The Director’s Voice Justin Sattler, NICA Director Hello, I hope everyone is doing well and the winter season has treated everyone well. I am writing this article at the Florida Strawberry Festival. This winter has been a very trying season for myself. I have had a few equipment issues as far as failure and or loss. I must ask the question, “Does everyone else in this industry carry spare equipment with them?” I’m not
talking about extra blenders or light bulbs here. I’m talking about ovens, fryers, mixers, soda machines, grills, etc. Things of this magnitude. I have had three incidences of power issues, be it loss of a neutral or back feeding from a panel or bad transformers, etc. When such issues arise I’m always asked by electricians, concessions managers and or fair managers, “Don’t you have a spare?” In all actuality, yes, for the most part I do, because in my experience, if you are going to have equipment failure, it will be at 5:01 pm on Friday night of the big weekend of the event! Experience has taught me this, I can assure you.

This month, NICA News is showcasing the management philosophies of two NICA Members who have earned their Certified Concessionaire Executive designations: Mary Brown, CCE & Mary Wagner, CCE
“Communication and management go hand in hand in this business. Where would we be without either one? I am the management, owner, operator, booking agent, the bank, Mary Brown, CCE truck driver, advisor, Mary’s Concessions and handler of all the beefs. When it comes CCE Earned in 2003 to my business, the buck stops here. As we all know, this is how it is in owning our own business. There’s nothing like a day when all the help shows up on time in a good mood, the sun is in the sky, and the event is crowded with people. They’re coming to your stands, waiting in line to buy your product. When the day is over, you’re tired, your feet hurt, and you smell like funnel cakes, sausage, french fries, and onions. Then you count out, and it’s the best day of all. The best grossing day I ever had! That means you have communicated. You have done your job as management. This is why we are in this business. The feeling of achievement and success is very rewarding. Oh yes! You know what’s coming now: the road stories! There’s nothing like a day when... you’re trying to make that circus jump, you’ve torn down in CCE Applications are due October 1, 2015 and are available for download on the NICA website along with instructions at goo.gl/H3VKUf If you have any questions, please contact NICA at (813) 438-8926 or nica@nicainc.org. 8

the rain, and you look like you’ve been in the wet t-shirt contest and lost! ‘Where’s the electrician? What?? They went home? OK, Larry, can you take the electric out? I’ll stand right here with the flashlight. I’ll knock you off the box if you take a hit.’ ‘Why won’t this truck start? I know we had running lights on that trailer when we came in here.’ Half an hour later... “OK, we got lights. Let’s go!” 40 miles down the road, with 100 to go, over the radio comes, ‘This truck sounds funny; is there something knocking in the engine?!’ ‘Did you check the oil like I told you to?’ ‘Oh, you told Joe to do it.’ ‘Yes, I see the smoke! Everybody pull over! We have to change the truck and trailer around. We’ll come back after these later.’ We arrive at 5 AM. ‘What is this guy doing in my house trailer spot? These are supposed to be assigned. OK, Let’s put the trailers on location.’ (No marks! They washed off in the rain last night.) It’s now 6:30 AM. ‘Let’s get some sleep until about 10 AM. I’m sorry we had to leave the bunkhouse behind.’ The help sleeps in the truck seats, on counters in the trailer, and someone finds a table under a tent and wraps up in a trash bag. 10 AM. ‘Get the help up. Here we go, another day in Paradise!’ Things go pretty well, trailers are set, and a faithful employee went after the bunkhouse. 5 PM. Trailers are all open, stocked, and ready to go! A customer stops by and says, ‘I’d like to do this when I retire. Do you make any money at this? It always looked fun!’ Then I know we have communicated and managed well, because to our customers, it still looks like fun!“ ▲
“I try and live my personal and professional life by the Golden Rule: ‘Do unto others as you would have them do unto you.’ I try to be there for my fellow Concessionaires. Mary Wagner, CCE You have to try Treat Truck, Inc. and understand the different levels in the CCE Earned in 2001 Fair operations and realize everyone out there is trying to make a good event. Whether we agree or disagree, there are many avenues open to us today that weren’t there a few years ago. I have been very fortunate in running my business by not having to hire outside help. I work with my grandchildren and have the opportunity to help shape their minds on how to treat people and instill good work ethics. I give them a lot of responsibility on managing the trailers and being responsible with the money. They have
learned very young that the customer is the most important person out there and we aim to please. We are at the Fairs and Festivals to live by the rule and with a little luck, and lots of God’s goodness, we hope to serve you for a long time.“ ▲ The CCE program was developed to recognize the professionalism of Concessionaires. The title of CCE represents a deep understanding and respect for the fair and festival business and indicates that the titleholder will perform with the highest level of professionalism. This prestigious designation is awarded only after a detailed application process and other requirements have been successfully met. The applicant must be a current member of NICA and also a current member of one of the following associations: IAFE, IFEA or the WFA and at least one State Association; also, they must have a minimum of seven years as a fulltime chief operating manager of an independent concession business. Member’s Voice Continuing where they left off on the last issue, the NICA Office has been recording the responses from their survey of renewing members. Mitch Zinder, Victor Products Company, has been an Associate Member since 1998. He expressed that his company does not get involved a lot, but they feel it is important to support the organizations that help our industry. He said that he has used the CheckInn Direct benefit in the past. He reads and enjoys the NICA News online. He also commented that they use NICA to advertise their business and this brings in some new customers. He also said that they appreciate the referrals that they receive from other NICA Members. Ellen Ross, of A’s Mini Donuts, is a Lifetime Member of NICA. She feels that NICA is a good organization for all Concessionaires. She uses Auto Zone, Sherwin Williams, Coca-Cola, and Pepsi. The only time she has had any difficulty with the soda benefits is when someone new takes over a distributorship. To her, the best thing about NICA is getting to meet other people in the organization. She feels that is how to keep updated and learn about what is new. She reads the NICA News every time and thinks it is really good. Gary Shepard, of G & G Concessions, who is also a Lifetime Member, remarked that “It’s a good thing.” He feels that NICA has helped to develop better communication between Fairs and Concessions, and improved the communication between Concessionaires themselves. He mainly makes use of the Coca-Cola and Pepsi benefits. He feels the NICA News does a great job communicating to the members what is going on in the industry and seems to cover a lot of different things. He “loves” the Florida Week, especially getting to see and talk with other Concessionaires in a non-working atmosphere. “It is a good group!” Jill Shives of Shives Concessions and her
husband David are both Lifetime Members. They mainly make use of the Coke and Pepsi benefits. She feels that any information she receives from NICA is very beneficial and has always been factual and helpful. She especially enjoys reading the NICA News, as it helps to keep her up to date with industry related things. Bev Fisher, CFE, manager of the Canfield Fair, the largest county fair in Ohio, commented that she uses NICA to help her with networking and communicating with her Concessionaires and others in this industry. She had a committee before NICA, but feels that they do a better job with it now. “Every action has a reaction that affects somebody.” The Concessionaires have to make a living too, so it is wise to get some of them to share their point of view as to how a particular change will affect them as well. The NICA News is well read by all the staff and directors. It helps keep them informed of new happenings in the industry. The NICA Office plans to continue these calls to our renewing members in the new year. We hope that hearing their personal stories will help you make better use of the available NICA Benefits or think of ways you could contribute. If you hear from us, let us know what’s on your mind! ▲ April 2015 NICA News

An Excellent Example of Communication
How a Phone Call Can Save Someone’s Life! Oftentimes in the modern age, we take for granted the power that a phone call can make, and the impact that timeliness can have during a serious situation. On March 2nd, the NICA Office received a call of utmost importance. Mike Kennedy, CCE, Old Time Saltwater Taffy, called to ask for our help in an emergency. He needed us to contact one of our Fair Members and let them know that a Concessionaire that he had been speaking with on the phone was complaining of chest pains, so he thought that he may be having a heart attack. According to Mike, he has been talking with this Concessionaire on and off as a consultant since the season began, but on that day he felt a premonition that something strange was going to happen to his friend, so he gave him a call. After hearing that his friend was having chest pains and having trouble breathing, his phone dropped the call and he could not reach him again. After he explained the situation to us, he said that his phone was having trouble keeping a charge and he did not have a contact number for the Fair. Jill was on task and immediately called the Fair and entered the extension of the Fair Manager, but was met with no answer. She then dialed “0” for an operator, but there was no answer and the voicemail was full, so there was no way to leave a message. This Fair was opening in 45 minutes and no one was answering the phone! The next step was to call the Fair Manager’s cell phone, but for some reason the call would not go through, repeating the message “Sorry, the number cannot be connnected. Please try again later.” Jill proceeded to go on the Fair’s website to see if she could find an alternative phone number or even an emergency phone number for the Fair. Unfortunately, there was nothing to be found. This was definitely an emergency, but what could we do? We are in the same state, but not in the same area so 911 was of no help. In fact, calling 911 prompted us to call 411 instead, so we tried some alternative methods. SanDee O’Brien, CCE was called for advice on the matter and she volunteered to call the State Troopers and suggested former NICA Executive
Director Alta Mosley may know someone else who would be on or had access to the Fairgrounds. Alta gave an alternate number she had on file for the Fair and another contact that may know a solution. Unfortunately, there was no one on the end of both lines, but Alta tried again and finally got through to one of her old contacts at the Fair, letting her know that the Fair needed to go and check on a Concessionaire, who has no other employees in his concession trailer, and was potentially having a heart attack. Thankfully, they were finally able to dispatch the Fair’s EMTs. Meanwhile, SanDee had made contact with a separate group of EMTs outside the Fairgrounds via the State Troopers. However, these EMTs were stuck at the Fair gate, but eventually made it in despite the confusion. In this case, two groups of EMTs is better than one, and the Concessionaire was taken to the hospital. It turned out that he did not have a heart attack but did require hospitalization. Mike Kennedy, CCE called later that week to update the Office on the situation. He said that the Concessionaire was doing well and was happy to be going home. His neighbors were more than generous and “everyone jumped to tear down his stand.” The Concessionaire’s response to this was “God bless everyone for their help!” That goes to show you - a quick response and communication can certainly save a life! Not every situation can yield such positive results, but teamwork will get you there, even if the distance is great. Additionally there should always be a dedicated phone number for your Fairgrounds for EMTs and other Emergency Services to help out in matters like this. It’s also helpful to put it online. If there is something that NICA can do for you or if you have no other way to get in contact with a Fair or Concessionaire, please give us a call at (813) 438-8926 and we will do our best to assist you.”Together We Can!” ▲ April 2015 NICA News

Rey O’Day, NICA West Executive Manager We have read that “good things come from Sysco” many times on passing trucks, but for our NICA Members it is really true! As we enter a new season, here are some ways Sysco can help you.
Business Review Do you have an idea you want to try out? Take it to your local Sysco house and ask for a Business Review. They will schedule a session with the Chef where you can Don Delahoyde, CCE & the try out new products Seattle Sysco Sales Team: Phil Trout & Brian Carle and develop new recipes. For the last six years Don Delahoyde, CCE has been using the Business Review to develop new items. This season he is rolling out Captain Crunch Breaded Shrimp with a variation on a Sriracha sauce that is sweet and savory. Last year his big new seller was a Mac & Cheese Stuffed Bacon Burger. He has a few more ideas in the works, but he said “don’t give away all my secrets.” So I won’t. Don observes, “Sysco helps me bring new items to the fairs that they can feature in their marketing campaign which is good for everyone.”
Indio are purchased through the NICA MDA because of good pricing and service. Nicco and his team make it happen. Besides Nicco Ysiano, Sysco & Jose De the obvious items, Nicco says “the most La Cruz, Backyard BBQ Village purchased products in Indio were ribs, turkey legs, Kennebec potatoes, hot dogs, nacho cheese, carne asada meat, and the NICA/WFA 32 ounce refill cup.” Nicco is grateful that his NICA Customers order their items in a timely manner and leave the fair with their invoices paid in full. “They are great customers and I enjoy serving them.”
Refill Cup Do you play a Fair that does not have a refill cup program? Try the NICA Refill Cup Program: $5.00 for the cup and drink and $2.50 for the refill. If the potential sale is $7.50, the net profit is approximately 75%. Besides being a lucrative profit center for your business, it gives value to the fair guest, drives traffic back to your stand, provides a rebate to the NICA and WFA scholarship programs, and lessens waste. It must be ordered six weeks in advance of use. Each case has 250 cups. Nicco says, “This is a very popular item.” He should know - he sold 100 cases during this small spring fair. They will be at available at the Pima County Fair and the Central California Sysco Operating House in April (see the next page for more information).

Bringing Casino Night to St. Lucie A Successful Night for Fundraising Kathy Ross, NICA Director
The 1st Annual St. Lucie Fundraiser & Casino Night was held on March 3, 2015. This event would not have been possible without the generous donation of the use of the Budweiser Tent on the St. Lucie County Fairgrounds and General Manager Jeanne Keaton’s willingness to help. The party got started shortly after closing on Tuesday night when an “All You Can Eat” pasta and meatball dinner was served. Homemade meatballs and sauce were donated by Todd Desgranges and Joe Blume of Stuart Confections. Allen Perkins of Perkins Pizza donated garlic knots that were very popular. Cake and cupcakes were donated by Joe Potillo’s Ma and brownies were donated by Kris and Robin Ryan of K&R Concessions. Casino tables were soon set up while the meal

Table sponsors were Stuart Confections, Russell Foods, Pickle Barrel Sirloin Tips, and Mark’s Concessions. Mark’s Concessions crew were the lucky winners: Aaron won the 50/50 and Troyce won the door prize lottery basket. Thank you to Pamela Rosaire for selling 50/50 tickets! Kris and Robin Ryan of K&R Concessions won the Camping Space Raffle’s prize - a free camping space for the 2016 St. Lucie County Fair. Chips were cashed in at the end of the night for tickets used to win items in a “Chinese-style” chance auction. Thank you to everyone that helped make this a great night! The event was very successful and we are all looking forward to next year’s Casino Night in St. Lucie. “Together We Can!” ▲

Serving up Smiles with Paulette’s Food Service Adapted from “Seeding Change Harvest Stories” in the November/December 2014 Issue of Fairs & Expos
Congratulations to Paulette Keene, NICA 2nd Vice President, who won a cash prize based on her story in Fairs & Expos magazine. The story reads as follows: “When Jaden Miller, grandson of Paulette and Norm Keene, owners of Paulette’s Food Service, heard about six-month old Alivia Nehrkorn being born with a cleft lip and palate, he decided he wanted to help. Jaden worked with his grandparents to plan a fundraising event. Jaden promoted the event with an advertisement in the local newspaper, through social media, and in flyers posted around town. On May 9, Paulette’s Food Service set up one of their trailers in the parking lot of Murphy Wall State Bank in Pinckneyville, Illinois, to sell funnel cakes, corn dogs, and lemon shake-ups, with all proceeds going into an account set up for Alivia Nenhrkorn. With sales and donations, Jaden and the Keenes raised more than $6,700 for medical expenses.“
When reached for a comment, Paulette said, ”We actually won one of the prizes for $250 from IAFE to put towards our project. So with all of the help of our community through a lot of donations and everyone contributing their change from Jaden Miller & Alivia Nehrkorn purchases, we were able to raise so much money for Alivia that now we are giving her the $250! It was a good project and my grandson Jaden really enjoyed the family helping him to raise money for his new little friend, who was born like him. He said, with his bottom lip quivering, ‘I never knew anyone like me in Pinckneyville before and I just wanted to do something for her.’ ▲

meet. You will need to have your route information so you can be set up at all the Sysco Operating Companies that you use. When you place your next Sysco order, be sure to ask, “What are the deals?” This buying program has access to over 6000 manufacturing deals from which you benefit. Because many of you use a variety of items and specialty products, please contact your Sysco Sales Representative one to two months before you will need the products delivered. In 2014, Sysco provided direct support to NICA and our members through rebates, marketing and sponsorship funds, and food show revenue in the amount of approximately $119,000. Further, in the first three quarters of 2014, the NICA Sysco Marketplace MDA provided direct savings to our members in the amount $427,999! Don Delahoyde, CCE, Five Star Catering, and Lola Ramirez, The Sysco San Diego JLQ Concessions, sum it up team ready to deliver with “Sysco has been very good for us!” ▲ “good things”
“I like the bag packaging because it saves room and the customer likes the mix of red and green peppers because it adds flavor, crunch and color to my Lola & Jose Ramirez, products.” Nacho cheese JLQ Concessions sauce and hot dog chili will soon be available. A Call to Action to help our industry! Adapted from public posts by Robert W. Johnson, WFA President/CEO & Joe Potillo, Jr., NICA President
Help save America's small businesses! H-2B Workers are critical to America's Agricultural Fairs and beyond. For all of our members who utilize the H-2B Temporary Worker Program or our friends in the Fair community, now is an urgent time for you to take immediate action. In the midst of trying to find solutions to ongoing concerns about the ways the DHS and DOL have operated this program to the potential detriment of the foreign workers, recent developments have compounded these problems. For many Carnivals, Concessionaires, and Circuses who utilize the H-2B Seasonal Guest Worker Program, we learned in March that both the DOL and USCIS stopped processing requests for this worker program. This action was a result of a decision by a judge in the 11th Circuit. However, it was not anticipated that these agencies would take this drastic action and shut this program down. The OABA is working with our
lobbyists, attorneys, and Visa processors, along with the H-2B Industry Coalition to influence Congress to get the DHS and DOL to process current requests for seasonal workers. Please visit http://goo.gl/XntuPF to view a document from the OABA you can share with your elected officials once you have contacted them. The document briefly tells them about our situation and suggests ways they can help. NICA appreciates the support from IAFE, IFEA, OABA, and WFA, making their members aware of this situation to help the mobile amusement industry in this time of need. â–˛
