And, while I don’t personally agree with being forced to receive the jab, for fear of being omitted from certain “freedoms”, it’s become apparent that we have no choice if we want a bit of normality in our lives.

So, taking everything into consideration, it’s somewhat surprising to see the Upper Hunter LGA (Local Government Area) leading the way as of 19 September.

The region, which has rarely registered a positive COVID-19 case in almost 18 months, sits at 51.2%.

It’s not a bad effort considering NSW is 52.7% overall – and the vaccine isn’t readily available further up the Hunter Expressway.

Port Stephens LGA also boasts a high rate, 50.1%, just ahead of Lake Macquarie (49%).

Dungog LGA (48.3%), Newcastle LGA (47.4%) and Maitland (42.7%) are tracking nicely, too.

The worrying spots, however, appear to be Singleton and Cessnock LGAs with 37.6% and 36.9% respectively.

New driving range a hit for Charlestown Golf Club Ten years after the idea was first putt around the grounds, Charlestown Golf Club is nearing tee-off at its new driving range.

While a date is yet to be finalised on the $1.7 million addition, general manager Joanna Mantle is hoping it will be an early Christmas gift for

the Hunter region.

“Opening day – that’s a very good question,” she said.

“It was originally August, then we were hoping for late-September, then the long weekend in October, and now it’s (fingers crossed) November.

“We’ve had a few setbacks with COVID, delayed stock and equipment, and lockdowns, but we can see the end product now.”

When tools are finally down, Charlestown Golf Club will welcome a 235 metre, 35-bay driving range including an automated ball dispenser, as well as a purpose-built training and coaching area.

The undercover facility, boasting 24 public bays and 10 member-only bays, will be flood-lit seven days a week.

Ms Mantle says the club believes the “state-of-the-art” driving range will attract a new demographic through its doors.

“We’re really hoping the range will cater not only to the greater golfing community, but also to corporate events, fundraising days and private functions,” she said.

“This is not just for our members, or for Charlestown, this is for the whole community to enjoy.

“We’re hoping we see golf participation and our membership increase significantly.”

The driving range has been the vision of board members and management for a decade.

It is hoped the addition will complement the existing 18-hole championship golf course and clubhouse, as well as open up opportunities to host more premier events in the region.

“We believe [the driving range] will redefine the face of golf in Lake Macquarie and Newcastle, with extended operating hours at night and access to the most advanced coaching and training facilities available,” Ms Mantle said.

Charlestown tots finding rainbows in lockdown Three-year-old Oliver Blackmore and his one-year-old sister Maeve may not understand the terms “lockdown” or “COVID-19” but the Charlestown tots do know that it’s because of these words they now have the beginnings of an art gallery on their front fence.

And while the siblings are enjoying watching the front of their Algona Road address slowly filling with colour, they’d love their community to get involved.

bordering their home, yet the pair still have almost 10 metres of ‘art space’ to fill.

“It started with rainbows,” says mum Charli.

“And if you have rainbows there are always fairies nearby, so they came next.

“Then it was the word ‘Smile’.

“Then Oliver wanted Lightning McQueen and a racing snail from Turbo, so next came ‘Burn’.

“I have no idea what’ll be next.”

Charli, a casual primary school teacher, says her busy youngsters are missing spending time at childcare.

Despite both parents being fully vaccinated, Charli says her husband’s cystic fibrosis means it’s safer to keep the kids at home for the time being.

So as the Hunter enters week

seven of lockdown, the family’s ‘art fence’ has become a positive way to spend their days.

“Oliver and Maeve are too young to understand everything that’s going on, all they know is they haven’t been to childcare for a while, so this hopefully makes them smile,” Charli says.

“It also brings a little joy to people who are walking by and it gives families an activity to keep kids busy.

“It honestly cheers me up too.”

Charli is now hoping others will add their own special artworks.

“We’ve had our first drop-off last week – a dreamcatcher.

“People can leave painted rocks, pompoms, anything really, and hopefully it’ll help us all get through this with a smile.”

Magician finds wand-erful way to share his talent Even though he’s been dealt a tough hand over the past two years, Hunter magician Joel Howlett remains positive.

When the pandemic was first declared in 2020 his shows were cancelled and, just as things started to look up again, a second wave of COVID-19 hit the region last month.

While it’s been a difficult period that’s presented many challenges, Joel has come up with a wand-erful way to keep sharing his magical talents.

Through his enterprise JD’s World of Magic, he is offering shows via video conferencing platform Zoom to help spread

wonder and excitement.

“I really miss performing, it is what I enjoy most,” he said.

“Last year I saw other magicians doing Zoom shows and I thought ‘oh that isn’t a great platform for magic’ because you have to be so interactive.

“I believed you needed to see magic live, so I avoided doing them but then this year I got an offer to do a show and I gave it a try.

“Much to my surprise and relief it went really well.”

Ever since that moment, Joel has been doing what he can to share joy via the internet.

As part of the school holidays, he’s partnered with Lake Mac Libraries to teach the region a new magic trick each day and he’s even created some activity packs to keep kids entertained.

For Joel, the best part of the shows is seeing the smiles.

“I am trying to keep it very playful and let them know the magic only works because we are doing it together,” he said.

“The style of magic that I like is the classic magician look.

“There are things like the cups and balls, the big rings that link and unlink, the live doves and the rabbit appearing out of the hat.”

While he is looking forward to performing live again, he says there is a silver lining to the lockdown – spending moments with his daughter.

“I am enjoying time with Mia. That is special and it’s something a lot of dads don’t get,” he explained.

Leukemia survivor Simon says thank you to a charity that supported him through tough times

Simon Morris is hoping to raise $15,000 for Camp Quality.

Simon Morris has defied the odds not once, not twice, but three times.

As a child he won a battle against leukemia and, this year, he had two scares with a tumour and fluid on his brain.

The Maitland local is sharing his story to raise awareness and funds for a charity that’s given him so much – Camp Quality.

“Camp Quality has been in my life for 20-odd years,” he said.

“I was diagnosed with leukemia when I was nine back in 1989.

“I went down to Prince of Wales Hospital in Sydney for treatment, because there was no hospital that could treat young ones up this way and we were pretty much stuck there for two years.”

This is when the national charity stepped in to help.

It supported Simon and his family through his treatment by providing them with helpful information and some breaks from cancer through the Camp Quality Retreats.

Simon was also invited to attend events, where he would connect with other kids who were fighting cancer.

“I went to their camps for about 10 or 12 years, every year I would go in September and do a week with them,” he said.

“It was good for me because there were other kids going through the same sort of treatment.

“You didn’t look funny being the only one with a bald head.

“They were the best, I feel very lucky that I’m one of the survivors. I had a few friends that I met at hospital and at camps who have sadly passed away over the years.”

Fast forward to now and Simon has remained connected with Camp Quality, volunteering as a companion at its Kids Camps and participating in the 1000 K’s 4 Kids initiative.

Since 2016 he’s got on his bike and cycled thousands of kilometres to support children fighting cancer.

While this year’s edition has been forced to turn virtual, it has actually worked in Simon’s favour.

In March he went to hospital after suffering from several headaches and migraines.

“In the end I had to have an MRI and after that I was told that I had tumour on the edge of my brain,” he said.

“So, I was put in hospital from that day back in March and

I stayed until they scheduled surgery and then I went to a neurosurgeon, and he removed the tumour.

“It was a scary moment waiting for the tests to be done, they sent it to Sydney to be tested and we got the return that it was benign.

“So, it wasn’t cancerous, thank god but I have had another scare since then.

“The valve that takes the liquid away from around your brain got clogged up and I ended up having to get a shunt put in.”

If Camp Quality’s 1000 K’s 4 Kids campaign was to run as normal, it sees participants cycle 1,000 kilometres over 10 days.

However, in its 10th year, thanks to COVID-19, the charity is encouraging teams to take on the challenge virtually.

For Simon it means jumping on his bike whenever he can and spreading the message of what not-for-profit does.

“The other day I decided to put the riding gear on and I’ve been doing 20km to 30km when I get on the bike and can have a spin,” he said.

The father of one adds it’s a chance for him to thank the group that gave him so much.

“I want to give back to the charity for what they’ve given me,” he said.

“They helped me through a lot. It is not cheap to send these kids to the camps, there is a lot of money needed so I am just here to give back, help and thank them for everything they did for me.”

Smoked Chicken Pappardelle Pasta Serves 2 - 3

Organic eats To help you celebrate Australian Organic Awareness Month we’re sharing a couple of delicious recipes.

1 pack Cleaver’s Organic Smoked Chicken 150g Pappardelle pasta 1 bunch green asparagus 1 small zucchini 100gm peas 25ml extra virgin olive oil – cold pressed 1 clove garlic – crushed 75ml white wine – Chardonnay or Sauvignon Blanc

Pulled Beef Wrap Serves 4

Salt flakes Preheat oven to 130°C fan-forced. Heat 1 teaspoon oil in an ovenproof casserole dish over high heat. Add half the beef. Cook, for about 3 minutes, turning until browned all over. Remove to a plate. Repeat with oil and remaining beef.

Prep 15 min Cook 3-4 Hours 800g trimmed Cleaver’s Organic Beef Chuck Steak, cut into 5cm pieces 2 tbs olive oil 1 small red onion, halved, thinly sliced 2 tsp sweet paprika 400g can cherry tomatoes 250ml (1 cup) reduced salt beef stock 600g butternut pumpkin, peeled, cut into 3cm cubes 1 red capsicum, cut into 2cm pieces 4 wholegrain wraps, warmed 4 tbs hummus 1 cos lettuce, cut into rounds 1 large carrot, coarsely grated 6 cherry tomatoes, sliced 1 avocado, diced 1/4 cup parsley leaves

Reduce heat to medium. Add remaining 2 teaspoons oil and the onion. Cook, stirring occasionally, about 3 minutes, until soft. Add paprika. Cook, stirring 1 minute. Add canned tomatoes and stock. Return the beef and any juices to the pan, bring to simmer. Press a piece of baking paper onto the surface and cover with a lid. Transfer to the oven. Cook for 3 hours.

Remove from oven, set aside.

Increase oven to 220°C fan-forced. Combine pumpkin and capsicum in roasting pan. Drizzle with remaining oil and season. Roast 30 minutes until lightly golden and tender.

Remove beef to a plate and coarsely shred using two forks. Spread wraps with hommus. Top with lettuce, carrot, roast vegetables and beef. Combine tomatoes, avocado and parsley, spoon over beef.

Serve.

TIP: If you don’t have an ovenproof casserole dish suitable for both stovetop and oven, cook step 1-2 in a frying pan then transfer to an ovenproof dish to cook in the oven.

Cracked black pepper 50g Pecorino or Parmesan cheese Place a pot of water (with a pinch of salt) on the stove (high heat) and cook the pasta when it comes to a boil.

While water heats, cut the smoked chicken into strips and slice the vegetables ready for the cooking process.

In a frypan over a medium heat sauté the whole garlic in olive oil gently until starting to colour and carefully add the white wine to arrest cooking process. It is important to reduce the wine by at least half before adding the cream to the same pan.

Strain off pappardelle pasta.

Add vegetables and chicken to sauce (adjust seasoning & remove whole garlic clove) and cook for 2-3 minutes before adding hot pasta to pan and stirring through.

Serve into bowls and finish with cracked pepper, cheese and herbs.

Follow a few basic hints to care for your phalaenopsis orchids Phalaenopsis or commonly known as Moth Orchid is one of the easiest orchids to grow indoors.

They may look delicate, but they are surprisingly hardy and can bloom for up to six months.

Native to Papua New Guinea, India and southern Nepal, they like a warm tropical climate and, with care, you can grow them inside.

Caring for phalaenopsis orchids in your home isn’t difficult, especially if you follow a few basic hints.

Choose a room that gets light for most of the day, particularly facing a north-east window. Note, west facing windows can be too hot.

The tall delicate flower stalks need support to avoid breaking – secure the stems to slender bamboo stakes with a small clip or wire.

Keep plants moist as they don’t have storage organs – don’t let potting mix dry out, but don’t overwater either. Liquid fertiliser can be applied every 7-to-14 days – try Searles Flourish for Orchids.

Re-potting each year or two is recommended.
