sharing about what NICA is doing. Each brought specific items to the table and their input was greatly appreciated. Additionally, the IAFE was encouraged to have NICA’s support on the upcoming move of their annual convention.

The day closed with scheduling for Las Vegas and a lunch provided by the IAFE, where more conversation and networking continued.

I want to personally thank the group who came and represented our entire Board. Paulette came to St. Louis a night early to pick me up the next morning from the airport, and then drove us to Springfield. Thank you! Randy and Dennis both got stuck in the airport and did not make it in until about 3:00 AM, but they were up and ready to go by 6:30 AM for breakfast and discussion, before heading to the office. Thanks guys! Even though

Thoughts from a This month’s Management Philosophy is from Thomas Hodson, CCE, Past President, Board Member, and longtime Concessionaire: “When I started working with my father in the family business around 1958, I didn’t think too much about why we were at a particular event or why we had the location we were in; I only looked forward to the next Fair and the end of the summer. As I got older and wiser, I began to understand the three ‘L’s’ of small business that my father had lived by in his business life: ‘Location, location, location.’

After I took over the helm, I began to develop my own philosophy. I refer to them as the three ‘P’s’ of small business: ‘Product, Personnel, and Presentation.’ Have the right ‘Product’ at the right time and place.

Whenever possible, have the right ‘Personnel’ to sell that product. Finally, ‘Present’ that product to the public in a way that they will come back another time to your business. Later, I realized there is another ‘P’ that is the sum of these: ‘Product, Personnel, and Presentation equal Profit!’

Those points and a true love for the business have made it possible to stay in this competitive business for 35-plus years.” ▲

Member’s Voice We love to hear from our Members! Their Voice is what helps our organization move forward. The NICA Office has been continuing their survey of responses from Renewing Members.

Dan and Rebecca Leimon of Leimon’s Pizzeria hail from Harlingen, Texas and have been members for almost 20 years (joined in 1996). When we spoke to Dan, he referred us to his wife, commenting “if a Concessionaire did not have a good wife, they would not make it out here!” Rebecca said that they were really happy with NICA. According to her, the association had always been good to them and the office always helped with any situation that they called about. In the beginning, they attended both NICA events in Florida and Nevada. She said that the events’ “round tables” were very helpful, as it gave everyone there a chance to put a name with a face and to meet the Fair Managers. She mentioned that she recommends NICA to others, especially those just starting out, since NICA provides them with a wealth of things. They mainly use the Pepsi, Coke, and Sherwin Williams benefits and they look forward to reading and enjoying the NICA News each month.

Leroy Hildebrand, Classy Caboose, out of Slaton, Texas, works in state and in Oklahoma and New Mexico. He called his operation a “Mom and Pop” and stated that they mainly work small weekend events, with a few county-type fairs in between. He felt that NICA was a good organization for the industry and therefore “good for us.” He elaborated by stating, “Supporting something good was, of course, beneficial to us and the industry.” He makes use of the AutoZone benefit, but mainly uses Fare Foods for his operational needs. He complained that a new ruling by the IRS about the use of his motorhome as a business expense was no longer allowed if you used it for personal uses as well. He did comment that they do a lot of their personal business online such as paying bills and banking, so they appreciate that NICA has an online pay

feature. He also enjoys reading NICA News to see the different types of businesses and how they do what they do.

David Drake, Drake Concessions, from Lancaster, Ohio, has five ice cream units and one sandwich unit. He said that he is probably a typical member, but basically one generally gets back from a membership what you are willing to put in it. “Unfortunately one can ask, ask, and ask the membership for something with little or no response, but if you screw up they let you know.” He reads NICA News and feels that it tries to keep him informed of changes to stay ahead of the curve. David further commented that “everyone needs help sometime, but you still have a choice, you can either walk through the door... or slam it shut!”

Robert Jackson, Jackson Enterprises, representing Dulzura, California, told NICA that he had worked the Orange County Fair more than 40 years and the Los Angeles County Fair for over 50! He is known as the “Corn Man” but he sells funnel cakes as well. When asked what he thought of his relationship with NICA ►► “Member’s Voice” continued on page 13 July 2015 NICA News

In Memory of Laura & Danny Lutz Submitted by Audrey Poole, Fare Foods It was a sad day on February 1, 2015 when word was received that Laura Lutz had passed on to a better place. Only a short three and a half months later, Laura’s spouse, Danny (“The Munch”), proceeded her on May 13, 2015. Danny and Laura had been in the concession industry for over 35 years. Mr. & Mrs. Munchie, as they were known in the concession business, worked in South Florida and the Mid-West. The couple worked the Florida State Fair for over 35 years.

Their specialty items were Steak on a Stick Kabobs, Fried Egg Rolls, and Mushrooms.

Laura was born on June 2, 1946 and Danny was born on October 24, 1942. Originally from Evansville, Indiana, the couple moved to Florida in the early 1990’s. They truly loved the industry and especially their extended concession family.

Robert stated that he mainly makes use of CLC Lodging’s CheckInn Direct Card and Sysco. He would like to see “generic souvenir cups” so they could be used at any Fair at any time - he is in luck, as there are two NICA endorsed cups available via Sysco and Whirley respectively.

Additionally, Robert stated that NICA has to keep on top of things with the discounting of prices in the future. Additionally, he always looks to see if he made it in NICA News or for any of his friends who may have. Regarding his business, he has downsized somewhat but still kept his better locations. He did not mention retiring; he only stated that he is definitely getting older!

Additionally, the Giles Ellis Memorial Golf Tournament preceded the meeting on May 13, 2015. Over 25 teams participated and enjoyed themselves immensely. Bill Olson of the Greater Jacksonville Agricultural Fair put together a great event, and with his team, he won the tournament!

The Convention opened on Thursday with the first sessions, including one that NICA participated in. The session was titled “Finding the Balance: Profitable Concessions = Successful Fairs.” Moderator Jim Ward, Pasco County Fair, welcomed Russ Harrison, CCE, Past President, Robert Fogle, Maryland State Fair, and Kathy Ross, Director, on the panel. The discussion covered patrons expectations attending our events, commissaries and sponsorship, contract management, food safety and successful marketing stategies and fair promotions. Proud of One of Our Own Rey O’Day, Interim Executive Manager

Board of Directors Member Kathy Ross called me about an article she had read regarding a concession owner, Ryann Newman, who was recently hired as the Fair Manager at the Glenn County Fair in California. Kathy was proud to read about Ryann’s success and asked if she had any affiliation with NICA. You bet she does! Her father Ron Boeger, owner of Happy Day Pony Ride, is a longtime NICA Member and for many years was the NICA National Representative in California. Her husband Mike, along with Justin Murray, were the official bartenders in the NICA Suite during last year’s WFA Convention. Our newest and youngest NICA West Council Member, April Wood, plays that Fair and agreed to interview Ryann for us in the segment below. ▲

communicating well.” Ryann views one of the key goals of NICA as bringing Concessionaires together to connect the gap between Fair and Concessionaire, a valued and shared ambition of the Glenn County Fair. With that goal in mind, the Glenn County Fair has joined NICA. “I want to be a person to explain what each side of the fair looks like to the other group.” She knows that “Concessionaires do what they do because they absolutely love it.” She wants to give back to the Fair community by assisting with this communication and by bringing a new enthusiasm to the Fair in her county with the skills she has gained in her own concessions business.

Ryann recognizes problems the Glenn County Fair faces that many other Fairs face as well. “I believe the biggest challenge to the fair now is lack of moral, I am trying to work on public relations and get people to believe in the fair.” While facing the challenge of getting the community to reclaim their pride in the Fair, she also knows that financially, Fairs face many challenges. Ryann seeks to make the Fair profitable and self-sufficient, she values the concessions because they help to achieve that goal by participating.

Ryann’s love of Fairs runs deep from her childhood, riding her favorite ride the Zipper, to her current dual position as a Fair Manager and Concessionaire. On a beautiful day, before the Fair’s opening, we had our meeting together and she told me all of the above and more. Her favorite

thing about the Fair was immediately announced as the food. She loves the Original Sleek Greek Gyros and she said “if cheese on a stick was fat free I would eat it every day.” Second to the food, Ryann explained she loves Fairs because “when it gets really busy at night and everyone is having the same good time, genuinely enjoying themselves, that energy is addicting to me; they forget about all their problems for a while and for whatever time they are here, they are free to enjoy themselves.”

“She is the perfect diplomat for that community.”

When Rey O’Day saw Ryann at the Sacramento County Fair she asked Ryann about bringing “happy” to the Fair. She said “I believe in the law of attraction. If you give grumpy, then you get grumpy. If you give bad information, then you get bad information. If you give happy, then you get happy!” What a great idea for all of us to embrace!

A Special Announcement from Sysco Sysco has been working hard to be sure we have turkey legs for our fairgoers, as previously reported by Rey O’Day in the May Edition of NICA Now! Amy Davis Smith, our agreement supervisor, has sent this letter with updated information regarding the effects of avian bird flu: June 3, 2015

Dear Valued Sysco Customer, The Avian Influenza outbreak in parts of the U.S. and Canada has been front and center in today’s news. This outbreak has resulted in the loss of over 44 Million birds from the U.S. Domestic Poultry population, primarily focused on egg-laying chickens with a minor impact on turkey. We recognize this affects Sysco’s ability to provide you what you need, when you need it. Please know that we share your concerns and that we are doing everything within our ability to ensure we fulfill your orders to satisfy your customers.

For now, because of our extensive relationships with numerous turkey suppliers across the country, we expect the effects to be minimal on our ability to provide you turkey products. However, on the egg-laying chicken side, the most directly impacted areas are processed eggs and processed-egg products (such as mayonnaise and baking mixes), which are the result of the dramatically reduced population of egg-laying hens. We have been informed by suppliers that this population will not be replenished to pre-flu levels for at least 18 months.

Because a significant number of the egg-laying houses in the country are in geographical areas affected by the outbreak in the U.S. and Canada, it appears that all of us – suppliers, product manufacturers, foodservice distributors, restaurants and food operators – will be negatively affected until the egg-laying hen population is replenished.

Numerous egg suppliers have declared that the Avian Influenza outbreak is a force majeure event, which means that until the egg-laying hen population can be adequately replenished, those suppliers cannot be held accountable for satisfying orders. Because of this, we are prioritizing our current egg customers to ensure that basic service is maintained to the extent our limited supplies allow. However, we are not taking any new egg customers.

We also expect the limited availability of processed eggs to have an interim effect on processed egg prices and manufactured products that require processed eggs, as well as shell eggs. The manufacturers have pledged to keep us apprised when those increases might take place, and we will share that information with you as soon as we receive it.

Please know that we value your business. We realize this is a less-than-optimal situation, and we pledge to work with you to satisfy your needs to the best of our ability. We have attached a series of questions and answers to help you better understand the situation. We also are willing to meet with you to review what alternatives might be available to you to satisfy your needs. Dan Long, Sales Support to the Fair Dominic Palmieri commented, “Overall I’d score the first week a ‘9’ for product delivery, quality and availability.” He also noted that when he went through several buying guides and price lists on several dozen items, the NICA/Sysco Marketplace prices were either less or right at the same prices as other competitors pricing with the exception that in his opinion, the Sysco products were a better quality.

Rey O’Day, Interim Executive Manager, visited Drew Ammerman, at Sysco Riverside to begin planning a field trip in January 2016 for WFA Convention attendees. Rey observed, “The Riverside warehouse is so clean you can eat off Sysco delivering for the floor.” It is the “greenest” warehouse in the Sysco’s State of the Art opening day at San Diego country with a solar panel roof and all hydrogen Kitchens County Fair fuel cell powered equipment. The field trip will include a complete tour of the facility, several workshops, a business review example and some delicious treats to eat. ▲

In Memory of Anthony “Tony” Carpenter, Jr. Submitted by Audrey Poole, Fare Foods On February 18, 2015, Tony Carpenter lost his battle with cancer. Tony was certainly a fighter and had told us all he was going to beat this disease.

We, that knew him, can honestly say he was not willing to give up without a fight because he loved his family and life. Tony always had a way about him of making people laugh.

Tony was born on January 19, 1939 in New Albany, IN. He is survived by his wife Carol and daughter Melissa (Tony) Lantrip of Jeffersonville, Indiana as well as his sister Carolyn, grandchildren and great grandchildren.

Tony served his country in the National Guard and later worked in food service equipment sales. After retiring, Tony worked as a chauffeur for R & R Limo in Louisville, Kentucky where he enjoyed driving many famous celebrities, and for Fare Foods as a Sales Ambassador. He was a member of the Masonic Lodge #340 and the International Independent Showmen’s Association in Gibsonton, Florida. He was also a Kentucky Colonel.

A Memorial Scholarship has been established at The I.I.S.A. in Tony’s memory. Donations can be sent to: S.R.V. Scholarship Fund, P.O. Box 3359, Riverview, FL 33568. Please include Tony’s name on the scholarship donation.

A celebration of Tony’s life will be held in Gibsonton, Florida during Florida week at the Showmen’s Club. ▲

Our Condolences to the Dickerson & Kenna Family Our hearts are deeply saddened to report that NICA Members Dickerson & Kenna Concessions have experienced a terrible loss. Donald and Cecilia Kenna’s father, James L. Dickerson, 95, of Lebanon, Indiana passed away June 16, 2015.

He was born September 13, 1919, served in World War II in the U.S. Army and fought in the Battle of the Bulge, and spent the next 60 years as a Concessionaire before retirement.

Family and friends gathered Friday, June 19, 2015 for visitation. You are invited to visit the website www.strawmyerdrury.com where you may sign his online register and leave a personal message. Memorial contributions may be made to Camp Little Red Door, 1801 N. Meridian Street, Indianapolis, IN 46202. ▲
