Retirement Announcement Dear Members and Industry Partners, The National Independent Concessionaires Association would like to announce the retirement of Ms. Alta Mosley as Executive Director. She is electing to spend more time with her family. Her last day was Friday, February 6, 2015. Alta has been a tremendous employee. Alta has been a part of the Outdoor Amusement Industry for quite some time and enhanced NICA during her tenure.

Alta’s retirement is our loss, but a well-deserved respite for her. We all wish Alta the best.

President’s Message Joe Potillo, Jr., NICA President

As I sit to write this month’s message, there are so many positive thoughts that come to my mind.

The 2015 Business Expo held in Tampa, Florida was an overwhelming success. Fair Management and Concessionaires alike came together for informative workshops and presentations on how to enhance our respective roles and best serve our customers.

The Board of Directors were hard at work from Sunday through Wednesday in meetings and the hands on activities of the Expo. The leadership of Randy Reichert, CCE and our dynamic office staff helped make the week a most positive experience for all who attended.

We were especially honored to have Mr. Jim Tucker from the IAFE attend our Expo and speak very thought provoking and powerful words to us about where we are and gave insight as to where we should focus our future. NICA was also

honored to have Mr. John Sykes, Chairman of the IAFE Board, present to address us as well. It indeed was our pleasure to have them along with all other Fair Management and Staff that joined us.

No Business Expo would be complete without the involvement of our long-time partner Fare Foods, who produces a SOLD OUT Food Show each year. Their tremendous efforts to support our organization is remarkable.

NICA has also had a busy winter season attending various Zone and State meetings that have taken place. Every place that the Board or Staff has traveled has been a positive experience.

The “What is NICA? A Discussion about Options” program is off to a great start, and will be our speaking piece this year.

In closing, as some may know by now, our Executive Director Ms. Alta Mosely has retired from NICA. She was dedicated to NICA, and we wish her the best as she enjoys her time with family and Seminole Football!

Don’t forget our theme this year “GET INVOLVED!” This is OUR NICA, so each member should take ownership and pride in being a member, for truly “Together We Can!” ▲

The old saying goes, “What happens in Vegas, stays in Vegas.” I disagree.

I participated in the IAFE Convention this year for the first time.

It was an awesome learning experience, as a Concessionaire, and as a NICA Board Member. The educational opportunities at an event such as this, along with the communication that occurs are priceless. So allow me to share what I learned.

I participated in a session that was to be an open conversation between concessions,

both food and commercial exhibitors and fair management. The room filled quickly with over 50 attendees. The mix was half Vendors and half Fair Management.

The session started with a discussion about the “hottest new food item” at your Fair. Fairs use these items and the Concessionaires that make them as their media sweethearts. It gives the media a focus for the Fair and can be beneficial for both the Fair and the Vendor. Fairs did note that these products don’t usually have a long life and that every year they do promote their Concessionaires to come up with a new one. One Fair offers a championship-type wrestling belt as a prize to the newest food item produced.

The discussion then turned to power : needs, use and access. Every Fair wants the newest and brightest concession trailers on their midway.

Providing this requires more power and some Fairgrounds are having difficulty doing this.

One Fair said a recent quote for infrastructure improvements needed at his facility came to 10 million dollars. In an effort to decrease their Fair’s power usage, one event asked their vendors to change over to LED lighting where ever possible.

Vendors were asked to change over to propane fueled equipment and that fair also brokered a low price for propane from a local dealer for it’s vendors.

This naturally lead the discussion to COMMUNICATION. On a good note, a majority of the Fairs represented in the room, had a Communication Committee or Meeting at their Fair. A NICA Board Member did remind the room

that we offer a brochure with guidelines to starting a communication meeting. Most admitted that the first one was the hardest, but that they obtain invaluable information at the meetings. One Fair shared that communication with their Vendors can solve large and small problems and Fairs need to use their Vendors as a resource. Some Fairs use exit surveys to obtain input from their Concessionaires. Vendors were asked how we wanted the Fair to communicate during the event.

Some Fairs print a daily update that is handed out to the Vendors, others use email and/or daily text messages. As a group, the Vendors shared that we didn’t really care how it was done, but that we appreciated the effort the Fairs were using to keep us informed.

The take away from this session is that Fairs are asking questions and listening to our answers, we are offering honest answers, and it can only get better. “Together We Can!” Life is Good. ▲

& What October 2015 Means to You Tina Walker, Senior Commercial Business Consultant, First Data It’s the top question on everyone’s mind: “What are we doing about fraud?”

Merchants of all sizes are concerned, and for good reason. Fraud losses are hitting record levels, and they’re growing. Over the last few years, total losses, year-over-year, have been increasing at a rate of 30 to 50 percent annually. A July 2013 study by Aite Group estimated that, in the U.S. alone, 2013 Issuer fraud loss was projected at $10.1 billion.

Counterfeit card fraud losses account for more than half of that total.

First Data is solving clients’ fraud concerns.

It begins with EMV*, the embedded card chip technology that’s replacing the magnetic stripe, which has proven to be relatively easy for cybercriminals to decode. EMV isn’t new to First Data, an approved EMV transaction processor globally since 1999. Additionally, First Data has been certifying and processing EMV cards at U.S. merchant locations since 2011.

EMV helps protect issuers, merchants and consumers against losses from the use of counterfeit and lost or stolen payment cards at the point-of sale. EMV technology is significantly more secure than the magnetic stripe. But EMV isn’t the whole story.

EMV is one piece of a multi-layered security approach. EMV, along with encryption and tokenization, addresses clients’ complete security concerns. Here’s how they work together : • EMV – protects against card counterfeiting and lost and stolen cards. The chip-based technology authenticates the payment card while the PIN reduces the risk of fraudulent transactions using lost or stolen cards.

• Encryption – protects data in use and in motion, from the moment the card is swiped until it reaches our secure processors. *EMV™ is a trademark owned by EMVCo LLC

Encryption effectively safeguards data from eavesdroppers as transactions are authorized.

• Tokenization – protects data at rest.

Tokenization increases security for merchants by replacing cardholder data with anonymous tokens, making it impossible to steal card data from merchant servers or POS; it also reduces the cost and complexity of compliance.

Come October 15 of this year, merchants who are not prepared to accept chip-enabled cards will be liable for some types of fraudulent transactions. Currently, the fraud liability is the responsibility of the financial institution itself.

Although EMV is not a government mandated requirement, the fines and fees to a merchant not ready to accept EMV cards will not only be costly, but damaging to the merchant brand should fraud occur.

“I’m not sure if I have ever had Parnell Foods a clearly-defined CCE Earned in 2002 management philosophy. I simply try to communicate openly and honestly with all people, especially those with whom I do business, whether it be Fair Management, wholesalers, business associates or employees. I have said many times, and I still believe, that it is not enough to pay employees well; they must also be treated well.

The message should be conveyed to each and every customer that their business is not only welcomed but appreciated. A pat on the back or a ‘thank you’ to a supplier or anyone else who goes out of their way to help you is not necessarily a requirement, but rather a moral obligation.

This philosophy could be described in one word: COMMUNICATION. I firmly believe that communication is the key to success and the lack of it is the undeniable reason for failure. There is an old saying: ‘Be careful what you ask for, you may get it.’ But without communication, nothing happens. I believe we should all endeavor to make something happen.“ ▲

“In my opinion, communciating with Parnell Foods your employees CCE Earned in 2002 and with the Fair Committee is a very important part of this business. Employers must be able to talk with and listen to their employees. A big part of communicating is listening. Sometimes we hear the words but don’t really hear the complete statement. Communication is so very important to keep a smooth-running operation.

very important part of our business. Without this conversation, we will be acquiring the wrong stock items for our operation and then this will cause problems with our day-to-day business. To make our business run smoothly, we all have to have conversation daily. As our NICA motto states, ‘Together We Can.’ We must all be open with our conversation with each other. In my opinion, you can accomplish much more in our business by being honest and considerate with our employees, our Fair committees and our suppliers than by making demands of them. I have always heard that you must treat others as you would like to be treated. Member’s Voice Continuing where they left off on the last issue, the NICA Office has been recording the responses from their survey of renewing members.

Sissi La Fratta, of Perfection Concessions, Inc. said that her relationship with NICA has been wonderful from its inception. She especially enjoys the social aspects and the ability to meet with fellow concessionaires. She and her husband, Jimmy, make the most use of the Auto Zone, Check Inn Direct, and Coca-Cola benefits.

They both look forward to receiving the NICA News and feel that it does an excellent job of communicating with the members. She feels that anytime she calls the office that they are always very friendly and mainly helpful. She hopes that NICA can continue to work with Management and Concessionaires toward keeping the costs down for the consumers. She is happy in her relationship with NICA. James Kropp, of Kropp Enterprises, Inc., thinks NICA is a good organization for providing camaraderie with other people in the business and improving relations with event management.

He tries to attend the Florida Week every year, his favorite part being able to get together with others when they are not working. He has also enjoyed the seminars and the Fare Foods Food Show of course. He is “slowing down” and not as “active as he used to be.”

Fred Giovannoni, of Mr. G’s Concessions, has been a member from the very beginning of NICA. He feels the best thing of NICA is that it has “put us together as one.” It has made our profession as concessionaires somewhat easier. “It has been good for our industry.” He uses the Auto Zone, Sherwin Williams, Coca-Cola, and Pepsi benefits the most. He feels that if one makes use of the benefits, it more than pays for their membership fees, and there is also the accidental death insurance. He thinks the NICA News is very informative and always reads it. It is his opinion that everyone is doing a great job.

Carl Vance, of Vance Concessions, commented

that he feels his relationship with NICA is good.

He has never had any problems. He enjoys reading the NICA News and said that he had no suggestions for improvement, as he felt it was covered. He makes use of the benefits, being a food concessionaire especially the Coca-Cola and Pepsi. He likes coming to the convention in Florida and enjoys all it has to offer.

Sharon Rismiller, of Rismiller Concessions, LLC, remarked that NICA is good for everyone, whether they are a small or large company. “NICA enables us to have a larger say as a united group than if we speak singularly. With the benefits we can use, we have the same pricing as a larger volume business. The discounts have saved us a lot of money and every penny saved is good.” She mainly uses the Pepsi, Sherwin Williams and Auto Zone benefits, but it all helps. She really likes the NICA News and hopes that they keep it published in the paper form, as she likes being able to read it when she is on her route. “It seems to me to be very comprehensive; I always enjoy reading it.”

The NICA Office plans to continue these calls to our renewing members in the new year. We hope that hearing their personal stories will help you make better use of the available NICA Benefits or think of ways you could contribute. New Members Join the NICA West Council NICA West thanks Jennifer Giordano and Don Delahoyde for six excellent years of service on the NICA West Council. Both brought passion, skill and knowledge to their terms. NICA West announces that beginning February 18, 2015 Milo Franks, Nate Janousek and April Wood will begin their three year terms on the NICA West Council.

Condolences to the Netterfield Family NICA Member James C. “Jim” Netterfield passed on Sunday, November 30, 2014, in Flint, Michigan. Jim owned and operated a business called Jack’s Netterfield Concessions in events that led to travels from Michigan to Indiana to Ohio, until his retirement in 2013. In his free time, Jim loved spending time with his family and friends, fishing, and playing with his dog.

Jim will be greatly missed by all who knew him and our thoughts are with his family at this time.

Russ Harrison Joins IAFE Board Congratulations to Past-President and NICA Member Russ Harrison, who was asked to join the IAFE Board as Director at Large from Associate Members during the Las Vegas Convention in early December 2014. He will also be sitting on the IAFE’s Commercial Exhibits & Concessions committee, acting as the Board of Directors’ Liason.

The Independent Days & Nights of the NICA Business Expo & Fare Foods 2015 Food Show

Thank you to everyone who made this year’s Business Expo and Food Show successful this year! There was a record attendance for the Food Show, and the meetings and workshops were very well attended and informative. Overall, “Independent Days” was a very appropriate theme for this event, dedicated to the Independent Concessionaires that serve among NICA’s growing membership.

The NICA Business Expo opened on Monday, February 2, with an Equipment Repair Workshop presented by Michael Curci, Midway Stainless Fabricators, and Pat Armstrong, Cornbelt Concessions, who focused on common Concessionaire equipment problems and solutions. They also successfully fielded questions from the audience and had actual soda machines, related components, and other tools to make hands-on discussion possible.

and Sandy Cannington, ION Drug and Alcohol Testing. This was a very informative learning experience directed towards anyone who does interstate and intrastate traveling on a normal basis, and what new DOT law changes are affecting them during this new Fair season.

The Ceremonial Ribbon Cutting to start the Food Show

After a brief recess and a thorough setup and preparation by each exhibitor, the Food Show was about to began. Suddenly, a bustling of activity at The Champagne Toast! the registration booth signalled that it was time for the ceremonial ribbon cutting to occur, involving a majority of the 2015 NICA Board, Laura and Ron Porter, and Audrey Poole of Fare Foods. This was followed by a champagne toast to mark the official opening. Meanwhile, there was a large influx of excited attendees that made their way into the Food Show, hoping to taste some great food,

Fare Foods & NICA Staff did an excellent job in registering attendees, finding out if they were pre-registered, and making sure everyone knew where they were headed during the mornings, afternoons, and evenings.

As everyone soon made their way into the Food Show, members and non-members alike, were greeted by a great variety of aromas from foods that would normally only be reserved for the Fairgrounds, as well as new products and services from the Tradeshow Exhibitors.

Attendees continued to pour in for the next four hours. Afterwards, Fare Foods hosted their Hospitality Night in the Palm Room, and everyone had a great experience.

Tuesday, February 3, began the day with a variety of workshops with topics focusing on Insurance, Investment, Industry Relations, and Payment Processing among other topics.

The first workshop of the day was “Risk Management,” presented

by Phil Teague, Taylor Agency. He went into great detail on why insurance matters today, and how to manage your risks versus rewards. He stressed the Phil Teague giving a little background during importance of keeping “Risk Management” your business safe from harm by taking the initial steps to get coverage, thereby protecting yourself, your staff, your equipment, and more from the many dangers that can affect Concessionaires and others while on the road and working.

Wow, what great events NICA has hosted for our members in both Reno and Tampa this year. Our NICA / Fare Foods Trade Show was a huge success thanks to our many sponsors, attendees, fairs and fellow trade associations. Our NICA / Sysco Food Show out west has received accolades from everyone who attended the WFA Trade Show.

This year’s Tampa Food Show was done in grand style thanks to Ron Porter and his team at Fare Foods. A totally sold out Food Show, standing room only aisles, happy food

companies, and a lot of (hungry for new ideas) Concessionaires made for one of the best Tampa Food Shows ever! As usual, the Super Bowl Party was done in grand style. Any time we get to drink Mr. Porters’ liquor for free, it is a great day! Food galore, ever-flowing elixers, and great camaraderie are always a good reason to gather.

The ServSafe session was a huge success.

A room full of dedicated professionals and their managers all educating themselves on food safety. Thank you to all that spend time and money making your businesses safe for all our Fair patrons.

You have to go to them sometimes.” Anyone engaged in networking will tell you that it is an art form.

Getting to know people and what they are about is an asset for anyone who wants to expand their horizons. That is why I went to the NICA Expo in Tampa. As a Director of a large Fair, I had the opportunity to go to Tampa for the purpose of speaking with some of the Concessionaires who work our Fair. I am not a buyer, that job belongs to our Concessions Manager. There was also the opportunity to meet new concessionaires and, through the Fare Foods portion of the Expo, taste samplings of foods to come in 2015.

Without a doubt, there were the workshops

which captured my learning. Trying to think about Fair Management and the Concessionaire as each tries to make their efforts a win-win is not always easy. Some of the NICA issues are the same today as they were six years ago when I was introduced to the organization: succession issues, labor issues (which are huge), point of sale, DOT requirements, and competition were all subjects that were addressed.

But then again, why did I need to go?! Well, perhaps I didn’t want to wait for August and the run of our Fair to network. The compelling drive was to solidify my relationships with people – in this case – Fair industry people. NICA Members consist primarily of Food Concessionaires, but that is rapidly changing as more Vendors realize that they are Concessionaires too. I sense a great pride in the membership and so it should be.

As NICA works Fair-to-Fair, their pride goes with them. Fair Management works hard to assure satisfaction with their Concessionaires and the net result is that the Fair Guests benefit. That is why I attended the NICA Expo – I enjoy the Fair industry. Have a successful 2015 Fair! ▲ March 2015 NICA News

Concessionaire of the Month Robert Pugh Gulf Stream Congratulations to Robert Pugh, NICA’s March Concessionaire of the Month! His responses to our Concessionaire Questionaire are below: NICA: How long have you been a Concessionaire and a NICA member?

Robert Pugh: I have been a fulltime Concessionaire for 26 years now, having previously been in the Carnival Business since 1967. When I sold my Carnival in the late eighties, I moved to Florida and bought a 10-foot Waymatic Grab Trailer.

NICA: What do you like most about being a Concessionaire?

RP: I like not having all the worries that a show or an owner has.

NICA: What are your most popular or best-selling food items?

RP: I would say the Grab Trailers, followed by funnel cakes and fried dough.

NICA: Do you have any new products coming to your menu this year?

RP: Yes, Pretzels, Coffee, and Old-Fashioned Root Beer.

NICA: What’s something people don’t know about you or your business?

RP: I have no plans on retiring.

NICA: How has the concession business changed since you first started out? What’s something you wish would change?

RP: The most change I have noticed is with all the new, modern, flashy and expensive food trailers with LED lighting on the billboard marquees.

NICA: What’s been the highlight of your career?

RP: Getting the Ohio State Fair for my show in 1979, followed by getting the Reithoffer Shows position 21 years ago.

NICA: What’s been most influential to your personal or business success within the past five years?

RP: The Reithoffer Shows family.

NICA: What’s something that you like to do in your free time?

RP: Speedboating, spending time with my family and the dogs, and especially traveling to Europe with my friends.

NICA: What do you like best about NICA? RP: That Concessionares have a true voice in the industry.

Strategic Goals Met in Reno NICA at the WFA Convention

Submitted by Rey O’Day, NICA West Executive Manager • Photos by Rey O’Day & Kim Barr In 2012, NICA adopted four long-term strategic goals to guide its activities: 1) Increase membership, 2) Be a Professional voice in the event industry, 3) Encourage the addition of and use of meaningful benefits, and 4) Be Financially responsible. Using them as guidelines, NICA West intentionally designed its activities at the WFA Convention to meet these goals.

Six new members were added to the 29 total members signed up in the West during 2014.

NICA Members hung out at the NICA trade show booth and enjoyed a very well attended NICA Appreciation Suite Party sponsored by Source1 Purchasing. At the NICA West Membership Meeting we played the NICA Game, introduced Executive Director Alta Mosley to the West, thanked Gary and Connie Barham, Hot Dog On a Stick owners, for providing hole-in-one insurance at every NICA West golf tournament since 2007 (16 tournaments), and gifted door prizes donated

Randy Reichert, CCE, NICA 1st Vice President • Photos by Old Time Photography The 2015 Shrivel Bowl during the South Florida Fair in West Palm Beach was a huge success! The evening was enjoyed by all, as over 175 bowlers participated in this fun-filled event.

Numerous cash prizes and other gifts were distributed via raffles throughout the evening.

NICA received cash donations and prizes from a number of contributors, among them: Sivori Catering, Wild Bill’s Curly Fries, Gabby’s Famous Kitchens, Bianco’s Fine Foods, Butcher Boys, Parnell Foods, C & R Concessions, Hot Wisconsin Cheese, Miller Concessions, Rosie’s Fine Foods, and Demetri’s.

NICA would like to thank Chris Ryan and Greg Miller, CCE for the collection of the sponsorship money.

The highlight of the evening was the raffle drawing for the family of Han Wang who passed away this fall at the young age of 42 from cancer.

He was well known among the Concessionaires as both an owner and the right-hand assistant to Nick Strates of Demetri’s. This raffle, conducted during the South Florida Fair raised over $14,000 for Han’s family.

With the assistance of Brian Schenkman and the Demetri’s crew, the Shrivel Bowl name is being changed to the Han Wang Bowl starting in 2016 to honor Han. It is a change embraced by all Concessionaires of the South Florida Fair.

The last workshop of the day was entitled, “Finding the Right Balance for Fairs and Concessionaires“ and was moderated by Randy Reichert, CCE, Hot Wisconsin Cheese and NICA 1st Vice President. It was a panel discussion featuring Dennis Fraleigh, F & W Concessions and NICA Director, James Radke, Calgary Stampede, Mike Lis, Wild Bill’s Curly Fries, and Letrice Midgett, North Carolina State Fair.

This discussion covered a wide variety of experiences that each Fair and Concessionaire speaker had encountered over Questions & comments from the years with participants in the audience a strong focus on maintaining great business relationships, being fair in practices, and building towards the greater good for both Fairs and Concessionaires.

Additionally, members of the audience were called on to participate in their discussion, bringing even more experience to the topic.

Tuesday night’s Food Show was just as busy as the previous night, due in part to the shuttle between the event and Gibtown. The evening ended with the Golf Cart Giveaway, sponsored

ServSafe Management On Wednesday, Class & Certification February 4, the ServSafe Management Class and Certification opened the day, providing registrations with the knowledge and certification to improve their management, skillsets, and overall business practices.

For the Expo attendees that already had their ServSafe Certification or did not require it, there was an alternative workshop, “What is NICA?” presented by Rey O’Day, NICA West Executive Manager. She went into depth about what makes NICA unique, its history, who makes up the organization, and where its headed in the future. Rey also opened up a dialog about options such as Rent Structure, Contract Management, Point of Sale Options, Exclusive Sponsorships, and Sale of Businesses. This was a very thoughtful discussion of core NICA principles and great audience participation.

Conventions always provide fellowship and time for fundraising and this one was not any different. As one of the sponsors of the WFA Blue Ribbon Wine and Cheese Reception, Jennifer Giordano and Dale and Cie Smith served wine while a sponsor looping slide show included the work of NICA Members. Dale Smith prepared and Rich Brander drove up THE Golf Cart to win; it was the talk of the floor! Dane Baldwin, D&D County Fair Cinnamon Rolls, was the envy of all; he had the winning ticket for the NICA Golf Cart opportunity drawing. Eamon McDonald, Joya Sangria, won the $500 cash and Marco Arredondo, Noel’s Foods, Inc. won the one year free NICA Membership.

The NICA Sysco Marketplace fundraising was financially successful for all.

It was a very good time spent on learning about preselling and new media tools. There was probably close to 200 people at the session. The discussion coordinator Bill Jennings thanked NICA and others for sponsoring this event.

The entertainer Juli Burney came on and her “They Who Laugh, Last, and HAVE IMPACT” presentation was very uplifting and funny.

On Sunday, the convention had Round Table Discussions on many topics. David Spann, Erma’s Sweet Rolls and NICA National Rep, attended some of the discussions that would affect Concessionaires. Some other topics covered were “Food Safety at Fairs” and “Finding New Commercial Vendors.” Their annual IAAF Business Meeting and the Queen Pageant closed out the convention. ▲
