Happy Summer! I am writing this message during the 141st Edition of the Great Brockton Fair. A New England staple, this event has been a Fourth of July tradition for generations and despite some concerns, it seems like we may have it for at least a few more years. A fun fact: Brockton, Massachusetts is the hometown of the Mayor of the Midway, Mr. Jimmy La Fratta!

I started talking about Brockton Fair’s 141 year History because it speaks to the tenacious nature of our industry that stands the test of time through the many changes happening all around us.

Hopefully you are reading this on the fly in between a lot of busy moments. This is the heart of the summer run and our time to bring fun to our customers who put their trust in our product year after year.

This summer we are rolling out the Get Involved! rallies. These are opportunities for Concessionaires all across the country at various events to just get together, learn more about NICA, and have a good time. Sandy Class, National Rep Chairman Ted Wentz, and Kathy Ross are leading off with these rallies at a few different Fairs. Lastly, the work of providing the best leadership to our organization remains at the forefront of the agenda for the Board of Directors.

We are setting the framework for our next move in our search for our Executive needs. That being said, this is our NICA; we are a member driven organization and I never want to lose that. We think the “Fair” is all about the food, games, rides, and direct sales because that’s what we do.

The guy with the cow thinks the “Fair” is all about showing animals because that’s what he does.

My family has been part of the State Fair of West Virginia since back in the sixties. My dad started selling chainsaws there around 1967— he had chainsaw cutting demos and was the hit of the Fair! In the seventies and eighties, he displayed farm equipment from our John Deere

dealership. In the nineties, I got into showing horses and operating Food Concessions. I’m not trying to give you a history of my family—I’m making a point that each entity we worked at our local Fair was always the most important thing at the Fair to us, or so we thought at the time.

It takes all entities to make a Fair successful.

We all get aggravated when a farmer’s gooseneck trailer is sitting on our location, but remember, he also thinks the Fair revolves around him. I challenge each of you to think about my thoughts and make the “Fair” and all its entities the place to be! ▲

Thoughts from a This month’s Statement of Communications & Management Philosophy is from Brad Ribar, CCE: “I feel there are a number of ways communication takes place in the Fair industry. The forms of communication can be as varied as the individuals involved.

My personal preference is to have face to face meetings Brad Ribar, CCE with the people Loret Foods, MN involved. This allows CCE Earned in 1999 for open dialogue and sharing of ideas that letter writing can hinder, and there isn’t the time constraint that a phone conversation can create.

I don’t always agree with the group approach that NICA encourages; my problem may not be your problem and vice-versa. Although many problems are best solved with the group approach, as shown in many successful round table discussions, some problems are individual.

Another strong form of communication is silent action. You can communicate to Fair Management and to your employees just by the way you operate your business.

The CCE Program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism.

The applicant must be a current member of NICA and also a current member of one of the following associations: IAFE, IFEA, or the WFA, and at least one State Association; also, they must have a minimum of seven years as a full-time chief operating manager of an independent concession business.

This silent form of communication is also a strong management tool. Although it is important to verbally express yourself and your desires, leading with positive actions is a very effective way to get your business style and wishes across.

I try to manage in such a way that all employees feel like part of the family. I let the lead people make many of their own decisions when the need arises. Even if their decision was not the best solution, you must give them credit for trying or doing what the felt was best.

I also manage with pride in my operation as well as in the Fair. I strongly feel that we, in the business, must do what is best for the Fair and our personal business together. We should all manage our operations with the long-term future in mind.” ▲

Member’s Voice We love to hear from our Members! Their Voice is what helps our organization move forward. The NICA Office has been continuing their survey of responses from Renewing Members.

David Belcher, the Eatery Huts and Footsie Wootsie, is from Princeton, Kentucky and feels that his relationship with NICA has been very good. He makes use of the Pepsi, AutoZone, and Health Insurance Service benefits. He likes the NICA News and reads all the different articles with interest. He has been a regular sponsor of the Casino Night fundraiser, while also attending and making additional contributions at the event. He usually participates at other NICA Events at any Fair he works, such as the Miami Auction. He said that he always tries to talk to people about NICA, but making the same route, he finds that most of them are already NICA Members.

Mary Chambers, American Food Service, operating out of Gibsonton, Florida, bragged on how professional NICA has become as an organization. “It has done this in just a few years. It is a wonderful thing!” She is semiretired, working only two events, and she said that she’s officially now a “forty miler.” She still makes use of the Coca-Cola and Pepsi discounts, and occasionally uses AutoZone and Sherwin Williams. She loves the NICA News and felt the June issue was the best she had seen, with all the Scholarship Winners and participants for the Member’s Voice. She really likes the organization, even though she is now only a “bread and butter employee.” In other news, she and her husband Ray will be celebrating 57 years of marriage this year!

Judy Adams, Adams Concessions, out of Orient, Ohio, explained that she hooked up with NICA when she was in West Palm Beach way back in the 90’s. She and her husband Gary always make an annual trip to Florida and plan it to be during “the Florida Week,” as they enjoy all the events it has to offer—especially visiting with friends when one is not having to work. She expressed that her relationship with NICA has

been great! Everyone has always been courteous, nice, and helpful. She likes getting the rebates from Pepsi, and uses the Sherwin Williams benefit as the couple paints their “caboose unit” every two years, and it takes a lot of paint! Judy makes a point to tell new Concessionaires about NICA, but also pointed out that making the same route means there are not many new people anymore.

She loves the business, but admitted that now everything is work! The best part is that you meet people who come back year after year and you look forward to getting a chance to see them, if only for a short time. In fact, she has customers who are the children of previous customers! Judy thinks the NICA News does a good job keeping the members informed and she enjoys seeing all the pictures.

Matt Gallapoo, American Family Concessions, hails from Wooster, Ohio and stated that his relationship with NICA has been very good. He has had the opportunity to attend Florida Week a couple of times. NICA offers some nice benefits, and he is very excited about using Sysco. He mainly uses Pepsi and has had no problem with

2016 Board of Directors Nominees The end of the summer season brings with it the annual election season for NICA’s Board of Directors. This year there are three nominees: Sandy Class, San-Jon Enterprises, Dan Lusenhop, Jeanne’s Artichokes, and Brad Ribar, CCE, Loret Foods. Their nomination statements are below:

Sandy Class

My name is Sandy Class and I am honored to be nominated to run for the 2015-2016 NICA board. Primarily, I would like to thank those that nominated me. It was heartwarming but overwhelming at the same moment.

If elected, I will bring honesty and integrity to an organization that I am fond of and to an industry that I have a passion for. I would like to see the industry continue to become a better place for all of us that will continue to succeed in our ever-changing world and industry. We are show people with a business that contains viable interests, and whether its a storefront, a franchise, or contracts with a mobile unit on wheels, we all posses a business with assets. This business provides an income for improvements, and a source for living. One would like to think it also provides a retirement for those of us who, at some point in their life, would like to sell their business and retire.

In corporate America, a successful business has a price tag attached to it—why shouldn’t our business be looked at in the same way? My agenda is this: no agenda! However, my passion would be to continue to work with the Board and Fair Management to gain knowledge on both sides for a better understanding of how they think and the way we think. Quality operators are the fruits of success of Fairs. It’s a partnership on a two way street with goals of all of us someday being able to retire.

As a business owner, where do we turn when we know we hold a contract that is not transferrable?

Does the career path we worked so hard to build and maintain now suddenly have no cash value for a future business owner? I ask you, “Who works an entire career to realize there are no benefits for a retirement?” As entrepreneurs, we have the opportunities to invest in 401K’s, IRA’s, and stocks, but what about our equipment that we continue to maintain, upgrade, and/or replace to stay on the forefront? Shouldn’t this too have market worth? If you ask any NICA Member, hands down, all of us would say “Yes!” We are “Show” people doing what we do best—putting smiles on millions of faces when the Fair rolls in to town. At the end of our rainbow, we just want to be able to pass our legacy on to the next of greatest entertainers. As owners, we want to be able to share and teach the fruits of our success to the sefuture generations. If elected, this is what I will campaign for.

Dan Lusenhop Jeanne’s Artichokes I am Dan Lusenhop—my family has been in the Food Concession, Fair, and Festival business since 1976. I am the third generation operator.

I joined NICA as a founding member and have served on the NICA West Council for the past six years and the NICA Board as a director for the last two years. I’ve been involved in Strategic Planning, Fundraising, Benefits & Rebates and have continued to promote Membership growth.

NICA has enriched my life and our business to support us as individual vendors and spearhead through communication to resolve industry issues as they occur. One of my personal goals is to give back in some small way; in the spirit of NICA, several fellow vendors and I supported the State Fair Livestock Auction recently to help support FFA and 4H and the Agricultural Industry. These are the future leaders of our industry and this great country of ours!

With your approval, I look forward on continuing to serve our great organization and feel we have just scratched the surface when it comes to Membership growth & potential benefits.

Brad Ribar, CCE Loret Foods I’ve lived in and around Minneapolis, Minnesota all my life. I met my wife at the Minnesota State Fair 37 years ago and have three children and four grandchildren.

I got my start in the Fair industry when I was eleven, picking papers for the State Fair’s sanitation department. This department was run by my grandfather Jim Libby who worked at the Fair year-round for 68 years. For the next 17 years, I worked my way through the ranks until I was the superintendent of the department. It taught me a great deal about how a Fair is managed and what kind of activities happen behind the scene activities.

I have always had the desire to work for myself. My brother and I operated a wholesale Christmas wreath business since 9th grade, but we needed something for the rest of the year.

In 1980, I took my step into the Food Concession business when I saw a roasted corn stand at the Wisconsin State Fair and was fixated on bringing this idea to Minnesota. I started my quest by doing my MBA thesis on a fictitious corn stand at the State Fair. Also in 1985, my wife Lori and I opened our first food stand that we called CORN ROAST. In 1986, we went into business with Lori’s parents, Jim and Ethel Peters, doing cheese curds. In 1991, I partnered with a college friend, John Harrington, and we start another cheese curd route. In total, this equates to about 35 events annually!

My route is made up of Fairs and Festivals, mostly around the twin cities. This means I spend most of my nights at home. John Harrington takes care of running the Wisconsin and Iowa cheese curd operations. I have also worked with Gold Star Amusements for 30 years so I have some experience with carnivals, too, but I mostly operate as an independent. Some of my best friends I’ve met in this business. Some of the nicest people ever, I met in this business. And some of the best business people I know, I met in this business. I can’t imagine what I would be doing if the Concession business had not worked out—I hope I never find out!

I have seen many changes in 30 years, mostly for the good, but others are concerning. If elected, I’m looking forward to addressing some of these concerns that effect most “independent” concession business owners. ▲

According to Matt, the NICA News is “a good magazine that gives coverage from coast to coast.” When asked how we could improve, he commented, “You do a great job! Nothing to pick on or no complaints is a good thing!” He thinks the Board of Directors is made of quality people and they should keep up the good work. He has seen many of them at Fairs promoting NICA, even when they are not actually working the event. His company is a “small tight knit organization” with “very little time to do anything but work,” but he did get to participate in a recent golf tournament.

He expressed that his relationship with NICA has been good and he is a Lifetime Member.

However, we still accept the information and try to spread it the best we can!” George has always been willing to volunteer time to help with the fundraisers such as Golf Tournaments and other events held during “the Florida Week activities.”

He feels that, as with most organizations, there is not enough participation from the NICA Members.

He admitted that he is guilty of not recruiting new members and that he needed to work on being more involved. “Sometimes it just takes someone to ask a newbie to join and that is all.”

Celebrating 164 Years with the Kristin Chuckel, Communications & Marketing Manager, Wisconsin State Fair The Wisconsin State Fair, celebrating 164 years of tradition in 2015, draws more than one million visitors each year who revel in tradition and indulge in fair favorites like the Kids From Wisconsin, Giant Slide, Sky Glider, daily parade, and, of course, the mouth-watering food and beverages offered by more than 200 Concessionaires! The 11-day annual event will take place Thursday, August 6 – Friday, August 16.

Wisconsin State Fair Park, which spans 200 acres, has been home to the annual State Fair for 123 years. It is located in an urban setting straddling two cities – Milwaukee and West Allis.

Milwaukee and its suburbs are home to literally hundreds of music and ethnic festivals throughout the summer months, and Wisconsin State Fair is not only the biggest, but in the eyes of millions of fairgoers, undeniably the best.

Whether their passion is food, agriculture, music, family-friendly entertainment, or all of the above, the Fair truly has something for everyone.

It’s also one of the most affordable events in the area, with gate admission prices topping out at $12 for adults. Thanks to the Fair’s many sponsors and partners, there are many ways to save during the Fair on everything from admission to shopping to food and beverage.

The State Fair Bargain Book offer coupons from 68 Concessionaires and Commercial Vendors, and Crazy Grazin’ Day is a long-standing tradition at the Fair that offers fairgoers “smaller portions at smaller prices” on some of their favorite Fair foods and beverages.

In recent years the Wisconsin State Fair has earned quite the reputation for unique and unusual foods. This year the Concessionaires will be serving up more than 100 new foods. A few that have received the most attention thus far include the Bacon-Bottom Porker Pizza, the Churro Sundae, and the Hot Mess Burger, which includes bacon (of course) along with cheddar cheese, peanut butter, and honey.

It’s no coincidence that the items mentioned above happen to be entries in the Wisconsin State Fair’s annual food competition, The Sporkies.

Eight finalists have already been selected from 34 entries, and a panel of local celebrities will choose the recipients of four Golden Spork Awards.

New this year—the final judging will take place during the fair (in past years it was held prior to the fair). The eight pre-selected finalists will

showcase their creations in front of the crowd on Wednesday, August 12 at the Fair’s largest free stage, the Bank Mutual Amphitheater.

Also new in 2015—one lucky fairgoer will sit alongside the panel of celebrity judges. Interested foodies entered during the month of July via social media using the hashtag #Sporkies2015.

And even if they weren’t selected as the guest judge, all adventurous fairgoers can participate in judging by sampling all of the entries and voting for their favorites via social media using the hashtag #FairgoersFave. A giant 13-foot Spork Trophy will be displayed at each Sporkies finalist location and all vendors who entered will feature a poster at their location(s).

Speaking of adventure, thrill-seekers won’t want to miss Wisconsin State Fair’s amusement ride and game area, SpinCity, which features 50+ rides – including eight new rides – and 30 exciting games! SpinCity is one of the few independently managed midways in the country, which allows Fair organizers to hand-pick the best rides, games, and attractions available, as well as topnotch Concessionaires. This year SpinCity will feature a dozen different Concession stands, offering a variety of food & beverage options, as well as shaded seating areas.

In addition to all of the fun to be had in SpinCity, music lovers can take in a show with thousands of fans at the Fair’s Main Stage presented by Potawatomi Hotel & Casino. This stage features nationally touring artists like classic rock band Boston, pop-music sensation Jason Derulo, country crooners Lee Brice and Chris Young, contemporary Christian band Casting Crowns, and even Nik Wallenda, King of

the High Wire, who will attempt his Longest Walk Ever above the historic Milwaukee Mile Speedway, which is located at the Fair Park.

Adjacent to the Main Stage venue, hungry fairgoers will find Grandstand Avenue, which runs from the entrance to SpinCity on the north side of the park to the far south end of the park. This thoroughfare offers the highest concentration of Concessionaires – more than 60 – while also sprinkling in attractions like the new Sea Lion Splash and Commercial Vendors selling clothing and souvenirs.

In addition to the Main Stage, the Fair features 30 additional stages of free entertainment, offering children’s entertainment, music, and numerous contests in which Fairgoers can take part.

Wisconsin State Fair is unique in the sheer number of entertainment venues it offers, and many of these stages are located within the footprint of full-service Concession areas, which also offer seating and wait-service along with exciting live entertainment.

Last, but certainly not least, the Wisconsin State Fair continues to offer up all of the Fair favorites that keep people coming back year after year. Put Some STEAM in NICA Stacey Wade, Director of Agriculture & Education Operations, Central Florida Fair What do empty popcorn boxes, lemonade shakeup cups, a pile of corn dog sticks, a 24-ounce bubble yarder, dozens of those cool plastic bendy straws, and STEM (Science, Technology, Engineering, Math) have in common? They are all staples found in your Concession units and in the trash can after the product has been consumed.

However, imagine giving these items to a child and watching what they will create—a bridge, a car, a home, maybe a musical instrument, or even a piece of art? Over the past few years, STEM has gained a lot of attention in our industry and is quickly becoming as relevant as agriculture and rightly so—agriculture education is STEM and one of our missions and purposes in the Fair industry is to promote and educate our guests about the importance of agriculture in their lives.

As the Director of Educational Programming at the Central Florida Fair, I am always looking for new programs that will educate, engage and entertain our guests while providing them with an opportunity to make memories. Recently, a friend shared pictures of her science class students who were creating art, inventions, and buildings using items they had found in the trash. This resulted in a Chicken McNugget box race car, a Coke bottle bridge, a paper plate space station, and a tower of straws. Granted, “trash to treasure” is not a new concept in this day and age; everyone is conscious of saving the planet, going green, and recycling. But A recycled popcorn seeing these photos, I had box race car

an “ah-ha” moment—I needed to partner with our Concessionaires and include them in our educational programming! Yes, I have seen the eye rolls and have heard the remarks, “What on earth is she thinking?” or “How are you going to do that?” or even the “Don’t know if that is going to work!” But let’s brainstorm for a minute here—besides hosting a “Fair trash to treasure” contest, consider a Food Science Night. I am truly amazed watching someone make cotton candy.

How do you get sugar to turn into a beautiful pink cloud of heavenly yum? There is a science to that. How hot does the popper have to be before fresh buttery popcorn spills out of the popper?

There is a science to that. How many rotations do the mechanical arms of a Salt Water Taffy machine have to make before pulling the massive abundance of sweetness off of the arms? There is a science to that. What about the carbonation for fountain drinks or the anatomy of a pizza?

There is a science to that too! How much fun would a Fair Food Science Night be? A Fair Food Science Night allows us to put our guests in front of your products and provides a tasty educational program like no other.

We all have Concessionaires who provide tents for patrons to sit and relax and enjoy their fine Fair food. Engage and invite these Concessionaries to participate in a STEM Make & Take event; this involves setting up numerous hands-on STEM stations at each of the participating Concessionaires’ eateries and providing guests a map highlighting and identifying each participating Concessionaire and the STEM station description. An event like this will move people around the grounds and will put them in front of your product. An added bonus would be to make this event similar to a scavenger hunt.

Bought & Sold

A Brief Outline of Successful Transfer of Ownership Transactions Randy Reichert, CCE, 1st Vice President My wife Tracy and I have been working in the Concession business for over 30 years. We have owned Meggers Road Concessions, Inc. since 1992. During this time we have bought and/ or sold five separate independent concession operations. All of these transactions turned out successful, but each one had its unique twists and turns.

We started in the Concession business working for Robert Schmidt, the founder of Hot Wisconsin Cheese. What started off as a summer job ended up becoming a full-time career change from the education field to the Concession business. After working a few years for him, we were offered the opportunity to purchase a cheese route with equipment. Of course, we were told not to say anything to the Fairs, and after five years, when our purchase was paid, Mr. Schmidt would inform the Fair and ask them to transfer the contract. This was standard operating procedure at the time.

Fortunately, the business we purchased included eight Fairs where Tracy and I had managed the Hot Wisconsin Cheese trailer for the past three years. We had a good rapport with the Fair Management at all of these events, but now that comfortable feeling has changed. We just bought this business, “Hooray!” but we were to keep quiet and not let the Fair know about this transaction, “UGH!” It was quite the uncomfortable quandary during the first year of owning our business.

By year number two, we preceded to inform seven of the eight Fairs that we were in the process of buying the business and asked to have the contracts transferred into our name. Each conversation was filled with anxiety and concern that the Fair may say “No!” or just not invite us back. Fortunately, each of the seven Fairs granted the request stating that they had been happy with our work the past five years and they wanted us to continue participating in their Fairs. “WHEW!” What a relief! To this day we are thankful for the 22

graciousness of these Fairs, but we still had one Fair to go.

Year number three comes and the one Fair we have not informed needs to be informed. This Fair also happens to be our largest event and the Fair Manager was a highly-respected, no-nonsense type of guy. In the late evening of the last day of this nine-day Fair, Tracy and I are upstairs waiting to pay our percentage and pay a deposit for next year’s contract. We are extra anxious because we have decided to inform this Fair of the transaction and are going to ask the Fair Manager to put next year’s contract into our name.

Upon settling our percentage, it came time to make out the contract for next year. We felt like we were sitting in the principal’s office. I say, “We have something to tell you. We bought the business from Rob and were wondering if you could transfer the contract into our name.” Carl responds, “Well heck yeah, I’ve only seen you guys the past six years, no sight of Rob.” Wow, what a relief to go from the unknown to feeling like you are on the top of the world! At the same time, I knew that this was something I did not want others who purchase or sell a concession business to go through. In the upcoming years I had a few opportunities to do this openly and successfully.

Fast-forward a few years and we buy a funnel cake trailer with a route. The sellers had a good relationship with their Fairs and the majority of them were in my home state. This definitely aided in the transfer of the contracts. After about four years we had a manager operate the trailer with the option to buy. I took the time to inform all the Fairs that this young man managing the funnel cake trailer was looking to buy it in two years. In fact, I booked a Fair with full disclosure that the man operating the trailer would have an option to buy it. This Fair was okay with this, proving that open communication does work!

We have done this with two other operations:

Each one of these transactions was a WIN-WIN situation for all parties: buyer, seller, the Fair, and most importantly, the Fair customer. In each instance the Fair received a more handson operator, the Fair customer was able to receive the same quality product, and this also helped maintain consistency for both the Fair and the Fair customer. Don Delahoyde, Five Star Tom Stroud, Stroud Catering, and Nate Concessions, Nancy Bryant, Cinnamon Rolls, Don Janousek, Fun Biz Delahoyde CCE, Five Star Concessions, were the Co-Chairs of this Catering & Lola Ramirez, JLQ Concessions on their way to first time event. play some Poker & Bunco Lola Ramirez and Erica Quintero, JLQ Concessions and Nate and Stephanie Janousek, Fun Biz Concessions cooked up a delicious Tex-Mex meal. Bill Cutting, Poker Guru, donated himself and all the equipment needed to play. Ryann Newman organized the Bunco Games with the help of Leisel Williams.

Nick Nicora, Nate & Stephanie Janousek, Ovations, provided Fun Biz Concessions, setting $2 beverages and up their Tex-Mex meal Kate, our bartender.

The table sponsors were Tom Stroud, Tom Stroud Concessions, Nate and Stephanie Janousek, Fun Biz Concessions, Don Delahoyde, Five Star Catering, Jacqueline Bradbury, Sweet Cheeks, LLC. 16 folks learned/played Bunco. Melanie Williams won the Traveling Lantern Bunco Prize.

Liesel Williams had the most Wins, Maya Magdaleno had the most Buncos, and Savanna Bradbury had the most losses.

Each won $20 and prize tickets. There The Bunco Winners: were also 16 Poker Savanah Bradbury, Liesel Williams, Melanie Williams players. The First and Maya Magdaleno Place winner was

Lola Ramirez won the coveted 2016 VIP Parking Pass and Zac Bradbury won the family friendly George Foreman Grill. Yet the “most The coveted Money popular prize” was the Pizza! “money pizza” donated by Helen Mathews. It had six times more tickets in its bag than any other prize! Cheers for a great idea!
