Another statement, this one from a Concessionaire, was that he had bought several trailers from other Concessionaires, hoping to keep the locations. He took the responsibility by going to the Fair / Concessions Manager, explaining that he was purchasing the trailers and he would like to retain the locations. This action proved very successful. Will it be successful every time? Probably not, but failure to be up front will put the location in jeopardy and destroy the trust that has been built over the years. Another situation that concerns me greatly is Concessionaires losing their locations! If you are the Fair / Concession Manager, you have that right, but I ask you these questions: “Did you give the Concessionaire a warning? Did you tell everyone what you expected? Have you treated everyone fairly? Do you hold everyone accountable to the same rules?” Just some things to think about. May you have sunny skies, great crowds, and most of all, safe travels! ▲

It seems appropriate that you should be receiving this issue close to our National Independence Day, the 4th of July. But as I write it, we are coming into the Memorial Day Weekend. Two monumental holidays that represent the core and foundation of our country. It was the service and dedication by many to persue a dream, a cause, a love, and sacrifice for a nation, that makes us the Greatest Country in the World. Service to our country is an honor. Equally, service to any great organization is also an honor. Whether we serve our church, local homeless shelter, or children’s organization, we do it for the satisfaction of helping to make those organizations stronger and better than they were before. I’ve served on several boards and realize the same thing each time I serve. I learn so much from the people I serve with, as well as the people I serve. I grow personally as an individual, and it shows in my business, my employees, and my customers. Service is a great opportunity for each and every one of us. It’s the continual pursuit of making ourselves, our businesses, and our industry better for everyone. It is up to us to help progress the industry for the future generations of our families following us. We want them to say, “Not only did they continue to make the light shine, but
they made the light shine brighter than the ones that came before them!” So this I say to you. Become involved in NICA. Help to serve this great industry by running for the Board. If you feel that you need to grow and learn in the organization first, then offer to serve on a committee. There are several committees to choose from and one of them can certainly be of interest to you. Here are a few of the strategic goals committees to choose from:

“Director’s Voice” continued from Page 7 ►► Membership Committee: Responsible for signing up new and retaining current Members. Help to host NICA mixers. Professional Voice of Industry Committee: Responsible for NICA NOW e-mail info, organizing speakers, communicating with and establishing new forms to communicate with fairs. Member Benefits Committee: Responsible for finding new benefits for our members. Discounts, deals, programs, etc. Fundraising Committee: Responsible for exploring a member-wide fundraiser, creating an annual fundraising calendar, increasing revenue, etc. If this is not your forte, then volunteer to help organize a social mixer. (I know any one of you can, because you all know how to throw a party. You do it at every fair you play!) You can help to grow the NICA membership by recruiting new members at any of these events. No more excuses? Here’s an idea. Help to organize a fundraiser. Selling tickets, coordinating a bowling or golf tournament, doing a raffle for a survival kit, or even helping to clean up after a NICA event. These are the little things that you can do to help make this organization better and stronger. Too busy with the kids? Well, get them to help at any NICA event. You get to spend time with them, it gets them involved, engaged, and away from their electronic devices for an hour or two! Now there’s an ideal; especially from a dad that has four kids and 15 nieces and nephews in the business (all of whom have way too many electronic devices). Our kids help at our golf tournaments to stuff the “Tee Goodie” bags. For those of you who do help and volunteer, I want to thank you for helping to fight the fight. They have coordinated golf, bowling, softball, poker, socials, dinners, and even fishing trips to help the NICA organization grow. Yes, this is a “Meritocracy” moment. And we sometimes don’t thank the ones that work on all our behalf. But in this moment, I will try to name a few. I’m sure I will have forgotten to mention names, but you know who you are and I’m sure I will have the chance to thank you again someday. So no hurt feelings if your name didn’t make this short list; they only give me a couple pages for this article. First, the Board of NICA. I admire the dedication that all my fellow Board Members have for your families, businesses, and service to 8 July 2014 NICA News
the organization. You help make the light shine brighter! Dennis Fraleigh, Paulette Keene, Randy Reichert, CCE, and Kathy Ross, who have been nominated to run for the BOD, I thank you for stepping up and wanting to make a difference. They have graciously agreed to run for your BOD of NICA. By the time this article runs in July, hopefully there will be a few more stepping up as well, so be sure to support them in their efforts. To Gary Barham, of Hot Dog on a Stick, for all the golf tournaments you have put together and the 15 hole-in-one insurance policies you have purchased on our behalf. Ron Smith, who graciously hosted our Vegas Advisory Board breakfast for many years. To Don and Shelley Long, of L & L Concessions, who always have an office for the NICA West Council. Don Delahoyde, 5 Star Catering, and Dan Lusenhop, Jeanne’s Artichokes, and your North California group for throwing spaghetti dinner / poker nights. Shawn McKinney for agreeing to serve on our Professional Voice Committee. Chuck and Irene Duggan who always donate, coordinate and feed VIPs that come visit our NICA events. To all the Fair Managers who have graciously embraced, supported and donated your time, Fair amenities, and resources to NICA. Without your help, many of our very important events would not happen. Tony Trafton, who encouraged, cajoled, and eventually threatened several people to run, help organize, and think out of the circle, all to make NICA better today. And last but not least, my RCS family. You help support what I do through donations, offering space to host events, and supporting NICA programs like the SYSCO/NICA Marketplace. These are the little things that are so easy to do. These members are great examples of “Together We Can!” and as you can see, there are so many opportunities for you to serve and help NICA. And serve you should! If you want to help and are not sure of what to do, we have all the tools you need to successfully pull off an event. From an event as elaborate as a food trade show, as simple as a coffee clutch, or even speaking at a zone meeting.

Sympathies for the Hannon Family’s Loss Thomas Richard Hannon, 65, of Kouts, IL, passed away Saturday, May 10, 2014. Tom served in the U.S. Army, was a long-time area farmer and a member of St. Mary’s Catholic Church in Kouts. He was Secretary Treasurer of the Porter County Soil and Water Conservation District, a beloved member of the Porter County 4-H Swine Committee, and an avid Purdue basketball fan. Condolences to the Knaga Family NICA Member Joseph F. Knaga passed away on Friday, May 30, 2014 in Marion, Illinois. Joe proudly served his country in the U.S. Navy from 1966 to 1969. For 27 years, he and his wife, Carol, owned and operated the Sirloin Hut food concession. Joe loved working with wood and built furniture in his spare time. He also liked to fish when his time permitted. Dennis Fraleigh has been serving up steak, chicken, sausage, gyros, salads, and more for over 30 years under the name F & W Concessions and the Butcher Boys. He joined NICA in 1993. “I got into the Concession business in 1981 when a long time friend, Richie Wright, and I purchased a route and trailer from Rene Pice. We got into the business because we were full of energy and wanted to make some money! I remember watching NICA form at the South Florida Fair in 1993. Larry Orme, Gene O’Brien, Richie Wright, and Eddie Porcelli were getting together and talking about the lack of representation for independent Concessionaires. What I like most about being a Concessionaire is that it forces you to be a flexible and creative person at all times. There is nothing mundane about it! No two days are the same and there is nothing that duct tape and wire ties can’t fix! I think it’s important to stick with what you know and concentrate on providing a consistant, quality product! I’ve always believed that if you’re going to do something, do it right. Employees are the key to my success as well. You need to surround yourself with people who want to be good at it too! What I like best about NICA is the fact that they are always looking down new avenues to help our industry. I give everyone at NICA a lot of credit for the time and effort they put in furthering our interests.”
“I am Paulette Keene and I have been serving as a director for going on 3 years. I feel like it takes a couple of years to get caught up with everything that NICA is involved in. I was asked to run again for the board. I enjoy everyone that is currently serving on the board of directors and the goals we are working toward. For those who do not know me, my husband Norman and I have been in the concessions business for 32 years. We enjoy the concession business and traveling to Fairs and special events. I was raised on my family’s small carnival and helped in my parents concession and game trailers growing up. I remember making cotton candy at the age of 7, giving my Mom restroom breaks. We worked with our food concession trailers on the family carnival for 10 years. For the last 2 years on the carnival route, we started our independent route. We have a good route now with many State and County Fairs in several different Midwest and Southern states. I believe my experience in concessions gives me a good knowledge of the concession business. I am always looking for ways to improve all of our businesses and I am willing to give the time needed to be a director if I am the choice of the members.”

“The Fair industry is an ever changing business. In this changing climate, it is more important now than ever that all facets of the Fair industry work together to continue having a successful business climate. As a director of NICA I will continue to work to communicate the concerns and needs of the independent Concessionaires to Fair Management. In seeking another term as a NICA director, I look to use the experience I have gained to keep NICA headed in an upward direction. Since being on the board, NICA has truly become a North American organization with the formation of NICA West and the growth of NICA members in Canada. I began in the concession business in the mid-1980’s, working the summer months for Rob Schmidt, the founder of Hot Wisconsin Cheese. After a few years of teaching, I chose to enter theconcession business on a full-time basis. In 1992, my wife Tracy and I purchased a Hot Wisconsin Cheese route from Rob Schmidt. We are entering our 23rd year as concession business owners of Meggers Road Concessions, Inc. During the past 23 years, we have bought and sold a number of concession businesses. It is this positive experience that enables me to communicate the importance of “transfer of ownership” for the independent Concessionaire and the Fair industry.”
“I was born and raised on a dairy farm in western Pennsylvania, and I joined 4-H at the age of 8, which put me on a fairground from then on. Selling tickets for a raffle was my first “fair” job and during nursing school I got a summer job working in food concessions. I met Jeff there and we were married in 1990. AJ was born in 1995. We have traveled with a show and now have have a great independent route, allowing us to see both sides of the amusement industry. The best thing about being a Concessionaire is being able to work as a family and to be able to set your own schedule. My mom says that being a Concesionaire is a lot like being a farmer, who has to do his or her job whether they want to or not. According to her, the similarities are that it stinks when it rains, there is always something to fix or paint, and you can never find any good help, but I disagree on that last point. I appreciate NICA because of the camaraderie, to have people that “know” what I am talking about and that have the same problems and conflicts as we do and maybe share solutions. If not, we can just share stories. When we aren’t traveling in Florida, Pennsylvania, and New York, we are spending valuable time with friends and family. You can find me on Pinterest trying new recipes and making new creations in our off-season.”

Lakeside Concessions Shawnee, OK - Jackie & Suzanne DeRamus have been offering corn dogs, funnel cakes, Cajun chicken, lemonade, ribbon & curly fries, sodas & fruit smoothies throughout the Midwest for 15 years. NICA had a chance to ask them a few questions. NICA: How long have you been a Concessionaire and a NICA member? JaCkie deramus: This is our 15th year as Concessionaires and we have been with NICA for 11 years, I think. Time just flies! NICA: What was the first thing you remember about NICA? JD: Jim Swain. He came up to talk to us and told us about NICA and we joined. NICA: How and why did you get into the Concession business? Suzanne deramus: We were in the restaurant business first, but Jackie had always wanted to work in the concession business, so we started with a small cargo trailer. It didn’t take us long to decide that we liked it. It was full-time and all-in after that.

NICA: If you were not a Concessionaire, what would you be? JD: I can’t see us doing anything else. NICA: What do you like most about being a Concessionaire? JD: People that you work around at the Fairs become like family, and at the end of season, we do get some time off. NICA: What is your most popular food item? SD: People come back to the Fairs each year and say, “I came out just to have your chicken!” It makes my heart smile. NICA: Do you have any new items coming to your menu this year? JD: Hold on! You could see it soon at a Fair near you.

NICA: What is something people do not know about you or your business? SD: Most people that work around Jackie knows that he likes it done right. I joke with him all the time that it’s his OCD!
NICA: How has the Concession business changed since you first started out? What would you change? JD: The trailers, the cost of doing business, and the D.O.T. regulations have changed. There is not a whole lot I would change; I think sometimes learning to change with the times is the hardest part. NICA: What has been the highlight of your career? SD: Getting the kids involved! We have one son Joey that is out with us all the time and our daughter Kendall helps when we are close to her. The grandkids are old enough to work, too, so it’s a win-win since we get to spend time with them. NICA: What has been most influential to your success within the past five years? JD: Being able to build new trailers.

NICA: What do like to do in your free time? SD: We love to go on cruises. The last one was on Disney Cruise Lines with the grandkids, and it was great! The next one is at the end of our season. Working so hard all year long and you have a vacation planned for the end of season. Wow! You always have something to look forward to. NICA: What do you like best about NICA? JD: NICA keeps us informed on the changes in our business and works to get us discounts. Money saved is a big plus! NICA: What are looking forward to this year? SD: Having a successful year and good weather!

NICA: What is the funniest thing that has happened in your concession career or through your concessionaire travels? JD: Not really one thing stands out. Of course, a lot has happened and at the time it’s not really funny, but we look back now and we can laugh on a lot of stuff.
NICA: Is there anything else you would like to share with NICA members? JD: Just a huge thank you to everyone! I can’t tell you the times we have been on the side of the road and people stop or call. “Florida Fed” continued from Page 19 ►► Not only was Dan entertaining, he gave everyone a glimpse of how life can be when you “get the monkey off your back.” If you ever have the opportunity to hear this man speak, be sure you take to the time to listen. Workshops and Roundtable discussions included a variety of topics: Negotiating Skills, How to get the Community Fired Up About Your Fair, Increasing Revenue by Keeping Patrons on the Grounds and Using Social Media to Build Awareness of Your Fair. Rey O’Day, NICA West Executive Manager presented the Principals of Food and Beverage. This is one of the classes required by the Institute of Fair Management. This was an outstanding presentation and was very well attended. NICA presented a Workshop on Contracts – What They Really Mean. Panel members were Kathy Ross, Ross Concessions, Tom Sattler, CCE, Sattler Leathers & Hats and Robert Fogle, CFE, The Great Frederick Fair. The session was well attended and covered many points of interest for NICA Members. The Convention closed with a Banquet on Saturday evening. Attendees were treated to a performance by Landau Eugene Murphy, Jr., winner of America’s Got Talent, season six. Doris Graska, Citrus County Fair, was the Hall of Fame winner and Bobby McLamb, Artists and Attractions, was named as the Associate of the Year. Rick Vymlatil, CFE, South Florida Fair, accepted the gavel as the incoming President of the Florida Federation of Fairs and presented Gayle Hart, Greater Jacksonville Fair, with a plaque honoring her as the 2013–14 President. ▲ “Director’s Voice” continued from Page 8 ►► Try something to make YOUR industry better for everyone and for others following behind you.
