Let’s look at the reality of the situation.

The current owner is financing the sale. They are going to stay with the business for several years to protect their investment. The Fair is going to have the same trailer, the same product and often the same staff working the trailer. There are those who have family members who have been involved with the business for years so the Fair never really notices the transition. Why is it different because an employee buys the business? The employee/buyer has been with the company, knows how to operate the business, and knows the Fair.

Why is it different? Aren’t we all here to please the guests who come to the Fair? Just last night one of my Facebook friends said that she was having “Fair Food” for dinner. When someone questioned what she was having, she very quickly explained what she was having and exactly where to find it on the Fairgrounds.

She enjoys this product so much that she buys some extra during the Fair and freezes it for later.

Pleasing the guest is more important than the power to change a location just because you can. The only thing we, as Concessionaires, are asking is to give the new owner a chance on the same location.

Suggestions on Being a Good Concession Neighbor Paulette Keene, Secretary

Especially after just closing up one Fair and driving a long distance to get set up.

Hey, fellow Concessionaries! This is my third year as a Director for NICA and I just finished a successful workshop with my fellow Directors.

President Greg Miller asked us many questions, one of them being “Why did we want to be a NICA Board Member?” My response 2. 4. Of course, you have that heavy electric cable, it’s good to keep all your hoses together.

It looks neat to gather them all together with zip ties. Of course it’s a pain when your drain hose clogs up and you have to cut them loose and redo the whole process when you’re done unclogging the drain!

5. If you have to keep some extra stock outside, try to keep it on a skid behind your trailer.

There is usually a free space between you and your neighbor. Try to keep this open and try not to put large signs, tall coolers, or display cases in this space or it will block your neighbor.

6. Keep up with condensation from air conditoner and water leaks. It is really nice to drain your ice water tank in the appropriate way. Even though it is clean water it can still make a mud puddle in front of others’ concession stands, so be careful and courteous.

7. Some days we might run out of something and need to borrow some stock or a can opener from our neighbors, and most everyone will LOAN something, remember it’s a loan and return as soon as possible.

We do help a lot of our friends, and they always return borrowed or replace what they borrowed.

8. Norm and I are always helping out others and we have had a lot of friends help us out. I remember when we took our new Schantz funnel cake trailer to the Tampa Fair, and a man hit our awning with a delivery truck! The awning ended up looking like an accordion! I was in shock, wondering what we would do. It was not long until the owner of Arnold’s Amusements showed up with his repair truck and Mike McGrath and others helped get it off. It was a big job! Thanks to all of them! Then our good friends and food supplier, Fare Foods, loaded a new awning that Schantz & Sons got to them, as both businesses are from Illinois, and they brought it to us in Florida. The awning 8

arrived and Schantz & Sons employees put it on before the Fair opened. Now that is friends helping friends! That’s just the kind of good people we work with on the Fair and Concession routes.

9. Sometimes neighbors may need to buy change from you. If I have it, I will sell it to them. If you need it back, just let them know, and they will replace it.

10. In the slow hours of the Fair, you may be running your trailer with one person, just as everyone else. When people have to leave for five minutes, please keep an eye on their stand, and look out for each other.

NICA Visits the IAFE Zone 1 Conference Submitted by Russ Harrison, CCE, Past President

The IAFE Zone 1 Conference, hosted by the Topsfield Fair, was held in historic Salem, MA. April 10-12. Jessica Underberg, Erie County Fair, Hamburg, NY serves as Zone 1 Director.

The conference included two days of workshops and meetings, an IAFE update by Steve Siever, and a trip to the Topsfield Fair that included a traditional New England Clam Bake.

Thanks Zone 1, Greg Chiecko, with the Eastern States Exposition, and the Topsfield Fair for the opportunity of being part of the conference.

The annual Miami Auction was held in the Netterfields Food Court on Tuesday, March 25 at the Miami-Dade County Fair after the Fair closed. There was food, fun, and fellowship included at no charge with Frank Parnell, CCE on hand to conduct the auction.

This Year’s Scho This year, NICA received 13 scholarship applications. As in years past, all of the applicants made it very difficult for the scholarship committee to choose only seven recipients. Thank you to all who submitted your scholarship application and congratulations to our winners!

Coca Cola CCE Scholarship Winner Peyton Miller Peyton Miller is the son of Greg & Janey Miller of Miller & Company. Peyton is the recipient of the Coca Cola CCE Scholarship for which he will receive $3000. He is currently attending Marshall University, pursuing a Bachelor’s degree in Business Administration.

Peyton has been heavily involved in the Fair business since he was a young boy. Throughout this time he went from squeezing lemons and doing odd jobs, to managing his own unit. He has been traveling with his family’s business during the summer for the past ten years.

Currently he holds multiple leadership positions on his campus including being a Chairman on the Dean’s Advisory Board and being a Director of Professional Development for Beta Alpha Psi, the accounting fraternity at Marshall. After graduating, he plans to apply what he has learned at Marshall University and operate his own concession over time to become a successful concession operator.

Johnnie Holmes Scholarship Winner Samantha Shepard Samantha Shepard is the daughter of Gary & Cheryl Shepard of G & C Concessions. Samantha is the recipient of the Johnnie Holmes Scholarship for which she will receive $1400. She will be graduating from Baraboo High School in June. She has been accepted and will be attending the University of Wisconsin-Baraboo.

Every since Samantha was 6 months old, she has been out on the road traveling with her parents’ food concession. As soon as she was old enough to talk to customers, she was taking orders and filling drink cups while standing on an overturned milk crate. Even at 18, she continues to work in the trailers all summer long.

Samantha plans to obtain a Bachelor’s of Science in Education / Elementary Education and minor in Special Education along with a minor in Foreign Language (Spanish). Her goal is one day teach Special Education children in elementary school and continue to work summers with her parents.

Adam Warrick is the son of Marki Adams and Jeffery Warrick. He is the employee of Don Kenna of Kenna & Dickerson Concessions. Adam is currently attending Indiana University, pursuing Bachelor’s Degrees in Biology and Spanish.

Adam has been employed by Kenna & Dickerson Concessions for the last five years. He has worked in many different stands preparing almost any type of concession food from fried fish to cotton candy. He does any and every job from washing dishes and customer service to helping new employees. He plans to continue to work within the concessions industry with his current employers, even after the completion of his degree.

Upon completing his undergraduate studies, Adam wishes to attend medical school to study Surgery and Orthopedics. Ultimately his goal is to become an Orthopedic Surgeon.

Allison Smith

Allison Smith is the daughter of Denny & Barb Smith of Good Food Concession Group. Allison was homeschooled and graduated in May of 2014.

She has been accepted and will be attending College of St. Scholastica in the Fall of 2014.

Allison has been in the Fair business all her life. At the age of eight years old, she was waiting on customers and by fourteen she started the position as manager; where she truly learned what it takes to own a business. During the summers, she will continue to be a manager in her parents business.

Allison plans on obtaining a degree as a PreMed Biology Major. After graduation from St. Scholastica with her four year degree, she plans to apply for medical school. Allison’s goal and desire is to become a Surgeon.

Michael McDermott, III

Michael McDermott, III is the son of Angela Sward and the employee of Brett & Julia Rubert of Parnell Foods. Michael is currently attending the University of Minnesota Twin-Cities pursing a Bachelor’s in Chemical Engineering and Bachelor’s of Science. He is majoring in Chemistry and Chemical Engineering.

Michael has been working in the concession industry for the last six summers with Parnell Foods and will continue to work in the upcoming summers. He began working in the Elephant Ear trailer learning everything from the front window to the art of stretching an elephant ear.

Michael plans on graduating with Bachelor’s in Chemistry and Chemical Engineering. Upon his graduation he wishes to continue his education by pursing a Ph. D. in Nanotechnology. Ideally, he would like to work towards his degree while being involved in cutting edge research in new fields such as nanomaterial engineering or nanomedicine.

Woody Smith

Woody Smith is the son of Denny & Barb Smith of Good Food Concessions Group. Woody has been accepted and is currently attending the University of Wisconsin-Superior. He plans to earn a degree in Communicating Arts with his major study in Film Production.

Woody has been brought up in the food concession business. He has completely operated and managed concessions. From dealing with customers, operating grills, fryers, inventory, ordering supplies, and driving trailers to locations complete with setting up and tearing down; there isn’t anything he hasn’t done.

Woody plans on graduating with a four year degree in Film Production. From there he intends to continue on in the industry as God leads him. His goal is to become a professional producer in the cinema industry.

Holland Miller

Holland Miller is the son of Greg and Janey Miller of Miller & Company.

Holland is currently attending Marshall University pursuing a Bachelor’s in Business Administration & Accountancy, a Bachelor’s in Business Administration Finance, and a Master’s in Accountancy.

Holland has been around the Fair all his life. He has spent all his summers on the fairgrounds working and has learned all the ins-and-outs of the industry; from the “art of the sale” to the intricacies of a fair contract. Holland attributes any professional success he has had to his upbringing and his exposure to the fair industry.

Holland will leave with his Bachelor’s Degrees and a Master’s in Accounting.

He will obtain his CPA certification and enter the workforce in public accounting.

Once this is complete Holland plans to take the information learned in the accounting sector and apply it to a transition in the concession industry.

Concessionaire of the Month Jack Sturgeon

Jack’s Shack North Fort Myers, FL - Jack Sturgeon has been in business for 50 years and sells corndogs, sausages, drinks, and more. He primarily works Fairs in Illinois, South Carolina, and Florida, and is training his son, Lance, to take up the business. NICA had a chance to ask him a few questions.

NICA: How long have you been a concessionaire and a NICA member?

Jack Sturgeon: Thank you for selecting me this month to talk about my business! This will be my 50th year and it has been a great time.

I have enjoyed every year! Thanks NICA for becoming interested in our lives and business.

This has been a good thing for our business and I joined the first time it was presented to me. I know it would be good for all.

NICA: How and why did you get in to the concession business?

JS: I started my business after the Navy, while in college. I hoped it would support a wife and two children. I had a trailer on a corner, across from the girls’ dormitory. Business was great

selling popcorn, sno-cones, and taffy apples. My friend Phil was in the Pronto Pup business, and he suggested going to Fairs. Then it started, one after the other. It was fun, and a good source of money too!

NICA: What do you like most about being a Concessionaire?

JS: 50 years has given me a lot of friends and memories. When I started I had lots of help from others. Bill and Gene were two people that I would ask all kinds of questions. They always helped and gave me advice that I heed today.

Many friends are gone now, and I really miss them.

NICA: What are your best selling food items?

JS: Later in the years, I switched to corndogs, sausages, and lemon shake-ups. For several years, I had nine trailers at the Illinois State Fair.

Those were wild times.

NICA: What’s something people don’t know about you or your business?

JS: For over 20 years, I was either teaching school, coaching sports, or closing a Fair. Never a dull moment! I retired from teaching, and now I only do 10 Fairs.

NICA: How has the concession business changed since you first started out?

JS: The changes in our business have been unreal, and all for the good. From tents and tables, to magnificent trailers and well groomed employees. People taking pride in their business is evident.

NICA: What’s been the highlight of your career?

JS: I have been fortunate to have had great help, and proud to see some of them start their own business and be successful.

NICA: What’s been most influential to your business success within the past five years?

JS: The last five years have seen the economy affecting everyone’s business. I am glad that my son Lance has taken interest in the business, and is helping to continue this legacy.

NICA: What are some things you like to do in your free time?

JS: With Lance’s help, I can play more golf, and try to beat my friends.

By listening to the other person and discussing the situation, you have the potential of having fewer problems. Communication is not just talking, but also listening and considering what the other party has to say.

In management, good communiation is essential. Listen to your workers, in advice, counsel, and potential problems, and react accordingly. Remember that you are dealing with another human. This human is working to build your income. This human will not be perfect.

This human will have faults and probably bring a baggage of problems with him. Treat this human with the appreciation and respect with which you wish to be treated. I believe that rewards, where earned, should be dispensed – some throughout the season, and the most at the season end as an expression of appreciation of hard work, punctuality, honesty, and loyalty.”

My management philosophy is knowledge and deference. Learn all you can about what is under discussion. I always defer to Larry for the final decision. My position in the company is equal to Larry. In his absence, I can and do manage all aspects of the business. However, when we are working together, I defer to him as head of the business and never countermand him. Once he has made a decision, I honor that decision and don’t buck it. If I don’t show respect and honor to my partner in business, no one else will either.

Somewhere in all this, humor fits in. We enjoy our chosen way of life. We try to manage with humor, respect, care, and understanding. There is not a problem that doesn’t have some humor in it if you just step back and look.” ▲

2014 Food Show Sets Records Greg Miller, CCE, President

The final numbers are in for the NICA Business Expo and Fare Foods 2014 Food Show.

We set records in all areas. The Sheraton, Tampa East was a sellout and this year’s attendance was well over 1000 registered guest at the Show.

I use the word registered because in order to receive the great discounts each guest must be registered. We don’t use a turnstile so this is a true count.

NICA and Fare Foods are united in this endeavor and I believe this is a major reason for the continued success. Our food show vendors tell us they feel the unity and that we actually want them there, not just their money. Part of the agreement with our vendors is the advertising package for the NICA News.

The great part of this is, the vendors say they enjoy reading about our business and the many endeavors we take on. In talking with Audrey Poole, the Show Organizer for Fare Food, I asked her how much time she puts into this show. Her answer was November, December, and January it is a seven day a week job. July and August she works on selling sponsorships to our many vendors.

NICA’s Business Expo contained educational seminars with many participants in each meeting. As always the DOT Seminar was well attended with lots of facts and question and answer time. Hopefully next year we can allow for more time with these folks plus some one on one time. You have spoken about what you would like the seminars to contain and, we have listened. I would like to thank Joe Potillo, Jr. the 2014 Show Chairman, and the office staff for their ongoing support of this project.

The 2015 Show will be held at the same location, the Sheraton, Tampa East. The agreement has already been signed. We like the hotel location because of it’s close proximity to all the Florida Week events. Some of our vendors stay an extra day to go to the Florida State Fair and this exposes them to the Fair atmosphere and gives them a chance to meet concessionaires. NICA’s 2015 Show Chairman will be Randy Rechiert, CCE, and anybody who

knows Randy “and I’m sure all do” knows we will be in for a good time at the show. Once again our sincere Thanks to Fare Foods and their entire staff.

Although, building this Food Show over the years hasn’t always been easy, we have always worked out what was best for our visitors and members. Watch the NICA News for information about next year’s show and hope to see you there. ▲

NICA Attends the 2014 Spring Workshop Stacia Markowitz, Treasurer Our Directors’ Spring Workshop was held in Orange Park, Florida this year in early April. This was a convenient place for any of the directors who were working the Florida route. It is very close to the Clay County Fair in Green Cove Springs, which was in progress.

This Workshop is important to NICA, it is one of the few times a year we all get to do a face to face meeting and hash out the long and short term goals for NICA. We were privileged to have Alta Mosley and Rey O’Day in attendance and thank you to Rey for taking the time to come all the way East to participate.

Part of the reason we do this is to review what has and has not been accomplished yet and our Workshop always makes us aware that we must communicate better with our members.

I am happy to tell you that NICA will continue doing email blasts to our members. This will not take the place of NICA News, but it will get

the information that you need now. The content will be varied and hopefully help our members to be aware of things like DOT reviews and road checks. Thanks to Dominic Palmieri for reminding us how to make better use of this method of communication.

The Spring Workshop is also when all directors are given their yearly committee assignments and when we start to work on

things like fundraising and benefits to our members.

We all know how busy we are during the season and it helps us to know what you as NICA members want to see for benefits and programs.

Any member is welcome to call us at any time to discuss a benefit you would like to see or perhaps an industry issue you are interested in addressing. We are here for you and want you to call us or call the office and they will get the information to us. All of our Directors contact information is in the annual NICA Directory along with all the other members. This directory is loaded with information.

It is important to note that not all the discussions we have at the Spring Workshop are things we all agree upon. We are all small business owners and anytime you put ten independent people together they will not agree on everything. This Workshop gives us the

opportunity to work things out so we can go back to the membership with an answer on a specific issue. This Workshop also gives us the time and place to work on the details for issues and programs. I will say that we did not solve the world’s problems during those three days and the work will continue for the rest of the year.

There will be monthly meeting of the Directors and discussions on the phone as necessary.

I want to thank Alta Mosley for finding the place we held the Workshop. She made arrangement for the meeting room and we all got to make our reservations at the hotel with a special rate. Since these things are all paid by the Directors themselves, any time we get a bargain we are pleased.

I will close with this comment - Please let us know if you have an issue that is affecting our industry. We are here for you. We are NICA and “Together We Can!” ▲

Developing Topics at the Spring Workshop Alta Mosley, Executive Director During the three day Workshop, the Board reviewed the long and short term goals that were set two years ago. One of the most important components in setting goals is Vision. We must know where we want to go and develop the plan that will guide us to our destination.

The focus remains on increasing our membership. This can be accomplished through better communication. Several questions were raised: Do you talk to other Concessionaires about NICA? Do you tell them about the benefits?

Answer was, probably not as often as I should.

Our goal is to increase membership by 20%.

The need for better communication was discussed. It was agreed that an email blast would be a good way to begin. This will not replace the NICA News.

Three topics were developed to be used as the NICA platform for this year: 1. How Do You Get Paid?

2. How to Make Concessionaires Great at Your Fair!

3. 20 Feet Vs. Brick & Mortar You will be hearing more on the topics listed above as the year progresses.

The Board also developed a Statement of Position: In the interest of this Independent Industry and our diverse NICA membership the NICA Board of Directors realizes that the Fair and other events make decisions to best serve our customers at their venues. The NICA Board believes that Communication Committees must be established at Fairs and events to help set guidelines for each event trying to make changes. Independent concessionaires and vendors should have input to the process to insure that significant changes are handled in a professional and positive manner to impact our Fairs and events, members, and ultimately our customers with emphasis on quality of product, customer service and profitability, with respect to cashless systems, rent structures, audit procedures, 20 oz. bottles, point of sale terminals, registers, credit cards, mandatory commissaries, overbooking, menu overlap exclusives and deposits.

There is great need to establish Communication Committees at Fairs and other events. We encourage all members to contact the NICA Office for assistance in establishing one. ▲ June 2014 NICA News

NICA: What is the history behind your company? dale hershberger: My business started in 1975 in Gibsonton, FL. We provided Sound Systems and Arcade Repair. Over the years we evolved into 2-Way communication, Repeating Message Systems, Digital Audio Sound Systems.

Our Mobile On-Site Repair Truck has visited almost every major Fair in America. On-site repair has been advantageous to us as well as our customers. We also have telephone tech support.

Six Principles of Booth Design Jillian Cook, Lindsey Kendrick, and James Radke, Calgary Stampede Imagine yourself as a guest walking down a crowded midway. Everywhere you look is a bustle of activity; there are people, lights, colours, sounds and smells. Your senses are inundated with new experiences. You start to feel a rush of excitement with so much to see and do. You have unlimited options, but what catches your eye, draws you in or piques your interest? What do you overlook in the excitement?

As you walk up to your booth, does it stand out and demand attention of the guest or does it get lost among the crowd? When guests walk by are they drawn in by your eye catching booth design and enticing service, or do they get overwhelmed by the distractions and continue to pass you by? Time and time again we have seen amazing products that are a traditional favourite, a can’t miss item or a new crazy treat that people would love to try that may get over looked due to booth design. Often the design of your booth affects whether guests take the time to discover what you are offering, or move on to a more appealing display. Despite how unique and exciting a product is, if a booth looks tired, dark and lifeless guests are less inclined to stop based on the product alone.

When you are a part of a fair, there are a lot of elements that are out of your control including weather, attendance, location and the economy.

However, there are other elements, including booth design that you can impact. We, at the Calgary Stampede, have found that there are six specific principles of booth design that attract guests, provide exceptional experiences and ultimately impact your revenues. By understanding these six principles and incorporating them into your booth design, you can distinguish your booth from the crowd.

One of the biggest challenges with crowds is the ability to captivate them from a distance.

Adding Height to your booth creates stature and draws attention to your product before the guest gets close enough to fully view your menu. Height allows you to compete on a Midway full of large structures and attractions like rides, stages, screens and buildings. If you can draw them in from a distance they have now planned to eat at your booth, bypassing all other attractions.

greeted by sizzling meat on the grill, mini-donuts being tossed in sugar, or cotton candy swirling on the stick, you have managed to make them feel a part of the experience. This presentation is all a part of the Show; it’s the way you engage the guest by showing them your fun preparation process or dynamic video board. The show is also about the packaging or plating that you use to deliver your product; if your food is interesting or out of the ordinary guests will seek you out. From the moment a guest walks onto the Midway you have the opportunity to entice them to your booth. Even before they can see any booths, your food is a walking advertisement.

Drawing attention to your booth can be as simple as revitalizing old paint or adding a graphic treatment like decals or wraps. Creating complimentary pops of Colour can be one of the most inviting elements because it naturally attracts the eye and generates particular feelings with your booth. Research would suggest that red is an appetite stimulator, but if it is used too much it can be irritating to the eye, so it should be used

sparingly as a background or within a pattern.

Dark booths that are black, brown and grey are less inviting and get drowned out by everything else on a Midway. Booths that are all white or solid colours seem unfinished, which translates to what guests will expect from your menu items. You want to encourage them to eat at your location, and subtleties like choosing the right colours and patterns for your booth can have a major impact.

Once a guest has decided to order, it is all about Service. This is your chance to create a lasting impression with the guest, have them come back for more and tell their friends. Great food and presentations can be undone by lackluster staff and uninviting service areas. You want a guest to feel like they are being taken care of and that you have made a connection with each of them. You want to ensure that every opportunity is seized to provide an exceptional service. This encompasses everything from a friendly greeting, smile, a thank-you, complimentary uniforms, and even an open serving area that allows for free-flowing communication. It’s all about building an inviting atmosphere that makes the guest feel special.

When the sun goes down the day is far from over. The Midway becomes illuminated by the sparkling bulbs, bright colours, and bursts of Light.

Adding light takes the Midway to the next level as it mesmerizes the senses. Oddly enough, one of the simplest additions is adding bright and colourful lights but it is one of the most overlooked design elements. Some simple considerations include adding lighting that brightens up the interior of a booth so guests can see the preparation process, or adding scrolling lighting around the roof of your trailer.

Movement ties it all together! You want to incorporate movement with the other five principles. To create a dynamic environment that captivates your audience. Consider adding flags that wave in the wind, lights that flash, video boards with vibrant colour that show off guests enjoying your burger. All of these moving elements

entice customers to visit your booth and enjoy everything you have to offer. You also want to consider the interaction of staff members working together; do they have smiles on their faces?

Are they laughing with other guests? Is it a lively atmosphere? When you have a line up are you engaging those who are waiting by entertaining them, meanwhile attracting more people?

You want your booth to be successful. You’ve invested time, money and care into your product, so ensure that you have a booth design that shows off your efforts and ensures your success. Maximize the opportunities you have to improve your current display in ways that make sense to your booth and product.

Create an investment plan for your booth that works with your financial situation. Start building up your presentation by spending time on training your staff to provide exceptional service, and then add in unique packaging and plating, followed by adding larger elements like brighter lighting, a new paint job and flags. Your plan should be realistic and should consider what will have the most impact for your business. A way to measure success is to note differences in revenues as each change is implemented. Knowing your return on investment will reinforce your future plans.

At the Calgary Stampede we have noticed that vendors who add at least one of these six principles to their booth design have been able to impact their revenues in comparison to other vendors who do not have any of the principles as part of their design. We’ve also noticed that the more principles they have included, the stronger and more consistent their show has been.

Remember that you have ultimate control over your design. You might be challenged by elements that are out of your control, like the weather or booth location, but showing up with a great booth design will help counteract those challenges and make you stand out.

NICA West Visits Houston Home to the Livestock and Rodeo Show and Sysco Headquarters Rey O’Day, NICA West Executive Manager In January 1967, I made my first visit to the Houston Livestock and Rodeo Show as a 20 year old singer dancer with Jimmy Dean, Jim Nabors, Tennessee Ernie Ford and Eddy Arnold.

We played the Astrodome; big enough to fly an airplane inside. A pickup truck pulled us and the stage out to the middle of the arena and I learned not to listen to the echo of my own voice. I drank my first Dr. Pepper, ate my first Frito, bought my first piece of furniture from a commercial exhibitor, ate my first brisket, and experienced humidity that was higher than the temperature.

During that month, I learned Texas was a way of life.

In March of 2014, I made my 10th visit to the Houston Livestock and Rodeo Show and first to the Sysco Headquarters and was reminded Texas is still a way of life: only bigger and better. The PAID gate was 1,377,416, the Livestock show had 28,592 entries, and the Rodeo gave $2.04 million to its contestants.

Biz Concessions, owned by NICA members Stephanie and Nate Janousek. Stephanie is the daughter of longtime Concessionaire owners Steve and Pat VanderVorste. They also consumed 120,000 turkey legs many of them sold at Biggy’s stand operating under Odyssey Foods owned by NICA member Dominic Palmieri.

Moreover fair guests took over 10,000 rides on the mechanical bull which entertained folks at Big Bubba’s Bad BBQ, also owned by NICA member Roger Sharp.
