During the IAAPA Convention the NICA Leadership Committee, led by Director Dennis Fraleigh met to discuss the future of NICA with Convention and particular emphasis on our administrative focus the Holiday Season is for the future. This was a very important session. here. It truly is the most It is the task of this group to put forth ideas that wonderful time of the year. would be in the best interest of the membership. I particularly love this time As I head to Vegas it is the mandate to serve of the year because it is, our membership that is my foremost focus. It is in my mind, truly a time important to me that as NICA continues to grow of rest, reflection, and and evolve, we forever keep our focus on why we reinvigoration. are here—that is to be a voice. NICA must remain As I write this I am true to our purpose. There are many pertinent just completing the IAAPA matters facing our members such as rising cost, Convention in Orlando, FL and preparing to head to Las Vegas, NV for the Annual IAFE Convention. labor issues, increased regulation, and the list goes on and on. The IAAPA show is truly one of the best trade I hope to report to you in my next article on shows I attend each year. Many of our NICA the progress of our Leadership Team and the Las partners and a good number of our membership Vegas convention. are on hand each year. I am always honored to In closing, when making your plans for this walk around the trade show floor with the Hardest winter, please include the WFA/NICA Sysco Working Man of our respective associations, Food Show in Anaheim, CA in January, the Past-President Russ Harrison, CCE. Russ has NICA Business Expo/Fare Foods Food Show in not ceased to work with, and for, all of the trade associations over the last decade-plus, even after Tampa, FL in February, and the IISA GibTown Extravaganza in Gibsonton, FL led by President serving as our President. he currently serves on the IAFE Board of Directors. He is truly an example Richard George also held in February. Merry of someone with the industry as a whole in mind. Christmas and Happy New Year! ▲
Director’s Voice Dennis Fraleigh, Director
I’m hoping everyone has recovered from the Vegas festivities! It’s midDecember and the holidays are coming up faster then we all would like and so is the New Year. This means we are back at it! Fairs, State Conventions, Tampa week, etc. I’m going to share with you a bit of my not-quite-first-year on the NICA Board. To sum it up in a nut shell, “eye opening!” There’s a lot of great people on the Board, east and west, in the office, Past-Directors, Past-
Presidents, even people that are not on the Board who put in a lot of time and effort promoting NICA and its products. I’ve got to know some people who I probably would have never come in contact with otherwise; that’s been great! On the other hand, I’ve been witness to some old habits that we just can’t get “around.” The industry has changed in the last 20-plus years that NICA has been in existence. We need to really look at the years ahead, not the ones behind. There’s been struggles in the past with micro-managing, Boards not working well together, Executive Directors not doing the right “thing”—the list goes on. As a Board, we have made some short-term

In closing, I’d just like to say I’m going to try really hard to do what I think is best for the and long-term goals that we are trying hard to organization and its members. I’m not only accomplish. We’ve been using Rey O’Day from speaking for myself but everyone trying to make NICA West to help guide us with some of these a difference. I was very leery when I was asked to goals. There’s been some strong criticism from be on this Board; it took a number of people a long some members in regards to our agenda, but I time to convince me to do it. There’s been some can tell you only one thing: “Don’t believe what days that I’ve been second guessing myself, but I you hear on the midway!” There are two sides to guess its like playing a Fair—you have to take the every story, and then there’s the truth! I was told good with the bad! Merry Holidays, Happy New in Tampa by a well-respected Fair Manager and friend that I need to “fix” NICA. I wasn’t sure at the Year, and remember, “Together We Can!” ▲

Member’s Voice The greatest part of NICA is the Membership! Their Voice influences where the organization is headed and what it can improve, especially when it comes to which benefits are being used and which events people are interested in attending. The NICA Office has been continuing their survey of responses from Renewing Members. Tod Marchant, Marchant Concessions from Summerland, BC, Canada, said that being from Canada he can not make use of the many benefits as they do not accept them there. Unfortunately, a lot of the events in the US have independent bottlers that do not honor these either. Tod has attended the “Florida Week” for the past four years and thinks that it’s really nice that it is free. He enjoys the NICA News as he has many friends in the US and it is nice to see them and read their stories. He would like to see more recruitment in Canada even though right now its a “hard sell,” but with more members that could change. Having been in the business for 22 years, he is happy with paying his $125 for the convention and the NICA News, as he also visits the State Fair and “Gibtown” getting to meet with the many friends he has made over those years. Jerry Phillips, Action Foods of Peoria, AZ, feels his relationship with NICA has been fine. His health has him semi-retired while he admits that his wife is doing most of the work. Since he is a Food Concessionaire, the buying power provided by NICA is the most beneficial benefit he uses. He has been in business for more than 40 years and was in Fair Management before that. Because of this, he is able to see both sides of the fence and look at things with a better perspective. He definitely works at each event with the different purveyors to make sure he is getting the best product for the best price. Of course sometimes as the Concessionaire, you are very limited in what you can do—it depends on the fair contracts with others. He likes to peruse the NICA News to look for something new that he may be able to add to his unit. He also likes to see the ads for the various food products. He especially looks for
pictures of the many friends he has made over the last 40 years. Ray and Michelle Farrow, Farrow Enterprise, LLC of Baltimore, MD, said that they do not get to spend a lot of time with NICA, but they both grew up in this industry. He is now a fulltime truck driver and works weekend events “Concessionairing.” During the summer they both work in Maryland doing County Fairs. They have not had an opportunity to attend any of the NICA events in Florida. Michelle said they had made use of the Hertz benefit. She also said that she skims the NICA News and reads what catches her attention, whereas he reads it from cover to cover and especially likes to read something about or from someone he knows, such as the Concessionaire of the Month. John Gray, Focus Photography out of Cornville, AZ, commented that NICA is a good group for his business and socializing. He likes it for both of those reasons. He feels that the NICA News is more geared to Food Vendors with their ads which is not very relevant to him. It does have interesting stories which he enjoys reading. He would like to see NICA be able to secure a benefit for tires, as

Living Legends National Independent Concessionaires Association proudly presents a peek into the history of our diverse industry. This issue, we’ll examine the life and career of Fred Pittroff, the owner of Giant Ride, Inc., which specializes in providing Giant Slide experiences to Fairs nationwide. We were very happy to get his take on his life, his career, the industry, and NICA in the following interview. Enjoy!
Thank you for your time, Mr. Pittroff, and congratulations on being selected as a Living Legend! How did your legend begin? I started in the business in 1953 when I was hired by Dave Barham, Hot Dog on a Stick. Dave had a stand in Balboa and also at the OC Fair selling charbroiled hot dogs. When I was 15, Dave hired me to run his Balboa stand, paying me 25 percent of the gross; I also helped at the OC Fair. Every summer I continued to work for Dave and after school I worked at our family printing business. In 1965, after spending more than a decade working at Fairs on the weekends and still working full-time running a press at our family business, my wife Beverley and I were looking for something Fred Pittroff, Giant Ride, Inc., and Carmel Dyer-Pittroff, to do ourselves. I was inspired after seeing a Original Australian Battered Potatoes, LLC small slide at a Santa Cruz amusement park. I had an architect design a slide using scaffolding I took time off from the print shop and, in 1967, borrowed from a friend in the bleacher business. I went to the Park and Fair Convention in Chicago, where we sold ten slides. Then we had to build them at locations all over the country. Every slide we sold gave us enough money to build two slides ourselves. We built 42 slides total.
The First Giant Slide in 1966 at the Orange Show
My father loaned us the money to help get started. I partnered with Dave because of his contacts with the Fairs and Mike Brown who lent us the scaffolding. The first slide was built for the 1966 Orange Show in San Bernardino, CA but it had to be redesigned because it was too steep. A new slide was designed with five humps. The Giant Slide was built for the LA County Fair in 1967. We charged 25 cents and grossed $40,000. 14

Thoughts from a This month’s Statement of Communications & Management Philosophy is from NICA’s Immediate Past President, Greg Miller, CCE, Miller & Company: “My philosophy of life—walk a mile in another man’s shoes—has served me very well in life and especially in managing my concessions and communicating with the Fair Industry. NICA has been a wonderful tool of communication for me. It has opened doors and allowed acceptance. For the first five of our ten years in business I found it difficult to find my place within the ‘good ole boys club.’ Because of this experience I’ve made it my policy to make myself open to all Concessionaires, new and old. I’ve achieved this by being active in NICA meetings held at the local, state, and national levels. In the past, it was common for Concessionaires to withhold valuable information from each other in hopes of increasing one’s own business. Now, open communication has helped make our entire industry sronger. NICA has also offered me a valuable link to Greg Miller, CCE Fairs and Festivals. I feel that open lines of communication between Miller & Co. myself and Fair Management has been a win-win situation because CCE Earned in 2002 we have learned our goals are the same. In management, practice makes perfect! Each year I gain from the experiences behind me. Because of this experience, my management responsibilities have become simpler and more enjoyable. Managing a concession business encompasses many diverse responsibilities—from handling a DOT inspection at the side of the road to meeting with the CEO of some of the largest Fairs of the country. Not to mention making the best decision for my family’s future. I always make quality a priority! Quality in what I give to a Fair, a Fairgoer, an Employee, a fellow vendor, to my family, and to myself is the most rewarding aspect of management.” ▲ The CCE Program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism. Visit the CCE website for more details: goo.gl/H3VKUf
“Member’s Voice” continued from page 13 ►► every one needs and uses them. He commented that he uses First Data for his credit card processing and is looking forward to the newer system that can be processed on cell phones— especially when he has multiple locations. He works mainly in California and Arizona. Michael Lary, Utter Delights, Inc. of Fort Edward, NY, joined NICA because of Art Pokorny’s suggestion. He feels he is a relatively “new member” having joined in August of 2013. However, he did attend the Florida Week and took
advantage of getting his ServSafe Certification that NICA offers to its members during this time. Sometimes it seems to him that the “bigger operators” get more attention than the smaller operators. He feels that NICA has made some head way in opening the doors of communication with their suggestion of having Communications Committees between Fairs and Concessionaires in the past five years. The NICA Office plans to continue these calls to our renewing members throughout 2015 and beyond. If you hear from us, we’d love to know what’s on your mind! If you haven’t been contacted yet, call us with your story. ▲ December 2015 NICA News

Arizona State Fair has New Leadership
Rey O’Day, Interim Executive Manager
On Sunday, November 1, 2016 I had the pleasure of interviewing Wanell Costello, Executive Director and Michael Searle, Deputy Director, the new leadership team at the Arizona State Fair. I believe Wanell first joined NICA during the Concessionaire breakfast and meeting at the Pima County Fair in 2013. She was instrumental to our NICA Members in opening the Concession Commissary to more Vendors several years ago. Under her leadership, she provided an RV Space as an opportunity prize for a NICA Fundraiser. She actively supports membership in NICA and encourages members to use its benefits. Michael started his Fair affiliations as an entertainer. Later he and his wife Karen founded Fair Executives Company, a company that

contracts with facility and event management organizations to augment their Executive teams. Their skill focus is on efficiency and profitability. He is pleased to bring 25-years of Fair experience to the Arizona State Fair. As Wanell is building her team she is learning that the power of “new blood” is that people ask new questions and have new solutions because they are not bound by “having to do it the way it has always been done.” She is energized by people answering questions differently. As Michael contemplates his business partnership with Wanell, he is extremely excited by the bright future and potential that lies before them and their many fair partners. He believes they are a “fierce team that is ready for an industry craving progress.” Please enjoy the photo gallery of our Arizona NICA Members. ▲

Two End of Summer Fairs
The Big E & LA County Fair Rey O’Day, Interim Executive Manager
Although there is not a Massachusetts State Fair, there is a New England State Fair in West Springfield, MA called The Eastern States Exposition, fondly called the “Big E,” that is big on events, education, entertainment, eatables, energy and more. It ran September 18 – October 4, 2015. Signature events include the daily, world class Mardi Gras Parade and Circus Spectacular. Signature education includes Storrowton Village, a 19th century historic New England fullyfunctioning village and replicas of the original Capitals of Maine, New Hampshire, Rhode Island, Connecticut, Vermont, and Massachusetts filled with local products from that state. Signature entertainment includes 12 hours of free shows at the Court of Honor Stage located in the heart of the fair, headline entertainment, and the Signature Equestrian Show. Signature eatables include Big E Cream Puffs and Eclairs made on site, loaded baked potatoes, and a diversity of ethnic foods. The Big E website notes key ingredients are pulled pork, bacon and cheese. New favorites this year were a Bacon Mac & Cheese Cone, Crazy Burger made on a glazed donut, Idaho Nachos, and Turducken Grilled Cheese Sandwich with a Thanksgiving vibe provided by cranberry aioli sauce. At the Midwest Fairs Association Gene Cassidy, President and CEO of the Eastern States Exposition, invited me to visit the Big E. I had not been there since 9/11 occurred, and happily the

IAFE T3 Workshop (see October 2015 NICA News) was going to happen nearby. The Big E is his “hometown” Fair and he is proudly looking forward to leading it into its 100th anniversary in 2016. NICA Past-President and current IAFE Associate Director at Large Russ Harrison, CCE and I were invited to visit Greg Chiecko, Director of Sales, to discuss soda pricing and guidelines for selling businesses. As part of the IAFE tour, Gillian Palmer, Business Development Coordinator, shared her enthusiasm for the food at the Big E. Of course the food at the Fair means many enjoyable visits with our NICA Members.

“Living Legends” continued from page 14 ►► My partnership with Dave and his brother Jack ended after a few years; Dave was introducing Hot Dog on a Stick into malls and I was building slides. We built slides for 20 Fairs. Beverley and I were also involved with the grandstand business, selling tickets for the Rose Parade. We did this for ten years in the 70’s, and at one point, we sold 62,000 seats. This was all done over the phone and by mail order. We also had 20 parking lots and we hired college kids to help park cars. After buying a resort on the Lake of the Ozarks in Missouri we quit the grandstand business and started a new venture. I continue to own two slides: one in Wisconsin and one in Minnesota. I also operated a slide in Australia at the Sydney Royal Easter Show for 40 years and sold it to Aussie World in 2011.

What has contributed most to your success? My success has been achieved by hard work, always overseeing my operation, continuously spending money on maintenance, and keeping the Slide an affordable family ride. I owe my success to my two mentors, my father Eugene who showed me how to work hard and save, and Dave Barham who taught me the importance of quality. The Slide at WIsconsin Dells, 1968

What is your current opinion on the direction of the Fair/Festival industry? The Fair Industry is a wonderful industry and I have been very successful. We all need to support our industry by attending conventions and belonging to associations affiliated with our industry. The NICA magazine covers the industry well and I have saved thousands of dollars when buying a new vehicle every two years. The Fair Industry is major part of my life and so are the many friends I have made over the past 62 years. What are your plans for the future? I am now 77 and I plan to continue working the Fairs with the help of my daughter Stacey Barona and her husband Robert. I’ve enjoyed the GIANT RIDE of Fair life and it’s rewarding to be considered a Living Legend! ▲

A Night Off is Lucky for NICA Rey O’Day, Interim Executive Manager The Arizona State Fair is closed on Monday and Tuesday which provides an opportunity for some NICA Member socializing and a fundraising poker tournament. The tables were sponsored by Piggly Wiggly BBQ, Action Foods, Fun Biz Concessions, and Steve’s Concession. 36 players gathered for hot pizza, salad, peanuts, beer and tasty mini pies provided by Minneapple, Odyssey Foods, Wells Concessions, C & C Concessions and NICA. Having eaten, they were ready for action. Throughout the game there were buy-ins and add-ons and specials that all went to make the game more fun for all. After several hours of bluffing and calling and pressing and pushing, four tables of nine became three winners: 3rd Place ($200) was Anne Marie Perry, Action Foods; 2nd Place ($300) was Jason Au, Phat Dogs; and 1st Place ($400) was Rachel Butal, C & C Concessions. As each player went out, they received a generous number of raffle tickets to place on their favorite raffle items. Raffle prizes were sponsored or donated by Space Age Concessions, Wells Concessions, Arizona State Fair, RCS, Helen Mathews, Brander Enterprises, Brogdon Concessions, NICA, Bryan Creeson, Bishop Amusements, and Joe Palmisano of Peddler’s Son Produce. Players who had gone out could also play at another table for free or socialize at the bar. The most sought after prize was a complimentary RV Space donated by the Arizona State Fair and Blake Bishop was the proud recipient. To play that forward, NICA is donating $500 to the Arizona State Fair Foundation to further its important work in the community it serves. Jason Au, Phat Dogs, became a NICA Member at this event and Nate Janousek, Fun Biz Concessions and NICA West Council, brought in six applications for Blake Bishop with the coveted 2016 RV membership that he collected space during the State Fair of

“Summer Fairs” continued from page 21 ►► On another coast, the LA County Fair ran September 4 – 27, 2015. While Massachusetts is moving to fall leaves, Los Angeles is in full triple digit summer weather! Its theme was to “Blow a lot of Minds” with Popnology, an exhibit featuring the work of Disney Imagineer Bob Gurr; Luminasia, a light display of larger than life landmarks that are handmade Chinese lanterns; Thunder Alley, a motor sports celebration anchored by the NHRA MotorSports Museum; and The Farm, five acres dedicated to gardens of fruits and vegetables that end up in The Farm Kitchen dinners. The NICA Concessionaires there hosted the 9th Annual NICA Fairplex CDC Golf Tournament (see October 2015 NICA News) fundraiser. The LA County Fair will celebrate its 94th anniversary in 2016.
