NICA’s mission statement is “Dedicated to strengthening relationships with the Fair, Festival and special events industries through effective communication, benefits, leadership and solutions.” In an attempt to start communication amongst the attendees at the 105th Annual Convention of the Pennslyvania Fairs and Showmen, I created the “Question of the Day” board. Every morning I posted a question on the wipe off board to get the Fair Board’s input on different items. The first question of the day was aimed to show how the Fairs advertise for their events. They shared that they advertise in many different ways: newspaper, radio, road sign, billboards, posters, placemats, direct mailing, and social media. One even added “smoke signals.” With our customers’ focus being drawn in so many different directions, Fairs and their Vendors need to try all aspects to reach the customers. Social

media may bring in a younger demographic, but we need to remember there is a generation out there that still reads the newspaper. The second question was in honor of IAFE Chair Becky Brashear’s visit and speech about “Striking it Rich” and her focus to show the amount of scholarship dollars gathered by Fairs. The question was, “How much does your Fair generate in scholarships and how do you do that?” The average amount gathered is $2250; it was gathered through a variety show, selling milkshakes, livestock sales, auctions, and memorial donations. These fairs are proud to provide these funds to their youth. The future of the industry lies with our youth: the young exhibitors and concessionaires. NICA provides $15,000 in collegiate scholarships and $2,000 in a vocational school scholarship. We are proud to help further the education of our Members, their families, and even their deserving employees. Communication seems like such a simple thing to base an organization on, but when it is strained or non-existent, success is not possible. I look forward to instigating communication next year with the return of the “Question of the Day.” ▲ March 2017 NICA News

Thank you to all that attended this year’s NICA Business Expo and Fare Foods Food Show. Our Annual Meeting was packed with tradition, new and modern ideas, and a few surprises. We celebrated NICA’s Past President Paulette Keene and her well accomplished and appreciated term, welcomed our new President Dominic R. Palmieri, III, CCE and shocked Rey O’Day, Executive Manager of Councils, by surprising her as this year’s well deserved Hall of Fame recipient. I personally want to thank each of these fine stewards of NICA for their contributions and dedication. Hats off to Mrs. Kathy Ross, NICA 2nd Vice President, for her dedication and commitment to NICA and the NICA Office. Kathy was the driving force that lead to the success of our Annual Meeting. Her persistence for excellence paid off with fundraising efforts at the Expo that totaled over $20,000! Her behind-the-scenes work was the glue that allowed our Expo to run smoothly while keeping it together. Thank you, Kathy, for successfully getting me through “my first Fair!” Speaking of surprises, our Annual Meeting was also met with contributions brought to the Board by a few Members that holds merit and is healthier than it may have appeared. As a national organization, we have different Member’s perspectives throughout the country

Additionally, the differences within the Fairs from the East Coast to the Midwest to the West Coast and the economic trends that span across the country vary vastly. These factors, coupled with the Mission of NICA, will from time-to-time require adjustments. Though all may not agree on the adjustments, what we all can agree on is that each Member holds NICA’s best interests at heart. We have never had an open motion on the floor as we did that Wednesday evening; however, it brought topics to light that the Board and I are responding to with urgency and consideration. We are a Member-driven organization that listens to our Members as they are, in fact, NICA. Another exciting, yet not so surprising, outcome from our NICA Expo is the approved addition of two new NICA Member Benefits! Larry Lee, CCE “Communication is very important in business as well as in everyday life. By keeping a line of communication open, you can solve a lot of problems. By listening to the other person and discussing the situation, you have the potential of having fewer problems. Communication is not just talking, but also listening and considering what the other party has to say. In management, good communiation is essential. Listen to your workers, in advice, counsel, and potential problems, and react accordingly. Remember that you are Peggy Lee, CCE & Larry Lee, CCE dealing with another human. This human is working to Columbine Concessions build your income. This human will not be perfect. This CCEs Earned in 2000 human will have faults and probably bring a baggage of problems with him. Treat this human with the appreciation and respect with which you wish to be treated. I believe that rewards, where earned, should be dispensed—some throughout the season, and the most at the season end as an expression of appreciation of hard work, punctuality, honesty, and loyalty.” ▲

Peggy Lee, CCE “Communication is our strong point. We always discuss everything, but have a division of responsibilities. He is where the buck stops and his decisions are final. Everyone knows they can always come and talk with me and that their problem will be represented fairly. Everyone knows that I have the authority to make any decision that is needed, but I always defer to Larry when decisions need to be made regarding our business. My management philosophy is knowledge and deference. Learn all you can about what is under discussion. I always defer to Larry for the final decision. My position in the company is equal to Larry. In his absence, I can and do manage all aspects of the business. However, when we are working together, I defer to him as head of the business and never countermand him. Once he has made a decision, I honor that decision and don’t buck it. If I don’t show respect and honor to my partner in business, no one else will either. Somewhere in all this, humor fits in. We enjoy our chosen way of life. We try to manage with humor, respect, care, and understanding. There is not a problem that doesn’t have some humor in it if you just step back and look.” ▲ The title of Certified Concessionaire Executive represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism. Member’s Voice The greatest part of NICA is the Membership! The Member’s Voice influences where the organization is headed and what it can improve, among other aspects. The NICA Office has been continuing their survey of responses, checking to see if members are utilizing their benefits and enjoying their experience with the orginzation. Some of our recent responses are featured below: Jeffory McKinney, Concessions Unlimited from Hughes Springs, Texas, described his relationship with NICA as “very workable.” As a Concessionaire, he makes use of the Coca-Cola and Pepsi discounts and is aware of the fact that there are a lot of others; he has also made use of the AutoZone and Arrow benefits for his camper parts. He prefers to read the NICA News online because he travels enough that he seldom gets a paper copy until he gets home. When he gets home he does enjoy looking it over. He always plans on attending the NICA Business Expo and Fare Foods Food Show in Tampa, and was present this year. Ed Stergar, C & E Concessions, LLC of Indianapolis, Indiana, has been a NICA Member since 1997. He tries to make it to the NICA Business Expo and Fare Foods Food Show every year. Ed has used the Arrow benefit for purchases for his motor home. He stated that the Coca-Cola benefit more than pays for his dues. Ed reads the NICA News as soon as he receives it. He likes it because it is a pretty versatile magazine. He only likes to read the hard copy as the only time he uses the computer is to see friends on Facebook. Michael and Tricia Fowler, Steve’s Meat Shop out of Blue Grass, Iowa, think belonging to a professional organization such as NICA creates “a more professional platform on which to stand.” They not only list that they are Concessionaires, but acknowledge they are NICA Members as well, as they feel it creates “more respect.” They appreciate all the benefits NICA has and, as Food Concessionaires, mainly use the Food Distributors for their discounts and rebates, but the non-food benefits are just “icing on the cake.” Mike prefers

to read the paper copy of the NICA News, but Tricia likes to read it online as it is there sooner. They feel it covers a lot content and are interested to see the stories concerning other Concessionaires as they are “the story of us,” and “not just tooting your own horn.” They feel that NICA does a great job with the NICA News and the website with networking. Michelle Siggins, Sunshine Concessions of Hernando, Inc. from Brooksville, Florida, stated that having grown up in the concession business, NICA went “hand-in-hand” with her Fair family and friends. She has used the Coca-Cola, CheckInn Direct, and Fare Foods of the NICA benefits. She definitely enjoys reading the NICA News and has even been sent home to retrieve it so as to be able to see the pictures and what’s new this year. She admitted that she needed to pay closer attention to non-food benefits so she could make more use of them. Schuyler MacPherson, Ten Pound Buns / SDM Concessions, LLC out of Long Beach, California, stated that his relationship with NICA has been very pleasant. He got involved with NICA West and Rey and what developed was in his mind a very “symbiotic relationship.” He uses the NICA / Sysco Marketplace and other discount pricing benefits. He was not making use of many of the others, but was aware of them. Schuyler feels the NICA News is “a great conglomeration of facts and fiction.” He “likes it the way it is and you guys do a great job, an excellent job-hitting on all cylinders!” He favors the stories that relate to Concessionaires and how they started in the business. An Important Announcement from CLC Lodging CLC Lodging has been providing NICA Members with free enrollment and 20-40% savings on hotel rates for several years. Recently, NICA discovered that CLC Lodging was charging a $50 inactivity fee on some NICA Member accounts in the last few months. NICA has successfully negotiated with CLC Lodging to waive this fee for all NICA Members, whether charged recently or in the future. If you are ever charged this fee, contact CLC Lodging’s Customer Service at (866) 857-9747, Option 2 to let them know that you are a NICA Member. This will keep your account open and reverse any inactivity charge(s). ▲

FedEx No Longer Accepting New Signups It has come to our attention that FedEx will not be continuing the shipping discounts for new signups. Emerging into the Future Photos by Christina Arriaga, Business Manager Thank you to everyone who made this year’s Business Expo and Food Show successful this year! There was a record attendance for the Food Show, and the meetings and workshops were very well attended and informative. Overall, “Emerging into the Future” was a great theme for this event as the Fair Industry, as well as the world, continues to grow and change as time goes on. The NICA Business Expo opened on Monday, February 6th with “NICA’s Strategic Plan Updates,” presented by Rey O’Day, Executive Manager of Councils. This presentation was a Rey O’Day calling for a show of hands during comprehensive overview her presentation for NICA’s 2017 goals towards membership, council development, Board activity, and more. This was followed by a luncheon for Past Presidents and Directors, which provided a great opportunity for these past and present leaders to share stories and ideas over a delicious spread of food.

Suddenly, a bustling of activity at the registration booth signalled that it was time for the ceremonial ribbon cutting to occur, involving a majority of the 2017 NICA Board, Laura and Ron Porter, and Audrey Poole of Fare Foods. This was followed by a champagne toast to mark the official opening. Meanwhile, there was a large influx of excited attendees that made their way into the

Food Show, hoping to taste some great food, meet up with old friends, build new friendships, and network with other businesses. Fare Foods Staff did an excellent job in registering attendees, finding out if they were pre-registered, giving out “goodie bags,” and making sure everyone knew where they were headed during the mornings, afternoons, and evenings. The implementation of a new registration software by Fare Foods made sure that check-ins for all programs went smoothly and an accurate record of attendance could be reviewed afterwards. As everyone soon made their way into the Food Show, members and non-members alike, were greeted by a great variety of aromas from foods that would normally only be reserved for the Fairgrounds, as well as new products and services from the Tradeshow Exhibitors. Attendees continued to pour in for the next four hours. Afterwards, Fare Foods hosted

NICA Heads to Texas Dominic R. Palmieri, III, CCE, President

Texas Association of Fairs and Expositions (TAFE) graciously invited NICA to participate at their annual convention in San Antonio, Texas in early January. Incoming President (at that time) Dominic R. Palmieri, III, CCE, packed up his horse and saddle and mosied on yonder to the Alamo to participate on a panel of two back-to-back sessions titled, “Got Concessions?” The panel was a mix of Fairs and Festivals— small, medium, and large. While the conversation from the Fairs’ pointof-view was more about “how,” “why,” “when,” and details of requirements in booking Concessions, Dominic focused on the impact of booking professional Concessionaires that belong to a professional organization such as NICA. Our PowerPoint presentation, “What is NICA?” touches many topics about how services provided to its Members through benefits, education, leadership, food safety, thoughtful communication, and solutions help all Members (including Fairs) to run their businesses Dominic R. Over 3800 Rounds Of Ammunition Kicked Off

Thanks to the support and cooperation of many people, including NICA, OABA, and the Florida Federation of Fairs, the 2nd Annual Fair Partners’ Shootout was a great success! It was a beautiful Florida day with temperatures in the 70’s and sunshine; it was a great day to be outdoors! With over 70 shooters and over 20 spectators and guests, the sky reverberated with the sound of over 3800 rounds of ammunition being shot at sporting clays that were coming from every angle and direction! The concept for the Shootout started with the idea that there was a need for a networking event in February when so many of the Fair Industry associations were in town for their national meetings. The Florida Federation of Fairs, NICA, and OABA joined in with their support and help. All three organizations promoted the event through communication with their members. A special thanks to Jeff and Kathy Ross with Ross Concessions who worked diligently on behalf of NICA to round up silent auction items, Jeff and Kathy Ross teaming promote the event to up to shoot some clays potential shooters and sponsors, and assisted with all aspects of the event. As a result of Kathy’s promoting the event at the Pennsylvania Fair Association meeting,

Ensure Success at Your Next Fair Event There’s no doubt that fairs are all about the food, and there’s nothing more frustrating to a concessionaire than not receiving the right food, at the right location, at the right time. That’s why Source1 Purchasing is now offering a new service to all NICA/Sysco MarketPlace members. The Fair Discovery Tool (found by navigating to the “Member Resource” page on was designed to help members secure their purchase orders for all upcoming events. The steps are very simple for members to follow. 1. Select the state of the event 2. Find the event 3. Select a delivering Sysco OpCo 4. Confirm attendance Once the member chooses an OpCo and confirms fair attendance, Source1 Purchasing will be right behind them taking care of all of the legwork. Your Dedicated NICA Representative will directly contact each member to verify program connection and details of their purchase order. Your Representative will call the coordinating Sysco OpCo to arrange and communicate: 1. Connection to the NICA/Sysco Program 2. The concessionaire’s complete purchase order 3. Where items should be delivered 4. They mentioned they wanted quality, proper staffing, and better menu selection, knowing it had to be fair to the Concessionaire, and the rents needed to be reasonable to provide those things to the Fair guest.” This past year has been one of great accomplishments for your NICA. We have had Fairs come to us with ideas about quality, the possibility of tiered rents, and talk of how to successfully execute a Transfer of Ownership or Sale of the Business. We have had more

communication and participation with other Industry organizations such as IAFE, Florida Federation of Fairs, TAFE, WFA, and every zone in IAFE. “I think the key to this momentum lays in maintaining and recruiting great Board Members and geo-strategically having them participating in events around the country.” Communication Committees, Fundraisers, Socials, and including NICA fostered programming at all Zone and Fair Conventions, along with developing Directors from specific parts of the country, could allow for this continued excitement about what NICA brings to the industry. Palmieri added, “The Board’s focus should always be working on the mission of the organization. If we focus on this, ‘Together We Can’ and Together We Will!” ▲

Of course, the real winners are our scholarship recipients of whom we are enormously proud.
