! Sounds like a lot. Well it is, but it is easier than what you do well every day!
“NICA is the ideas and accomplishments of its members.” The CCE program was developed to recognize the professionalism of concessionaires. The CCE designation following someone’s name represents a deep understanding and respect for the Fair and Festival business and indicates the title holder will perform with the highest level of professionalism. This prestigious designation is awarded only after a detailed application process has been successfully met. In order to qualify one must meet several requirements. First, the applicant must be a current member of NICA and also be a current member of one of the following associations: CAFE, IAFE, IFEA, OABA, or WFA.
To get started go to www.nicainc.org click on Member Center, click on NICA Services and scroll down to the CCE program description. Read the description and then click to find the application. Fill it out and return it with a $90 administrative fee by October 1, 2013. Fifty-one members have already successfully committed to this program. Now we want YOU to become our next CCE!!

NICA West Council Introduces New Members Daryl Whicheloe, hails from Cave Junction, OR. and Kim Barr hails from Yacolt, WA. They have recently been appointed to a three year term as members of the NICA West Council. They were chosen to support our current members and bring NICA’s story and membership benefits to our Oregon and Washington concessionaires. They have both already applied for their CCE and begun actively recruiting new members. We asked Daryl to introduce Kim and Kim to introduce Daryl.
Kim wrote: “Daryl, better known as SOFAB, (Southern Oregon Food and Beverage) has been in the fair business for over 25 years. He is well known for his Giant Kurly Fries and the Famous Log Dog! He started this business so that his wife could be home with their children while they were growing up. Like so many generations of concessionaires, most of his children have come along for the ride to both experience the business and also have some DAD time. Daryl will be a Grandpa this fall, and we are all excited for him to start this new chapter in his life! In his off time, he not only enjoys his beautiful home in Cave Junction, Oregon, he also goes fishing in the GREAT fishing boat he just bought. Daryl and his wife use their business to help support their community, as well as helping with the school district in their area. He has grown his business to be very successful over the years because he has a GREAT crew that returns year after year, offers great customer service, and is very helpful to other concessionaires. Today he participates in at least 24 shows in Oregon and Northern California.”

Daryl wrote: “Kim, along with her husband Alan, is a true asset to the fair industry and also to NICA. They began in the industry 27 years ago with a Hawaiian teriyaki stand and most recently added a state-of-the-art funnel cake trailer. Like so many concessionaires they have become a generational business that now includes their grown children. (see photo) In their off time Kim plays with her grandbabies and quilts while Alan likes to hunt and go fishing. Kim’s professionalism and dedication to her concession business sets the standard for quality in our industry. She is always very positive and willing to help anyone at any time and for this I am happy to call her my friend and to join her as new co-member on the NICA council. I know she will be a great benefit to NICA’s growth in the Pacific Northwest.”

Their first event together will be hosting a NICA Open House at the Central Washington State Fair, Yakima, WA on Thursday, September 25th. All are welcome to come enjoy the food, purchase tickets for a survival kit opportunity drawing, and learn more about NICA membership benefits. Rey O’Day Selected as IAFE Instructor

One of the required courses of the IAFE’s Institute of Fair Management is “Principles of Food & Beverage”. The course is typically offered once per two-year cycle. In 2014, however, this course was selected as the one course to be offered at IAFE Zone meetings (1 through 6), the WFA Convention and the RMAF Convention. “Each year we select a course for these regional meetings that we believe will (a) be applicable to the widest range of attendees at the meetings and (b) will be the type of presentation that will generate enthusiasm - and enrollment - for the Institute,” said Marla Calico, IAFE’s Director of Education. “Without a doubt, this course, with the fantastic Rey O’Day as presenter fits the bill perfectly!
Rey is consistently ranked as one of our top Institute instructors (she also teaches the Guest Services course) and her F&B course is exactly what we need for these regional gatherings.” The exact dates/times for the course delivery at these meetings in 2014 is being finalized as the IAFE works with Zone Directors and the planning staff at WFA and RMAF, but can be found on the IAFE’s Calendar of Events (www.fairsandexpos.com) as dates are confirmed. Here is an overview of what Rey covers in this two-hour session:

This course is a very basic introduction to the principles of the role of food and beverage service at fairs and fairgrounds facilities. It is designed to help fairs understand the needs of food and beverage vendors in order to create the best environment for success for the fair, the concessionaires and satisfaction of the guests. WFA Open House Sacramento On July 18, 2013 Rick Pickering’s arrival as the new CEO at Cal Expo-Sacramento was celebrated at the annual WFA Open House. Tasty appetizers and a delicious meal were prepared and served by Ovations Fanfare. The season is well under way and West Coast Concessionaires have really stepped it up this season by offering fair guests crazy, outlandish, fun and even gourmet fair foods. From traditional to wild and wacky, the one hot trend, addon ingredient seems to be BACON! The Bacon Bandwagon is in full tow. We've covered it in chocolate and wrapped it around everything from turkey legs to Portobello gouda-stuffed mushrooms, and from jalapenos to corn dogs. Mike Peterson, owner of Bacon A-Fair observed, "Want to see a grown man’s eyes light up like a kid on Christmas morning? Just show him a turkey leg wrapped in a pound of bacon!" According to Rich Brander, Texas Donuts owner, maple bacon donuts are “flying out the window!” At the Candy Factory, Dominic Palmieri added “smokey, salty, and sweet together” to create Bacon Cotton Candy!

Roasted corn, fresh artichokes, deep fried zucchini, colorful fruit bowls, and grilled onions and peppers are everywhere. Potatoes are a fair staple as Australian Battered Potatoes, Tasti Chips, Curly fries, Piggly Wigglys, Tater Twisters and baked and loaded. And of course, if you want French fries, they come covered in everything from salsa to garlic. Miles of grills with sausages, pork chops, chicken kabobs, ribs, turkey legs; and spits and smokers filled with tri tip, and brisket deliver a cacophony of smells across the fairgrounds. The deep-fried-foods craze includes frog legs, avocados, Twinkies, chicken, red velvet cake, peanut butter and jelly s'mores, blooming onions, macaroni and cheese, Indian fry bread, bread fish, and Klondike Bars. Once a novelty, foodon-a-stick has become a “tradition” at our fairs. No revue of fair food is complete without dessert. The cupcake frenzy is alive and well at fairs. Ice cream Grinder ’s in fresh waffle cones with toppings, funnel cakes with toppings, gelato S’mores with toppings, donuts with toppings, cinnamon rolls with toppings, Dippin’ Dots with toppings, shaved ice with toppings, kettle korn with toppings…did we mention toppings!?! There are choices everywhere. Plus, did we mention huge serving sizes? Mike Peterson serves a Jumbo Mexican Funnel Cake made with about five pounds of churro dough. The guest is on a raised platform and if he/she eats the entire serving on their own in thirty minutes or less, it is free. In closing, “grazing” at fairs is high on the list of FUN and MEMORABLE. ■

Throughout this season our NICA Sysco Marketplace program powered by the buying power of Source1 Purchasing has delivered quality products at remarkably better prices. Now our members are discovering another Sysco business benefit in an exciting program called the Sysco Business Review. NICA Concession Members are going to their local Sysco Operating Company for developing menu items. Read about some folks who have successfully discovered this program. Tony Trafton, Trafton Company, wanted to change his grill stand from lots of items to an all turkey product stand. He met the San Diego Sysco Business Review Team to discuss his idea. They took him to their amazing state of the art kitchen where they prepared and tasted a myriad of turkey products until he had the right mix for his stand. Today the “Turkey Shack” serves turkey bowls, turkey sliders, turkey sausage-on-a-stick, a smoked turkey sandwich, and his signature item Giant Turkey Legs. Right now he is playing fairs in Wyoming and Sysco is delivering his chosen turkey products to him. Don Delahoyde, Five Star Catering, also wanted to come up with items for a new trailer called “Sharkey’s.” He went to the San Francisco Sysco Operating House and tested about 50 different products with the Chef and the Business Review Team. Today he successfully sells calamari, fish and chips, Shark-Bites, lobster corn dogs and mini crab cakes. According to Sean McGinity, Sales Manager, “the test kitchen demonstrations and business reviews are a free benefit to your NICA members that are signed up to make purchases using the NICA Sysco Marketplace master distribution agreement.” Mike Peterson, Revolutionary Service, Inc. spent four hours at Sysco San Diego touring the warehouse and comparing

Lori Southerlend, Lori’s Concessions, says she “Does it (Sysco Business Review) every year, because it gets my creative juice going.” Lori’s signature items are fresh made Tasti Chips and a 100% Angus Grant’s Hamburger. She wanted to create an item that would “move her chips from a snack to a meal” and develop toppings that would further
delineate her burger as a Gourmet Burger. She also prefers to create items that do not copy other peoples’ ideas. With the Sysco Chef they added shredded BBQ beef, honey chipotle, green onions, tomatoes, bacon, blue, jack, and cheddar cheeses, topped with a srirracha sauce to create Chipotle BBQ Beef (Dirty)Chips. Voila… a meal! Now it was onto the burger: knowing that bacon was the hot trend, the Chef gave her a recipe for Bacon jam which is onions and bacon blended into a jam consistency. Now she sells a Blue Cheese, Bacon Jam Hamburger. They also helped her create a mayo based mild ghost pepper sauce. Now she sells a Ghost Pepper, Jalapeno Jack Cheese Burger. Voila…two Gourmet Burgers.

The ability to work with Sysco House Chefs, in their well-designed kitchens, to design new flavor profiles, enhance old menu items, and create themed menus has certainly raised the taste and presentation of Fair Food. Donna Ruhm, San Diego Concessions Manager, present at one of Lori’s Business Reviews, remarked she was “glad Sysco was there to help concession owners develop new food ideas to market to the fairgoer.”

The NICA Sysco Marketplace agreement is only as good as we use it to manage food costs, find specialty items, develop products, and serve quality items. Work closely with your Sysco Sales Representative when planning your fairs and the product you need, especially for Special Order items, at least 30 days in advance of your arrival. OF THE MONTH MAMADOU DIOP of Mamadu’s Village GIVE US A LITTLE HISTORY ON MAMADU’S VILLAGE.: It all started in 1991. I was a student at Cal Poly University near Pomona, CA. I visited the fair and I noticed that there was no reggae shop. So I looked up the phone number for the fair office, and I kept calling and bugging them to let me feature the following year. I was excited when Rey O’Day, the Concession Manager at the time, called me and said my booth was approved! It was a long road because goodness knows she gave me a spanking. That’s the thing about Rey- she’s the first person to spank you when you’re wrong and the first to praise you when you do something right. I fell in love with the industry. I also always got along with everyone in management, which I was grateful for, but it pushed me to never let them down. HOW LONG HAVE YOU BEEN A NICA MEMBER & HOW HAS IT INFLUENCED YOUR BUSINESS? I’ve been a member since it came to the West Coast. I was one of the founding members when Rey started it up here. It’s nice in this business to have an organization that we can call ours. NICA has always been a facilitator for communication; we achieve things when we work together. Together we can even move mountains!

I live in North Carolina, so I go back as often as I can. It’s a lot of air miles! WHAT’S THE BEST PART ABOUT YOUR JOB? The best part is that it’s a big happy family. The funniest story of all, I found out the NICA News is featuring myself this month and Rich Brander next month, and we didn’t even know it! We’ve been friends for over 20 years and we call each other brothers. WHAT’S SOMETHING YOU’RE LOOKING MOST FORWARD TO THIS YEAR? A great season and no loss.

For something I wish would change, there are some folks on the fair side who have left management, and I would really like to see them back. We need their experience and their love for the industry because that’s something we cannot buy.

In Remembrance of Johnnie Holmes Johnnie was hired by the NICA Board of Directors in January of 1995 and retired in December of 1998. The first year he logged more than 15,000 travel miles. Johnnie, also known as “Mr. NICA” was well known for always having a smile as he traveled those miles. With a heavy heart, below is Johnnie’s obituary. May 12, 1925 - July 6, 2013 John R. “Johnnie” Holmes, 88, of Little Rock, passed away Saturday, July 6, 2013. A celebration of Johnnie’s life will be held at St. Mark’s Episcopal Church in Little Rock, Ark., on Thursday, July 11, 2013 at 11 a.m. followed by burial in the St. Mark’s Garden Columbarium and a reception at the church. He was born on May 12, 1925 in Lowell, Arizona to the now deceased, John Patrick Holmes and Lenore Lee Holmes. Johnnie was a 4-H member as a youngster in the Rio Grande Valley north of El Paso, Texas. After serving in the U.S. Air Force he went on to graduate from Texas A&M with a B.S. degree in Agricultural Education. As a student, he worked at the college owned radio station where he produced and aired farm programs, collegiate FFA programs and assisted the Extension radio editor in airing regular farm and home network programs. As farm editor of WMT, an agriculturally oriented radio station in Cedar Rapids, Iowa, he wrote and broadcast radio programs. At this time, Johnnie also became actively involved in the ALL-Iowa Fairs providing coverage for many local fairs, the Iowa State Fair and National Dairy Cattle Congress. It is at one of these fairs that he met the love of his life Patricia Frances Benesh. He continued his broadcast career in Little Rock as farm service director for KLRA-AM, where he was the first full time radio broadcaster in Arkansas devoted to gathering and reporting agriculture news, then as farm service director for television station KATV, where he was responsible for a daily 30 minute television program featuring crop and livestock news, agricultural personality features and reports on special farm events. He also broadcast live reports with livestock exhibitors from the Arkansas State Fairgrounds, a first in Arkansas television. In 1956, Johnnie became secretary-manager of the American Dairy Association of Arkansas. He continued working in the dairy industry for nearly 20 years, serving first as market coordinator for the American Dairy Association of Milk Producers Inc. and in the promotion division of the Associated Milk Producers Inc.

In 1975 Mr. Holmes became the Arkansas State Fair general manager and secretary treasurer of the Arkansas Livestock Show Association and was named executive vice president in 1982. In this position, he worked extensively with the Department of Education, vocational agriculture teachers and 4-H and FFA members to increase educational activities and involvement at the State Fair. In 1992, Mr. Holmes received the National Future Farmers of America’s “Honorary American FFA Degree,” the highest award presented by the FFA. He is survived by his wife of 63 years, Patte Holmes; a sister, Joan Etheridge of Tucson, Arizona; a brother, Patrick Lee Holmes of Miami, Florida; and three God-children who loved him like their own father, Pam Alagood Taylor, Greg Alagood and Nancy Alagood Meredith.
In Remembrance Their legacy will long be remembered. Bettie McBride Bettie McBride, 75, of 502 Moir Street in Eden, passed away early Thursday morning, July 25, 2013, at Morehead Memorial Hospital. A native of Rockingham County, Mrs. McBride was born November 16, 1937. She was the daughter of the late Woody and Leo Belton McBride. Mrs. McBride was a member of North Spray Christian Church and was the owner and operator of McBride Concessions. She is survived by her daughter, Bess Brinkley and husband, Bob, of Walnut Cove as well as many dearly loved cousins, friends and A.A. family. Helen L. Pence Helen L. Pence, age 93, of Bryan, Ohio, died at 7:15 A.M. on Sunday, July 28, 2013, at Dream Haven Assisted Living in Edgerton, Ohio, where she was a resident, after a brief illness. Mrs. Pence was a 1938 graduate of Garrett High School in Garrett, Indiana, and was owner and operator of Pence’s Concessions from 1948-2006, where she enjoyed working and meeting people throughout the tri-state area. She was a member of the Phythian Sisters and the Asbury United Methodist Church in Williams Center, Ohio. Helen L. Pence was born on February 2, 1920, in Garrett, Indiana, the daughter of Clyde and Clara (Grieske) Ervin. Survivors include one daughter, Anita (Edward) Nicholas, of Fort Wayne, Indiana; two sons, Michael (Etta) Pence, of Edgerton, and Kevin Pence, of Bryan; seven grandchildren; sixteen great-grandchildren, and two great-great-grandchildren. She was preceded in death by a daughter, Sharon Pence, two brothers, Charles and Paul Ervin, and a sister, Marie Sapp. Memorials are requested to Asbury United Methodist Church in Williams Center.
Carlene Sparks Carlene Sparks of Oviedo, Florida, passed away June 22, 2013, at her home with her family at her bedside. She led an exciting life along side her husband of 68 years, T. Wilson Sparks. Wilson formerly served as the Executive Director of the International Association of Fairs and Expositions, the Mid-South Fair in Memphis, the Florida State Fair in Tampa, and the Georgia National Fair in Perry. She leaves behind, in addition to her husband, a son and daughter, six grandchildren and seven great grand children all of whom thought she hung the moon.
