Celebrate Cinco de Mayo with a traditional Mexican spirit

So you’ve heard about tequila, but what about its much more complicated, sophisticated cousin, mezcal? Mezcal, which is revered as Mexican cognac, has smoky flavor notes and is a very high quality drink. Mezcal is predominantly made in Oaxaca, Mexico, an area known for its native maguey plants (also known as agave) used in the drink.

Douglas French owns a distillery with 20 employees in Oaxaca where Scorpion Mezcal is made. French explains that his mezcal is made of maguey from independent farmers and cooperatives, then cut into smaller pieces and cooked.

The cooked agave is pressed to squeeze juices out. This juice is separated into batches to ferment in pots before being distilled twice. Then, it is pumped into holding tanks and put into oak barrels for aging. “ T he mezcals French says mezcal is such a unique drink because unlike tequila, which only uses one kind of agave, over 30 different varieties of agave can be used.

The type of agave used is the key to creating different flavors of mezcal, and some have compared mezcal to wine in this respect. But mezcals are known for something more than just the unique flavor — a worm, or a scorpion in the case of Scorpion Mezcal, is inserted into the bottle. The scorpion doesn’t add any flavor, French says, explaining that the FDA-approved arachnid is just for fun and can be eaten. “Worms are for wimps!”

Mezcals are just starting to take off in the U.S. market, French says, adding that he recommends people try many different types of mezcals to find a flavor and smoothness that suits their palate. “The mezcals are very high quality, which can be appreciated by sipping them,” French says. “However shooting mezcal is a lot of fun. You can chase shots with wedges of lime or oranges or a sip of sangrita.”

Serves: 1 2 oz. Scorpion Mezcal Silver 1/4 avocado, ripe 1/2 oz. lemon juice 1/2 oz. lime juice 3/4 oz. agave ayrup Water to thin

Serves: 1 2 oz. Scorpion Mezcal Silver 3 wheels cucumber, muddled 1 oz. sour mix 1/2 oz. serrano sour; muddle chili with sour mix, strain

Mix all ingredients with hand immersion blender, add Scorpion Silver and thin to taste with water. Add ice and stir, pour into chilled glass.

Rim glass with Sal de Gusano or Chili Piquin. Muddle cucumber and Serano chili with sour mix, and strain. Add Scorpion Mezcal and sour mix, shake with ice and strain into chilled cocktail glass. Garnish with lime wedge.
