Citrus & Spice if you like your fish to pack a “spice kick in the mouth,” the blackened pacific rock fish sandwich at cafe Bernardo midtown has your name written all over it. A cajun spice rub blankets northern california rock cod, which is topped with a citrusy slaw and dill pickle mayo. executive sous chef Keith Franzen pairs the sandwich with shock top Belgian White, an unfiltered wheat ale brewed with coriander and citrus peel. Yeah, you can knock back a crisp cerveza with your mexican food, but tres Hermanas offers a more adventurous option: a not-justfor-brunch version of the bloody mary called the Oaxacan dead. developed by bartender mark neuhauser, it delivers knock-yoursocks-off flavor from an intensely smoky Oaxacan mezcal, freshsqueezed lime, locally produced preservation & co. bloody mary mix and a heavy hit of tapatío. the cocktail pairs nicely with the roasted chile poblano, stuffed with chicken, almonds, pine nuts and raisins, then topped with a creamy chipotle sauce. rich, with a sweet touch of basil and a pleasantly spicy bite on the back end, this dish is just plain good. Fresh & Local since chris lotta stepped in as executive chef of Kupros craft House four months ago, he’s changed a lot in the kitchen. For one, he’s revamped the entire menu, adding a variety of dishes made from local ingredients. lotta says one of the most popular menu choices is the burger named after the restaurant. Featuring beef from lucky dog ranch, buns from truckee sourdough co., cheddar from petaluma creamery and veggies from produce express, the Kupros burger is made to order using fresh ingredients. For the perfect match, Kupros resident bar manager and beer expert Keegan currie says the gold country pilsner Ale complements their signature burger well because it has a lighter, crisper taste with a hoppy bitterness, which brings out the flavors of the meal. Warm & Sweet edie Baker knows her coffee. Owner of chocolate Fish coffee roasters, she can wax poetical about single-origin micro-lots of high-grown Bourbon-varietal beans all day. But few coffee purveyors know their coffee growers as well as their coffee. not so for Baker, who makes annual trips to the chimaltenago region of guatemala to visit the farmer who grows their el retiro del Quisaya coffee. the high growing elevation renders a “sweet and fruited” brew with a honeylike finish and silky body, says Baker. she pairs it with a cherry and candied almond scone from Yellowbill cafe and Bakery, which is buttery, not overly sweet and has a nice kick of cherry tartness. Baker says the pairing works because the red-grape fruit acidity in the coffee is accented by the tang of cherries in the scone, and balanced by the sweetness of the candied almonds. the result is a comforting combination that can give you that easy-like-sunday-morning feeling any day of the week.
