President’s Message A new season has begun. For many of us, it seems like just yesterday that we were packing the equipment in the shop for the winter. My season begins with a nine hundred mile trip to West Palm Beach, Florida. Like many of you, I travel the same basic route every year and can anticipate the “Open” sign at every weigh station. Although I feel my company is legal, there are always the worries that come over me as I approach the scales. I am sure many of you have your own horror stories about the scales. I have made the statement before about having all your trucks tagged with DOT numbers and signs. I feel this makes you look like you know what you are doing, even if you don’t. Something to consider if you are getting by on RV tags, or if you tell the story my third cousin told my aunt’s friend, “I don’t need a DOT number.” Your days are numbered; you get stopped and pay a heavy fine. I realize we are challenged with all Greg Miller, CCE will the bureaucracy of government, but we need to somehow figure out a way NICA President to survive. Another one of my pet peeves when traveling is the prepay fuel islands. I fully understand the reason for this but I find it aggravating to stand in line to prepay for 6 trucks and then get back in line to get my change back. Sure would be nice if those pumps had a way to allow you to pay with cash like self checkout lines in the supermarket. I guess the fuel stations want a cashless system but I, the consumer, do not. Kind of sounds like our industry, are we giving the consumer what we want or what they want. Who is being regulated our concessionaires or the consumers? I want this year to be the year of the Concessionaire. We are going back to our roots to work on some of the projects this organization was founded for. The “old” guys had a vision and I would like to revisit it. The Board is looking for points of interest that affect you. Share your thoughts with us. Well, as many of you who have read my comments in the past know, I like to ramble on, but that’s all I have for this month.

James Taylor’s “Fire and Rain” lyrics come to mind, hopefully he will forgive the slight changes: “I’ve seen snow and I’ve slipped on the ice, I wonder if warm sunny skies will ever come again.” The Indiana Fair Convention was very good, excellent topics and great people. The weather was another story, especially so for a flat land Florida girl. The plan was to attend the Indiana Convention and fly to the Western Fairs Association Convention on Sunday morning. Due to the worst snow storm in years hitting Indiana on Saturday evening, there were no flights in or out of Indianapolis so I didn’t get to the WFA meeting. Thanks to the airline reservation lady, I was able to cancel and reschedule flights and arrived back in Tampa on Wednesday night. Thanks to the pizza places, they were the only ones who delivered during those snowbound days. However, I’ve reached my quota on pizza for a couple of years. My hat is off to the folks of Indiana; they remained hospitable and in good spirits through some very tough days. ►► Continued on Page 6 March 2014 NICA News

Continued from Page 5 ►► I am looking forward to attending several more Fair Conventions this year, sharing ideas and promoting NICA. I was very fortunate last year to meet many of our members. Plans for 2014 have me out visiting more Fairs across the United States, going into areas that have not been visited in the past. I will be calling on Fair Managers, working to build better communication within our industry and most importantly, listening to and supporting our NICA members. Please feel free to share your thoughts with me and let me know your concerns. If you have ideas for topics that you’d like to see addressed in the NICA News, let us know. What a winter season so far! It has been a severe one for many parts of our nation. The Midwest and the Northeast have been hit hard with snow, ice, and record breaking low temperatures. Our friends out West are dealing with severe drought. Our own Executive Director, Alta Mosley, was stranded several days in Indianapolis after attending the Indiana Fair convention. My thoughts and prayers have been with all our members, and especially those trying to move equipment. In my experience as an over the road truck driver during the winter months, I have seen a lot of mishaps and accidents on the road. Most accidents can be avoided by following two principles: slowing down and maintaining a safe following distance. With the new year already starting, I have been working on a to-do list for the upcoming months. While I am not into resolutions, I do believe that if I set goals and prioritize my list of things I want to get done for the upcoming year, I will have a visible plan in hand to refer to and check off as items get done. This works great for me as long as I do not lose that list!

Continued from Page 7 ►► It has been one of my personal goals to visit with Fair personnel during the off-season. I took that opportunity this winter by attending the Chili Bowl Nationals held at Expo Square, which is also host to the Tulsa State Fair. My good friend and fellow NICA member Art Carroll and I have talked about attending this event for many years, as we are both avid race fans. While there, I had the opportunity to meet with Mark Andrus, President & CEO, Amanda Blair, CFE, Fair Manager, Marilyn Herman, Concession Supervisor, Gerald Young, Event Coordinator, and Sara Thompson, Marketing & Development. I also had the opportunity to see fellow NICA members Karen and Art Jenks, of Karen’s Concessions, hard at work during this event. It was great visiting with them, and the racing was unbelievable! The staff there was awesome and even took time out of their schedule to visit with us! What an opportunity! This has been on my bucket list for many years; time to cross another one off! It is good for our industry to keep the lines of communication open whether it is through state, regional, and zone meetings or attending events like the convention in Las Vegas, Florida Week, and WFA meetings because Together We Can! ▲ 8

NICA at the WFA Convention

The Art of Cultivating While in Anaheim Written by Rey O’Day, NICA West Executive Manager On January 5th, our NICA members out west headed to the Western Fairs Association (WFA) Convention in Anaheim, California to “cultivate” new friends, new NICA Sysco Marketplace customers, new memories, new members, and new brain cells. Sunday night kicked off with a Hoedown at the Orange County Fair. Don Delahoyde, CCE, showcased delicious food at his Sharkey’s concession trailer, and NICA called attention to our golf cart drawing by having Augie Johnson’s Side Effects sing doo-wop alongside it. Dale Smith delivered our beautifully refurbished blue golf cart with cool silver flames, custom tires, and rims and Ryan Long returned the cart to the Marriott where it sat proudly in the NICA booth.

On Monday, we met first thing to pray for Alta Mosley, our Executive Director, who was stuck in the freezing “polar vortex” snow in Indiana, and to confirm who was going where, and who was doing what. We had a trade show to set up, a booth to staff, a membership meeting to organize, a suite to ready for a party, and meetings to attend! Dan and Darin Lusenhop put up the NICA booth, Molly, Source1 Purchasing, Amy, and Bernadette, Sysco, moved to the NICA Sysco Marketplace, Lucky Henner, Tony Trafton, CCE, Jennifer Giordano, and Kim Barr set up the booth, and we all took turns keeping it staffed!

Entegra, Source1 Purchasing, and Sysco showed folks how to be sure they were participating in the NICA Master Distribution Agreement and taught them how to use it to obtain substantial discounts from companies including Grainger, Cintas, Carrier, Ecolab, and Rubbermaid. Whirley displayed the 32 oz. refill cup program that helps support the NICA and WFA college sponsorship programs. Weaver Popcorn, Farmland Foods, Advance Pierre, Jennie O Turkey, Koch Foods, Fanestil Meats, Sun Rich Foods, Lamb Weston, Woody’s, and AmeriChicken also distributed their products and made deals. Following the trade show, it was time to show our appreciation for our NICA members with a reception set up by David Wellmon where we proudly honored Daryl Whicheloe, CCE, for earning his CCE designation. We also gladly paid homage to Chuck Dugan, ChuckWagon BBQ, and Tony Trafton, CCE, Trafton Company, with plaques that thanked them for having the vision seven years ago to make NICA West happen. Tony and Dan hosted while we gave away door prizes (thanks to Ashley Murray, Rey O’Day, Lucky Henner, and Dan Lusenhop), played the NICA Trivia Game, gave Rich Brander a one-year free membership, listened to Dominic Palmieri (in his

blue jacket) update us with NICA’s future plans, and celebrated the fellowship our NICA members share. Rey and Daryl headed off to find the party suite. Daryl and his wife Kristen and Kim and her husband Alan said they would make it happen: setting up, food, décor, door prizes, and entertainment! When we all arrived at 7:00, our NICA Suite Party was just starting. Don and Phil Delahoyde provided the bar at cost, Dale Smith provided soda and door prizes, Jennifer provided bottled water, Sysco Riverside provided the food, Fairplex donated award winning wine, and Kim kept the door prizes coming.

Big thanks to all of our party planners extraordinaire! Tuesday brought another day of trade show activities that culminated in the opportunity drawing for the 2010 EZ Go Golf Cart. Molly drew the winning ticket for Cliff Munson, CEO of Siskiyou Golden Fair, and Daryl agreed to help deliver it to Northern California. (By the way, Cliff became one of our eight new members on Monday!) Amy and Rey delivered a box of See’s candy truffles to each exhibitor with smiles and a big THANK YOU for their participation in the NICA Sysco Marketplace, and Rey, on behalf of the IAFE Institute, presented the Principles of Food and Beverage to a packed house! Afterwards, NICA, Sysco, Source1 and our new Feld Entertainment member, Todd Lee, went to dinner at PF Chang’s where we toasted once again to “Together We Can!” We appreciate our continued collaboration with WFA and look forward to being together next year in Reno, Nevada from January 11th - 14th, 2015. ▲

Loret Foods White Bear Township, MN - Brad Ribar and his family have been roasting corn and selling cheese curds among other items for over 25 years. NICA had a chance to sit down with him and ask him a few questions. How long have you been a concessionaire and a NICA member? Brad Ribar: I started in the concession business in 1985 and joined NICA in, what I think was, its second or third year. What was the first thing you remember about NICA? br: I remember Gary Crutchfield explaining the idea of putting together a group effort to give individuals a voice. How and why did you get into the concession business? br: I was at the age where I was trying to figure out what I wanted to do for a living; I just knew I didn’t want to work for anyone. The idea of a corn stand started in 1980 and finally happened in 1985. At the same time my father-inlaw (Jim Peters) asked if I would be interested in going into the cheese curd business with him. I jumped at the opportunity and Loret Foods was formed; a name formed by combining the names of our wives Lori and Ethel.

Brad, Lori, Sarah, Libby & Matt Ribar If you were not a concessionaire, what would you be? br: Good Question! I hope I never have to find out. What do you like most about being a concessionaire? br: The excitement of the season, seeing new locations on a weekly basis, always being on the move and under pressure, meeting different friends, the satisfaction you feel at the end of a good day or good event, and the customers that are there to have a good time. What is your best selling food item? br: At the Minnesota State Fair it’s roasted corn. At all other events it’s cheese curds.

Do you have any new items coming to your menu this year? br: We haven’t added any new products in years and are not planning to. We just keep trying to improve on the products we have.

Corn Roast at the 1999 Minnesota State Fair What is something people do not know about you or Loret Foods? br: Most people don’t know I spent 19 years working in the sanitation department at the Minnesota State Fair. I don’t think there was a job or position that I didn’t do or have. I still miss it. How has the concession business changed since you first started out & What would you change? br: The obvious changes are nicer equipment, many, MANY more regulations (health, electrical, fire, DOT, etc.), and lower margins. My favorite change I’ve noticed is that concessionaires are more willing to help each other than in the earlier days. It’s a hard enough business when we get along; I would hate to see it if we were just out for ourselves. What has been the highlight of your career? br: Working with my family and watching my kids start to take over. Also the fact that the concession business became strong enough to allow me to get out of the Christmas wreath business.

What has been most influential to your success within the past five years? br: My Kids! And my key help. They are great with the employees and we are nothing without wonderful employees! A lot of press coverage the last few years hasn’t hurt either. What is the funniest thing that has happened in your concession career or travels? br: The time two friends and myself had to give a presentation at a Zone 4 meeting. Just as we were going to enter the room, one of my buddies passed out. The two of us had to go ahead with the presentation filling his part and not knowing if he was okay or not. It wasn’t funny at the time but it’s fun to talk about now! What do like to do in your free time? br: I love to spend time in the north woods of Minnesota. What do you like best about NICA? br: The fact that NICA puts us on an even playing field with the carnivals in our industry. It gives us a voice! I also enjoy the chance NICA provides for fellow concessionaires to get together and share ideas. What are looking forward to this year? br: A new trailer from Century Industries, no mosquitoes, and my truck reaching 600,000 miles. Is there anything else you would like to share with NICA members? br: Take pride in what you do, and do what you say you will do. ▲
