Roxbury Family Dedicating 3rd Annual Light Show Fundraiser To Roxbury Officer Battling Cancer

By Dawn M Chiossi here’s no better time than the holiday season to demonstrate caring and helping out neighbors and friends. No better time to do something for others. And Roxbury’s Katz Family is doing just that with their 3rd annual Holiday House Display Fundraiser. They are inviting the public at large to come and enjoy their amazing holiday house display this year and help out a hero at the same time. There’s something magical about seeing houses all aglow with lights at this time of the year. Truly there is nothing more festive, or inspiring. People collectively recall that delightful feeling from childhood, and it even carries into the adult years. Just seeing a house all adorned with lights brings joy to all who view it. And the Katz’s house is a veritable light show complete with music and festivity. Recently completed, the Holiday House Display Fundraiser has celebrated its first weekend. People from all over are invited to view the over 40,000 lights display dancing along to coordinated music such as Trans-Siberian Orchestra and many other carols. But once enjoyed, it is asked that people make a donation to help Roxbury Police Patrolman Thomas Denicola who is battling cancer.
Denicola, a former Marine and 17 year veteran of the Roxbury Police Force ironically contracted the cancer known as Multiple Myeloma after stepping up to aid others. He was exposed to toxic chemicals as a result of being at Ground Zero at the World Trade Center on 9/11. Multiple Myeloma is a form of cancer that affects the plasma cells. It is the second most commonly diagnosed blood cancer after Non-Hodgkin’s Lymphoma. Generally, it is something doctors see in people in their 70’s not their 40’s. According to Denicola, he had just recently discovered he had the disease just recently in April during a routine police physical. Springing into positive action, Denicola didn’t hesitate to attempt to combat his condition: He takes his chemo medica-
tions, goes for infusions regularly; he even has resumed exercising and has gone back to work, resuming his normal duties, and keeps a positive attitude through it all. Though he isn’t sure what the future holds, he takes it all one day at a time counting his blessings. “I’ve been very lucky,” he enthuses. And he mentions his family and his good friends that support him all the way. Friends including Rob and Melissa Katz. Denicola mentions that Katz was a former police officer himself, now a bus driver for Roxbury. “When Rob first came to me about the idea for the fundraiser, I didn’t want him to do it,” he says humbly, “I didn’t want to call attention to myself. Retiring Roxbury Township Police Officer Shows his Big Heart and Generosity to Cycling Stranger

By Dawn M Chiossi any people go into service professions such as the police force because they want to help their fellow man and leave the world a little better than they found it. Such is the case with Retiring Roxbury Township Police Officer, Patrolman Silvio Valdes. Recently, Roxbury Township Valdes demonstrated his big heart, generosity, and love of people to his fellow man when he bought a bike for a man who was simply in need of one. Incredibly, this happened, not once, but twice. Valdes first met the cyclist when he observed him throughout the year diligently peddling through town during the course of his duties—including Route 46 enduring all WE WILL BEAT ALL INTERNET PRICES GUARANTEED!

When he noticed that the man would push up his bike among the many hills an inclines around Roxbury just to maneuver, it was something that piqued both the officer’s interest and curiosity. Right away, Valdes went to talk to him. Simply by having a conversation, showing interest in the man himself, and learning about his circumstances, the officer discovered why: The Netcong resident rode his bike back and forth through Roxbury to work, because he did not have a car. Additionally, he had been doing so for approximately three years. “It spoke to me,” Valdes said. “Seeing this man working so hard just to get to a job and having to endure a two hour commute on a bike in all kinds

The Holiday House Display Light Show is something of a tradition for the Katz’, hardly
the first time that they have been putting up their display to help with a worthwhile cause, or their neighbors. Last year their Holiday House Light Show helped raised funds to support Roxbury 4th grader Matt Adonis, who was battling a brain tumor. Located at 56 Parkview Drive in Succasunna, this light show is more than a staple of
the holiday season, more than a good time, it is perfect way to rally around Denicola and embrace the reason for the season at the same time. And the Katz’ put it perfectly when they say, “What better way to say thank you to a true American hero than by honoring him with 40,000 Christmas lights dancing to music.”
Recently, the Roxbury Police Department took part in No Shave November where they raised approximately $1,000 with proceeds going to the Multiple Myeloma Research Foundation to help save a life. Denicola is honored by it all. He says of Katz and all of those who support him, “They have hearts of gold.”

A
Not all Headaches are Created Equal
lmost everyone has experienced a headache, at some point in their life, to varying degrees. In fact, roughly 45 million Americans suffer from Headaches each year. In today’s world, most people reach into the medicine cabinet for one of the various pain relievers to alleviate their head pain. But what happens when that doesn’t work? Or, the headaches become more frequent and more painful? Some get headaches so often and so painful, they even take prescription drugs with side effects and no avail. But have you ever stopped to think, “What is causing my headache?” Headaches and more severe headaches, known as Migraines, can be caused by various triggers including foods, chemicals or preservatives in foods, allergens in the environment, chemicals in cleaning products or herbicides/pesticides, sinus congestion, tension in the neck or jaw, lack of sleep, dehydration, stress, and the list goes on… Sometimes the cause is completely unknown and with no relief the patient can be left hopeless, debilitated and in pain. An assessment by an Acupuncturist can often identify and treat imbalances (that are causing the headaches) that are unknown to the patient previously.
In Chinese Medicine not all headaches are created equally. Rather, during an assessment, we evaluate the individual patient on many levels to determine their exact symptoms (i.e Is the headache frontal? One sided? Behind the eyes? Is there nausea? Frequency and intensity of pain?....) and if there are any triggers. We take a whole body approach and assess the patient’s physical condition as well as their constitution, emotional health, diet and lifestyle. Unlike the blanket treatment western medicine offers which is typically some type of pain reliever, Chinese Medicine finds a specific treatment for each patient based on their individual symptoms. Five patients suffering “headaches” may receive five completely different treatments. By addressing the root cause, Acupuncture can be a safe way to prevent and treat various types of headaches, without the unwanted side effects of medications. Based on the individual assessment and diagnosis, tiny needles are inserted into various points on the body. Depending on the case, small electrodes can be attached to specific needles that elicit a small electrical current. The feeling of the electric stimulation on the needles is a comfortable sensation that generally elicits a feel-
ing of tingling, tapping or heaviness. The electric stimulation enhances the release of specific neurochemicals which aids in the treatment of headaches. The needles are typically retained for 20-30 minutes, during which the patient is left to relax and take a nap. Acupuncture is known to be effective and can offer long standing results, but it is not always a quick fix. Especially if the headaches are chronic, several treatments may be required to achieve the full result. Again, this is because it is addressing the root cause and not just covering up symptoms like other treatments. If you suffer from headaches or migraines start getting relief today! andolph Township Schools celebrated American Education Week in November with special events at all of its schools. The events included family nights at Center Grove November 5, Ironia November 7 and Fernbrook November 6 where students and their parents engaged in a variety of fun activities including a potluck dinner and Makerspace fun at Ironia,
making penny boats and dive into reading activities at Fernbrook and building rockets and creating their own music at Center Grove. Center Grove also hosted a special night for preschool parents. Landing Church Family has Special Tie to Operation Christmas Child

By Elsie Walker ne Sunday last month, children at the Port Morris United Methodist Church in Landing filled shoebox-sized boxes with toys and hygiene items. They added these to boxes already filled and donated by the congregation. The boxes were going to Operation Christmas Child, an ecumenical program run by the non-profit organization, Samaritan’s Purse. Through Operation Christmas Child, needy children around the world are given their first glimpse of Christmas, not only through the gifts in the box, but through the nativity story that the organization continued on page 21

continued from page 2 But this heartwarming story does not end here: Going the extra mile, Valdes followed up with the cyclist a couple of weeks ago to see how he was doing, This time Valdes learned that he was washing dishes at his second job. It’s a job that takes the hard working man to Netcong to Wharton, which is an even farther commute. He travels all the way back and at 1:00 am to boot. Impressed with the man’s gumption and can-do attitude just to make ends meet, Valdes, of course, checked out the condition of the bike. When he noticed the rusted breaks,
balding tires, and utter wear and tear on it, the officer didn’t hesitate and brought him another one. “The man was so grateful, he was ecstatic,” Valdes tells. “There were tears in his eyes when he thanked me.” After an impressive 25 years on the Roxbury Police Force, Valdes will be retiring on January 18th. He will be focusing on his family and his construction company. Roxbury will be hosting a walk out ceremony for him, a kind of party, complete with bagpipers, speeches and well wishes. For Valdes the job was all

Operation Christmas Child... continued from page 20 adds to each one. “It’s fun to prepare a box for a child,“ said Stela Petrov, whose husband, the Rev. Dr. Nick Petrov, is pastor of the church. However, unlike most of those who send boxes to the cause, the Petrov’s know what it is like to be on the receiving end. Before coming to the United States, the couple lived in Bulgaria, where their church
participated in receiving and giving out Operation Christmas Child boxes. Stela Petrov, who coordinated the Operation Christmas Child box drive at the Landing church, recently shared her experience in Bulgaria When they were there, Petrov’s church gave boxes out to children ages 3-18 at three orphanages. For the younger children, there was a party, and for the older
ones something at the church. The children were in the orphanages for various reasons. One reason that children were taken away from their parents was due to abuse while other children were there because their parents couldn’t take care of them or didn’t want them. An example of this might be children with epilepsy who had seizures. Children age out of the orphanage at 18 and older children are vulnerable to people who may seek to use them in various ways. Petrov explained that besides the joy they brought, the boxes helped the church to make contact with the children and offer a place where people would welcome them and offer them weekly opportunities to learn things and participate in other activities. For older children, it gave them a positive outlet and place to spend time. While some in this country might not think items like small
toys, paper, pens, band aids, soap, combs, brushes and other items are much of a Christmas gift, they mean so much to the children who receive them. Petrov shared how she’d been told that after receiving a box, a child in the orphanage would cling to it, even taking the box to bed, tightly clutching it, for fear someone might steal it from him or her. Petrov said that the Port Morris United Methodist Church filled 37 boxes for Operation Christmas Child and her husband’s other church, Millbrook United Methodist church in Randolph, filled 40. Boxes can be tracked as to the location where they will be sent. The Landing church found its boxes are going to the Ukraine. Petrov noted that though Operation Christmas Child is a “worldwide project, and boxes come from all over, the boxes they get are never enough”.

LRS Celebrates Veteran’s Day Through Education
h o to g ra p h s , military gear, discharge papers, and other artifacts were on display for the students and staff at Lincoln/Roosevelt School this past Veteran’s Day. This year the school experienced Veteran’s Day by learning about its origins along with a Veteran’s Day Museum. Social Studies Teacher Melissa Davenport with the assistance of fellow Social Studies Teacher Eric Roy, enlisted the staff at Lincoln/Roosevelt School to bring in mementos from members of their families who have
used to create a Veteran’s Day Museum for the fifth and sixth graders at LRS. Over the course of November 6th and 7th, the entire student population had a chance to visit the museum, learn
about the different branches of the military, and hear some stories as they related to the memorabilia on display. Sixth grader, Gavin Gardner, in particular, who contributed photos
and artifacts, was proud and excited to explain his family’s military connection and the service they provided to our country to fellow classmates and teachers. Many of the items were cont. on page 26

1 cup low-fat sour cream 1/4 cup horseradish, grated 1 tablespoon Dijon mustard 1/2 lemon, juice and zest only 2 tablespoons fresh chives, finely sliced kosher salt, to taste fresh black pepper, to taste 1 boneless prime rib roast (810 pounds) 1 tablespoon, plus 1/4 teaspoon, kosher salt 2 teaspoons fresh black pepper, plus additional for pecan topping 1 cup raw pecan pieces 3 tablespoons fresh rosemary, chopped 3 tablespoons fresh thyme, chopped 1/2 cup panko breadcrumbs 2 tablespoons unsalted butter 8 garlic cloves, divided 2 tablespoons Dijon mustard, divided To make Horseradish Cream Sauce: In small bowl, combine sour cream, horseradish, mustard, lemon juice and zest, and fresh chives; add salt and pepper, to taste. In food processor, process pecans, rosemary, thyme, breadcrumbs, butter, 2 cloves garlic, 1 tablespoon mustard, remaining salt and pepper until combined. Set aside. Cut small slits in fatty side of prime rib; stuff with remaining garlic. Rub remaining mustard over top of prime rib and apply pecan topping, making sure to press firm. Transfer prime rib to roasting pan. Place rib roast in lower-third of oven, insert digital probe thermometer in middle and loosely cover top of prime rib with foil so pecans don’t burn. Cook 1 1/2 hours, remove foil and continue cooking until internal temperature reaches 120 F. Allow prime rib to rest covered 30 minutes so juices can redistribute. Serve with Horseradish Cream Sauce, if desired. Pecan Apple Stuffing Nonstick cooking spray 1 pound mild Italian sausage
1 tablespoon olive oil or pecan oil 1 yellow onion, diced 3 celery stalks, chopped 3 garlic cloves, minced 12 ounces herb-seasoned cubed stuffing 2 cups tart apples, chopped 1 1/2 cups pecan halves 1 cup chicken broth, plus additional (optional) 1 1/2 teaspoons salt 1/2 teaspoon black pepper Heat oven to 350 F. Grease large casserole dish or 9-by-13-inch pan with nonstick spray. Set aside. In large skillet, brown sausage, breaking into crumbles. Drain on paper towels. Discard excess grease. In same pan over medium heat, add olive oil. Saute onions, celery and garlic 2-3 minutes, or until starting to soften and fragrant. In large bowl, mix sausage, onion mix-

Prior to leaving the museum, all were encouraged to sign a ‘thank you for your service’ banner that was to be delivered to a local VFW. In addition to the museum, Davenport and Roy put together a Veteran’s Day assembly on the 7th. Music teacher Ellen Ng played patriotic music as the students entered the auditorium followed by Principal Chris Argenziano’s opening remarks. Argenziano’s grandfathers both served and had photos and discharge papers on display in the museum. He shared at the assembly, “We can never fully repay our debt of gratitude to the more than 650,000 American service-members who died in battle or the 1.4
million who were wounded. We can, however, recognize and thank the 25 million veterans still living today.” Adding, “These words are inscribed on the Korean War Memorial in Washington, D.C.: ‘Our nation honors her sons and daughters who answered the call to defend a country they never knew and a people they never met.’ Those words apply equally to many of our World War I, World War II, Vietnam War, and Gulf War veterans as well. They apply to today’s active duty service-members—tomorrow’s veterans—who are helping to maintain peace throughout the world. Today, it is our privilege to say thank you to all of America’s veterans, to let them know that we appreciate them for their service and honor them for their sacrifices.” Davenport and Roy shared

even Roxbury High School students successfully auditioned for and were accepted into the American Choral Directors Association National Honors Choir. This prestigious ensemble is comprised of the top high school and collegiate singers in the entire United States. Congratulations to Seniors Bryan Gonzalez, Ian Hachey, Austin Kurbansade, Ivan Largo, and Jacob Wood along with Junior Matthew Malsbury and Sophomore Joseph Negron on this outstanding accomplishment. The students will be performing at the American Choral Directors Association National Conference in Kansas City,
Missouri from February 27thMarch 2nd. They will be under the direction of Dr. Jefferson Johnson, Director of Choral Activities at the University of Kentucky. The American Choral Directors Association is a national organization founded in 1959 to serve the professional needs of all choir directors. From its origin, ACDA has promoted excellence in choral music through its workshops, symposia, choral program exchanges, international efforts, and especially through its conferences.
