Olivier Chevalier, senior product manager of functional proteins at BENEO spoke to Food Review about the advances in the alternative proteins’ arena.

What is trending in the plant-based nutrition space?

A: Nowadays, consumers are looking for plant-based nutrition that offers new taste experiences. Innovations in meat alternatives, such as those focusing on mimicking the taste and texture of real meat (i.e., beef, chicken) are rising in popularity. Looking ahead, we can see this trend developing further still within new and emerging areas such as plant-based seafood and vegan bakery solutions, which present fresh opportunities for manufacturers.

Which alternative protein sources would you spotlight as most important and why?

A: Although plant proteins such as pea, rice and canola are making their presence felt, last year wheat protein grew to become the most used plantbased protein in new meat-alternative product launches. It is also recognised as having a more neutral taste than

However, there is still work to be done to convert a wider audience to plant-based products, given 40% say meat substitutes lack taste and 27% don’t like the texture.

However, thanks to increasing efforts in new product development, companies such as BENEO have now developed high quality plant protein ingredients with a neutral taste and other technical benefits that challenge animal proteins in terms of both taste and texture.

Q

How high is the need for artificial additives in formulations with alternative proteins? A: It really depends on the proposed application and recipe being used, but eliminating the need for artificial additives is certainly achievable, it just depends on how far the manufacturer is willing to go. For example, it’s easier to make a vegetarian meat-substitute product without additives than it is to make a vegan product, but that’s not to say it can’t be done. Clean label recipes developed by BENEO have shown that juicy vegetarian burgers with the right bite are completely possible while avoiding undesired additives.

Globally, every fifth consumer plans to include more plant-based food in their diet as a result of COVID-19. One of the main reasons of doing so is because it is regarded healthier and more sustainable. A survey conducted by FMCG Gurus on behalf of BENEO also shows that the consumption of meat

appears to decrease with age; with 37% of over 55’s saying that they are now flexitarian and with younger consumers increasingly favouring vegetarian or vegan diets. Importantly, a quarter of consumers are also willing to pay a premium for plant-based products. As a result, those food producers that embrace plant proteins in their product development are well placed to make the most of this growing consumer demand for meat-free alternatives. •
