“I have spent most of my life living and working at a Fair. This has enabled me to see millions of people each year. On a daily basis, I greet Fairgoers, employees, Fair committees, other Concessionaires, and business associates. Experience has taught me that the key to success is communication. It is vital that I establish open communication with everyone. I need to listen to the Fairgoer and hear what they like and don’t like. The employees need to hear exactly what is expected with praise for success and an exact explanation when they fail. I need to listen to, and share ideas with, Fair Committees. Sharing ideas with other Concessionaires has been beneficial to my business as well. And finally, it is important that I communicate with the other businesses (suppliers and manufacturers) so that we both understand our needs and expectations. Managing a successful concession business has evolved into a lifestyle. It is part inspiration: having new things to offer. It is part motivation: this industry is difficult at best to succeed. But most importantly, a successful concession business is based upon open, honest, and continual communication. I would also like to share the following advice: the Good Lord gave you two ears and one mouth so you could listen twice as much as you talk.”

Five Star Catering CCE Earned in 2009 “My experience in the food service industry from 19731985 was the working, building, and ownership of eight restaurants. To be successful in the restaurant business, as well as the concession business the past 23 years, is pretty simple: quality fresh food, great customer service, fair prices with good value, and all done in a neat and clean atmosphere. That is an easy statement to make, but it is an idea that I have spent my entire career trying to make that happen. Training, hiring, and motivating the right staff is the number one objective in accomplishing the above. We try to create a friendly and comfortable atmosphere for our staff. We pay fair wages, house and feed our staff, supply them with transportation, and provide them with uniforms. I make sure they get adequate time for shopping, laundry, and personal time. I believe that if the staff is around for a period of time and able to be trained in all aspects of the job, they will be more satisfied with their job, which will reflect on the customer and will directly affect my bottom line at the end of the day. We currently have staff that has been with us for as many as 32, 18, 12, and 10 years, as well as a lot of two-to-five year employees.“

The Member’s Voice As part of our member outreach program, the NICA Office has been contacting a portion of our renewing members and asking them a few questions about their NICA Membership. Denny Lang, CFE became a NICA member because he is involved in the Fair Industry as a Fair Manager of the Erie County Fair in Hamburg, NY. He feels that communication is the key to any successful business. It is absolutely necessary to build relationships with the Concessionaires in order to have good communications. He believes there is a big difference between “wants” and “needs.” Improvements and changes should be made for the good of the Guest, for without the Guest there would be no need for either the Fair or Concessionaire. It is really all about Communications. Ken Nunn, who identifies himself as a “straight sales guy,” has been a member from the very beginning of NICA. When asked what NICA could do to improve, he suggested “more dancing girls.” The Ford Fleet Program has been very beneficial to him. As a straight sales person, he feels that there are less needs, but even though he has only eight tires on the ground, that would be a great benefit to get and the multiyear contract can, of course, be beneficial to all. He is glad to be a part of NICA and certainly enjoys the NICA News. Eddie Westmoreland, of Westmoreland Concessions, said NICA has been great for him, but admitted that he has not made use of many of the benefits with the exception of Coca-Cola. He had no problems he could mention and stated that he has cut back from 28 to 11 units and only makes five State Fairs now. He travels throughout the Midwest and he enjoys getting the NICA News every month to read. Gary Adams, of Adams Concessions, said he mainly uses the benefits from Pepsi and AutoZone. He thinks that NICA does a good job and could not think of any way to improve it at this time. He likes to get the NICA News because it gives him an opportunity to take a break and sit down to read it. Fred Bouniconti, of Dee and Fred’s Concessions, feels his relationship with NICA has

been good and he joined it the first year he started in his concessions business. He and his wife both work in the units, hiring extra help when needed. He feels that NICA is doing a good job for him, as he has limited time to find out what is happening outside of his business and the NICA News helps to keep him informed. Fred suggested that a possible way to increase membership would be to have an actual booth at a variety of events to do more advertising about NICA. Darin Lusenhop, of Jeanne’s Artichokes, first response to the question of his relationship with NICA was that he “loves it!” He went on to explain that his brother Dan is the one who really takes care of most of the business with NICA, as he is on the NICA West Council and NICA Board, but he makes sure to promote NICA at any event where he exhibits. Don Rowlett, of D & A Silver Dollar Bakery, has made use of NICA benefits, mainly the Coca-Cola and Pepsi discounts, and he enjoys keeping up with the industry through the NICA News. Don thinks some people hold off joining because, as an “organization, it may try to do something that they would not necessarily agree with.” Debra Poeppelman, of Poeppelman Concessions, Inc., feels the NICA News is an

Concessionaire of the Month Melvin Melton

Mel’s Foods Milltown, IN - Melvin “Mel” Melton has been in the Concession Industry for over 50 years, continuing to sell a variety of popular Fair staples that he has deemed as Mel’s Foods. Mr. Melton had a chance to answer a few of our questions and share some photos of his past experiences. We hope that you enjoy! NICA: How long have you been a Concessionaire and a NICA member? Melvin Melton: I started working summers when I was 11 years old in 1963 with Baker Foods. We worked County Fairs in Indiana and Ohio. Everything was stick joints back then.

Indiana cookhouses were very popular in the ‘60s, and ours was big enough to seat over 100 people at one seating! After high school, I got drafted into the Army and spend two years there. I continued to work for Baker Foods until 1977, when my wife and I decided to start out on our own. In 1977, we borrowed $25,000 from our local bank and purchased a brand new Schantz trailer. Over the next eight years we hopscotched with different carnivals and played four County Fairs as Independents in Ohio. In 1984, I become partners with Dominic Vivona, one of the owners of Amusements of America. After 31 years with Amusements of America, I now operate two grabs, a cookhouse, wings and fries, and a commissary. I became a NICA Member in 1994. NICA: What do you like most about being a Concessionaire? MM: Being your own boss and dreaming about that big day that doesn’t come very often.

NICA: What are your best-selling items? MM: Corn dogs, cheesesteaks, and Italian sausage.


NICA: What has been most influential to your success within the past five years? MM: Age. I found that I can’t work as many hours as when I was younger.

NICA: Do you have any new items coming to your stands this year? MM: No, I am happy with every item I sell.

NICA: What is the funniest thing that has happened in your concession career or through your Concessionaire travels? MM: About 20 years ago, we were hooking up water hose. I told the young kid that I hope we have enough hose to reach the spigot. About half an hour later, the kid hands me about 12 feet of cut-off hose. He says, “Here boss, you had too much hose!”

NICA: What is something people do not know about you or your business? MM: Nothing. I’ve been around for too long! NICA: What’s been the highlight of your career? MM: Being the cookhouse at the Minnesota State Fair for 15 years. It was a real privilege to be there. They have a outstanding management and staff.

NICA: What do like to do in your free time? MM: Golf, golf, and more golf! NICA: What do you like best about NICA? Here is Lucky’s letter : Date: August 26, 2014 From: Lucky Henner Re: NICA Good Neighbor Award Nomination Dear NICA, I would like to nominate Dan Lusenhop and his brother, Darin Lusenhop, of Jeanne’s Artichokes, for the NICA Good Neighbor Award. On June 24th, while playing the Sonoma County Fair in Petaluma, CA, I woke up and couldn’t stand up on my right foot. I was talking to my wife on the phone and she said that I should go to the hospital right away. So I called Dan, who was in the trailer next to mine, and he said he would be right over. He arrived and we realized that we couldn’t get me out of the trailer, so then he called his brother for additional help. The two of them got me out of the trailer and into the truck. Dan rushed me to the local hospital and into the ER. Two

hours later I was in surgery for the flesh eating bacteria in my leg. This deadly bacterium was also affecting my breathing and the doctor said I was two hours from dying. I was on life support for six days and in a medically induced coma for six days. Next they transferred me to Santa Rosa Memorial Hospital for two weeks. They then advised me that I should be transferred to California Pacific Medical Center in San Francisco for another three weeks. They have a special team of eight doctors that specialize in bacterial infections and skin grafts. After seven surgeries and a total of six weeks flat on my back, I have spent the last two and

a half weeks in a Sacramento rehab learning to walk again. On Friday, August 29th, I was released and given permission to go home. Our thanks to Dan and Darin for their help in saving my life, and to all the other friends with their prayers, calls, and cards. After 35 years as a Concessionaire, I am now officially retired and finally eating breakfast at home in Lubbock, Texas. Lucky Henner leaving rehab, walking and alive! My August trip began with a visit to the Erie County Fair, in Hamburg, NY, where I had an opportunity to visit with Denny Lang, CFE, General Manager and Jessica Underberg, CFE, Assistant Manager, as well as many NICA Members. As the picture to the right shows, the Erie County Fair is truly a “Blue Ribbon Fair” in every respect!

My next stop was the Canadian National Exhibition, in Toronto, which is managed by David Bendar. David, along with Virginia Ludy, CFE, Assistant Manager & Director of Operations, and Mike Knott, Concession Manager, were outstanding hosts. The CNE hosted a reception for the Concessionaires on Sunday, August 17, which gave us a great opportunity to discuss a variety of ways to work together.

It’s back across the border and on to the Washington County Fair, in Greenwich, NY, managed by Mark St. Jacques. This Fair is a great example of how an agricultural community shows pride in the Fair. Mark has done a wonderful job of maintaining a variety of Concessionaires while not overbooking products.

My fourth visit was to the Dutchess County Fair, in Rhinebeck, NY, managed by Andy Imperati. Deb Aschman, Concession Manager, gave me a quick tour of the grounds. I appreciated hearing Deb call each Concessionaire by name. You know the Concessionaires are appreciated when there is a show of mutual respect. The Concessions Meeting, even though it was in the early morning, was very well attended.

The last leg of my journey began when I arrived at the New York State Fair in Syracuse, NY. I tried my hand at dipping corn dogs and decided that I should probably keep the job I have now. The Fair does a great job on parking cars and getting people into the Fair. I parked in the Orange Lot, walked a short distance to the bus, and was delivered right to the Front Gate.

Throughout this trip, I met new folks and had a chance to visit old friends. The most important part was talking with our members and finding ways we can better serve them. We talked about the benefits of being a member of NICA. We talked about contract management, and most importantly, only allowing the products to be sold that are listed on the contract. We talked about our mututal responsibility, which is “satisfying the guests who come to the Fair.” We appreciate Fairs that hold Concession Meetings, be it by Committee or all the Concessionaires. Concessionaires have a lot to offer in the planning process. By the time you read this, I’ll be on the road. Our Extended Condolences to the Ziegler Concession Family NICA Member Dale Thomas Ziegler, age 67 of Palm City, FL passed away at Jackson Memorial Hospital, Miami, FL on Sunday, August 10, 2014. Born in Detroit, MI and raised in Howell, MI, he married Jean (Jordan) Ziegler on September 30, 1967. He owned and operated Four Corners Groceries with his brother John in Fremont and Angola, IN for many years before moving to Florida. In 1986 he began Ziegler Concessions, which he operated across the country until retiring in 2013. He was a NICA member since the organization was started in 1993. A memorial service and celebration of life will be held at a later date. Memorial contributions are welcome and should be addressed to Light of the World Charities, P.O. In Loving Memory of Robert “Bob” Ash NICA Member Robert E. “Bob” Ash entered his heavenly home on August 25, 2014 at Suncoast Hospice in Palm Harbor at the age of 83. Bob was born in Gregory’s Run, West Virginia to Paul and Edith (Gerrard) Ash. He moved to Florida in 1969, first to St. Petersburg and then in 1980 to Palm Harbor. Some may remember Bob from Nutter Fort (W.V.) Hardware or the Rollerdome; but most can still see him making those delicious candy apples or that sweet cotton candy as Bob’s Concessions. He was a hard worker, a joker and most of all he was a gentle, loving man, loyal and faithful to God, family and friends. Bob was true to his favorite Winston Churchill quote: “You make a life by what you get. You live a life by what you give. You will be greatly missed but never forgotten.” A memorial service was held at Curlew United Methodist Church on Saturday, August 30, 2014.
