“I really like Heidi Watanabe’s peaches out of West Sac. I like to poach and serve them with pork belly, they go great with salmon. I’ll poach them in white wine that I flavor with a little bit of sugar and some aromatics.”

ot every chef can say that when they need a sprig of rosemary or a touch of basil, they simply take a short trip to their restaurant’s rooftop garden. It’s one of the reasons Crystal Ortega considers herself lucky to work in Sacramento.

Ortega is the chef at Federalist Public House, a Midtown restaurant known for its fresh wood-fired pizza and its building — a repurposed shipping container with a rooftop garden. She says Federalist employees tend to the garden, which produces the flowers set atop each table and some of the fresh produce used in the restaurant.

“It’s a little bit of all of us,” she says. “Everybody in the restaurant has a hand in it.”

This sentiment rings true in Sacramento’s culinary scene. It takes a village to raise the worldclass food that we all enjoy at local restaurants.

Michael Bosworth was a young boy when he started working on his family’s rice farm, Rue & Forsman Ranch. Today he is ranch manager, and oversees the 271 acres of rice fields in Olivehurst — land where his family raised cattle in the 1940s. They began growing conventional rice in the 1970s and expanded to specialty rices, including organic shortgrain rice to meet the needs of chefs like Billy Ngo of Fish There has to be a Face Poke Bar and Kru. Bosworth and his team balance. … It’s very feed people around the world, subtle, but the subtleties including Sacramento diners.

The organic, short-grain rice are noticeable so the rice is sold as a side mixed in is very important. with chirashi, or fish, rice and vegetable bowls, at Fish Face Billy ngo Poke Bar in Midtown. chef and founder/partner “I enjoy living and working of Fish Face out there every day. We grow enough rice for hundreds of thousands of people on our farm. It’s a pretty satisfying thing — to feed people,” Bosworth says. And that enthusiasm comes through in the dish.

“Each fish has different flavors,” says diner Al Le. “The rice provides a consistent base to hold the flavor of the fish up.”

It’s difficult to decide what’s best about Boeger Winery’s Barbera. It could be that it is smooth and drinkable with a variety of dishes, or that you can try it at restaurants throughout Sacramento, including Tower Cafe. Maybe you’re a localvore who loves that the award-winning wine is produced just up the hill in Placerville.

For winemaker Justin Boeger, whose family opened Boeger as the first post-Prohibition winery in El Dorado Count y, it’s all about sharing the passion that The Boeger goes into each bottle.

A tender touch David English, chef and owner of The Press Bistro, strives to develop nuanced flavors from his ingredients, which he prefers to be local and seasonal. The lamb dish served during dinner hours is braised and cooked with kale, caramelized onions and seasonings — elevating the meat, which is raised on the Rio Vista ranch of R. Emigh Livestock.

Raising sheep and lamb has been a family affair for the folks at R. Emigh Livestock since the 1870s. Ryan Mahoney, president/CEO of the company is a fifth-generation sheep rancher who today works with his mother, uncle, daughter and 86-year-old grandfather, Richard Emigh, to humanely raise the animals.

Once English gets the lamb, he gently braises the meat with veal stock and adds simple produce to round out the dish.

“I love to braise,” English says. “It’s a way of using the ingredient as the ingredient but adding a lot of depth to it.”

English isn’t new to using seasonal ingredients, and The Press is known as a restaurant that has long-embraced cooking local.

“David’s a chef’s chef,” says diner Cameron Grant. “He’s someone who took the farm-to-fork movement to heart before it was cool.”
