Piccata Bread Crumb Crusted Alaska Cod

INGREDIENTS:

• 1 package 10oz Orca Bay Cod Fillets (thawed)

• vegetable oil or pan spray

• salt and pepper, to taste

• Piccata Bread Crumbs

• 2 tablespoons mayonnaise

• 1 tablespoon minced garlic

• 1/2 cup panko bread crumbs

• 1/2 lemon, juiced

• 4 tablespoons salted butter, melted

• 1 tablespoon chopped parsley

• 2 tablespoons chopped capers, drained

• 2 tablespoons Dijon mustard

INSTRUCTIONS:

1. Combine all ingredients for the piccata bread crumbs and set aside until ready to use.

2. Preheat oven to 400° F. Lightly oil or pan spray an oven proof baking dish. Arrange the cod fillets in the pan, and season with salt and pepper. Lightly press about 3 tablespoons of piccata bread crumbs onto each fillet, dividing evenly.

3. Bake in preheated oven for about 15-20 minutes* until the fish is cooked through and the bread crumbs are lightly browned. Transfer to a serving dish and enjoy!
