President’s Message Greg Miller, CCE, President December has arrived and the sounds of Christmas are in the air. Like most of you, I have been off of the road for several weeks and working on equipment for the 2015 season. It’s a change of scenery to be in the shop, but looking forward to hearing the click of the road as I head south in January for the new season to begin. But before Christmas, or the new season, I get to participate in one of the highlights of my year, which is attending the IAFE convention in
Las Vegas. I’m not a big fan of Vegas, but I enjoy the atmosphere of the convention. From the time that I set foot in the hotel, it is nonstop running from meeting to meeting. The NICA Board has one of three face-to-face meetings of the year and we spend most of the day on Sunday in a Board meeting. This gives us the chance to work on our strategic plan, work with our new directors, and plan for the upcoming year. We also host a Wine and Cheese Reception on Sunday and an Industry Appreciation Reception on Monday evening. If you haven’t been to the convention in the last few years, you are truly missing an opportunity to share ideas with the best Fairs in the country. Hope to see you there. That’s about all I have for this month. Just in case you haven’t heard, Merry Christmas. ▲

I am excited about the progress NICA is making. Today, there are more Communication -Concession Committees than ever before. As you move forward with your plans for 2015, please keep these thoughts in mind: “In life, change in inevitable, in business, change is vital.” “Don’t cast all decisions in cement. Be willing to modify them as changing circumstances dictate.” “Focus on what’s right rather than who’s right. Don’t let unrelated issues bias your decisions.” “Be customer driven. Deliver what the guest actually wants rather than what you think they ought to have.” We are blessed to live in this country where we do have choices. Let us not forget those who paid for our freedom. As we enter this holiday season, may we remember to show kindness and gratitude to those around us. “Communication with event management, purveyors, and staff is key to a successful business. I believe everything in business comes down to management, whether it be good or bad. As a business leader you must first recruit team members and provide clear job description. Then you must delegate responsibility, let staff help in making decisions, and provide the opportunity to learn from mistakes. Inspire the and appraise the for good work. It is very important to stay connected to current industry news, events and changes in regulations. A great way to do this is by being a member of industry organizations. I believe the successful event is where the independent concessionaires, carnivals and fairs work together for the best customer experience. Traveling, meeting people, learning and understanding the business and over coming the challenges, my wife Dede and I thoroughly enjoy every aspect of this unique business. “I believe that as a concessionaire it is my responsibility to attend as many state and national conventions and educational seminars as I can. This keeps me and my team informed on any upcoming changes in our industry. Attending the conventions gives me the opportunity to hear and understand the issues and concerns of the fairs. Any concerns of the fairs now will affect us as concessionaires in the future. At the conventions I able to share some of our concerns as venders and how the fairs” decisions will affect us. I feel that I can convey my message more effectively in this environment. My main reason for going to the conventions is not to book, but to be present and to present ideas to the fair managers. Putting a name with a face creates a better opportunity to receive a call from a manager when a space opens. I feel that this open communication is as important with my team members as with the fair. I make sure they realize how important each customer is to our business as well as to the fair. My team members are trained to greet each customer with a friendly smile and a welcoming hello. Their friendly service is followed with a quality product, a thank you and appreciation. The reason my wife and I decided on Quality Concessions was to have a constant reminder of the importance of maintaining quality service and providing a quality product.”
The Member’s Voice Continuing where they left off last issue, the NICA Office has been conducting their survey of renewing members. Here are some of the responses we were able to get this month. Brad Ribar, CCE, of Loret Foods, said that NICA has been the most helpful from a social aspect. It allows one to have opportunities to meet with similar business people to discuss issues and get ideas for possible solutions. He feels that NICA has certainly helped improve the communication between Fair and Festival Management and the Concessionaires. It has helped to create better listening skills for both. He personally thinks that “plastic” is our biggest concern right now. Using tickets would be better than the plastic because you could not have a mechanical breakdown and be out of business for a time. However, one still has to figure how to refund, so there is no problem with “breakage.” Then there is the concern of the accuracy in the counting of the tickets for all. He thinks we need to be more concerned about how the patron feels about these options rather than just do it. Tommy Davis, of Tommy D’s Enterprises, expressed that his relationship with NICA has been good. At this point, he has mainly made use of the Coca-Cola discount. He has two units and spends most of his time working in them, limiting his ability to do anything but work, but he is very happy with his NICA membership. Pat Sutton, of Funnel Cake Express, Inc., said that NICA has been good for him. He mainly uses the food discounts available through the NICASysco program. Being in the West, he attends the WFA Convention and NICA-Sysco Marketplace in their trade show. As for his relationship with NICA, he feels that NICA is doing a good job. When asked of anything he could suggest for NICA to work on, he commented that it would be nice to have some uniform health rules and regulations, but he also agreed it would be hard to do, as one would have to deal with both state and federal governments. Clay Chester, of Chester Foods, admitted that he has not made use of many of the NICA benefits, but he has come to the NICA Food show for more than ten years. He enjoys eating his way
around the show and tasting new products. He is currently pretty busy, as he also has a booth at the IISA Trade Show in Gibtown for his Chester’s Trailers manufacturing company. He enjoys his NICA membership and has no complaints. One thing that he looks forward to is the NICA News, which he always reads. Todd Brauch, of Happy D. Klown, LLC, makes the most use of the CheckInn Direct, Pepsi, and Sysco benefits. It would really please him if NICA would be able to get a discount with a phone company and a tire company. “That would be great!” He also said that he uses his smart phone to show people the NICA website and all the discounts and benefits that are available to the members. It makes it easier to show them what NICA offers. Overall, he has been very pleased with his membership. The NICA Office plans to continue these calls to our renewing members. NICA: What’s been the highlight of your career? NS: I was fortunate to work with my best friend, mentor and father, Demetri Strates. His influence and love helped shape me into the concessionaire I am today. That is a career highlight that will go Demetri Strates unmatched. NICA: Who’s been most influential to your personal or business success within the past five years? NS: My wife, Dee. Not only does she work with me, but she offers new ideas and a fresh perspective. NICA: What’s the funniest thing that has happened in your concession career or through your Concessionaire travels? NS: Every day is a new adventure in the concession business. It’s hard to pinpoint the funniest thing, as you see all kinds of things that make you smile and laugh.
NICA: Is there anything else you’d like to share with NICA members? NS: I have been blessed with great fortune and good health throughout my life. I’m grateful to be the son of Demetri and Athena Strates, to have a terrific family, a great crew, and strong friendships. I’d like to highlight Han Wang, a friend for over twenty years and our manager for ten. He was recently diagnosed with pancreatic cancer at the age of 42. Please keep Han in your thoughts and prayers. We appreciate the well wishes, the outpour of concern and prayers. Thank you. ▲

The NICA Good Neighbor Award was presented by Tony Fiori to Joe Lewis for his donation of a lifesaving kidney to Tony. Enjoy reading Tony’s nomination letter below: Date: September 15, 2014 From: Tony Fiori RE: NICA Good Neighbor Award Nomination Dear NICA, I would like to nominate Joe Lewis, Mojo Sports, for the NICA Good Neighbor Award. I first met Joe Lewis, owner of Mojo Sports at the Houston Livestock and Rodeo show where his basketball and baseball games were booked. Little did I know our friendship would include a lifesaving surgery. I had been on the kidney replacement list for several years because I had two failing kidneys. In June of 2013 I thought a match had been found only to learn that the reviewing team rejected the donor following their last test. Hearing about it, Joe went on his own to find out if he was a match. In September of 2013 I received a call from the

surgical team assigned to me with the news that a donor match had been found. Unbeknownst to me it was Joe. On January 10, 2014 the surgery finally took place at the San Francisco Sutter Pacific Hospital. Prior to surgery there were many ups and downs that included concern about a kidney stone and me receiving a heart stent. Through it all, Joe and his wife Vanessa never wavered in their commitment to me. Having completed the 6 month danger zone, we are both celebrating our lives: me by taking careful care of my body and Joe by being back out on his fair circuit. Words cannot describe the responsibility I feel to protect the gift he has given me. As a commitment to Joe I am living my second chance in as healthy and positive manner as possible. A Year in the Life Submitted by Gillian Palmer, Business Development Coordinator, Eastern States Exposition A crisp, sunny fall afternoon. Cotton candy in one hand and stuffed animal in the other. Walking through the Midway, visiting with the Alpacas, and taking a walk through the iconic six New England State buildings with my parents… my childhood memories of The Big E extend and extend back as far back as I can remember. I fell in love with it as a child and then again as an adult. Now, as the Food & Beverage Manager of The Big E, my career has taken me to a whole new fair-love level. Even though I am a life-long fairgoer, I am new to the Fair industry, beginning my journey in August 2013. However, I have used the below tidbits as motivators throughout my various professions and they pushed me along my first year.
about the industry. During my down time, I found myself reading NICA News articles and making notes and ideas to discuss with my manager. It also does not hurt to join other national, local organizations and networking groups who support your career goals.
1. You will get discouraged…keep moving. 4. Communicate. Remember, you are not alone. You are part of a wonderful Fair team which wants to see you succeed. You will also develop valuable business relationships with your concessionaires. Do not be afraid to ask for advice. And speaking of asking for advice…
2. Ask questions. And…when you feel like you get it, ask more! Finding the root of any problem and understanding it, is the proper way to build the solution. I found by applying this motto, I was able to retain the information and reapply it at future scenarios. Reach out to the network of within your organization. Find a mentor who can help you map out a career path. And always keep learning.
3. Get involved. It was important to me to get to know my concessionaires quickly, form relationships and build a partnership together. Having been a fairgoer, I understood quickly how valuable their involvement is to making a fair a success. I was also eager to learn about ways to get educated
Open communication within your organization and with your concessionaires is the path to success. Be open to constructive criticism and do not take it personally. The only way to continue to grow is to fail…but fail forward. If the fair does not already have one, implement a Concessionaire Communication Committee. Your concessionaires are the eyes and ears to the industry and can provide advice on the latest trends and possibilities.
5. Stop and smell the roses! It was not until my second fair season I learned it is important to stop and take it all in. You must learn early to appreciate your achievements. Celebrate with friends and loved ones. These moments are precious and pass by quickly, and before you know it, you’ll be gearing up for the next season. Every day, I am learning something new about this fascinating industry. I hope you find these to be as motivational to you as they constantly are to me. Stick with it…you will be greatly rewarded for it. ▲ December 2014 NICA News

Submitted by Rey O’Day & Dominic Palmieri Many of the fairs in the Southwest play for several weeks and include Mondays and/or Tuesdays off. That provides the opportunity for NICA to have social and fundraising gatherings. On Monday, October 27th, Dominic Palmieri, NICA BOD Member at Large, and committee hosted a Spaghetti Dinner and Poker Game gathering during the Arizona State Fair. Dominic and his friend Sam Castranova, “Chefs Extraordinaire,” whipped up the dinner. As a side note, Sam not only cooked, cleaned and ran bar drinks; he also donated $250 to the cause to help with the fundraiser. Huge “thanks” to Sam for helping Dominic set up, cook up, and clean up!
The Tournament Attracted a Full House!
with “$2.00 beers.” When Concessionaires are involved, there is always teamwork and delicious food! Again, a huge “Thank you!” Following dinner, it was time to play, and play they did! When anybody was eliminated, they could go to another table together, automatically get $2000 in chips, and continue to play, stay, and support the evening. The person at the table who had the most chips at the end of the evening won an iTunes card and movie tickets. That lucky person was Niel Vojo, RCS Safety Officer. Meanwhile the tournament played down to the last five: Paul Mayer, RCS Safety Officer, Ramone Da Lang, GDR Games Department, John Graham, Corky’s Carved Signs, Steve Marcus, Steve Marcus Concessions, and Jennifer Giordano, C & C Concessions. The energy in the room was very high.

The Final Five... Who Will Win?
It was time for the last hand: Steve Marcus had two pairs, including two Kings, and Jennifer Giordano also had two Kings. The only way she could win was if the last card dealt was an Ace… drum roll… and it was! The lucky lady who had never played poker was the winner of the Tournament! First place went to Jennifer Giordano, Second place went to Steve Marcus and 3rd place to Ramone Da Lang. The poker tables were graciously sponsored by Guy and Charlene Leavitt, Ray Cammack Shows, Rich and Teresa Brander, Brander Enterprises, Steve Marcus, Steve Marcus Concessions, and Jay and Carol Wells, Wells Concessions. Big “thank you” to them for making the Game happen! The opportunity drawings ended the evening. Participants were given tickets for eating, tickets for playing, tickets for losing, and tickets for how long they played. In other words, everyone had tickets for a table full of great prizes donated by Jay and Carol Wells, Wells Concessions, Dave Holmes, Fruit Caboose, Gino Garafalo, Papa Gino’s Pizza, Justin and Ashley Murray, M&M
