Office Update !!

Last month has been very busy for the NICA Office! We gathered the last of the directory updates, received all of the ballots and counted them in office with Past President Frank Parnell, CCE and Rey O’Day, Interim Executive Manager, and processing a large majority of our membership renewals for the year.

As for the election results, we welcome Sandy Class, SAN-JON Enterprises of Apollo Beach, FL, Dan Lusenhop, Jeanne’s Artichokes of Camarillo, CA, and Brad Ribar, CCE, Loret Foods of White Bear Township, MN, to their new leadership positions.

While Rey was in the office, the Office Staff met to discuss the upcoming events, our strengths, our weaknesses, and how we can deliver the best possible results. We look forward to her next visit and wish her the best!

Otherwise, we aren’t slowing down anytime soon. November starts the preparation for the

IAFE Convention, December starts the preparation for the WFA Convention, and January starts the final preparation for the NICA Business Expo and Fare Foods 2016 Food Show. It will be a tough couple of months but the will of NICA is strong!

Since Thanksgiving is coming up, we wanted to remind the Membership that we are thankful for you! We hope you have a wonderful close to your Fair season, a great start to your convention season, and an enjoyable holiday experience to close out the year. Thoughts from a This month’s Statement of Communications & Management Philosophy is from NICA’s 1st Vice President, Randy Reichert, CCE, Meggars Road Concessions dba Hot Wisconsin Cheese: “Throughout my journey of being a professional Concessionaire, I’ve been blessed with mentors who have helped me reach various levels of success. To them I’ll be forever grateful. My Management Philosophy is sprinkled with wisdom from these various mentors. My Philosophy centers around three principles: Discipline, Innovation, and Continuous Growth.

Discipline As with any business there are certain things that must be done on a daily, weekly, and yearly basis. Tending to these tasks whether daily (stocking the trailer, leaving a spotless trailer at the end of Randy Reichert, CCE the night, preparing products to be sold); weekly (ordering stock, Meggers Road scheduling workers, preparing for the next jump); or yearly (tax Concessions dba Hot preparation, equipment maintenance, or completing contracts for Wisconsin Cheese upcoming events) must be fully completed. Without this foundation CCE Earned in 2006 and attention to these tasks, innovation and continuous growth will be limited. This also applies with employees. Each employee must learn the basics of their job to be more successful in the future.

Innovation The business climate changes—that’s a fact of life. To successfully meet the challenges of change is where innovation takes hold. The question must continually be asked, “What can be done to improve the business?” Designer cups, computer usage, or air-ride hitches are just a few examples of innovations made to help improve the concession business. It can be difficult and scary to be innovative because it is easier to be set in our successful ways. But by ignoring the changing business environment, the business can pass us by.

Continuous Growth Continuous Growth refers to the professional growth of individuals and businesses. Education, business conferences, or interaction with various areas of the Fair Industry are just some avenues that can be utilized to achieve professional growth. Continuous Growth also applies to our professional peers. It is important to share knowledge and ideas with others in our field. By communicating with others in the Fair Industry, it helps the Fair Industry as a whole become more successful. Continuous Growth also applies to employees. The ultimate goal for my employees is to allow them to grow to a level where they are self-managed. In other words—they kick me out of the trailer because they can do the job.

Discipline, Innovation, and Continuous Growth are the principles of my Management Philosophy.

Individually, each principle has its own qualities and virtues, but combining the three together provides me with guidelines for successful decision-making today and in the future.” ▲ The CCE Program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism. Member’s Voice The greatest part of NICA is the Membership!

Their Voice influences where the organization is headed and what it can improve, especially when it comes to which benefits are being used and which events people are interested in attending.

The NICA Office has been continuing their survey of responses from Renewing Members.

Bruce Beck of Professional Concessions, Inc. out of West Palm Beach, Florida joined NICA because of his many friends who were members.

He uses the NICA News both online and the paper copy to stay informed of industry related issues.

His daughter goes to most of the events in Tampa.

Unfortunately he has not made use of the many NICA benefits but he will now.

Penny Ryle of Hughes Springs Texas with McKinney Food Services feels that the best thing about NICA is “the unity” that is created by being a member. She and her husband R.D “Swat” Ryle thoroughly enjoy reading the NICA News especially the articles by and about others. They definitely make use of the Pepsi and Coca-Cola benefits. She referred to “Swat” about the other benefits saying she would have to confess that “it is our fault that we do not make more use of them”. Swat stated that when they first joined they were able to go to several of the conventions in Las Vegas, Tampa and Illinois, but with working full time today they only get to attend NICA meetings or gatherings that are held at individual events. It is harder and harder to get good help.

“NICA is all good for us and we love the stuff about DOT and other related issues that the News keeps us informed about.” Swat said he also has made use of the AutoZone and the Fleet benefits.

Paul Lombard of T & A Concessions out of Candler, FL feels his relationship with NICA has been fine. They have some nice programs and benefits and he has no complaints. He mainly uses the Pepsi and Coca-Cola, Sherwin- Williams and Arrow RV parts. It would be nice to have more benefits, especially tires, as he had 3 flats on his last move. NICA helped him to get a multiyear contract at a fair at one time. He wishes

that they would work at getting more of this accomplished again. He is a big fan of communication committees.

They are a very good thing and he has served on a couple of them. NICA needs to continue to promote these and to develop a stronger voice with the industry.

Ashley Jenks, Jenks Concessions, Inc. of Vale, NC thinks NICA does a good thing to get concessionaires to work together. He makes use of several of the benefits including Pepsi with the rebates, Coca-Cola with its national pricing, CheckInn Direct Card, Hertz, and Sysco. NICA is doing a great job with the NICA News, he feels it is very informative. Ashley believes being involved with NICA helps one to become more involved in the industry. In his opinion “everything is great, NICA is doing a good job” Chris Huston of Huston Enterprises / Huston Family Foods of Dubuque, IA said that his relationship with NICA is very good. Richie George and Connie McKinney were the persons responsible for his joining NICA several years ago. The benefits Chris makes use of are the Pepsi, Coca-Cola, Sysco, and the CheckInn Direct Card. He enjoys reading the NICA News especially articles about the individuals and their businesses. He thought it might be nice to have a free FOR SALE half page column for the members who needed to sell small items for less than $500.

Chris and his family have attended the Florida Week events several times.

The Minnesota State Fair is Alive & Well!

For 12 days, the Minnesota State Fair (MSF) was jam-packed with 1,779,738 Fair guests who ate, shopped, celebrated agriculture, enjoyed lots of entertainment, and found fun! As a guest on Opening Day and Weekend I was simply in awe. Yes, I even found the “Sing-a-long Stage.”

Whenever I met anyone they asked, “how do you like my Fair?” This crowd feels full ownership of its State Fair.

In my meeting with Jim Sinclair, Deputy General Manager, he proudly shared that their food gross without alcohol would be $40 million. That is percapita spending of over $22! Across the street Brad Ribar, CCE, Loret Foods and also a candidate for the 2016 NICA BOD, was roasting BOD Candidate Sandy Class and Susan Fraleigh thousands of pieces of corn—it is a hot and dirty job—with a big smile on his face. I watched him gently spray down his entire crew as they served guests as fast as possible. He calls this fair his “Home” Fair.

I climbed Machinery Hill to find Nate Janousek, NICA West Council Member, who was cooking up BOD candidate, Brad Ribar barbeque. We then during a great day roasting went and found Jay corn Wells, also a NICA West

daughter, Stacy Barona, built their first Giant Slides in 1967 for the National Orange Show and Los Angeles County Fair, both Fred Pittroff and Stacy Barona, in California. In Giant Slide 1968, they built 10 more in the Midwest. Today he still owns the one at the Wisconsin State Fair and the one at the Minnesota State Fair. They are galvanized steel and painted yellow because yellow is the “coolest color in the sun.”

One evening Dennis Larson, Concessions Manager, and Pam Simon, Commercial Manager took me on a tour of the grounds that included Dennis Larson, Concessions the International Manager, Rey O’Day, Interim Village, the Craft Executive Manager, Pam Simon, Commercial Manger Beer building, the touring the grounds Festival area next to the new transportation center that includes two full sit down restaurants. The high roof line and lights of the village made it inviting and the stage at the end was captivating.

The craft beer building was full of millennials and if I had come in on a bus, I simply would never have left the Festival area. It was Donald Olson Sweet Martha’s Chocolate chip Cookie Factory that engaging! We guide ended our evening with a tour of Sweet Martha’s cookie factory and, of course, some delicious chocolate chip cookies.

Lessons learned: 12 days creates urgency to attend that begins at 7:00 AM and goes strong until Midnight. Many “free stages” with good entertainment and facilities create places to sit, relax, and catch a second wind to keep on going.

Fair prices drive repeat visits. Limited menus create the perfect atmosphere for grazing. Well-

Fun-tastic Fair Facts!

The New York State Fair ran this year from August 27 - September 7, 2015, with this year’s attendance hitting 908,147. With midway rides, concessionaires, exhibits and concerts, it has become New York’s largest annual event and an end-of-summer tradition for hundreds of thousands of families from all corners of the state. The first fair took place in Syracuse in 1841 and took permanent residence there in 1890. The 2016 fair will run from August 25 – September 5, 2016. ▲

Starting a Vendor Council Faye Cater, Sales & Special Events Manager, Alameda County Fairgrounds When I started in the Fair Business eight years ago, I really did not know much at all about Commercial or Food Vendor issues. All I knew was that every time I went out on the grounds during the fair, vendors would stop me and offer their suggestions on just about every subject. Vendors are savvy, hardworking business people and just want to be heard, but I came to the conclusion that there had to be a better way.

So in 2009, we decided to start a “Vendor Council.” The goal of the council was to establish open dialogue with our vendors where important feedback could be shared, and agreed-upon ideas could potentially be implemented more quickly and efficiently.

With approximately 70 Food Concessionaires and 300 Commercial Vendors, the plan was to appoint a handful of volunteers to represent the group as a whole. From the pool of nominees, we randomly selected four Commercial Vendors and four Concession Vendors to serve as the first council members. We were really pleased with the result; the inaugural team had many years of experience among them and brought a wealth of knowledge to the table.

Once the members had been decided, the first order of business was to establish some ground rules. We made it clear at the first meeting that the purpose of the discussion was not to be just a complaint session. We also let them know that we could not promise to do everything they might want. Other than that, we encouraged an open forum to express their thoughts and ideas.

Besides listening to their ideas, we also hoped to gain feedback on some issues that would help us to make better, more informed choices from our end. How could we help the Vendors be successful? Were tools such as our Participant’s Manual useful to them? Was the Vendor Office all it could be? Did they appreciate the Fair’s

Vendor orientation and breakfast? How was our contracting process compared to other fairs?

Where could we improve?

The agenda for the first meeting was simply to have a discussion with the council members about what they thought was working well, or not so well, at our Fair. We talked about everything from our contracting process to loadin procedures and stock delivery, and the vendor group was able to offer up some solid feedback on each topic. The opinions offered were just those of the group, not all vendors, but it was a good start. We implemented several changes over the course of the year as a result, and all of the members agreed that they were pleased with the progress.

The next year, council members proactively went out and talked to other vendors and brought in their lists of ideas and suggestions.

The length of the meetings increased, but so did overall productivity. We were dealing with a lot of issues and coming up with some good solutions as a team. We ended up adding two additional members the second year and have since continued with a ten-member council.

Now, six years later, we are proud to say that, together, we have built a truly great vendor council. Over the years, there have been some disagreements and spirited discussions, but overall it has proven to be a very effective way to get things done. Our vendors have provided me with an insight into their world that I never otherwise would have had. They still stop me when I walk around, but now it’s more of a dialogue. We understand their issues and they understand ours.

into group leaders who regularly communicate with the rest of the vendors, making our jobs easier. They will explain to other vendors as to why a suggestion won’t work or they may give examples of where it had been tried before and failed. They keep a watchful eye on the newer vendors and will often mentor them on ways to improve their businesses. Perhaps best of all, they have become our eyes and ears at other fairs. They call, e-mail, send photos, and continuously look for new ways to make improvements. The council typically meets once a year during the fair and then gets together at other fairs or events such as the WFA Conference, whenever possible.

The vendor council has been an invaluable addition to our team, and we could not have accomplished all that we have without them.

We are very grateful to have this group of smart, determined, generous people who give freely of their time to make our fair a better place. We look forward to many more great stories ahead.

The following examples are just a few of the positive changes initiated by our vendor council over the past few years: • Propane Distribution: Council members helped conduct a survey with other vendors and we were able to secure a significantly better deal with a new propane supplier as a result.

• Signage: Members have provided great input based on what other fairs have done.

In one instance, larger, more prominent signs were successfully posted at all shopping zones to increase traffic.

• Concerts: To extend shopping and dining time and possibly attract bigger-name performers, members suggested having one concert per night instead of two. The change was implemented and has proven to be a good move.

• RV Park: Members suggested expanding our RV park into a more lucrative, yearround business. Next year, special vendor IDs will be implemented as a measure to boost security.

• Load-in Procedure: Based on vendor feedback, we plan to implement a staged load-in plan with scheduled times to help reduce congestion and expedite the process.

• Contracts: With the council’s suggestion and help, we were able to cut vendor contracts from 48 pages down to just seven pages, saving all of us time and money.

• Various: The vendor council has helped make improvements in a variety of areas including product selection, delivery and stocking, sponsors, layout, health permits, and more. ▲

A Communications Committee is a group of Concessionaires selected by Fair Management that meet on a periodic basis to discuss mutual needs and concerns. NICA supports and recommends the concept of Communications Committees for every Fair. We recognize that every event is unique with its own set of problems and goals. The Communications Committee is a great tool to address these issues. Any NICA Board Member or the NICA office personnel would be happy to consult with you and help you begin the communication process for your next event.
