The Passing of the gavel The IAFE Convention in Las Vegas was a huge success. The NICA Board participated in many workshops and round tables. We met with some of the leading management teams in our industry to discuss issues that have been major concerns. I was extremely proud of the way the Board took the time and the effort to attend as many of the programs as possible. The NICA workshop on how to use the media to promote your event was a huge success with standing room only. I would like to thank The Best Around for sponsoring the workshop. One of the other opportunities to have open and honest conversations was the Advisory Board Breakfast. It was a chance to meet with a wide assortment of Fair Managers from all over the country to discuss topics relevant to the Concessionaire and Fair relationship. I would like to thank R.E. Smith Tom Sattler, CCE Concessions for sponsoring the breakfast. I believe that the time that the NICA Board took out of their busy Outgoing NICA President schedules to spend on the behalf of all our members was well spent. This Board has gone above and beyond over the past year to promote NICA and it’s values at the expense of their own businesses and families on their own money. They don’t do it for themselves, they do it for all of us. I would like to thank each and everyone of them from the bottom of my heart for letting me be a part of that process as President this year and I hope that I leave NICA a little better than before. It has been a pleasure to serve you, the NICA member. As always remember:
“Together We Can!” In life we are given many chances and opportunities. With that said, I have been asked by the Board to serve an additional year as NICA’s President. I will take office in February at our General Membership meeting. I have already begun my planning for the upcoming year with my theme being about Membership. Not only are we looking for new members but we are trying to retain the ones we have. In the beginning, part of the reason NICA was formed was for a voice in the industry and I want to get back to our roots and let our voice be heard. Thoughout the year I would like to feature articles in the NICA News about ways to help our Membership. Currently, I am seeking information about expenses and how they affect your bottom line. An exciting time in our business year is upon us. In January, in Anaheim, CA, there is the WFA Convention that hosts the NICA Sysco Marketplace. Then in February, there is the NICA Business Expo and Fare Foods 2014 Food Show, taking place in Tampa, FL. Along with these events, we also have the extravaganza at Gibtown and the OABA gathering to keep us busy! Enjoy these weeks and all the festivities that occur within; it’s a time to rekindle old friendships and jackpot about new ideas! 6

Executive Director's Report In one of my previous columns, I asked a question, “When do you get your best ideas?” I know that college football isn’t just a “Southern” thing, but we do take it very seriously. There are many reasons for how we choose our favorite team. For me, the favorite team has been based on the coach. How does the coach go about developing a winning team? The three A’s: ability, aggressiveness, and attitude! What does he believe? Is he committed? Does he use the team’s success as a notch on his resume? Is it the player’s fault if they suffer a loss? Does he influence or intimidate? Years ago, in Columbia, TN, my sons played Pop Warner football. Just like little league, the coaches were parents or members of the community. Some were about winning while some were about helping kids learn about the game of football and how to be a member of the Alta Mosley NICA Executive Director team. Teams were formed by drawing names out of a hat. Coaches worked with the teams that they were given. I watched kids that couldn’t form a straight line, even when all they had to do was stand on the one on the ground, become a team that ran onto the field and hit that line perfectly without even looking down. I saw kids that might not ever play the game of football again that understand the game as well as learning how to be a team player. Children will learn what you teach them; it’s how you teach them that makes the difference. The same principle applies to our adult life. The media folks will be all over a winning team and even more so for an outstanding player. One of the interviews I heard this year referred to the possibility of a team winning the League Championship and going on to competing for the National Championship. The young man being interviewed was a true credit to his coach, his team, and his university. The young man’s answer went like this: “Coach says we play one play at a time, one game at a time. He says we eliminate the clutter and focus on the job at hand.” Absolutely profound! A simple plan with focus! Coaches aren’t limited to sports; they are our employers, our supervisors, and our friends. We never know the impression we may be making on another person’s life. Are we being the best we can be? Are we encouraging those around us to do the same? One of my goals, both personally and professionally, for 2014 is to Eliminate the Clutter, Live, and Work One Day at a Time. Let’s work together and make our visions a reality.

Association Announcements NICA’s 2014 Scholarship Program We are now taking applications until April 1, 2014 to qualify for this year’s scholarships. A total of $8,000 will be awarded to the lucky winners. Congratulations to Jerry Hammer, Executive Vice-President and General Manager of the Minnesota State Fair, St. Paul, who was inducted into the IAFE Hall of Fame during the IAFE convention. The Hall of Fame Award, the highest honor bestowed by the IAFE, is presented annually in recognition of an individual’s distinguished achievement in, or contribution to, the fair industry. Hammer and his wife Debby are life-long residents of St. Paul, and are strong advocates for the fair industry.

Judy Henbury, NICA West Council Member, is the proud owner of J & M Concessions, which has been chosen as Business of the Year for 2013 by the Nipomo Chamber of Commerce in Nipomo, California. Judy sells hot dogs, corn dogs, ice cream products, mini donuts, snacks, and hot and cold beverages at fairs throughout Central and Northern California. When not traveling, she is active in Rotary and other community activities.

The IAFE Convention is an event we look forward to all year. It is a time for sharing ideas, meeting new people, visiting with friends you may only see once a year. The workshops and other presentations are great learning opportunities. NICA’s Board of Directors met in Las Vegas during the IAFE convention to work (and play) and they are bringing home the results for all of us. The first gathering for the NICA Board of Directors was to update the progress on our 2013-2014 longterm and short-term strategic goals. All agreed we have the correct four goals for our organization; however, we want to prioritize them in a different order: Strengthening Membership, Being a Trusted Voice in our Industry, Increasing Benefits and Group Buying Power, and Building Financial Stability. Of course, “accountability” is the mantra for bringing these goals to fruition. The Membership Outreach program started with phone calls being made to each member. If you have not gotten your call, you can expect a phone call from NICA just to say, “Hi, how are you today? How can we help you?” The response from the calls already made has been very positive. Any issues that are mentioned

are being addressed as quickly as possible. The goal of this program is that our NICA members will know that they are important and we are there to serve them. The question remains, How do we find New Members? We do this by inviting our fellow concessionaire vendors to join NICA. Renew your membership when it arrives. Have you noticed the NICA News has more photos of all of us? The Board and the NICA West Council have agreed to bring in new members and fully participate in our Certified Concessionaire Executive (CCE) program. Learn about the newly approved “Good Neighbor” program that recognizes that our members often go way beyond what is expected of them in order to help other people and fairs out of difficult situations. All of these are ways to celebrate that as NICA members, “Together We Can!” Tony Trafton has represented NICA West on the Board of Directors for three years. With the end of his term near, he introduced two successful motions Dan Lusenhop at his first to the Board at this Board of Directors Meeting meeting. NICA will now create a fund in which $10,000 will be added annually to work on industry wide issues such as health departments and worker visas. This will facilitate NICA in becoming a stronger, more professional voice in the Fairs and Events industry. He also has written a Regional Council Implementation Plan designed to activate members in local activities and concerns, develop leadership, and offer a focused geographic presence for NICA. Dan Lusenhop, 2nd generation owner of Jeanne’s Artichokes, attended his first Board meeting as the new NICA West representative. The Wine and Cheese event presented by WIN on Sunday night was very successful. On Monday, NICA hosted the Industry Appreciation Reception. It was a great opportunity for our members and our Fair partners to visit. NICA is fortunate to have Past Presidents and Board Members that remain involved. There were seven Past Presidents in attendance that evening including Rick Busse, CCE, Tom Hodson, CCE, Tim O’Brien, CCE, Ron Smith, Adam McKinney, CCE, Larry Sivori, and Greg Miller, CCE. NICA and OABA had booths outside the trade show. The NICA booth was staffed by Paulette and Norm Keene, Justin Sattler, Jennifer Giordano, Dan Lusenhop, Tony Trafton, CCE, Tim O’Brien, CCE, Don Delahoyde, CCE, Dale and Cie Smith, Norm & Paulette Keene Kim and Alan Barr, Don Kenna, Tom Sattler, CCE, Tom Hodson CCE, and Greg Miller CCE. Everyone mentioned “It was a great opportunity to greet friends and share news about NICA.” On Tuesday, representatives of both the NICA Board of Directors and the NICA West Council met

with Sysco representatives Amy Davis-Smith, Drew Ammerman, and Mark Neagles, and Source1 Purchasing representatives Molly Fierro and Bob Bassett to measure the success of the NICA Sysco Marketplace and plan for its future. The most growth occurred in San Diego, Arizona, and Central California. Sales have doubled to 7.2 million. The most purchased products were condiments from Heinz, paper products, poultry from Foster Farms, and oil from Ventura. A more detailed report on this meeting will be in the next issue of NICA News. The workshop “There’s A New Marketing Team in Town: Fairs and Concessionaires Working Together” was very well attended. The panelists Donna Attendance was high for the Ruhm, Deb “There’s a New Marketing Team Auschmore, Kevin in Town” Workshop McGrath, II, and Dominic Palmieri gave examples of things that can be done to not only attract guests to the Fair, but will bring them to the participating Concessionaire. In addition, the Round Table discussion on “Finding and Retaining Great Concessionaires” was also well attended.

Board Members attended the various Zone Meetings, sharing the message that NICA wants to be a part of their meetings as well as their State Association meetings. We received invitations from five states to be a part of their Conventions. Our time in Vegas closed with our Advisory Committee meeting where we collaborated with our Fair Manager members regarding concerns, trends, and successes in our industry. The discussion included the importance of reasonable rents where Fairs and Concessionaires can earn prudent profits while the value of local community and admission gate promotions will encourage customers’ return visits. It was a successful gathering where ideas discussed in Las Vegas will become actions in the Fairs and Communities to which we return. Viva Las Vegas! ▲ January / February 2014 NICA News

Last year’s Food Show was a tremendous success... the best Food Show yet! We, again, expanded the Food Show allowing additional vendors to exhibit. We are excited to announce that the 2014 Food Show will be held at the newly renovated Sheraton Tampa East (formerly the Crowne Plaza). The Sheraton has recently completed a $10 Million renovation and is absolutely beautiful. The Sheraton will allow us more flexibility with all the attendees due to the location. The hotel offers
kings, doubles, and suites; however, all suites are sold out. Included with your stay will be a complimentary buffet breakfast (two per room). Super Dog on a Stick How long have you been a concessionaire and a NICA member? Rusty Groscurth: I suppose I have been a concessionaire forever. I was born the same time that the amusement industry arrived in my parent’s lives. I expect that it was a rather confusing time for them. As for NICA, I joined early in the first year that it was organized. What was the first thing you remember about NICA? RG: I remember the founding fathers arriving at the Florida State Fair, from the Fair in West Palm Beach. There they had gotten together to brainstorm the possibility of creating, and the benefits of having, an organization to represent and work for the needs of independent concessionaires. At the Florida State Fair, a meeting was called, ideas presented, and suddenly, NICA was happening. Upon signing up with the new organization, I received one of the low membership numbers (#134) and still have it today. How and why did you get into the concession business? RG: I suppose I got into the concession business in 1954 when my father decided to see if he could make any money selling hot dogs at his brother’s carnival. It seems to have worked. By the mid 1970’s when my father and mother, Russell and Nina, retired, my brother Randy and I each took parts of our parents’ business and here we are today.
Rusty, Robert, Norine & Russell Groscurth If you were not a concessionaire, what would you be? RG: I always thought that I would like to build custom concession trailers. I had what I thought were some relatively clever designs that would have value in the concession business. Unfortunately, I would build them so slowly that I wouldn’t have been able to make any money, and I would have been fired if I worked by the hour! I think I should stay where I am. What do you like most about being a concessionaire? RG: The concession business is a microcosm of the American Dream. If you work hard, you can make a good living, and you can be creative about your approach to your work technique. It is a place where family and friends can be together and work together much more so than in the “real world.” I am quite content to be here. What is your best selling food item? RG: Our bestselling item is our only food item. The “SUPERDOG” is our specialty. A “gourmet” dog on a stick. Do you have any new items coming to your menu this year? RG: Generally, we don’t do new items. Our yearly changes involve how to do what we do better, fresher, faster, brighter, etc. Our business philosophy is to provide a very narrow menu and to present those items as well as we can.

What is something people do not know about you or Super Dog on a Stick? RG: Most people of this generation are not aware that my father is the originator of the “Long Dog on a Stick.” When I was a youngster, our family was operating at the
Jacksonville Fair in Florida, where we were selling short dogs on a stick and foot long dogs on a bun. My father, always looking to create something out of other things, got a balloon stick from the concession next door, cut it in half, and installed it in one of our foot long hot dogs. He dipped it and fried it, and Super Dog was born! How has the concession business changed since you first started out? What would you change? RG: It could take pages to describe how the concession business has changed, but in a couple of sentences, it has gone from tents carried in the back of an old pickup truck to state of the art concession units, cooking equipment, beverage systems, fire suppression systems, decorations, and signage. All of these things rival the finest in mall food courts and corporate fast food operations. What has been the highlight of your career? RG: The highlights of my life are a great mother and father to keep me pointed in the right direction, my wife Norine, our two 14 year old sons Russell and Robert, our extended family, and close friends. As for my career, the aforementioned persons, with my good friend Terry Gibbs included, have helped this business earn the approval and endorsement of all the Fairs at which we operate. What has been most influential to your success within the past five years? RG: Over the past few years, we have somewhat reduced the size of our operations, primarily reducing the number of marginal or minimally profitable events from our route. These logistical changes have allowed us to do an even better job of focusing our time and energy on doing the best that we can for the Fairs that have been best for us. What is the funniest thing that has happened in your concession career or travels? RG: A good life is filled with many amusing and funny anecdotes; far too many to list in this small space. However, my children are highly entertained by a multitude of stories about RV sewage holding tanks. Most of these stories are not appropriate for a food service article...
A Big Crew on a Big Day: Chantel, Matt, Adrian, Ken, Josh, Glenn, Wayne & Melanie What do like to do in your free time? RG: Free time? A little boating and a little shooting; mostly raising children. What do you like best about NICA? RG: NICA has put a professional face on the independent concession business. Much like the OABA did years before for the carnival industry. I think NICA has presented us as an industry to our fairs, suppliers, government, and to each other in a more professional light. What are looking forward to this year? RG: I am looking forward to everyday of my life, to everyday working with the management and staff of some of the greatest fairs in this country, and hopefully making enough money to keep gas in the car and the kids in school. Is there anything else you would like to share with NICA members? RG: If you have been in the concession business for a while then you have learned that there are some things that you do rather well. There are probably some things that you do better than most of your competitors! Don’t try to do everything for everyone. Don’t try to sell every item that you see being successfully sold. Aim for your niche, focus on what you do well, and concentrate on doing it extremely well. Look at McDonalds, KFC, Dominos, Dunkin, Arby’s, DQ, and Subway. You know what these companies sell. They seem to know what their focus is and to do it rather well. Many portable concession operations have a similar focus, but many take a scatter gun approach to their product selection, selling everything in sight and doing none of it particularly well. I encourage everyone to find their niche, work hard at it, do it well, and success will follow. Thank you to our families, fairs, staff and friends for helping Super Dog to receive this honor! ▲

Facts About the UNIFIED CARRIER REGISTRATION AGREEMENT Contributed by Fred Simcic, Truckers Accounting & Permitting Service, Inc. If you operate a truck or bus in interstate or international commerce, the federal Unified Carrier Registration Agreement (UCR) applies to your business. The UCR Plan and Agreement are part of a federallymandated, state-administered program that went into effect September 10, 2007. Under this program, states collect fees from motor carriers, motor private carriers, freight forwarders, brokers, and leasing companies, based on the number of qualifying commercial motor vehicles (CMVs) in their fleets. However, this applies to power units only; the law was recently amended so that, beginning in 2010, only power units would be counted as qualifying CMVs and trailers are now excluded from determining fleet size. The revenues generated will be used for enforcement of motor carrier safety programs. So anyone that has a commercial vehicle must also have the UCR and pay the current fee. If you are required to have the UCR and you do not, the fines begin at $300 per unit, per instance. Please note that this is not for intrastate vehicles and applies only to interstate and international vehicles. You can apply for your UCR online at www.ucr.in.gov (keep in mind there are also costs for using credit card or ACH) or contact Truckers Accounting and Permitting Service at 1-800-553-8277. ▲

This month, we are focusing on deep fried snacks to warm you up during one of the coldest parts of the year. We know that not everyone has a deep fryer, though, so you can also use a deep pan or pot.

Ingredients: • 4 Scoops Well Frozen Ice Cream • 2 Eggs, Beaten • 1 Cup Corn Flakes or Other Cereal • 1/2 Cup Coconut • 1 Teaspoon Cinnamon • 1 Pinch Chili Powder • Vegetable Oil (for frying)
Ingredients: • 1 Teaspoon Salt • 1 Teaspoon Black Pepper • 1 Teaspoon Chili Powder • 1 Teaspoon Garlic Powder • 2 Eggs (slighty beaten) • 1 Cup Beer (optional) • 1/2 Quart Vegetable Oil (for frying) • 8 -10 Medium Jalapeño Peppers
Directions: 1. Give the 4 ice cream scoops a perfect round. 2. Put the scoops back in the freezer for 15 minutes. 3. Give them an egg wash once you remove them from the freezer. 4. Roll on the crushed corn flakes or cereal, coconut, cinnamon, chili powder, or other ingredients and make sure they have a nice coating. 5. Put them back in the freezer for 20 minutes. 6. Repeat steps 3-5 twice until well coated. 7. Heat the oil until it is 375°F 8. Deep fry the ice-cream quickly for 5-8 seconds. 9. Make sure that the oil is very hot or the cereal coating won’t get its golden color.
Prep Time: 5 Minutes Cook Time: 5 Minutes Total Time: 10 Minutes Ingredients: • 1 (20 Ounce) Package of Oreos or Similar Cookies • 2 Cups Pancake Mix • 2 Eggs • 1 1/2 Cups Milk • 3 Teaspoons Oil • Vegetable Oil (for frying) Directions: 1. Blend pancake mix, eggs, milk, and 3 tsp oil until smooth. 2. Preheat your deep fryer to about 375°F (use a thermometer if you wish to deep fry in a pan). 3. Dip the cookies in the batter mixture until totally covered and then place in the hot oil 4. Keep checking and turn over the cookie when bottom side is brown. 5. Keep a close watch because it only takes a short time to brown, but when it is done, remove cookies, sprinkle with confectioner’s sugar and enjoy!
Directions: 1. Mix together flour, salt, pepper, chili powder, garlic powder, eggs, and beer together until well combined. 2. Heat vegetable oil in a deep fryer or a large heavy pot to 365°F. 3. Dip/coat the jalapeño slices (halves or quarters) into the batter, then carefully drop into the hot oil. 4. Fry until browned (the slices will float to the surface when fully cooked, they should be browned and crispy). Pair with some cream cheese or other delicious dipping sauces of your choosing. Enjoy!
