Roasted Salmon, Burrata, & Spinach

Sandwich

INGREDIENTS:

• 4oz Peppered Roasted Atlantic Salmon skin removed

• 2 thick slices Sourdough Bread

• 1 tbsp. Olive Oil

• 1 Garlic Clove, whole

• ½ ball Fresh Burrata

• 1/3 cup Fresh Spinach

• ¼ cup Microgreens

• 2 slices Tomato

• ½ ripe Avocado, thinly sliced/li>

• ¼ cup Sour Cream

• 2 tbsp. Fresh Basil, chopped

• Juice of 1 Lemon

• Salt & Black Pepper, to taste

INSTRUCTIONS:

Place the sourdough bread slices on a parchment-lined baking pan. Drizzle with olive oil. Broil 1-2 minutes on each side, until crisp. Rub the bread slices with the whole garlic clove. In a small bowl, mix sour cream, lemon juice, and chopped basil. Season with salt and pepper to taste. Layer toasted sourdough slices with sliced avocado, tomato slices seasoned with salt and pepper, sour cream-basil mixture, spinach, roasted salmon, burrata, and microgreens. Add the top bread slice before slicing in half to enjoy!
