“My favorite comfort food is an Afghani dish called mantu. It’s a dumpling filled with chopped onions and ground beef. We steam it and top it with yogurt and meat sauce. Everyone who tries it loves it.”
“When I go home and I’m tired and I don’t feel like eating a big meal, it’s noodle soup, like ramen. In Thailand, that’s pretty much what everybody eats for lunch, dinner and late night. It’s something quick and easy and you can just pop in around the corner — there are noodle shops everywhere.”

Hot ItalIan “Comfort” food doesn’t always mean “heavy” food. To the contrary, a good meal with friends or family can be a great source of comfort. Case in point: Hot Italian. According to co-founder and maestro pizzaiolo Fabrizio Cercatore, there has been a change in the American pizza market over the past several years, especially in California. “Before, it was just pepperoni and those kinds of things,” he says. “But now the toppings are more elaborate, using more local, fresh ingredients, different combinations.” The Midtown pizzeria offers traditional Italian pies with a California twist. While you can still get a pepperoni and cheese, other options abound. From smoked salmon and fresh dill to honey and seasonal pears, everything is made fresh using locally sourced organic ingredients

as much as possible. The Fiori pizza features savory prosciutto and earthy mushrooms topped with peppery arugula, which creates a nice balance for your palate. Paired with a dessert of creamy gelato or refreshing seasonal fruit sorbetto, it’s a meal that won’t weigh you down. What’s so comforting about it then? It’s all about who you eat it with. rock & roLL burger The hideaway Bar & Grill One of the greatest things about comfort food is you never have to feel guilty about what you’re eating. The Hideaway Bar & Grill is an unabashed dive bar with a punk rock edge and a sleeper on the dining scene. Those in the know enjoy a surprisingly sophisticated menu of dishes named to fit the atmosphere, like the Rock & Roll Burger. If rock ‘n’ roll is the music of the burger, anarchy is the attitude. This burger is stacked tall with crispy bacon, fried pickles, Gorgonzola cheese, caramelized onions, greens, a beef patty and housemade sun dried tomato aioli. The juicy, meaty, salty ingredients come together to make a damn good burger. “We try to think outside of the box,” says chef Nick Arnold. “I think we step our game up for a dive bar restaurant.” And if you party like a rock star Saturday night, on Sunday try The Hideaway’s new totchos — tater tot nachos topped with havarti cheese sauce, tomato and red onion — perfect to soak up the booze and stave off that hangover. “I love foods that make me think of my childhood in a modern way,” says Paragary’s pastry chef, Jodie Chavious. She loved ice cream as a kid, so the Creamsicle — an orange and vanilla semi-frozen dessert topped with almond praline and orange confit — is her elegant take on a comforting classic. She premiered the dish on Paragary’s New Year’s Eve menu. While the dessert uses only seven ingredients, it would be unfair to call it simple. Vanilla bean and orange ice cream blend perfectly and are accented

turkey. Soak the cornbread in the leftover greens juices for an extra treat. For diners who can’t handle the spice, the thick mac and cheese complements any entree without that hint of heat. And those in the middle will find a delicious balance in the sweet and spicy corn. K.G.

It’s as if owner and chef Phil Courey has invited East Sacramento into his mother’s Mediterranean kitchen, sharing classic family recipes from fresh tabouli salad to lamb stew. The stew, one of many lamb dishes on the menu, is the best of both worlds: lean comfort food! With fork-tender chunks of lean lamb in a red wine reduction accompanied by hearty potatoes, carrots and served over a bed of garlic mashed potatoes, it’s like a warm hug in a bowl. “We’re not fast food here. People think we’re fast food, but we’re not. We’re good food fast,” Courey says. “I think that people need to know that we have a lot of comfort food here and they just need to stop in and try us out.” A.S.

Umai Savory Hot Dogs:
The American dream in a bun After over two decades in the business, Louie Tran still loves hot dogs. “I eat hot dogs all the time,” he says. “The thing is, I eat to my taste, and I have some really funky tastes.” The owner and CEO of Umai Savory Hot Dogs grew up in the shadow of his parents’ San Jose hot dog cart. After emigrating from Vietnam in 1977, the family worked hard to make ends meet, but often found work difficult to come by. When providence dropped a brokendown hot dog cart into their lap, they combined sweat equity with ingenuity and inadvertently created a unique niche in an American staple. “They had no formal training, but they had all of these funky flavors,” Tran says. “[My mom] made all the sauces because she didn’t know what garnishes to put on there. Over time, people liked it.”
but has expanded it to include nearly 30 types of internationally inspired dogs. Some of the toppings are more likely to be found in a sushi bar than atop a hot dog – unagi sauce, diced daikon, kimchi – but the menu also has standard Chicago-, Philly- and California-style dogs. The hot dogs and sausages themselves are made of premium cuts of meat with no artificial flavors. “When I think of comfort food, I think of a giant hot dog with chili cheese [and] loaded up bacon ranch fries,” Tran says. “That’s comfort food for me.”
