hat a summer! Heatwave, World Cup, Wimbledon, Golf, Hosepipe bans, Brexit, School holidays and now the new potato season for our fish and chip shop fryers. For those operators in holiday and tourist locations, now is the time to get everything right and make the profits to sustain the business over the winter months, and for others, it is a time to take stock, maybe a rest and make any investments and changes for the coming months. It may also be a great time to plan your campaign in the various National Fish and Chip Awards process which are now well under way. If you are reading this on-line, don’t forget that all adverts have hyperlinks embedded in them so you can now just click on the page to go straight to their website. This is just one of a series of developments of Fast Food Professional both in digital and print formats that we are currently working on. The way that people access their information is changing so rapidly with digital vehicles such as You Tube and digital Newsletters being where many are now looking for their ideas and information rather than in printed magazines. Although we will continue to print hard copies for those who like this format, we need to be in with the digital revolution so that we are letting our followers know what is happening in a “As you need it” way. Watch out for developments. Have a great summer. Athol

WHY ENTER THE AWARDS?

Celebrating the great tradition of fish and chips, the annual National Fish & Chip Awards showcase the best talent, quality and choice offered by fish and chip businesses across the UK. Rewarding excellence, the awards also put successful businesses on the map, via regional and national media coverage. Now in their 31st successful year, and recognised as one of the most prominent and respected seafood industry events in the UK, the awards have come to be regarded as the ‘Oscars’ of the fish and chips world

staff to be the best. Entering the awards is easy and the accolade of being judged one of the best fish and chip businesses in the UK can have an enormous impact on business performance. Media activity undertaken by Seafish in relation to the awards generates fantastic publicity for both participating businesses and the wider fish and chip sector. Across the award categories, various judging rounds culminate at a prestigious awards ceremony in London in January where all the award winners are announced.

New For 2019

In addition to a simplified and more streamlined online entry process, one of the major changes to this year’s awards program is the revamped judging format for the latter stages of the flagship Fish and Chip Shop of the Year Award – with the introduction of an exciting ‘free draw’ element for the Top 20 judging stage. Instead of the previous format of shops within a defined region competing against each other, names of shops will be drawn from the Top 20 listing in order to pair respective shops that will be judged against one another. For example, allocating a letter of the alphabet against each individual Top 20 shop, shop D could be drawn to compete against shop K, shop P could be drawn to compete against shop E, and so on, etc., etc.. This judging stage will determine the overall Top 10 shops in the UK that will progress to the national final judging stage.

Top Tips from the Fryers It’s Getting Hot in the Kitchen Business is booming, and everyone’s holiday dreams are coming true. Fish, chips and fun filled days are here. Well, we certainly hope that’s the case! Frymax and fryers just love it when things get busy. So why not make the most of this boom time while you can?

Busy busy busy… A busy oil is a happy, long lived oil. Every batch of chips that enters a fryer gives the oil a little steam clean. Water from the chips is forced out as steam and dissolves some of the water soluble impurities which build up when the hot oil is not in use. As you get through more batches of chips, you will also need to top up more often, so your oil is constantly being refreshed. I’m sure you’ve seen it, but when you have a busy day, you don’t end up with dark unappealing chips, it’s when they can be at their best! Now you might have a weekly routine you keep to – getting fresh oil in on a Wednesday or Thursday so it’s fresher but still tasty for the weekend. But it’s worth doing a bit of research. If you have had a really busy week and weekend, it may be that you could reduce how often you go for a full oil changeover. How about two changes in 3 weeks instead of three? But never forget it’s the quality of your food which brings your customers back, so always be guided by the look and taste of your final fried products.

Hold onto the salt… As you cope with this busy season, make sure over-enthusiasm and speed don’t start damaging your oil. Salt acts as a catalyst making oil break down rapidly, so make sure that when you are busy salting food, or customers are applying it themselves that no salt gets into your pans. Where possible, having closed lids on your fryers will also help to keep out any stray salt from over-enthusiastic sprinkling. Another catalyst which has a really bad reaction with oil is copper. Make sure if you’re having any repairs done or buying any new equipment, it’s vital that you avoid any fittings or utensils made with copper as your oil will break down exceptionally quickly. If you have any questions or want to add any of your own top tips, please contact us via the details below.

Nigel Hodgson always fries in Nigel Hodgson knows a thing or two about the fish and chip business. He is one of the few friers to have won both the Drywite Young Fish Frier of the Year Award and the National Fish and Chip Shop of the Year Award. He has also been a Regional winner on two further occassions. Nigel is also a trainer at the prestigious KFE School of Frying Excellence. Nigel’s byword is “consistency”ensuring that top quality fish and chips are produced using fish from sustainable stocks and locally grown potatoes. He is most particular about the frying medium he uses, insisting on a fat that produces perfect results every time. The brand Nigel chooses and recommends is Frymax. Frymax is produced from top quality pure white sustainable premium palm, which is additive free and contains no hydrogenated oils. Not only does it guarantee consistently good results, its performance is long lasting without any deterioration in quality. Nigel Hodgson knows that if you want to continue to produce the best, there’s none better than Frymax.

Taking the party on the road with Burco gas boilers and mobile handwash With festival season just months away, many caterers are turning their attention to sunnier weather, longer days and thoughts of outdoor events and festivals

A

s the UK’s street food scene flourishes and the number of open-air food & drink events, music festivals and sporting occasions hits an all-time high, Burco has introduced the mobile range – a gas

boiler and portable handwash, ideal for alfresco catering events throughout the summer. Jon Usher, Head of Catering at Burco, part of the Glen Dimplex Heating & Ventilation division comments: “The catering provision at festivals and outdoor events is becoming an ever more essential part of a summer offering. With many operators seizing the opportunity to generate a greater income and significantly increase profits, ensuring a quality food and beverage menu is essential. Our Burco gas boiler range allows for the same great consistent hot beverage offering, with the added

benefit of portability. Capable of being used anywhere and at any time, the boilers in the range are a must have for any event catering business. It is not just the physical food offering and production that needs to be considered at outdoor events, but also the cleanliness and hygiene of employees, contractors and customers too. With this in mind, the provision of handwash facilities and waste disposal units is vital.” Burco’s mobile range features standard and deluxe Gas Boiler models, both powered by portable LPG gas for added flexibility when using at outdoor events. With the uncertainty of British weather, providing a quality hot beverage offering can be a real winner even for summer time events. Featuring a sleek, robust design, sturdy securable feet, a compact footprint, ideal for when counter space is at a premium and a simple, manual fill operation, the Burco boilers are not only easy to use, but also simple to maintain and transport as needed. The units feature a number of patented features, including the unique Burco locking tap, able to be usercontrolled or switched to a constant flow in an instant. With safety a number one priority, both models in the range feature a safety flame cut-off and dual wall technology for maintaining temperature and a cooler touch exterior. Three new food concepts from Funnybones bring sunshine flavours to the foodservice market

F

unnybones Foodservice is introducing three new food concepts designed to bring the sunshine flavours of the Caribbean and Mexico to the foodservice market. With Caribbean cuisine growing in

popularity, Funnybones Foodservice is launching the first Caribbean food concept for the foodservice market. Irie Eats is a new fully branded concept that brings authentic flavours from Jamaica and the other West Indies islands to a street food brand. “Funnybones Foodservice is part of Grace Foods UK which is owned by the largest Jamaican food distributor in the world, the GraceKennedy Group. The food that we are offering through Irie Eats is in our DNA, and we are proud to bring our heritage to this new concept,” says Development Chef Tom Styman-Heighton. Caribbean cuisine is a blend of numerous influences including African, Arab and Indian. Each island has its’ own twist on favourite dishes, but most of Caribbean food culture is centred on Jamaica. “Being a Jamaican-based brand, we are delighted with the current level of interest in Caribbean food in this country, and we are now achieving a long held ambition to launch a Caribbean food concept which can be easily adapted to suit any foodservice environment,”

and sides such as Green Plantain and Rice and Peas. The dishes are affordable and creative – meats are Halal and there are low fat and vegan options. The word Irie (pronounced eye-ree) means nice, good or pleasing in Jamaican patois. It is also used as a friendly greeting in the Rastafarian community. The branding, menus and signage are distinctively styled to catch the attention of passers-by with tropical colours promising to bring sunshine flavours to the consumer. NEW simple Tex-Mex concepts – arriba amigos! At the same time, we are introducing two NEW Tex-Mex food concepts which are fun variants on the tacos and nachos theme. Fully branded and perfect for a temporary pop up or permanent offering, these new concepts offer a quick, tasty and convenient grab n’go meal option. La Mexicana Nacheria offers nachos with cheese and meat toppings and authentic sides such as Tostones. Also, the new sweet nachos are on offer – deliciously warm and crispy these come freshly fried , drenched with sugar and served with a choice of ice cream, compote, chocolate or caramel sauces. La Mexicana Taqueria offers tacos with all the trimmings, either in traditional taco shells or the new Taco Boats which make eating them on the go much easier. Both concepts will also be stocking the Jarritos Mexican street sodas which come in several fruity flavours. Funnybones Foodservice specialises in American, Tex-Mex and Caribbean foods, offering a wide range of authentic specialist and mainstream products that represent the best of the cuisines from this part of the world.

explains Tom. “We have taken great care to ensure that we deliver the authentic tastes of the region and we have developed really flavoursome dishes which can be enjoyed as grab n’ go or eat in variations.” With Funnybones’ local connections, the dishes they have developed are truly representative of the great flavours of the region. The popular Jerk chicken is a centrepiece of the menu choices, but other less wellknown local ingredients are also included. Customers will be able to taste Callaloo Stew – one of the area’s signature dishes featuring Jamaica’s favourite vegetable – Saltfish, Ripe Plantains and Cassava Fries. There are four different versions of the popular grab and go Jamaican Patties, as well as more substantial takeaway dishes such as Curried Mutton, Curried Chicken

Northern Ireland Sauce Maker looking for Mainland Distributors

T

he range was developed by businessman Brian

BJ Sauces of Lisburn in Northern Ireland are eagerly looking for UK mainland distributors for their range of exciting products

Agnew and his father James who owned a number of successful Fish and Chip shops in Northern Ireland for almost 30 years. As they sought ways to differentiate their

business and get an advantage over their competitors, Brian developed a range of sauces and gravies in the back of his shop in Antrim Street, Lisburn, known as BJ Fast Food. Although no longer the owner of this shop, it continues to trade as Northern Ireland’s first ‘Chipmongers’ franchised shop. Brian successfully developed a range of sauces which he sold initially from his own shops. In 1998 a small factory was set up and subsequently his products were shared with other Chip shop owners across Northern Ireland. The BJ Sauces/ Superchip brands had been born. The business, which is still very much a family owned business, continued to develop and moved in the summer of 2017 to a new ‘state of the art’ premises in the Altona Industrial Estate in Lisburn, where Brian’s son Stephen manages production. The company has installed a very comprehensive “HACCP”

system and uses “CHECKIT” a live cloud based system which gives full traceability for each product and has recently received “SALSA” third party accreditation. Additional staff have been recruited as the business has developed further. Customers are at the core of the company’s thinking and their input is essential. The company are in the process of responding to customer requests to provide a gluten free range of products, which will be available for sale over the next few months. Brian believes that the products he has created are superior in taste and quality to many of those already available in the market. Our products are in a paste format and each sauce contains high quality beef, chicken or vegetable bouillon giving each sauce a depth and richness of flavour that is not generally found in powdered products. Our range of sauces are: Southern Fried Chicken Gravy Creamy Cracked Black Peppered Sauces Chinese Style Curry Chinese Style Brown Gravy Each sauce makes 5 times volume when water is added. Cooking is simple – Add 5 times water, bring to a rolling boil for 2 minutes and serve or hold in a bain-marie (sauces will hold all day) All products have a 12 month shelf life and are stored ambient. You use what you need and snap the lid back on until ready to use again. Our sauces are great “Value Added Products” 1 x 4.5kg tub makes 27L of sauce and equals 12-15 times profit. Last year 2,000,000 customers enjoyed servings of our “Southern Fried Chicken Gravy” in N. Ireland. Obviously we are biased, but in the words of a famous Englishman we think our sauces are a “taste sensation” – we hope you will think so too.

Vitamix blend technology supports paper straw use A recent study carried out by DEFRA estimated the UK’s use of plastic straws at 8.5bn, or about 130 straws per person per year – many of which end up in landfill, or worse, adding to the 12.7m tonnes of plastic waste in our oceans. With a growing demand for foodservice businesses to change, the pressure is on operators to do their part and switch to paper alternatives.

H

The research of 1,000 full-time employees by British Summer Fruits also found that: • 64 per cent say work has affected their sleep patterns • A quarter (25 per cent) admit if they wake up in the night they will do work to ease their workload the next day, and millennials are more likely to do so than other generations • Nearly 1 in 5 (17 per cent) would fear for their job if they didn’t check and reply to emails after normal working hours

A recent study carried out by the University of Reading revealed that eating strawberries, raspberries, blackberries and blueberries can improve reaction times, stabilise mood and keep us focused, as well as sustaining cognitive function for hours after consumption, instead of caffeinated drinks and sugary foods. This is particularly important considering nearly half of people (44 per cent) admit to sending work emails between 11pm and 6am, and one in ten fears for their job if they don’t respond promptly to emails. Seventeen per cent admit they work in the evenings because there is a culture of working long hours.
