Terror twilight The take home from Barack Obama’s big foreign-policy speech last week was, basically, that it’s time to ratchet down this country’s dozen-yearrunning “war on terror.” And while that’s a great thing to hear from our president—it’s been costly, in dollars and lives, and has made the country less safe, less esteemed—the war on terror will take more than a speech to overcome.

A decade ago (a week before the Iraq War’s start, in fact, in March 2003), I was traveling across Tunisia, riding a really uncomfortable, ramshackle bike from town to town along the coast. At that time, America was all about its restless hunt for Al Qaeda. If a country such as Tunisia harbored terrorists, then-President George Bush and Co. assured that there would be reckoning.

Saddam Hussein was just a first stop: The war on terror would never end, Bush promised.

People in Tunisia seemed confused, disappointed. I remember stopping at a cafe/house seemingly in the middle of nowhere while on my trek. A man ran out front to greet me, carrying a glass of orange juice.

He thought I was French. When I told him the truth, he was startled: He’d never met an American. It took some time to put him at ease and persuade him that I was a decent enough guy. Or at least not some hawkish cowboy.

A decade later—after the Arab Spring, drones, depleted uranium, orphaned children, civilian casualties, all the tragedies that never made it onto U.S. television or into U.S. newspapers—I can only imagine what the average North African or Middle Easterner now thinks.

So, while I’m pleased to hear Obama’s words, the war on terror isn’t just a couple military invasions or a few seasons of Homeland. Sadly, it’s probably a legacy inescapable.

Bum fights and gun overload Re “A history of Sacramento violence” by Cosmo Garvin (SN&R Bites, May 16): Well, there you have it. Any violent act that happened in the days of “yore” is fair game to use to draw tourists.

In fact, let me chip one in of my own, if you will. I, a third-generation Sacramentan, visited Old Sac (then Sacramento’s Bowery) with Mrs. letter of Lashbrook’s secondthe week grade class from Larchmont Elementary. Yep, a field trip to see the bums.

My entire class witnessed a bum cut another bum’s eye out over a cigarette butt. To this day, that might have been the single most educational thing I ever saw or did in my entire school career.

I think we ought to bring stuff back like that—even make it a bit sexier for the tourists. With thinking like that, we might be able to do re-enactments of the shooting in Old Sac in 2012. Yes, gunfights happened there—and they still do. End the culture of violence.

Re “Students and environmentalists pressure CalPERS, CalSTRS, UC to ditch bigoil investments” by Darwin BondGraham (SN&R News, May 23): While this is a democratic society and everybody gets to say their thing, these people are either delusional or simply ignore the truth about CO2. Per NASA Goddard Institute for Space Studies data, the world has not warmed for 15 years.

Even the Intergovernmental Panel on Climate Change admits the world has not warmed. There is zero correlation between the measured increases in CO2 from the Mauno Loa study and world temperatures.

The ice-core studies show changes in CO2 levels come after global temperature changes hundreds of years later. The temperature in 1000 A.D. at the top of the medieval warm period was hotter than today with lower CO2 levels—we finally got back to the temperature of 1225 A.D. in 1990. If CO2 actually warms the planet, how did we get out of the last ice age 11,000 years ago when CO2 was half the level of today?

To me, the idea of employers asking for your personal login to anything that is not work related is absurd and a volition of privacy. Trends like this concern me a great deal. ... I would be glad to see you make the point that we do not need to be complacent to this trend and can stand up for our privacy rights.

Experts say Sacramento needs more affordable housing, but many low-cost rooms at downtown resident hotels remain empty If you called the Marshall Hotel two weeks ago about renting a room in the 95-unit residence for by low-income earners, the woman on the line Dave Kempa would have said, “No vacancies.”

Yet earlier this month, a report by the d a vek@ newsr evie w.c om city’s low-income housing agency stated that the building—which rests next to the site of the proposed new Kings arena—had 30 empty units. In fact, the Marshall Hotel has cited the same number of vacant rooms in each annual recap over the past three years—and 28 in 2010.

Two other hotels that allow long-term residents, the Capitol Park and Congress, came back with almost identical vacancy percentages over the past four years.

The Sacramento Housing and Redevelopment Agency’s yearly summary reveals that more than 25 percent of the mandated 712 residential hotel units in the city were not in use at the time of reporting.

Activists and city leaders say there’s a dire need for low-income housing in Sacramento. So why all the empty rooms?

Hotel residences, previously referred to as single-room occupancies (or SROs), have played a role in Sacto’s urban center for decades. The purpose of these small, affordable units is to help keep a portion of the low-income earners in the city housed.

SRO numbers have dwindled in recent years, however, dropping from more than 1,000 in the 1980s to a little more than 700 in 2006.

“The rooms are really run-down,” said Jeffrey Marsh, who has lived in the Marshall for about a year. He says the building has suffered from cockroach and bed bug infestations, as well as upkeep and safety issues.

“We’ve got two rooms full of bats,” he said.

The Marshall has a history with code enforcement. Just last year, the city made the hotel install air conditioning for its residents, who struggled to make it through the August heat.

SN&R caught up with one of the partners of the group that owns the Marshall Hotel, Pete Noack, who said that upkeep is a difficult and ongoing task.

Despite chairman Philip Harvey pegging Walmart as a “predatory retailer” that destroys neighborhoods, his city-planning commission voted to lift Sacto’s ban on big-box stores last week.

The ordinance has functionally kept the wagedepressing, small-business-crushing outlets out of central Sacramento for eight years. An 11-to-1 vote decided this was long enough. Some called the ordinance anti-business; others said it fell outside of the commission’s scope. Who knew the city’s land-use body drew inspiration from the tea party? “That is kind of the magic question, isn’t it?” Officer Doug Morse, a spokesman for the Sacramento Police Department, told SN&R. “You want to strike a good balance based on budgets and resources.”

But during an afternoon citycouncil meeting last week, elected officials seemed more concerned with good politics than a good balance.

“We were loud and clear to the voters, and they loud-and-clear said, ‘Amen, restore core city services,’” said Councilman Kevin McCarty.

“So, I think we need to be crystal clear and plow those monies in there.”

The half-cent Measure U tax’s first-year haul is estimated at $27 million. Based on this, the city’s financial analysts penciled in the addition of 51 police-department and 20 fire-department employees through the end of the upcoming fiscal year.

The parks-and-recreation department would add back about 71 full-time employees.

The city won’t see its first penny from the general tax until late June, and won’t really know what to expect from the six-year tax hike until September, officials said.

As a result, the city’s finance officials recommended

holding some of the tax revenue in reserve. A number of positions funded through grants are also set to expire, explained finance director Leyne Milstein. Without having money to cover the loss of those grants, the city could be forced to give up 27 police officers and almost an entire fire company in fiscal year 2014-15, she said.

But council members remained bullish.

“Given the public’s resounding support for Measure U, we have to take a little more risk than we would with our base budget,” suggested Councilman Steve Cohn.

The half-cent Measure U tax’s first-year haul is estimated at $27 million.

He believed the city should err on the side of restoring more services than what staff proposed, even if it meant reducing the amount of reserves built for the city’s so-called fiscal cliff in 2019, when the Measure U money runs out and the restored jobs will cost more.

If the city’s general-fund revenues haven’t seen “significant increases” by then, a staff report states, it won’t be able to keep funding all the positions it bought back.

Sacramento city officials are debating how much anticipated Measure U money to spend this year on more cops and firefighters, and how much to save for a feared “fiscal cliff” in 2019.

While Cohn acknowledged the council’s eyes may be bigger than its stomach, he and others wanted the option of adding more to next year’s bill.

“I would really like to push this analysis,” he said. “Add as much as we can.”

Council members Darrell Fong, Allen Warren and Angelique Ashby (in a letter) also favored hiring more cops and firefighters this year, particularly in their own districts.

But information regarding how many cops and firefighters are actually needed—or what constitutes optimum staffing levels—was in short supply.

When it comes to police services, the average for the Pacific region is two officers for every thousand residents, according to the U.S. Department of Justice.

Police spokesman Morse said the department currently has 1.34 officers for every thousand residents in the city. At optimal staffing, that would give the police department somewhere around 944 sworn officers. At last count, it had 653.

Budget cuts over the last five years resulted in the city implementing rotating brownouts at some of its fire stations. In March, the council cut those brownouts in half down to two.

The department used overtime to pick up the workload, since it didn’t have enough trained firefighters.

Fire Chief Ray Jones is nursing 34 vacancies in his department, mostly through attrition. Even with council members offering to throw more money at his department, Jones cautioned that he wouldn’t be able to hire enough people to restore an additional engine six months ahead of the current schedule.

A fire-department training academy began last week with 24 cadets.

“The thing we’re concerned about is not having enough trained people to staff them,” he said.

Councilman Steve Hansen was the only one who suggested pumping the brakes on all the Measure U excitement.

“I’m very leery of spending money we don’t know we have yet on things we want to have,” he said. “Our needs are far greater than Measure U or our general fund can provide for.

“We can’t just say yes to everybody.” Ω

In the bag Sacramento took a big step toward banning plastic bags this week.

On Tuesday, a city panel recommended a new ordinance prohibiting single-use plastic bags at all stores and supermarkets. The ban would go into effect January 1, 2015, and the city estimates enforcement costs at approximately $100,000 a year.

Initially, it was uncertain as to whether the city would attempt to ban plastic bags at all stores, or just major supermarkets such as Safeway and Raley’s.

According to the city staff report, California retailers distribute some 19 billion plastic bags annually, but fewer than 5 percent are recycled.

Youth in revolt Oh, those unruly teenagers. Sacramento police had their hands full with them in the northern part of the city last week, ejecting them from libraries, busting up parties and confiscating imitation handguns.

This past Thursday afternoon, an exasperated security guard called police to the South Natomas Library, where four juveniles reportedly stirred up trouble.

Officers pulled two physically resistant youths out of the Truxel Road reading spot as their two friends hollered, police logs state. Once outside, the bad behavior didn’t stop, as they threatened to beat up the security guard.

Witnesses said the teens had disturbed the peace in the area for a while, and were grateful for the reprieve, said Officer Doug Morse, spokesman for the Sacramento Police Department.

“We arrested all four,” he said. The security guard, Morse added, “did a great job.”

But perhaps most indicative of the age-old struggle between young and old happened May 16, near Sandburg Drive and Shepard Avenue. That’s where three young people cornered a man in his 70s and tried to rob him at the business end of a knife. According to police logs, the trio’s wouldbe victim refused, and a struggle broke out.

It ended with the suspects—described as being in their late teens or early 20s—getting bupkis and running. The victorious elder took himself to an area hospital for what police described as nonfatal injuries.

Wrapped up California’s porn industry heaved a sigh of relief when a proposed bill to mandate condoms in adult films petered out in the state Assembly’s appropriations committee last week.

Assembly Bill 332 was initially proposed as a safeguard for the industry’s performers against sexually transmitted diseases. Opponents of the bill argued that it would have a softening effect on California’s thriving porn industry.

Judging by the effect a similar bill had in Los Angeles County, they could be right. After passing its condom law last year, Los Angeles had seen only two permits for adult-film shoots in the first four months of 2013—a sharp decline from the 500 or so passed out annually in the past. Meanwhile, nearby Ventura County is experiencing something of a porn-shoot renaissance.

Unpleasantly enough, the legislative blood fever manifests itself simultaneously in the Assembly and the Senate twice each year: once during the week before bills must leave their house of origin and, again, 10 days before the legislative session concludes.

The legislative process seems quite alien.

This year, lawmakers go home, or at least go away, on September 13, so stay clear of the White Sepulcher the first couple weeks after Labor Day. The date of this SN&R issue finds lawmakers immersed in intensive bill passing. Assembly bills must exit their house by May 31, or they’re dead until 2014. Same for Senate bills. Hence, May 30 is beaming-up bills day.

As portrayed in the original 1967 Star Trek episode “Amok Time,� pon farr and the plak-tau is chaotic, violent and, for Mr. Spock, it ends badly.

The Legislature’s version is comparable, except it usually ends badly for Californians.

For those not directly involved, and even some of those who are, the legislative process seems quite alien.

During these beat-the-deadline death scrums, the Legislature’s actions lie beyond the reach of human comprehension.

Change after change to California’s already voluminous body of law is

outlined in a few brief paragraphs written by a staffer for a lawmaker, who then haltingly reads the description giving every impression of not knowing the contents of their own measure.

In 60 to 90 seconds, the legislation is approved.

These bills carry potential costs for consumers and employers, spend billions, regulate the use of various substances—toxic or otherwise—and increase penalties for crimes and benefits for public employees.

Given their potential impact on 38 million people, isn’t a higher level of attention warranted before casting a vote?

Periodically, some bill generates more than a minute’s worth of interest.

Usually it’s one that shouldn’t.

In the Assembly recently, a measure that would ban lead bullets— ostensibly because of their impact on the environment—spawned a 15-minute debate. The previous bill was dealt with in under two minutes.

The author of the lead-is-dead bill said the fragmenting of lead bullets in game, wildlife or cattle is akin to “spoon feeding lead to our children.�

Opponents, all Republicans, said banning lead bullets would effectively end hunting, and that the evidence on the dilatory effects of lead bullets wasn’t conclusive.

When the 15 minutes of arguments against the bill concluded, Democrats, who hold a comfortable majority in the lower house, passed the bill easily.

Seriously, why bother?

Is this slapdash, (nonlead) rifle-shot method of policy-making necessary?

Of course not.

Sure, people procrastinate. But a hefty chunk of this work could easily have been dealt with sooner.

But it never happens. Limits on bill introductions have been imposed.

Changes in deadlines, encouragement of earlier amending, procedural tweaks to speed legislation along all have come to nothing.

That leaves only two conclusions.

One is that legislators feel the same way about the situation as Mick and the Stones do about rock ’n’ roll: They like it. Or it really is a DNA-deep plak-tau for which no cure exists other than leaving public office, voluntarily or otherwise. Ί

I’d never seen K.J. so pumped—he was Ryan Seacrest-meetsHoward Dean.

Organizers estimated 15,000 attendees. City police said around 10,000. Both those numbers seem high, but I’ll tell you this: It was the busiest I’d ever seen Cesar Chavez (the only other event that rivaled it was maybe that one time Deftones played Concerts in the Park).

Webber and new Kings owner Vivek Ranadivé garnered massive applause, but the mayor took first place for loudest reception. I’d never seen K.J. so pumped—he was Ryan Seacrest-meets-Howard Dean. Host, hype man, hollerer: It was definitely the K.J. show.

Ranadivé even started calling him “Gov. Kevin Johnson.” And then, “President Johnson.” (There are now “K.J. for Governor” T-shirts making the rounds.)

So, yes, there was some good ol’ fashioned political posturing, and also a mad dash to hawk Kings

season tickets. But there’s a time to kill the vibe, and last week’s event was not that moment.

A week later, however, it’s OK: Let’s discuss the NBA-ification of downtown Sacramento.

The good news about the new arena is that everyone agrees it shouldn’t be a box. The hope is to avoid the proverbial “black hole” syndrome, i.e., an arena lets nothing escape and goes dark some 200 days a year.

Local developer Mark Friedman, who’s never built an arena but will give it the old college try with downtown’s complex, told The Sacramento Bee this past weekend that he envisions the next Kings home as more of a gathering place—à la “Times Square, San Francisco’s Union Square, or Boston’s Faneuil Hall.”

New York’s hub is too seizureinducing, obviously, and all three places are too tourist-trappy for my tastes. But I get his vision: This arena needs to be open, welcoming.

It should also be local.

Friedman, Ranadivé and everyone else with a grip on downtown’s future won’t need to look far for ideas. A block away, developers Ali Youssefi and Bay Miry hope to break ground on the 700 block of K Street this year, and are planning a destination that will appeal to both out-of-towners and urban dwellers.

The two are partnering with popular Midtown-downtown business owners—Shady Lady Saloon, Insight Coffee Roasters, Ace of Spades, Magpie Cafe, LowBrau, et al.—on new projects up and down the block. These are the kind of restaurants, bars, clubs and coffeehouses that suburbanites love, but grid dwellers uphold, a mix that’s vital to the success of the new arena.

The city’s vision of the downtown arena as an L.A. Live, complete with the mayor’s preferred bowling-alley outfit Lucky Strike, won’t vibe with those who already live, eat and breathe on the grid. This central-city cadre wants authentic and inspired places with strong local connections at Friedman’s new arena town square.

Graduation is not just about leaving Serna Village.

Graduation is about being sober. Graduation is about having a home and a job. Graduation is about a lot of hard work and the beginning of a new life.

After attending a graduation Drug addiction, foster ceremony at Serna Village, I saw care, homelessness— all the successes. But, I wondered, these are big problems. “What is the cost?”

This is an important question, given our limited funds and unlimited challenges. To help answer this, Sierra Health Foundation commissioned a study of 293 children and youth from approximately 150 families, who lived with one or more parents in Serna Village between 2002 and 2009.

If you’re a recent college graduate, we don’t need to tell you that student-loan debt is out of control. The average cap-and-gowned entrant to the still-slumping job market is facing mortgage-sized loan payments and educational debts previous generations could barely have imagined. It’s unfair to students and a drag on the economy, and it needs to be addressed before it gets worse.

Today’s graduates have had little choice but to borrow—and borrow big.

As the Great Recession sent state-budget revenues plunging into the red, legislators across the nation slashed funding for higher education, and tuition hikes were the inevitable result. States now spend 28 percent less to support public colleges and universities than they did five years ago, and tuition increased by an average of 27 percent nationwide over the same period.

California students have been hit especially hard.

The state, which paid 78 percent of the costs of each student in the University of California system during the early ’90s, now supplies less than 11 It’s simply unfair percent. That’s bad for the economy. Even graduates lucky enough to find good-paying jobs often struggle to make their payments, with the result that they are less likely to make big purchases such as homes or cars, a factor economists say is prolonging the recession.

Many simply can’t pay: About 17 percent of student-loan borrowers are in default, and delinquencies are on the rise. Banks wrote off $3 billion in bad loans during the first two months of this year—more than double the amount for the same period last year. If trends continue, the result could be a banking crisis that would further cripple the still-struggling economy.

Fortunately, there are plans in motion that could help turn things around. Massachusetts Sen. Elizabeth Warren’s proposal to set student-loan interest rates at the same rate the Federal Reserve lends to banks— currently 0.75 percent—is a step in the right direction.

Even more encouraging, California Sen. Noreen Evans has introduced Senate Bill 241, which would fund higher education in California with an oil-severance tax similar to those that exist in other oil-producing states, and a ballot initiative with the same goal is in circulation.

It’s simply unfair for this generation to have to pay so much more for college than their older brothers and sisters, and unsustainable to rely on larger and larger educational debts to cover ever-increasing fees. We support the efforts by Warren and Evans to reform the student-loan system and restore funding for higher education in California. Ω

a fascinating thing to watch.

Martinez and Woodsford will work until midnight. Most of the kitchen crew works the same kind of nutso hours.

Martinez is a national-class talent, and he’ll oversee the desserts and baking, help with the main dining-room service and be a key player in the wine dinner, featuring Palmaz Vineyards of Napa Valley. Woodsford, who’s wearing a white T-shirt under a white apron, will change clothes late afternoon and take up hostess duties. After the guests leave, she’ll go back to an apron and roll out bread for the next day. Rolling it the night before builds more flavor, Martinez says. They make three breads—pan au lait, pretzel and bacon challah, and, yes, they see the irony of bacon flavor in a bread with Jewish heritage. It took Martinez three weeks in the test kitchen to land on these, trying different textures, densities, shapes, flavors and more.

This morning, Woodsford is dealing with her mignardises plus some mild harassment from Bruich about the cocoa-butter swirls.

“Looks like my 4-year-old did that,” he says.

Woodsford smiles and gets to the ganache, building it in a square, 4-quart plastic tub with an immersion blender.

She adds coconut extract with a dropper, tastes with a spoon, adds more drops.

Martinez tastes.

“Needs more coconut,” he says.

“Don’t be shy.”

When they’re satisfied—mostly, Woodsford isn’t sure but thinks the flavors will intensify and doesn’t want to overdo it—she grinds peppercorns and puts the powder into the ganache, tasting as she goes. The milk for the chocolate shells was seeped in peppercorns the day before.

Next, she tempers the chocolate so it will hold form. It’s in a bowl, brought to 120 degrees, lowered to 80, then raised to 89 degrees. Woodsford pours the chocolate into the painted trays, pounds them hard on the counter so there are no uncovered spots or bubbles, meticulously scrapes off extra chocolate and waits for | 05.30.13

“It’s an ingredient no one was using,” Woodsford says. “We try not to repeat an ingredient in a meal.”

Martinez likes trying new things, which is a baseline theme at Enotria these days. He regularly gathers his pastry crew to brainstorm.

“We just throw out ideas,” Woodsford says.

“Most of them I shoot down,” Martinez says.

“Yes, he does,” she says. Pause. “It makes us stronger.”

Strength matters at Enotria, the longtime mainstay of wine and fine dining on Del Paso Boulevard. In the last two years, it received a $1.5 million remodel that doubled capacity, took on a fresh, swashbuckling style and brought in executive chef Pajo Bruich—a man with exacting standards, a tireless work ethic, and a daring approach that’s not just unique in the region, but either a risk or the answer for a Sacramento restaurant that’s trying to stand out.

It’s 9:05 a.m. on what will be a long day that includes a special wine dinner. The sun is making the kitchen completely cheerful. Later, it will make it completely hot.

Edward Martinez watches her. He’s Enotria’s pastry chef and a Sacramento culinary celebrity. Woodsford also worked for him at Hawks Restaurant in Granite Bay, and there’s an easy, bigbrother-little-sister air between them.

“This is just one small step,” Woodsford says.

“Doesn’t mean we can mess it up,” Martinez says.

She gives him a look that says duh.

But with respect.

They’re making mignardises—small, complimentary dessert bites that will be served with coffee. These will be a ganache of pink peppercorn, white chocolate and coconut inside dark-chocolate shells, with those pink-and-white swirls of cocoa butter on the chocolate.

it to cool. Her white shirt and apron are an abstract painting of chocolate streaks. It’s nearly 11:30 a.m. by now. She moves to other chores while the chocolate cools and solidifies. A few minutes later, the ganache is poured in. Then it cools more, and is covered with the remaining chocolate. When everything is down to room temperature, the mignardises go into the wine room at 58 degrees.

The fridge would make the chocolate too hard. Bruich comes by during the last chocolate phase.

“All this work,” he says, “for something we’re giving out free.”

The food at Enotria does not qualify. It’s original and inventive, and very often surprising and dramatic. But it’s not just a parade of foams, dots and gels. Bruich uses some techniques from the science of modern cuisine, but the food comes out looking like, well, food.

“Some chefs try for simplicity,” Bruich says. “They’re trying to highlight the ingredient. I have the exact same approach. I want to make the ingredient shine. I look at the flavors and try to find the best way to deliver them.

“I might manipulate a texture or build flavors differently, but it’s not a difference of intent,” he continues.

“We want our diners just to see a delicious, well-cooked piece of lamb.

It’s not about what I did, it’s about what they’re eating.”

By way of example: A new dish to the menu is a display of peas, asparagus, baby beets, carrots, tiny potatoes, grilled artichoke hearts and more on a silky asparagus puree. The colors—greens, oranges, reds—look like they were painted.

Each vegetable is cooked separately, so each is sweet, crisp and precisely tender. Together it tastes fresh and alive, like spring. A trip through the chef’s tasting menu is one course after another like that—a pork cheek you can cut with a spoon, a sea urchin dish that makes you hear the ocean, pasta so soft it’s creamy, floatingly light squid chips, subtle ginger sponge cake, startlingly bright pickled radishes, soft carrots as dessert.

Not every Sacramento chef has embraced the new Enotria, maybe because they’re not thrilled with the tasting-menu approach, or they don’t love the style, or they just haven’t been there yet. But the consensus is a communal finger crossing for the success of Bruich and company.

“It’s good for Sacramento that he’s pushing the envelope,” said Aimal Formoli, owner of Formoli’s in East Sacramento and a chef frequently listed among Sacramento’s best. “We have so many niches to fill, but it’s risky.

In San Francisco, you get a zillion people walking past your place.

Sacramento is smaller. Being different could narrow your appeal if you’re not really good. Pajo’s really good.”

It’s just before noon on that wine dinner day, and Bruich is working on a lamb dish to pair with a Palmaz 2007 estate cabernet sauvignon. It’s a showcase for how he works. The lamb was cooked sous vide—sealed in a bag, immersed in water and cooked long and slow at a controlled temperature.

“That gets it tender and keeps the juices in,” Bruich says, as he’s taking a flat roasting pan of charred leeks

Not scieNce, just food Enotria is the newest shiny object on the Sacramento restaurant scene and has gotten as much attention recently as any area restaurant in years. Some of that’s because it’s considered new—despite opening in that spot in 1995—but much comes from its transformed style, its newfound vitality and its ambition.

Sacramento can be tricky for an ambitious restaurant. On one hand, it’s a city of foodies. On the other, it’s also a city of neighborhood eateries and continuity. Some diners love new things, some want the same reliable food at their favorite spots. Even a place like Ella Dining Room & Bar, the downtown restaurant with a rep for adventurous eating, balances that with reliable dishes.

Enotria has jumped completely into the adventurous-eating side of the pool, betting it’ll draw enough foodies and curious diners to its ever-changing tasting menus, which mean trusting the chef to take you on a ride. (Enotria offers a full range of à la carte dishes, but its focus is on tasting menus.)

The result has been a parade of good reviews, high praise and new diners who might never have considered a trip up Del Paso Boulevard.

But attention is a two-edged sword.

Media focus on a still-evolving restaurant also means detailed scrutiny— from the press, from the restaurant community, from customers—of every move or personnel change.

No one at Enotria is complaining.

It sought that attention, announcing big hires and bringing on a national public-relations firm. But it’s still learning to live under a spotlight.

And in some ways, that spotlight distorts what’s happening at Enotria.

Lots of talk is about Bruich’s style and what’s called “modern cuisine” or, unappetizingly, “molecular gastronomy.” Those are vague labels, but generally involve transforming textures and products into matter that seems to come from a chemistry lab.

black and white pepper, salt, and the charred leeks he carefully rubbed down to a powder. Even unfinished, the lamb looks and smells like it came off a smoking grill. Nine hours later, it will be a clean, elegant dish that includes juice from the lamb, mapleglazed cipollini onions, bacon-wrapped |

potato gratin and a smoked cipollini espuma, which is a foamlike sauce that’s the consistency of Cool Whip.

At 12:15 p.m., long before the lamb will see a plating, Bruich meets with his staff to check on progress.“How are the beets?” he asks Patrick Smith, a former Sonoma chef.

“Coming out now,” Smith says.

“They’re looking like the right size.”

The meal will include three kinds of baby beets. A shipment a day earlier had beautiful but randomly sized beets. Smith had to reorder. He wants them identical. Those details matter when each plate is a bit of art.

Bruich asks Martinez what he’s planning for dessert.

“Campari and grapefruit sorbet, pistachio cake, Asian pears,” Martinez says.

“Sounds good,” Bruich says.

Bruich trusts Martinez—once a member of the dangerous Fresno gang called the Bulldogs—like no one else. The only clue to Martinez’s background is that he’s got more tattoos than anyone in the kitchen.

He’s tall and moves gracefully, jokes often, smiles frequently and talks like a grad student. Martinez and Bruich are both perfectionists, both restlessly creative, both smart and talented.

They’re the foundations of this new, often wondrous Enotria.

“What else you doing?” Bruich asks him.

“I’ll figure something out,” Martinez says.

PrecisioN, PerfectioN aNd the Pursuit of a MicheliN star Bruich was hired last September, and everyone is still finding their rhythms in the kitchen and dinning room; the restaurant still has the inevitable churn of staff that comes with newness.

That includes the arrival and departure three months later of high-profile sommelier and general manager Anani Lawson, who left citing “family emergencies.”

He said he couldn’t spend enough time in Sacramento, but it’s pretty clear the arrangement didn’t work out.

Longtime Enotria owner David Hardie says he’s “all in” on Bruich and that he expects stops and starts with staffing. He knows restaurants.

He knows Bruich needs people he’s comfortable with, and who are willing to work the often crazy hours this ambitious approach requires.

“Pajo is a delight to work with,” Hardie said. “His professionalism demands that people who work with him, including myself, conduct themselves with the same professionalism.

food. They’re working hard in there, but that’s just not for everyone.”

Bruich is still building his crew, but says he’s thrilled with the core, including new general manager Jenny Yun, who started this month and came most recently from the acclaimed Restaurant at Meadowood in Napa Valley.

“We truly have to get people to buy into what we’re trying to achieve,” Bruich says.

“They have to volunteer mentally and feel a part of it, or it’ll just be hard work.”

And then there’s the case of the elusive Michelin star. When he’s asked about it, Bruich says, yup, he wants Enotria to be good enough to earn one. That also got local foodies talking.

A Michelin star is one of the highest honors a restaurant can achieve. Only 127 American restaurants got stars for 2013. Only two in California got the maximum of three (The French Laundry in Yountville and Yun’s former employer, Meadowood).

But here’s the thing: Michelin only goes to New York, Chicago and San Francisco, which includes wine country. Just three U.S. spots.

(Michelin also rates—selectively—restaurants in Europe and Asia.)

It even stopped rating food centers like Los Angeles and Las Vegas, and it doesn’t come to Sacramento.

So does it even matter? When Bruich took over Enotria, he hailed that distant Michelin star as both a target and a standard of excellence for the staff. It was about motivation,

getting everyone asking: Are we doing Michelin-caliber work?

“I’m selling something to our staff,” Bruich says. “Would I like to get a Michelin star? Of course. But I want to set a tone. I want everyone to try to be worthy of a star. That makes everyone better.”

Now, before 3:30 p.m., Jennifer Millsap, a chef who maintains a state of both hustle and calm, is in the front kitchen. (Enotria has two kitchens, one at each end of the building.

That less-than-convenient setup came from the remodel and a decision not to build into the charming courtyard.) She’s carefully labeling containers with olive-green tape. Bruich pushes everyone to do everything neatly and on point, even labeling.

“I get it,” Millsap says. “It’s a mindset.

Do everything right. Our knife cuts have to be precise. We do a good amount of really, really detailed work. We’re prepping all day, right up to service. You don’t want to lose focus on anything.”

One reality of good restaurants is that lots of work gets done before the last rush to fire and plate a dish. What the public sees is the flash at the end. In some ways, that’s true of Enotria as a whole. What Sacramento sees now is the unique, intriguing, almost nervy chase for excellence. It’s easy to miss the backstory on Enotria and the years of chasing excellence.

“David Hardie took a gamble on that location, and he’s stuck with it,” Mike Dunne, the former Sacramento Bee restaurant critic who remembers Enotria opening, says. “He’s

With the exception of the Firehouse, I can’t think of another restaurant of that era that put as much focus on wine as on food.”

Both the pedigree and the location add to the Enotria story. At the corner of Del Paso Boulevard and Arden Way, it’s maybe only 10 minutes from downtown. But it seems distant from the city’s restaurant core. Both Hardie and Bruich say that’s why they want Enotria to become a unique destination. Certainly, people can just drop in, but they want diners to get excited about coming.

Hardie said that’s a big reason he hired Bruich. He wants Enotria to stand out. Bruich grew up in the Sacramento area in a food and restaurant family. His grandfather started Dean Industries, which makes foodindustry equipment. Later, he opened and ran Frosty Huts around California.

Bruich’s mother owned two Rally’s Hamburgers in Sacramento, and when she and Bruich’s father divorced, she often brought Pajo to work with her when he was as young as 6. As a young teen, he could repair kitchen equipment and nearly run the place.

Bruich fell for cooking and learned much of his technique on his own. He began making a name for himself in 2005 doing high-end private dinners.

His only previous experience as an executive chef was at Lounge on 20 in Midtown, from 2011 to 2012.

As one friend says, “Alice Waters never worked in a restaurant before she opened Chez Panisse [the legendary Berkeley restaurant]. That worked out OK.” It’s now 5:20 p.m., and Yun is in the side dining room, giving servers detailed instructions for the wine dinner—the order they’ll enter and leave, who sets food at which seat, even their pace.

“Walk out calmly,” she says, “then haul butt down the hall to the kitchen.”

Next, Yun watches as servers Jeynie Jacob and Diana Emerson line up the 28 settings of plates, silverware and every glass on the long table into a dead-straight line.

Jacob is sighting from the head of the table. Emerson is moving glasses. “Third glass, quarter-inch BEFORE

toward you. Perfect. Next, toward the wall a smidge. Another smidge.

Beautiful,” Jacob says in a language of smidges and dashes they’ve developed over months. They do this item by item, down to the butter knife. “Next glass, toward you an inch. Bingo. Next glass is good.

Next, a quarter-dash toward you.”

Bruich looks in. He gets a big smile.

“Friggin’ military,” he says.

“Love it.”

The final husTle It’s now 7:10 p.m. The last wine dinner guests just walked in for the 6:30 dinner. The main dining room opened at 5 p.m. The cooking for that room is coming from the back kitchen. The front kitchen is where Bruich, Millsap and Brianna Lively are stationed preparing the Palmaz dinner. They’re in major hustle mode as servers pass appetizers in the courtyard and begin to guide guests to the precisely set table. Enotria’s wine bar is busy, and the front kitchen handles that traffic, too. While Bruich starts plating the first dish, a blend of sturgeon, apples, horseradish pearls, squid chips and more, Lively and Millsap rush through wine bar orders. Millsap motors around counter and burners.

“I’ll be there in a minute, chef,” she says. She heats cheese in a small saucepan and pulls squares of macaroni from the oven. She pours the cheese sauce into a bowl, props the mac squares on end in the cheese, then wipes the sides of the bowl for presentation.

“Yeah, baby,” she says to a server waiting for the order. “All right, chef, I’m back to help.”

By 7:25 p.m., the front kitchen has filled with chefs from the back kitchen to help finish the plating. The 28 plates line the counter as servers queue up.

“Flower?” Bruich asks. “It’s a beautiful dish, chef,” says Tyler Bond, Bruich’s sous chef. “Doesn’t need it.”

Eight people—six servers, Yun and Bruich—quickstep down the hall toward the wine dinner. The servers and Yun sweep in smoothly. Each has two plates. They place them in front of half the guests, haul back to the kitchen, and moments later sweep through with the rest. Bruich

stands at one end of the room, looking uncomfortable—for the first time this day—waiting to speak. The diners slowly go quiet. When Bruich starts, there’s no discomfort, no sign of hurry, no hint he and his crew have been wailing away in the kitchen for 10-and-a-half hours.

“Welcome to Enotria,” he says.

“We have a great evening planned for you.” Bruich says the apple flavors in the dish should pair well with the 2011 riesling. Matthew Lewis takes over the descriptions, adding his boundless enthusiasm. “Riesling is one of the most versatile wines in the world,” he says, as he pours around the table.

Lewis was Enotria’s sommelier but left when Lawson came in. Lewis, energetic, unassuming and encouraging, is back for this special occasion.

While Lewis talks, Bruich hustles back to the kitchen and starts on the hamachi course that will pair with the Palmaz 2010 chardonnay. The pattern repeats for two solid, intense hours, through the short ribs and the lamb with the charlike rub and into the dessert. Bruich and Millsap start on the course, chefs pile in to help plate.

the dessert course. Bruich is already analyzing the meal.

“I wasn’t as happy with the short rib as the lamb,” he says. “It tasted good, but if I did it tomorrow, I’d do it differently. I like a cleaner plate. I need to tighten up the technique.”

This is the Pajo Bruich who has become the spirit of Enotria—driven, curious, thoughtful, self-critical, perfectionist. There is something in him that simply needs to keep improving.

“I feel like I’m cheating if we’re not constantly changing,” he says.

“We’re so critically analytical, it’s hard to just go out to eat. You can’t turn that part off. And we’re hardest on ourselves.”

But Bruich is also a populist, and that might be the toughest thing for outsiders to see. He wants people to simply like food. He wants them to have a good time eating it. He doesn’t cook for praise—although he’s thrilled to get it—he cooks to please, to feel he’s doing something that matters.

He’s a son of Sacramento who wants to cook here. He sees this as a great city for food and wants the world to see that, too. He hopes what he’s doing at Enotria will help. |

AFTER

Enotria, clearly, is something that won’t be for everyone, but there’s no denying it’s reaching for something, pushing, pushing, pushing to get better. It sees dinner as a performance, a chance to dazzle and a chance to please. It’s obsessive and earnest and confident and slightly crazy, and its hope is that people will come for an experience and surrender completely.

It’s 11:10 p.m. Finally, the restaurant is empty of guests. Florencia Palmaz has led two rounds of cheering for Bruich, one while he was still in the kitchen.

Finally, it’s postmortem time.

Martinez and Woodsford taste the mignardises again.“Needs more coconut,” Martinez says.

“Yeah, it does,” Woodsford says.

Bruich comes over to taste, too. First he has to give Woodsford more grief for the pink-and-white cocoa butter swirls.

“Tastes good, though,” Bruich said.

“Needs more coconut,” Woodsford says.

“Yeah, it does,” he says. She’s nodding but already moving toward the pastry kitchen and reaching for an apron. Ω Time to roll out the bread.

Greta Gerwig: After [Noah Baumbach and I] had made Greenberg together, which had been such a great experience for me as an actor, and I loved the screenplay so much, I felt like if I were ever to really write and make movies, I would want to emulate the way Noah writes.

Later on, he emailed me and said that he had been thinking about trying to do a movie in a different way than he had done, meaning with a more strippeddown crew and a lot smaller, but also a lot more freedom to shoot lots and lots of days. In effect, trying to keep each day cheap, so that you could shoot many days.

That’s the big thing on independent films: The day count is usually really low. It’s like you’re cramming a regular-sized movie into a minimovie. ...

I guess there’s a way in which it’s kind of exciting, but it’s also hard. It’s one of the only arts that have that. ... So, he had this idea of how he wanted to shoot it in, and he asked me for my ideas. ...

she co-wrote it. Frances Ha opens Friday, May 31, in Sacramento. Gerwig recently chatted with Sn&r about screenwriting, similarities between her life and that of her character, and why her hometown plays a central role in the film.

I [had] collaborated on screenplays [before], but I never felt like they were writing in the true sense, because they were more devising situations and giving them to actors and having them improvise. Which is a very different process ... but it didn’t satisfy the part of me that wanted to write. So I started with a few pages of ideas I had for little moments. Like being poor and deciding whether or not to pay the surcharge at an ATM. Or there was an exchange of dialogue where someone asked someone else to guess how many civilians have been killed in Iraq, and they guess a number that’s way too high, and that person gets upset because they wanted them to guess low. That kind of exchange, you know? Like, going to someone’s country house and hearing them fight. ... You try to pick the most evocative moments.

I should say that the film is more coherent than this process might imply—partly, I think, because of Frances wanting to be a dancer.

We figured out pretty early that she was a dancer. I think it’s that it really does have an expiration date as a profession, and it’s really something that at 27, if it’s not working out, it won’t work out.

And there are very few things that are like that. I think that I also had a particular investment in this idea of her that she wants to be a dancer, but she doesn’t want to be a choreographer, and people tell her, “Well, why don’t you?” And she’s not doing it. It’s something that I found as an actor—there’s a parallel to me between acting and dancing, in that you’re a vessel for other people’s words or movements, as opposed to having authorship. It’s similarly passive in some ways. You have to be chosen. I think that’s part of what’s difficult about it. And if people don’t want to choose you, then you have no way to do it.

And so there’s a powerlessness in it. And in the end, in her own little way, she takes her power back, and she starts making something, which I think is a journey that I feel really close to.

Like you, Frances hails from Sacramento, and in the movie she comes home for a while. I really like the view of Sacramento that we have here.

The thing was, because we were mainly shooting in New York, it would have been much cheaper to go shoot that stuff in Connecticut or something. And so much of the movie is fiction anyway. But to me, if you’re lucky enough to be from a place, to really be from somewhere that you feel inside of you, then photograph that place! There’s something about it that’s resonant beyond just knowing that she’s not from New York.

I feel so emotional about Sacramento, and I love it so much.

It looks different from Connecticut.

It’s flat. It feels middle-class in its bones. It’s got a lot of nurses and teachers and government workers.

There’s no fanciness to it. There’s something very democratic about it.

And there’s a way in which Frances is so dwarfed by New York—literally, by the buildings. And then when she’s in Sacramento, she’s the size of everything around her.

We couldn’t have quite gotten that in New Jersey or Connecticut.

I don’t think any other film has given us that picture of Sacramento.

I had actually written a much longer section for Sacramento, and we had to winnow down to just what’s in the movie. It was actually a really hard writing cut to make, because Noah was like, “We just can’t introduce all of these characters in the middle of a movie!” So we ended up making it almost like a montage, and that’s when I said: “Well, since

there aren’t actually any lines, let’s get my parents to do it. Let’s actually go shoot there, and we’ll go to my actual dentist, and we’ll go to all these places and use it in a way that I actually could use it because it’s in a fictional world.”

If I was making something that was exactly my life, I wouldn’t have been able to use it in the same way. It gave me permission to just crib directly from it. And I wanted it to seem like a good, comforting place—that you kind of almost want her to stay there, but you know that she can’t.

My mom didn’t want to do it at first because she was worried—and I understand why—that we would show it like it was a bad place, and Frances had gotten out of a hick town or something. And I said no, that’s not what it is. It’s almost about showing this possible life that’s not actually possible anymore.

That’s all the more poignant, because it resembles your actual life—yet the process of making this film seems like a sort of happy ending for you.

I feel so happy that this movie exists, because when we showed it for the very first time, I felt like, physically, a weight had been lifted off of me, or something had loosened inside that I didn’t know was tight. I’d never quite had the experience of making something that if I hadn’t, part of me wouldn’t have been realized. It’s a kind of relief: Good, I got it out, I made it! I’d never quite had that until now. And it’s kind of incredible.

Hold the bacon El Chilango Taqueria 3397 Watt Avenue, (916) 971-9898 El Chilango Taqueria, open since summer 2012, is one of those restaurants that seems to be falling through the cracks. For starters, it’s tucked by Becky Grunewald away on Watt Avenue in the Arden Arcade neighborhood. Another cause for concern: It used to be known Taqueria y Pasteleria San Marcos—hopefully, the new owners burned some sage to clear the failedbusiness vibes.

Chilango is slang for a denizen of Mexico City, or D.F. (Distrito Federal) as it’s known within Mexico. To illustrate the rating: culinary diversity of the region, it’s notable HHH 1/2 that with the opening of this restaurant, there are now at least three chilango-style dinner for one: torta restaurants in the Sacramento area. $5 - $10 The proprietors of El Chilango are indeed from D.F., and one directs me toward the torta chilanga and the gorditas as examples of regional cuisine. The torta chilanga contains melty white cheese, spicy chorizo, sliced hot dogs, lightly fried ham, crunchy onions and avocado. This H is all sandwiched within a charred, crispy flAWed bolillo that’s moistened with a schmear of HH refried beans and mayo, not to mention the hAs moments orange grease oozing from the chorizo and HHH dripping onto the plate. All these elements AppeAling come together except the hot dogs, which are superfluous. Flabby, bland Mexican HHHH AuthoritAtive hot dogs are an affront to other wieners; don’t talk to me about street carts in San HHHHH epic Francisco’s Mission District that serve them wrapped in bacon—such praise will fall on deaf ears. You can wrap a lump of coal in bacon, but that don’t make it a diamond.

This torta certainly rivals those at search sn&r’s El Abuelo Super Tortas Chilangas and “dining directory” to find local surpasses some at Ciudad Nezahualcóyotl, restaurants by name but it’s the gordita you’ll return for. Chilango’s gordita comes out steaming hot, sushi, mexican, indian, stuffed with abundant chopped cilantro italian—discover it all in the “dining” and onion, melted cheese and caramelized section at bits of chicharrón. The gordita is so good that I demolish the whole thing, despite having already eaten half of the torta, a ceviche tostada and the better part of three tacos. The woman at the counter raises her eyebrows when I place my initial order and pointedly brings the gordita in a to-go container, but

there was no way the dish would ever make it past the restaurant’s threshold.

On to the less remarkable dishes: The ceviche is composed of flaky white fish and tastes intensely of lime, and the tostada under it is crisp and flavorful—not just a slightly stale afterthought as it is at many restaurants. The carnitas are long-grained, stringy hunks with crispy bits here and there; the al pastor and asada undistinguished.

Chips and salsa start the meal. The tomatillo salsa boasts a little heat and abundant charred chilies. More variety would be good, but on a Sunday afternoon, the salsa bar had already been dismantled.

One dish that I don’t have room for and take home instead is the creamy coffee flan.

Chilango Taqueria offers three varieties, as well as beer and micheladas. A bottle of Bohemia and a gordita from El Chilango Taqueria makes for a perfect simple meal, no bells and whistles or bacon or hot dogs needed. Ω

Bland, squishy curd Tofu’s curse—it’s a bland block of squishy curd—is also its blessing: It’s versatile and transformable. Baked tofu adds flavor, texture and iron to salads, stir-fries, quinoa bowls, or whatever else your imagination conjures. To make it, marinate half-inch slices of tofu in (1 tablespoon of each) tamari, rice vinegar, sesame oil, agave nectar, minced ginger, minced garlic and a half-a-cup of chopped scallions, plus some coriander, cumin, cayenne and black pepper for an hour in the fridge. Then, bake it in a flat pan for 30 minutes at 375 degrees (get the recipe in full at www.savvyvegetarian.com). If you’d rather buy it premade, Wildwood’s SprouTofu teriyaki flavor is recommended: It’s well-seasoned and fantastically firm.

tables and light wooden chairs, there’s an airy atmosphere, casual and cozy. Estelle’s offers an espresso bar and a wide assortment of teas and muffins and rolls for the breakfast crowd as well as sweets, including DayGlo macarons. For the lunchinclined, there are soups, salads, sandwiches and meat or meatless quiche. One of the authentic touches is the spare use of condiments. The smoked salmon is enlivened by dill and the flavor of its croissant. Its tomato bisque is thick and richly flavored, and, in a nice touch, a puff pastry floats in the tureen as accompaniment.

Grange Restaurant & Bar You won’t find any “challenging” dishes on this menu—just delicious local and seasonal food such as the Green Curry & Pumpkin Soup, which has a Southeast Asian flair. A spinach salad features ingredients that could be considered boring elsewhere: blue-cheese dressing, bacon, onion. But here, the sharply cheesy buttermilk dressing and the woodsy pine nuts make it a salad to remember. Grange’s brunch puts other local offerings to shame. The home fries are like marvelously crispy Spanish patatas bravas. A grilled-ham-and-Gruyere

sandwich is just buttery enough, and an egg-white frittata is more than a bone thrown to the cholesterolchallenged; it’s a worthy dish in its own right. American.

Zia’s Delicatessen Zia’s Delicatessen isn’t really about trying every sandwich: It’s about finding your sandwich. In addition to a large selection of salumi, there’s the worthy eponymous offering, served with a wedge of zucchini frittata, a slice of provolone, romaine lettuce, grainy tomato, and a simple dash of vinegar and oil that adds tang. Order it hot, so that the provolone melts into the bread. Also tasty: the hot meatball sub with small-grained, tender meatballs bathed in a thin, oregano-flecked tomato sauce that soaks into the bread. A tuna sandwich is sturdy, if not exciting. It is just mayonnaisey enough, with tiny, diced bits of celery.

A rosemary panino cotto with mozzarella could benefit from a more flavorful cheese.

For a meatier option, try the Milano: mortadella, salami, Muenster; all three flavors in balance. The turkey Viareggio has a thin spread of pesto mayo, and the smoked mozzarella accents rather than overpowers. American.

Midtown

Madame, a ham-and-Gruyere sandwich usually battered with egg. This one had a fried egg and béchamel, with a generous smear of mustard inside. The mountain of potato hash alongside tasted flavorful and not too greasy. The menu also features pizzas and house-made pastas, but one of its highlights includes an excellent smoked-eggplant baba ganoush, which is smoky and garlicky and served with warm flatbread wedges and oil-cured olives. The bananas foster bread pudding is equally transcendent, accompanied by very salty caramel gelato, pecans and slivers of brûléed bananas. American. 1630 S St., (916) 442-4885. 24K Chocolat Cafe This cafe serves a solid, if very limited, brunch and lunch menu. One offering is a firm wedge of frittata with a strong tang of sharp cheddar that almost but doesn’t quite jibe with the slightly spicy mole sauce on the plate.The spinach curry, made creamy by coconut milk rather than dairy, comes topped with cubes of tofu and tiny diced scallion and red bell pepper and rests atop a smooth potato cake. A side of garbanzo-bean salad is wellflavored with the surprising combination of mint and apricot. The place, located inside Ancient Future, has “chocolat” in the name, and chocolate is in many of the menu offerings, including a tiny cup of hot Mexican drinking chocolate, and chocolate-cherry scones served crisp and hot, studded with big chunks of bittersweet chocolate and tart dried cherries. LowBrau This place specializes in

Hook & Ladder Manufacturing Co. The restaurant, by the same owners as Midtown’s The Golden Bear, sports a firefighting theme (a ladder on the ceiling duct work, shiny silver wallpaper with a ratand-hydrant motif, et al) and a bar setup that encourages patrons to talk to each other.

An interesting wine list includes entries from Spain and Israel; there are also draft cocktails and numerous beers on tap.

The brunch menu is heavy on the eggs, prepared in lots of ways. One option is the Croque

beer and bratwursts. Both are done smashingly. The sausage is wrapped in a tight, snappy skin like a gimp suit, which gets nicely charred by the chefs.

Within it lies a beguilingly spicy and juicy piece of meat. Get it with a pretzel roll for a truly exciting experience. There are vegan options, too: The Italian, an eggplant-based brat, has a surprisingly sausagelike texture that no self-respecting carnivore will turn it down for lack of flavor. Toppings include sauerkraut, a “Bier Cheese” sauce and caramelized onions.

The idea behind Duck Fat Fries is a glorious one, yet somehow still falls short. You just expect something more when you see the words “duck fat.” The beer selection is epic. If you’re lost and confused, the staff will help guide you to the right

brew via questionings and encouraged tastings. German.

East Sac Istanbul Bistro Turkish chef Murat Bozkurt and brother Ekrem co-own this paean to their homeland, with Ekrem usually at the front of the house, infusing the space with cheer. Turkish cuisine features aspects of Greek, Moroccan and Middle Eastern flavors. The appetizer combo plate offers an impressive sampling. Acili ezme is a chopped, slightly spicy mixture of tomatoes, cucumber and walnuts that’s delicious paired with accompanying flatbread wedges. For entrees, try the borani, a lamb stew with garbanzos, carrots, potatoes and currants. The meat is very tender, while the veggies arrived nicely al dente. Also good is the chicken shish plate (souvlaki), which features two skewers of marinated grilled chicken that’s moist and succulent. There are also quite a few choices for vegetarians, including flatbread topped like pizza, with spinach and feta or mozzarella and egg.

North Sac Asian Café Asian Café serves both Thai and Lao food, but go for the Lao specialties, which rely on flavoring staples such as fish sauce, lime juice, galangal and lemongrass, lots of herbs, and chilies. One of the most common

dishes in Lao cuisine is larb, a dish of chopped meat laced with herbs, chilies and lime. At Asian Café, it adds optional offal add-ons—various organ meats, entrails, et al—to three versions of the dish: beef with tripe, chicken with gizzards, or pork with pork skin. The beef salad offers a gentle respite from aggressive flavors, consisting of medium-thick chewy slices of eye of round with red bell pepper, chopped iceberg and hot raw jalapeño. The single best dish here is the nam kao tod, a crispy entree with ground pork that’s baked on the bottom of the pan with rice, then stirred and fried up fresh the next day with dried Thai chilies and scallions. South Sac Blue Moon Cafe and Karaoke In Sac, most people equate Hong Kongstyle cuisine with dim sum, but this restaurant, which also features private karaoke rooms, serves up tasty, familiar food by way of rice plates, sandwiches, noodle bowls, soups and stirfries. A few random Japanese (ramen, fried udon), French (sweet or savory crepes), Russian (borscht), Korean (beef and kimchi hot pot) and Italian (various pastas) foods add to the feeling that whatever your cultural background, you’ll find a comfort dish from your childhood to wrap its arms around you and give you a hug.

Arden/ Carmichael Skip’s Kitchen You know you’re at an American restaurant when a cheeseburger is one of the healthiest items on the menu.

Sure enough, Skip’s Kitchen features a lot of calorie-rich items, such as fried macaroniand-cheese balls, ravioli, chicken strips, chicken wings and shrimp, plus creamy Oreo milkshakes. There are salads, too, but the best dish on the menu is the burger. All five styles (original, mushroom and Swiss, bacon and cheddar, three-cheese, and Western) are served on a brioche bun and cooked “medium,” unless otherwise specified. The kitchen offers a house-made veggie burger as well. If there’s such a thing as a “gourmet” burger that can rightfully sell for $10, this is probably it. American.

Taqueria Garibaldi One of this restaurant’s biggest pulls is its choice of meats. The chorizo is red, crispy and greasy in all the best ways. The lengua (tongue) is soft and dreamily reminiscent of only the most ethereal bits of beef. The fish is fine and flaky and the cabeza and pork are herculean in flavor options worthy of note, too. Tacos are small

eatery, which offers take-out only, keeps the menu simple.

Customers can choose from two types of pies: breakfast or lunch. Breakfast pizzas consist of standard pizza dough, on top of which rests a thin layer of egg, cheese and toppings (read: no sauce). One pepperoniand-jalapeños morning pie starts off well, but then the dough disappoints. It doesn’t quite fit in either the “thick” or “thin” category; it’s not yeasty enough and too chewy and firm. A mushroom-and-spinach pie offers better texture. Lunch pizzas here are less unique, but still hit a nice mark via a few standout ingredients. The garlic pizza reaches a nice balance of sweet and salty with a creamy white sauce, mushrooms, onions, pepperoni and sausage.

Buffalo also offers Gunther’s Ice Cream, side salads and fried chicken, but here, it’s breakfast pizza for the win. American.

with überlocal Mariani dried fruit and nuts, olives, and Grandma Ogando’s jalapeño jelly. Salads include house-cured salmon with blood oranges and avocado, and beets with farmer cheese and red-onion jam. Individual-sized pizzas arrive with a flavorful fresh tomato sauce and plenty of Parmesan cheese. The slowsmoked brisket sandwich with garlic aioli is deliciously tender and not too fatty. There’s also an unusual vegetarian option with shredded carrots, slivered almonds and Gouda on rye bread. It has an oddly sweet flavor reminiscent of raisins. HHH1/2 J.M. fills a niche Sacramento might not have known it lacked with its vague rockabilly vibe, lots of greased hair on the men, brightly dyed hair in retro styles and cat-eye glasses on the ladies, and an abundance of black clothes and tattoo sleeves for all. The liquor selection is basic (no craft cocktails here).

The menu’s heavy on fried appetizers, salads, sandwiches and burgers, the latter of which are architectural, towering assemblages. Happily, the fluffy charred buns are sturdy enough to hold up when the tower is squeezed to a more realistic height. A meaty veggie burger (one of three veggie sandwich options) gets crunch from fried pickles and sweet heat from barbecue sauce. In some cases, for hundreds of years. There’s the usual panoply of French dip, hot pastrami, Reuben and so on. Among the signature offerings is The Gobbler.

Turkey, natch. Cranberry sauce, natch. Then red onion, several roma tomato slices, a thicket of green leaf and pepper jack cheese, all shoehorned into a big baguette.

The Sacramento Convention and Visitors Bureau is heavily marketing that the city was recently named “America’s Farmto-Fork Capital.” By whom? By the SCVB themselves, of course, promoting that Sacramento is home to farms, farmers markets and restaurants that cook local produce. We can either gobble up this buzzword-heavy content, or alternately, we can thumb through the more objective food writing of the We Are Where We Eat group. According to its website, WAWWE consists of “journalists, geographers and historians,” who, thanks to a grant, write stories about Sacramento food growers, cooks and food experts.

The group, which is supported by the Cal Humanities nonprofit group and the Sacramento Public Library, and is sponsored by Capitol Public Radio, will host an educational forum on Saturday, June 1, at the Tsakopoulos Library Galleria (828 I Street). If one were to make a list of things evangelical Christians like, it’s bound to include adopting orphans from overseas. It’s become a major trend, so much so that some nations now limit out-of-country adoptions by Americans. Kathryn Joyce, author of Quiverfull: Inside the Christian Patriarchy Movement, now explores the dark side of international religious adoptions in The Child Catchers: Rescue, Trafficking, and the New Gospel of Adoption (PublicAffairs, $26.99). Turns out, many of the children are not actually orphans. Rather, their cultures don’t see adoption as severing BOOK blood ties, and their families believe the children are temporarily relocating to the United States for an education. Joyce details individual cases and big-picture patterns to explain the current rage for “conversion by adoption.”

SummerWords: The American River College Creative Writing Colloquium returns to campus from Thursday, LITERATURE May 30, to Sunday, June 2, with a smorgasbord of offerings and the official launch of the college’s literary press, Ad Lumen Press.

SummerWords 2013 will be held in the ARC student center, and featured panels include a discussion on translation with Iranian poet Ziaeddin Torabi.

Also scheduled are workshops with Traci Gourdine, Jason Sinclair Long, Emily Hughes and Jodi Angel (who’ll read from her forthcoming book You Only Get Letters From Jail). Workshop topics will include discussions on place, memoir, screenplays and creating believable characters.

This year’s headlining guest, When the Killing’s Done author T.C. Boyle, will appear off-campus to read from his works on Friday, May 31, at the Crest Theatre (1013 K Street). STAGE Funny on the fly B Street sketch-comedy troupe Sacramento’s B Street Theatre—which already hums with three different subscription series of plays— now offers yet another project: sketch comedy, by Jeff Hudson featuring familiar faces from the B Street stage.

This new venture evolved gradually.

“Two years ago, we did a three-week run at the Cosmopolitan Cabaret on K Street, which moved over to the B2 space,” said actor David Pierini. That venture occurred at the B Street’s main campus, by the railroad tracks and Stanford Park at B and 27th streets.

In 2012, the theater followed up with a sixrun production in the B2 space.

Then, when local restaurateur Randy Paragary assumed the Cosmo Cabaret lease earlier this year and planned to reopen as the Assembly nightclub, he approached B Street about bringing in its sketch-comedy troupe on an open-ended basis.

Straight, no chaser Bourbon at the Border

The stage is a complicated place to exist.

Scenes must be set correctly; the lights, sound and cues must be followed to the letter; and most errors will be magnified, on display for a room full of people focused intently on the stage.

Happily, Celebration Arts has teamed with Melinda Wilson Ramey, a Sacramento State University theater professor, to bring about its latest production, Pearl Cleage’s Bourbon at the Border.

It’s 1995, but the memories of the civil rights movement of the 1960s are still fresh for May (Brooklynn Solomon) and Charlie (Andre Ramey). Through friendship and camaraderie, they and their friends must come to terms with some awful truths, including decisions that hearken back to a past filled with horror.

Cameron Johnson takes the cake as wily friend Tyrone. His timing is pitch perfect, and he works seamlessly with the language and tone of the play.

Solomon and Andre Ramey are as strong as they can be, but both are at least a decade-anda-half younger than the characters they portray.

While it doesn’t sound like a lot, the plot centers on people talking about the ’60s in the ’90s; here it’s obvious the actors are not old enough to remember it.

Still, Bourbon at the Border is a dark and beautiful journey through the lives of these people, and Celebration Arts and director Ramey have shown that journey well.

B Street has long pursued a multigenerational strategy—Family Series shows and school tours for kids, full-length plays for adults. Sketch comedy addresses another phase.

Assembly, of course, is located three blocks from the projected sports arena at Downtown Plaza. Blake sees this as a boon.

“The whole K Street corridor is going to be jumping,” he predicts. “We thought, ‘Here’s an opportunity, let’s take advantage of it.’” Ω

The theater company launched performances there—with little fanfare—in March.

The constantly changing show features scenes developed by the cast.

“We do wackier characters and situations [than the typical B Street play],” Pierini said.

New material is added regularly.

“It’s basically a completely new show every six weeks. But come back after two weeks, you’ll see a few repeats.”

Performances target the happy-hour crowd: downtown professionals, younger people on a night out, visiting conventioneers. With steady foot traffic on the sidewalk and multiple restaurants nearby, it’s an altogether different vibe than the more remote B Street campus.

“I think it appeals to people who haven’t discovered regular theater yet, maybe a younger and more diverse demographic,” said B Street’s executive director, Bill Blake. “It’s also a writing opportunity for our performers.”

And more dates to work. Several company members have sketch-comedy experience in other cities.

Idris Goodwin’s play about 1980s-era aspiring urban rappers doesn’t depict a hardedged scene but rather a peaceable saga.

A visually pithy victory of bittersweetness over cynicism, and therefore arguably a career highlight for Baumbach, Frances Ha shows with keen humor and without self-pity what it’s like right now to be alive and in one’s 20s and in New York and aware of one’s potential slipping away. It also records many finely observed details of intimate female friendship.

Greta Gerwig stars as the eponymous Frances, an aspiring dancer whose signature move might be flightiness and whose slow drift toward true adulthood might also be away from her best friend Sophie, played by Mickey Sumner. That’s the basic story stuff, but the allure of Frances Ha is less a function of what happens than of how it’s observed, and how it feels to the observer.

Shot in sumptuous black-and-white, this subtly romanticized slice of life amounts to a minimal assembly of improbably resonant nonevents, almost unthinkable as a film without the specific virtue of Gerwig’s daffy, guileless poise. Otherwise, Baumbach’s style could be called homage-happy: It’s classic Truffaut meets vintage Woody Allen meets Girls, with one direct lift—an exhilarating, freewheeling David Bowie-scored street dance—from Leos Carax’s Mauvais Sang. What’s key is how playfully at ease Baumbach seems among his many tasteful influences, including obvious muse Gerwig, here his co-writer, real-life romantic partner,

and vital spark. It’s as if his most essential reason for making this film at all was to capture and pay tribute to a developing infatuation.

This approach is not unprecedented, moviehistorywise. Nor is it without its risks, hate magnetism being only one of several. With material so personal, freshness is impermanent—that’s why it works, and also why it’s bittersweet. This review will not be the first or the last to note that before being romantically and creatively involved with Gerwig, Baumbach was romantically and creatively involved with Jennifer Jason Leigh, who co-wrote his 2010 film Greenberg, in which Gerwig co-starred.

It’s sort of awful but also sort of irresistible to wonder if in a few years he’ll be dating and writing movies with Mickey Sumner. (As Gerwig seemed slightly underserved

by Greenberg, so Sumner does here, but maybe that just shows Baumbach’s talent for casting people whose charisma demands unequivocal leading roles.)

Anyway, Frances Ha begins with Sophie and Frances as roommates. Soon enough, Sophie moves out and moves on with her life. Frances flounders.

The dancing might not be working out. The alternatives seem scarce. The city is lovely but also difficult. As to the question of privilege, Frances’ frequent problem is that she has less of it than those around her. She tries a spontaneous jaunt to Paris, with mixed results.

She comes home to Sacramento (Gerwig’s actual hometown), and hangs out with her parents (Gerwig’s actual parents). It’s an idyll, of sorts, but no solution. There’s wonderful stuff here, for those who can recognize it. A poignant close-up of her saying goodbye from an airport escalator is one of the great shots of the decade.

The allure of Frances Ha is less a function of what happens than of how it’s observed, and how it feels to the observer.

Inspired by Gerwig’s spontaneity, and scripted to cultivate it, the movie does turn up some occasional stilted line readings here and there, but periodic awkwardness also is shrewdly elemental to its charm. “I’m so embarrassed,” Frances confides at one point.

“I’m not a real person yet.” True: She’s a movie character, of just the sort we hope to encounter more often in life. Ω

At Any Price

In what might seem from the outset like a Hollywood-lite look at the Bowman v.

Monsanto case recently heard by the Supreme Court, director Ramin Bahrani’s awkward but at least absorbing drama gives Dennis Quaid some good scenery to chew as a heartland seed salesman losing control of both his family and his farm. His grounded wife (Kim Dickens), plainly aware of his harpy ex-cheerleader mistress (Heather Graham), understandably wonders why this man can’t be happy with what he has. But then, his rebellious son (Zac Efron) would rather drive race cars than inherit the family business, which, under dad’s dubious stewardship, already has run afoul of a litigious genetically modified organism company. It is safe to say the situation deteriorates. Coscripting with Hallie Newton, Bahrani reaches beyond the intimate simplicity of his previous feature, Goodbye Solo, and seems to be grasping for grand American tragedy. Its title and the gentle stress on Chris Evans in a supporting role notwithstanding, The Iceman is in no way another comic-book spin-off, but maybe it should have been? Instead, it’s a merely adequate mob thriller, adapted by director Ariel Vromen and co-writer Morgan Land from the life story of actual mafia-affiliated serial killer Richard Kuklinski, here played as an acting exercise for the towering, unchallenged Michael Shannon.

Jensen) Susanne Bier sets a steady pace for her romantic dramedy of family dysfunction, but she lays on the melodrama a few coats too thick, and a plot turn at the 90-minute mark (which we see coming at least an hour earlier) is perhaps one crisis too many. Still, performances are appealing (especially Dyrholm’s), the cast (except for Brosnan) hops with effortless charm from Danish to English and back again, and the Mediterranean locations are beautifully photographed by Morten Søborg. Oblivion

On an Earth rendered uninhabitable by a nuclear war against alien invaders (we won the war but lost the planet), a patrolman (Tom Cruise) and his mate and partner (Andrea Riseborough) maintain a fleet of drones extracting resources and mopping up surviving aliens—or so they think. Written by director Joseph Kosinski, Karl Gajdusek and Michael Arndt, the story is muddled and murky and, for a script based on a graphic novel, awkwardly dependent on exposition and narration (maybe that’s why the novel, by Kosinski and Arvid Nelson, remained unpublished). What makes it watchable is Kosinski’s (and cinematographer Claudio Miranda’s) gift for breathtaking pictorial images—plus, of course, Cruise’s undiluted star power. Supporting work from Morgan Freeman, Olga Kurylenko and Nikolaj Coster-Waldau doesn’t hurt. J.L.

A self-styled children’s therapist (Craig Robinson), frustrated that his girlfriend (Kerry Washington) won’t introduce him to her family, crashes a reunion on their Long Island estate, where he runs afoul of her father (David Alan Grier). Writer-director Tina Gordon Chism studiously avoids any trace of originality or cleverness in this leaden, obvious, maladroit comedy. Robinson has a basic sincerity and ease before the camera that fitfully overcomes his surroundings, and Law and Order’s S. Epatha Merkerson, as Washington’s tipsy mother, does a rare comedy turn with clear relish.

Others in the cast have more difficulty with the contrived situations, awkward dialogue and Chism’s flailing, arrythmic direction.

Washington is particularly ill-served by Alexander Gruszynski’s flat, unflattering cinematography. J.L.

In 1947, Norwegian ethnographer Thor Heyerdahl pulled off one of the most spectacular stunts of the 20th century by sailing a primitive raft from Peru to Polynesia to support his theory that the South Pacific was colonized by ancient South Americans.

His theory remains widely discounted, but his exploit fascinated the world, giving him a bestselling book, a 1951 documentary Oscar, and a long life of similar adventures. Directors Joachim Rønning and Espen Sandberg have dramatized Heyerdahl’s voyage in a gleaming production (shot simultaneously in Norwegian and English). Characters are sketchily drawn except for Heyerdahl himself (well-played by Pål Sverre Hagen), but the men-against-thesea story, gorgeous photography (by Geir Hartly Andreassen), and knowing it’s all true make the movie a real pleasure. Billionaire superhero Tony Stark (Robert Downey Jr.) contends with two villains: a terrorist called The Mandarin (Ben Kingsley) and an urbane think-tank tycoon (Guy Pearce), who may be working with the terrorist. Director and co-writer (with Drew Pearce) Shane Black takes over from Jon Favreau (now playing Stark’s head of security), and his movie, while less memorable than the first Iron Man, is at least less instantly forgettable than its sequel. The action set pieces become enervating after a while, so patently CGI that nothing’s really ever at stake. The movie works mainly due to its acting: Downey, of course; Gwyneth Paltrow as gal Friday/sweetheart Pepper Potts; Don Cheadle as Stark’s military pal; and Kingsley. The most pleasant (and only) surprise is a sprightly youngster, Ty Simpkins, as a whiz kid who helps Stark. J.L.

by Roberto Orci, Alex Kurtzman and Damon Lindelof, this is about as good as space opera gets: It revives our affection for the original series with a rejuvenating new spin. It’s fast, fun, dramatically sound and emotionally right, making the old and familiar new and surprising again. J.L.

Has there ever been a sequel with “6” in the title that was any good? Star Trek VI: The Undiscovered Country maybe, but besides that? Director Justin Lin jam-packs the screen with blatantly implausible car chases and fight scenes that blithely break every law of traffic and physics, interspersed with the growling repartee that passes for comic relief in this testosterone-drenched franchise (the biggest laugh, though, comes at the end, with a prim, don’t-try-this-at-home disclaimer). Fans will not be disappointed. And God help us, No. 7 is on the way. J.L.

KON TIKI - Ian Buckwalter, NPR

A teenage girl (voice by Amanda Seyfried) goes to live in the woods with her eccentric father (Dan Green), who believes that tiny people protect the forest. When she magically shrinks to insect size, she finds out Dad was right, and joins forces with two “Leaf Men” (Colin Farrell, Josh Hutcherson) to defeat Mandrake (Christoph Waltz), king of a creeping rot that threatens the forest. It’s a bland knockoff of A Bug’s Life without the humor, suspense or vivid characters, but somehow it took five writers to concoct (including William Joyce, whose kids’ book The Leaf Men and the Brave Good Bugs provided a loose inspiration).

Director Chris Wedge executes the thin story studiously but flatly; the animation is inspired, but the story isn’t, and lackluster voice work doesn’t help. It’s in 3-D, which adds little. J.L.

Director Henry Alex Rubin has only helmed documentaries before Disconnect, so it seems fair to cut him some slack for dramatic creakiness. Some. Rather late to the table with its hand-wringing about the way we live now, Rubin’s film, from a didactic script by Andrew Stern, wrangles Facebook bullying, credit fraud and underage porn into an issue-driven patchwork of lives at once frayed and braided. A distracted dad (Jason Bateman) strikes up a yearning instantmessage rapport with the stealth tormentor (Colin Ford) of his loner son (Jonah Bobo); a young husband and wife (Paula Patton, Alexander Skarsgard) fail to cope with losing both their child and their financial security; a TV reporter (Andrea Riseborough) gets too deep into her story about an online rent boy (Max Thieriot). Too diluted by its fussy, phony comprehensiveness, the case being made here just doesn’t seem credible: How can a movie about what the Internet does to us be so devoid of spontaneity? J.K.

As a teen, Bruce would get together with her friends and sing under a bridge.

“There was a really good echo out there,” she says. “We’d sing stupid songs from Phantom of the Opera and Les Misérables.” She also made a habit of writing songs in her head as she walked home from school.

In the early ’90s, Bruce got her first official music gig playing in the Phlegmings, a punkrock band. Back then, she was a starving student who had purchased a drum kit, bass and bass amp with her college-loan funds. She started on drums in the band but eventually switched instruments because the group had a difficult time finding a bass player.

“I was pretty terrible at the drums, anyhow,” Bruce says.

“ I’ve always had a lot of melodies going through my head, and the accordion is the only thing that has been able to really express them.”

Bruce performs at local coffee shops and venues under the “Julie the Bruce” moniker, but she can also be found busking on city streets of downtown Sacramento on the occasional weekday afternoon. She’s been a fixture of the local music scene for nearly 20 years, but her current project, best described as a mixture of prewar cabaret, post-punk riot grrrl and gypsy-folk music, is her best work by far.

Bruce writes most of her own music, with a few covers thrown in for good measure. Her ballads sound like Scottish drinking songs with a punk-rock ethos, and her voice bellows like that of a whiskey-soaked siren who’s pissed at the world.

By age 12, Bruce was already elbow deep in music. She often found herself alone with nothing but her thoughts. And so she turned to music.

“I didn’t have a very good family situation,” Bruce says. “I would get locked in my bedroom a lot when I was a kid, and I had to escape into music to figure out a way to express myself.”

At that point, Bruce hadn’t had any formal musical training and didn’t even know how to play an instrument—but she wrote songs anyway.

“I just knew what [the music] was supposed to sound like in my head,” she says.

Shortly after, she and the entire band moved into one house together in Midtown.

Over the years, Bruce played different instruments in different bands, including a stint as the first singer for local punk staple the Secretions.

In the late 2000s, she also hosted a matinee kids show at the Javalounge coffee shop. It was during one of these shows that she first performed on the accordion. She’s been in love with the squeezebox ever since.

Actually, her love for the instrument dates back more than a decade ago, when she saw singer-songwriter Mark Growden perform in Sacramento.

“He was so intense, and his voice was so dynamic,” Bruce says. “I was totally impressed.”

There were a few failed attempts at playing the accordion, but Bruce finally hit her stride; currently, she hosts a weekly show at Luna’s Café & Juice Bar called Squeezebox Shindig.

The instrument is key to her songwriting, she says.

“I’ve always had a lot of melodies going through my head, and the accordion is the only thing that has been able to really express them,” Bruce says. “They just kind of come out.”

Currently, Bruce is in the process of recording tracks for an upcoming album. Ultimately, she says, she’d like to devote her life to music.

“I would love to be able to make music all day,” she said. “If someone wanted to squeeze the teat of my brain and milk the music out of me, I would [let them] do it.” Ω

Dance-punk fixture Chk Chk Chk (a.k.a. !!!) is so talented and enduring that the group transcends genre and simply sounds like Chk Chk Chk. The palpitating funk rhythms remain in place from its self-titled 2001 debut. Around them swirl traces of jazz, worldbeat, prog rock, post rock and punk as if pulverized, aerated and exhaled over jittery beats. Last month, Chk Chk Chk released its fifth album, Thr!!!er—its most soulful and subtly crafted effort to date. From the bubbly R&B tune “One Girl/One Boy” to the smoky, new-wave tinged DANCE PUNK “Fine Fine Fine” and the lusciously jam-heavy “Californiyeah,” the album is simultaneously immediately catchy and a “grower” that reveals additional layers with each listen.

This could be your last opportunity to catch local singer-songwriter Adrian Bourgeois for a while. After Friday’s show, he’s making the trek down to Los Angeles, where he’ll hopefully woo a music-industry bigwig into taking his already brilliant ’60s AM-radioinspired songwriting and getting it into more eardrums. While a lot of FOLK ROCK singer-songwriters are busy mixing folk and melodrama, Bourgeois writes pleasant, Beatles-esque melodies with a toe-tapping bounce and an Elliott Smith vulnerability. His dreamy, observational lyrics are both innocent and mature, tangible, yet filled with wonder. He’ll be back at some point—on tour, no doubt. But by then, he’ll probably have some fancy L.A. hairdo.

Australian dance-rock group Gold Fields released its debut full-length album Black DANCE ROCK Sun in February. At times, it feels like a modern send-up of classic ’80s tunes.

“Closest I Could Get” would not have been out of place on a Simple Minds album, and the propulsive synths and beats on “Treehouse” would have made it perfect fodder for the soundtrack of one of that decade’s teen-centered films. “Dark Again” features swelling dance beats that combine with Mark Robert Fuller’s vocals to great effect; this is one of several times where the band channels the sound of fellow countrymen Atlas Genius—and that is definitely not a bad thing. 1417 R Street, www.goldfieldsmusic.com.

Prepare to reintroduce yourself to FOLK Hawaii’s treasured stringed instrument with an all-ukulele night at the Naked Lounge Downtown.

Starting things off will be local ukulele folk singer Molly Paul, followed by the raggedly glam ukulele duo the Paper Dolls (pictured), which is Heather Marie Ellison’s new project. Lastly, Sacramento indie-folk kings Be Brave Bold Robot will take the stage.

Joining the normally nonukulele-basedband will be Jacob Jarzemkoski—on the ukulele! It’ll be so much fun, you’ll spend the rest of the weekend pulling weeds in the garden, just to balance things out.

If the last Mumford & Sons album didn’t single-handedly fill your yearly banjolistening quota, check out Los Angeles band the Americans. The strain behind lead singer Patrick Ferris’ gravelly vocals is convincing, and the title of its latest offering, Home Recordings, is quite literal; the album was recorded live and proAMERICANA duced and engineered by the band. It’s pushing the notion of playing stubbly, “traditional American music” a little too hard to go unnoticed (it played Reese Witherspoon’s wedding in 2011), but the songs themselves are refreshingly devoid of the poppy polish found in much of the current music striving for that Americana sound. 129 E Street in Davis, www.theamericansmusic.com.

Finch rose to relative fame with its debut album What It Is to Burn in 2002, blending melodic rock with elements of hardcore, alternative and pop punk. Although that record only reached No. 99 on the Billboard 200 chart, its singles “Letters to You” and the title track remain Finch’s two biggest hits. In the decade that followed, the band was mired in hiatus and lineup reformation and released only an album (2005’s Say Hello to Sunshine) and an EP (2008’s Finch).

Mix the eclectic world-music sound of Mumbo Gumbo with the bluegrass sound of Way Out West; limit the musicians to Chris Webster (pictured), Tracy Walton and Bill Edwards; and then drop the rhythm AMERICANA section, and you’ll have Webster/Walton/Edwards—a trio of singersongwriters with one heck of a unique sound that released its first album, The Trees, last June. Webster and Walton front Mumbo Gumbo, and Walton performed with Edwards and Joe Craven in the group Way Out West.

Escape from L.A. So, voters in Los Angeles just passed a ballot measure to shut down all but 135 or so cannabis clubs. What gives?

—SoCal Sal Who knows? The voters just kicked through a law that enacts most of the regulations from an ordinance passed by the Los Angeles City Council in 2007. This law states that all the clubs that registered with the city prior to the 2007 cutoff date will be allowed to stay open. Everyone else has to shut down.

—Hempy Hugh Yes, they did. Springfield farmer Ryan Loflin has planted 60 acres of hemp. Colorado’s Amendment 64 allows farmers to produce a small amount. This isn’t the first time someone in America has tried to grow hemp. The Oglala Sioux Tribe in South Dakota legalized industrial hemp in 1998. They put in a crop in 2000, and the feds raided it right before harvest.

Hemp is similar to cannabis, but has virtually no THC. Hemp does have many nutritional and industrial uses. As it stands now, U.S. companies have to import hemp. That may change. Kentucky has just passed a law that allows farmers to grow hemp, but its law doesn’t kick in until the feds make hemp farming legal. California Gov. Jerry Brown vetoed a hemp bill in 2011, citing fears of federal intervention.

The burgeoning hemp trade is one of the reasons William Randolph Hearst started his yellow journalism campaign against “marijuana.” He saw that his paper and foresting businesses were threatened, since 1 acre of hemp produces as much pulp and fiber as 4 acres of trees, so he began running stories about this “new” drug that caused Mexicans to go crazy and made white women want to hang out with black jazz musicians.

ARIES (March 21-April 19): Back in the

1920s, the governor of Texas was determined to forbid the teaching of foreign languages in public schools. To bolster her case, she called on the Bible. “If English was good enough for Jesus Christ,” she said, “it’s good enough for us.” She was dead serious. I suspect you may soon have to deal with that kind of garbled thinking, Aries. And it may be impossible to simply ignore it, since the people wielding it may have some influence on your life. So what’s the best way to deal with it? Here’s what I advise: Be amused. Quell your rage. Stay calm. And methodically gather the cool, clear evidence about what is really true.

TAURUS (April 20-May 20): A few

weeks ago, the principal at a school in Bellingham, Washington, announced that classes would be canceled the next day. What was his rationale? A big storm, a bomb threat or an outbreak of sickness? None of the above. He decided to give students and teachers the day off so they could enjoy the beautiful weather that had arrived. I encourage you to make a similar move in the coming days, Taurus. Take an extended joy break—maybe several of them. Grant yourself permission to sneak away and indulge in spontaneous celebrations. Be creative as you capitalize profoundly on the gifts that life is offering you.

GEMINI (May 21-June 20): In Japan

it’s not rude to slurp while you eat your ramen noodles out of a bowl. That’s what the Lonely Planet travel guide told me. In fact, some Japanese hosts expect you to make sounds with your mouth: They take it as a sign that you’re enjoying your meal.

In that spirit, Gemini, and in accordance with the astrological omens, I encourage you to be as uninhibited as you dare this week—not just when you’re slurping your noodles, but in every situation where you’ve got to express yourself uninhibitedly in order to experience the full potential of the pleasurable opportunities.

CANCER (June 21-July 22): Here’s

a thought from philosopher Ludwig Wittgenstein: “A person will be imprisoned in a room with a door that’s unlocked and opens inwards; as long as it does not occur to him to pull rather than push.” I’d like to suggest that his description fits you right now, Cancerian. What are you going to do about it? Tell me I’m wrong? Reflexively agree with me? I’ve got a better idea.

Without either accepting or rejecting my proposal, simply adopt a neutral, openminded attitude and experiment with the possibility. See what happens if you try to pull the door open.

LEO (July 23-Aug. 22): If you have been

waiting for the right moment to perfect your party skills, I suspect this might be it. Is there anything you can do to lower your inhibitions? Would you at least temporarily consider slipping into a chronic state of fun? Are you prepared to commit yourself to extra amounts of exuberant dancing, ebullient storytelling and unpredictable playtime? According to my reading of the astrological omens, the cosmos is nudging you in the direction of rabble-rousing revelry.

VIRGO (Aug. 23-Sept. 22): Where

exactly are your power spots, Virgo? Your bed, perhaps, where you rejuvenate and reinvent yourself every night? A place in nature where you feel at peace and at home in the world? A certain building where you consistently make good decisions and initiate effective action?

Wherever your power spots are, I advise you to give them extra focus. They are on the verge of serving you even better than they usually do, and you should take steps to ensure that happens. I also advise you to be on the lookout for a new power spot.

the scientific method. An atheist might experience a devout sense of awe toward geniuses who have bequeathed to us their brilliant ideas. What about you, Libra? What excites your reverence?

Now is an excellent time to explore the deeper mysteries of this altered state of consciousness.

SCORPIO (Oct. 23-Nov. 21): When ex-

plorer Ernest Shackleton was planning his expedition to Antarctica in 1914, he placed this ad in London newspapers: “Men wanted for hazardous journey. Small wages, bitter cold, long months of complete darkness, constant danger, return doubtful, honor and recognition in case of success.” Would you respond to a comeon like that if you saw it today? I hope not.

It’s true that your sense of adventure is ratcheting up. And I suspect you’re itching for intense engagement with the good kind of darkness that in the past has inspired so much smoldering wisdom. But I believe you can satisfy those yearnings without putting yourself at risk or suffering severe deprivation.

SAGITTARIUS (Nov. 22-Dec. 21):

“I’d rather not sing than sing quiet,” said the vivacious chanteuse Janis Joplin. Her attitude reminds me a little of Salvador Dalí’s. He said, “Painting’s never difficult.

It’s either easy or impossible.” I suspect you Sagittarians may soon be in either-or states like those. You will want to give everything you’ve got, or else nothing at all. You will either be in the zone, flowing along in a smooth and natural groove, or else totally stuck. Luckily, I suspect that giving it all and being in the zone will predominate.

CAPRICORN (Dec. 22-Jan. 19): In

1948, Nelson Mandela began his fight to end the system of apartheid in his native South Africa. Eventually, he was arrested for dissident activities and sentenced to life imprisonment. He remained in jail until 1990, when his government bowed to international pressure and freed him.

By 1994, apartheid collapsed. Mandela was elected president of his country and won the Nobel Peace Prize. Fast-forward to 2008. Mandela was still considered a terrorist by the United States and had to get special permission to enter the country. Yikes! You probably don’t have an antiquated rule or obsolescent habit that’s as horrendous as that, Capricorn.

But it’s past time for you to dissolve your attachment to any outdated attachments, even if they’re only mildly repressive and harmful.

AQUARIUS (Jan. 20-Feb. 18): As a renowned artist, photographer and fashion designer, Karl Lagerfeld has overflowed with creative expression for 50 years. His imagination is weird and fantastic, yet highly practical. He has produced a profusion of flamboyant stuff. “I’m very down to earth,” he has said, “I’m just not from this earth.” Let’s make that your mantra for the coming weeks, Aquarius: You, too, will be very down to earth in your own unique way. You’ll follow your quirky intuition, but always with the intent of channeling it constructively.

PISCES (Feb. 19-March 20): In the fol-

lowing passage, French novelist Georges Perec invites us to renew the way we look upon things that are familiar to us. “What we need to question,” he says, “is bricks, concrete, glass, our table manners, our utensils, our tools, the way we spend our time, our rhythms. To question that which seems to have ceased forever to astonish us.” A meditation like this could nourish and even thrill you, Pisces. I suggest you boost your ability to be sincerely amazed by the small wonders and obvious marvels that you sometimes take for granted.

Sassy socks, bold booties Jon Stevenson, founder of the luxury childrens’ line Trumpette, isn’t really into “sweet,” and he wishes you’d just let your baby wear purple socks, already. Founded more than 20 years ago, the oft-imitated luxury-clothing and accessories brand—now sold in department stores like Barney’s, Bloomingdale’s and Neiman Marcus—is known for its signature socks made to look like Mary Janes and its irreverent, fun spirit. Stevenson sat down recently with SN&R in the Trumpette headquarters at 19th and I streets to talk Andy Warhol, copy cats, fuchsia socks and plans to expand into women’s and men’s socks.

Trumpette was inspired by your son Nicky and creating onesies for him, and now he’s 25. Does he still influence the brand?

You know, he doesn’t. I changed my whole career, hoping that he was going to be involved in it. He’s very creative, but he is into hair. And his father doesn’t have any.

What does a person’s choice of socks say about them?

Socks have a lot to say about what kind of person you are. I’m the type of person that would wear an all-black suit—white shirt, black tie, black shoes—and fuchsia socks.

But you know what’s really interesting?

We started out selling egg cartons with 12 pairs of baby socks, and one of the colors was purple. I don’t think purple’s an offensive color, but it was amazing how many women would say, “My husband would

never let me put purple on my baby.” Or, “My baby would never wear purple.” And I’m going: “Does your baby know? He sees colors already?” This only happened over the purple socks. Not the fuchsia.

Any plans to make socks for adults?

Yes! I’m so excited. Fall of 2013, we’re launching men’s, women’s and kids. The women’s collection is called “Moi.” Wait ’til you see the frickin’ packaging. We get in there and we just start brainstorming, and bam! It happens.

You’ve got a line of socks inspired by the whole pop-art, Andy Warhol movement.

I take it you’re a fan?

Yes, I am. I have an original Andy Warhol silkscreen in the hall. When I was doing this little onesie, I got licensing, but not from Andy Warhol. It was a tribute to him; he’d passed away. We’d taken the Campbell Soup can and silkscreened it really big [on a onesie]—we never did “baby sweet.”

I get a phone call from the Andy Warhol Foundation—a cease and desist. And I said, “Uh, excuse me, but I think you need to call Campbell Soup, because I got [the licensing] from them.”

If you could ask Warhol one question, what would it be?

“How did you silkscreen those big ol’ images?” (Laughs). I don’t think he inspires me artistically. I like his artwork, but I’m not inspired by it. I’m an art collector, but I’m inspired by big, bold things. I don’t like landscapes. I can’t relate to them. … Everything I do is big.

Where else do you draw inspiration from?

Believe it or not—I hope this doesn’t sound egotistical—but it just comes when I’m showering or getting dressed, or driving down the street. I really don’t shop the market. I hate going to the department stores. I hate going to trade shows, because I see all the knockoffs.

Trumpette will hopefully always— knock on wood—maintain its ability to always be a forerunner in the industry. In one of our catalogs it actually says “Our baby socks rock. That’s why there’s so many copy cats.” So I was right in [their faces], you know?

How do you decide on a collection?

We just got licensing with Hello Kitty. We’ve been a fortunate company. We don’t have to go knocking on their doors. They knock on our doors.
