NICA stands for National Independent Concessionaires Association, but just what do these four words mean?

This has always been the challenge for NICA. This is an “organization” for “independent” Concessionaires—a true oxymoron. As Independent Concessionaires, we provide a growing segment of the Fair Industry. Commercial Exhibitors continually rely on the Fair Industry to demonstrate, introduce, and sell products both established and on the cutting edge. The variety and multitude of food is continually one of the top reasons people attend Fairs.

IAFE, the International Association of Fairs and Expositions, is an organization for Fairs. Does this mean all the Fairs are the same because the word “independent” is not in their name? Of course not! As a Concessionaire who works at a number of different events throughout North America, I can tell you that each Fair definitely operates independently from one another. There are no two alike.

Just as a Fair from the East Coast is different from a Fair in the Midwest, it is different from a Fair on the West Coast, it is different from a fair in the South, and a State Fair is different from a County Fair; the same holds true with Concessionaires throughout North America. Plus some Concessionaires operate one or two trailers while others operate 10 or more. We all operate

Thoughts from a This month’s Statement of Communications & Management Philosophy is from one of the originators of the CCE Program, SanDee O’Brien, CCE, O’Briens’ Food Services: “Having grown up in the Concession Business, I have seen many changes in the ways different aspects communicate with each other.

Today there is definitely a much wider corridor through which to travel in order to benefit all. With the help of others, I hope this trend continues to widen.

It has always been my policy in dealing with my employees to never ask them to do something I personally would not do. My husband claimed I do this to a fault - it is not really ncessary for me to physically mop the kitchen floor - teach someone to do it the way I want it done. I suppose my teaching background runs over into my ‘Concessionairing.’ I have always found ‘visual’ learning to work SanDee O’Brien, CCE bettter than ‘verbal.’ It comes naturally for me to ‘show’ rather than O’Briens’ Food Services ‘tell’ employees their job.

Member’s Voice The greatest part of NICA is the Membership!

Their Voice influences where the organization is headed and what it can improve. The NICA Office has been continuing their survey of responses from Renewing Members.

Eric Wade, Wade’s Pan Pizza out of South Bend, Indiana, likes his relationship with NICA because of the money he saves with his Pepsi benefit and the CheckInn Direct. He works mainly in Indiana and Wisconsin from mid-May to the beginning of October at Fairs and Festivals.

When asked about the Nica News he said, “I love to read the stories about other concessionaires and how they do things.” This is the only business he knows of where the competition for the same dollar will help one another. The example he sited was once his fountain broke down and Pepsi could not fix it, nor could they get another machine before the weekend, one of the Concessionaire had a spare and loaned it to him until he could get his fixed. This is one of the reasons he has been in the business for 37 years. Seems to him that this is unique and there is always someone who comes to your aid. He now has a grandson learning the operation and that makes it fourth generation. He admitted that he does not go to the conventions or get involved very much with the “political end of NICA” as his wife and daughter both teach school and it is hard to go during that time.

Duane Hickman, CCE, Quality Concessions out of Kiel, Wisconsin, said that his experiences with NICA have not been bad. He said that he does not get much of a chance to talk with a lot of NICA people, as he is usually working the stand. He makes use of the rebates from Pepsi and uses AutoZone and GraybaR. Duane enjoys working with NICA by helping with a bowling tournament and donating the cheese at the Las Vegas Wine and Cheese event. He feels there are two things that are most beneficial about NICA, the discounts and NICA’s attendance at conventions where they bring up issues in front of others, “keeping communication open.” Attending conventions is

very educational. Showing up at conventions can cause a fair board to take notice. To Duane, “NICA is a lot like insurance—it’s in the background—you have it, but it comes to the forefront only when you need it.”

David Curto, Airbrush by Curto of Stuart, Florida, said he joined NICA to make use of the benefits. Not being a food concessionaire he uses AutoZone, Arrow, Sherwin-Williams, and First Data. He feels that they all “come in handy and saves him lots of money.” He would like to see us get one for campgrounds and roadside service as well. The NICA News is very informative and he especially likes the ”interview type material.”

He never got a chance to attend the Florida Week events as he was always working. He is now working in the Northeast and said the biggest difference is that there are lots of County Fairs that are run by volunteers only during the fair with closure during the rest of the year except for the bigger Fairs. He remarked that he had been a member for almost ten years.

When Purchasing Your Clover Through First Data Tina Walker, First Data First Data introduced Clover to its family of technology in 2013. Clover is an exciting all-inone business solution. It brings basic register functionality, inventory management, employee tracking, and secure payment acceptance into one complete package. Through the partnership with NICA, First Data Business Consultant Tina Walker has had the great opportunity to work with Fairs, Concessionaires, and audit task forces across the NICA footprint. She has been able to find ways to bring all three industries together to embrace the Clover technology.

With the wonderful support of First Data’s Vice Chairman Joseph Plumeri, Clover apps were quickly created by the Clover team in Mountain View, California. Then, First Data VP Roderick Kersch and Sales Manager Steven Wrobel worked with First Data Finance to create pricing strategies for NICA Members.

Greetings: A Letter from the NICA Board of Directors WE are often asked, “What does the Board do?” We know that we communicate through NICA News and NICA Now about our travels on the road, topics that are of interest to all of us, and by offering good wishes and practical advice; however, we don’t very often talk about the process we use to accomplish the work of our membership organization.

In 2012, the NICA Board of Directors (BOD) realized that with each new President, they took on a new set of goals and dumped the one from the year before. Projects were not completed and there was little continuity of vision. During the Spring Planning session, we did an in-depth look at our mission statement and work process and agreed to make some changes. We adopted a strategic planning process that would have long term and short term goals organized around the four ideas we felt were the most important to the organization: 1. Growing Membership 2. Being A Voice In The Industry 3. Increasing Member Benefits 4. Becoming Financially Stable WE update these goals and assign responsibility for them each spring, report in on them quarterly at BOD meetings, and evaluate their progress during the Las Vegas BOD Meeting.

We believed if we adopted this process it would set the BOD’s direction and priorities for the future, simplify our decision making, efficiently align people and financial resources, provide us a way to communicate a clear message,

accommodate the flexibility required for each new President, BOD, or Executive to bring their new goals on board, and it would be easy to measure progress.

It is fair to ask, “Is the strategic planning process working?” “YES.” Let’s review some results.

1. Growing Membership We realized that, though we are first a membership organization, we were neither focused on bringing in new members or retaining old members. Today, every person who has a leadership role in the organization is required to bring in at least one new member. We analyzed where we had limited representation and began recruiting members from underserved geographic areas. Our primary goal is to increase membership by 100 annually through retention of current members and recruiting new members. YTD, we have retained more and added more than prior years. We have not yet reached our goal; however, we have stopped the bleeding and see the possibility of its success in the coming years.

2. Being a Voice in the Industry We have begun building a war chest by setting aside $10,000 a year for lobbying with our sister organizations to address legislative concerns in our industry. a conservative investment policy, and contribute $10,000 annually to a reserve fund.

With James Romer, Iowa State Fair Director, I saw 200 acres filled with Fair guests who camp on the Fairgrounds during the Fair, stood in awe of the largest bull and sow in the state, smiled at the sight of the sculpted butter cow, and found a sirloin tip, a mashed potatoes dinner, and a green bean dinner. He and his family are headed to the North Carolina State Fair where he will begin a

new chapter in his life as the Assistant Manager of the Fair. NICA sends our good wishes with him.

I drove to St. Louis to fly home. I stood in awe as I realized that 150 years ago the Mighty Mississippi was the gateway to the West as commemorated by the Arch. Today, I was flying to California and the West is marked by crossing over the Rockies. Just as pioneers built this country one community at a time, NICA is embracing members and their different styles of operating from regions all over the country. Sleep Deprived?

Don’t Worry, You’re Normal!

Rey O’Day, Interim Executive Manager During 2014, I visited 23 Fairs and numerous conventions and association gatherings which gave me the opportunity to converse with thousands of folks in our industry. I treasure these conversations and find them interesting; however, I have also noted there is a common lament: “I am so tired.” “I haven’t had a good night’s sleep in weeks!” “I can hardly keep my eyes open.” “I wake up in the middle of the night and can’t go back to sleep.” I think we all sleep in order to wake up feeling refreshed and ready for a new day; however, we all seem to share “sleep deprivation” caused by the Fair Season’s busy lifestyle.

Being curious, I decided to do some research on this phenomenon and learned some obvious things like less stress, more exercise, sleep in a dark room, keep the same bed time, better diet, no afternoon caffeine, and putting down the phone all provide for better sleep efficiency. All things, I would like to point out, that are impossible to do during Fair Season. Science is advancing the quest to understand sleep. Let me share a few of those findings that I think you will find reassuring.

Are you one of those that believe you slept all night and never moved? In the 1950s, it was believed that normal sleepers lay motionless throughout the night. Then Harry M. Johnson, a psychology professor at Ohio State discovered that normal sleepers change positions from 20 to 85 times a night, with 35 being the average.

When we toss and turn more, we wake up groggy; and any less makes us stiff and sore. I vow to be more patient with my tossing and turning.

Are you one of those that wish you would sleep for eight hours straight? Well it seems that for most of the human history before electricity, people slept in two shifts: sleep four hours, wake for an hour or two, and then sleep another four hours. Further, Fitbit’s sleep research devices 26

indicate that most sleepers wake up between three and 17 times a night with 9.3 being the average. I find comfort in knowing I am not the only one waking up and wandering around. I will no longer fret about those of you who stay up late balancing books, sleep, and then get up to meet early deliveries before returning to sleep.

Are you one of those who cannot go to sleep because you are afraid you will forget the list in your head? I find that calling myself with the list lets me go to sleep assured that I will be reminded in the morning. Philippe Kahn, CEO of Fullpower Technologies, observes “the sign of good sleep hygiene may not be how many times you wake up, but rather how rapidly you fall back to sleep.

Sleep should be like hunger. Eat only when you’re hungry and until you’re satisfied.”

Are you one of those that sleep one night and wake up feeling well rested and then sleep the next night and feel like you never went to sleep at all? It seems there are four typical sleep cycles: awake, REM (dream), light, and deep (which is the most restful). However, one can actually sleep less and feel more rested when they wake up during the light part of their sleep cycle. A polysomnography test can help you learn your sleep cycles.

Here are some quick facts: people around

the world get more sleep in winter and less in summer. Fortysomething males are the demographic group getting the least amount of sleep (sorry guys). Women sleep an average of 20 minutes longer than men. (Yahoo!) Genetics plays a role in whether you need six hours or eight hours of sleep and whether you are a night owl or a morning person.

We all have an internal clock that tells us when to rest and when to produce. It is important even during Fair Season to pay attention to it.

Here is one reason why: according to Fortune Magazine, the National Highway Traffic Safety Administaiton estimates that drowsy driving causes 1,550 deaths and 40,000 injuries annually in the US. Further, ignoring it produces grogginess, digestion issues, weight gain, and chronic health issues. One solution for sleep deprivation is the 20 to 30 minute power nap which restores alertness, enhances performance and reduces mistakes and accidents.
