This week...

From the editor This spring weather is right up my alley – it’s now warm enough to wear a t-shirt and shorts and sit outside without getting roasted by the sun or carried away by flies and mosquitoes. There is, of course, one slight problem: magpies. I haven’t copped it yet this season because the push bike remains gathered in dust in the garage. However, I did witness one poor redheaded child running for his life at the park on the weekend, with the black-and-white alpha of the sky in hot pursuit. Good luck out there. Moving indoors, our cover star this week – Wallsend’s Jeff Carr – spends countless hours making his unique creations while most of us are sound asleep. The father-of-four has made more than a dozen pieces of wooden art in the past 12 months, including an eagle with a two-metre wing span, a five-foot woman drinking coffee, a motorbike complete with a COVID-19 number plate, and a giant squid with tentacles that stretch more than three feet in length. You’ll find his remarkable story in our Time Out section, pages 18 and 19. news Plea to protect koalas A new report has made an urgent plea to Federal Environment Minister Sussan Ley to block a project that could destroy core koala habitat in the Port Stephens region. The University of Newcastle’s Dr Ryan Witt and Associate Professor John Clulow concluded in their report that the Brandy Hill Quarry expansion would harm a koala corridor and core breeding habitat. Minister Ley was expected to make a decision on Tuesday, but announced this week she had delayed the process until 13 October to ensure all information was considered. Dr Witt and Associate Professor Clulow were commissioned by The Brandy Hill and Seaham Action Group to provide an assessment on how the expansion could impact on the local koala population. Group President Margarete Ritchie said the report was actioned

by a committee member, whose property borders the current quarry site, in a bid to protect the area’s koala population. “She regularly has koalas on her property – she is right on the boundary of the quarry,” Mrs Ritchie said. “The koala research people were there recently – they found a female and 96 metres away was a male bellowing, giving a mating call. “That was definitive proof that there is a breeding colony there.” Mrs Ritchie believed the project should not go ahead. “All communities should be extremely concerned [about the project],” she said. “The figures are out there that the koala population nationally is really low and threatened. “The destruction of wildlife habitat cannot be allowed to continue.

“We cannot keep doing it throughout the state and, if we do, we will suffer the consequences as a country.” The project, which has been approved by the NSW Independent Planning Commission, will see the quarry expand a further 52 hectares. The commission’s approval was subject to a number of conditions. These included requirements that would prevent, minimise and offset adverse environmental impacts and set standards and measures for its environmental performance

while requiring regular monitoring and providing for the ongoing environmental management of the development. NSW Shadow Environment Minister and Port Stephens MP Kate Washington said the report showed the weakness of the state government’s koala protection laws. “Bulldozing 52 hectares of core koala habitat in an area where they are healthy is contrary to every recommendation of the [recent Parliamentary] inquiry,” she said. - Elizabeth Symington

news Funding cuts cause concern A funding cut has left the Newcastle and Hunter Region Vietnam Veterans struggling to deliver help those in need. In previous years, the ex-service organisation has been awarded close to $20,000 from the Federal Government’s Building Excellence in Support and Training grants. However, the service received a mere $6,000 this time around. Newcastle and Hunter Region Vietnam Veterans President, Geoff Linwood, said the group would be in “dire straits” if it could not make up the missing amount. He added the government grant would typically cover a lot of their expenses. “It helps us to function, to do all the work we are required to do,” he said. “[This cut means] the whole office operation is going to have to

be looked at. We can’t stop doing welfare and compensation claims, but the other stuff is going to have to be looked at very seriously. “We might not be able to update computers or buy printer cartridges and all that sort of stuff. “The main area of our core business is being affected.” Vice President Neil Colquhoun said the cut had come at an already challenging time, with COVID-19 putting a stop to their fundraising. “[City of Newcastle] allows us to run some markets at Wickham Park on the last Sunday of every month,” he said. “We roughly make about $2,500 a month out of those stalls but, as it is now, we just don’t make anything. “The amount of work we do is a big thing, but we have to get the money to be able to do it.” Mr Linwood added the markets’

temporary cancellation had been a big loss. “[Without] the markets to back us up, it is about $40,000 a year gone and we just lost $11,000 on the grant, so there is $50,000 out the back door before we even start the year,” he said. The volunteer-run organisation recently expanded to support more veterans, but Mr Colquhoun said it had led to them taking on more work with less funds.

“Hopefully we get through it, but it is pretty hard,” he said. “We try to do as much as we can with the little that we’ve got to help people along but [without more funding] there is a possibility of us going: ‘We have to close our doors’.” He added that the service is always open to donations to help continue its vital work. Funding pumps new research into region More than 900 people across the Hunter experience their first heart attack each year. This alarming statistic places the Hunter New England region within the state’s highest cardiovascular disease mortality band. In a bid to reduce this, researchers from the University of Newcastle (UoN), Hunter Medical Research Institute (HMRI) and Hunter New England Health have been awarded a grant worth more than $1 million from the Medical Research Future Fund. The three-year project, led by UoN researcher, Professor Clare Collins, will explore the costeffectiveness of Medical Nutrition Therapy delivery in rural and regional primary healthcare. Professor Collins said the project would improve the way people

accessed dietitians. “If you live in the regional and rural areas of Hunter New England, then you are 20% to 30% more likely to have heart disease,� she said. “We know that if we could support people at higher risk of heart disease then their risk would drop.� Medical Nutrition Therapy is provided by accredited practicing dietitians and is used to treat specific chronic conditions such as diabetes and heart disease. The results of the study will contribute to lowering diet-related heart disease risk in the community and help GPs to support their patients to improve nutrition-related health and help identify people who need additional measures, such as medication.

Helping families capture magic moments Connar Gibson was two years old when Monica Halliday met him. He was a cheeky little boy who had just started at her family daycare and within a few years he was getting ready to go to “big school”. But it was then that he was diagnosed with a brain tumour. Connar was five and had to embark on the fight of his life. After hearing about the news, Monica started a campaign called Fight for Connar to help raise money to support the family. “I wanted to help the family make memories,” she said. “So, we started to raise money.” The money raised was used to help Connar after his surgery to remove the tumour, which left him with cerebellar mutism, a condition where he could no longer talk, walk or interact. To help with this syndrome,

Monica, through Fight for Connar, raised funds for him to go to physiotherapy, speech therapy, and Riding for the Disabled. “We wanted to see what parts of his brain responded,” Monica said. “He started to gain his speech back and mobility, we got a bit of the little boy back.” But then, in 2015, things went from bad to worse when the tumour returned. It was inoperable. A year later, in October, Connar sadly lost his battle. Monica said her favourite memory of Connar was his sense of humour. “He would always say: ’If you whisper, you’re allowed to swear’,” she said. “He loved to swear, he would constantly whisper the f-bomb. “Connar had an amazing sense of humour – he was a funny boy, everyone loved him. At his funeral, there were so many people there,

they were there for that little boy.” To celebrate his legacy, Fight for Connar continues to raise funds to support other families with terminally ill children. Monica said their work had slowed down because of the pandemic, but it remained important. “During the pandemic we’ve completely pulled the pin on eventsour fundraising this year is just our merchandise,” she said. “But it is still tough for our families, they are more isolated than ever. Funerals [in particular] because they have to choose who can go to say goodbye.” Monica was nominated in the Westfield Local Heroes community grants program earlier this year. New chapter for surf charity after foundation’s grant Joel Pilgrim has felt at home amongst the waves for 25 years. “For me, it’s a place to escape stressful things in life,” he said. “When you get out there, it’s almost like being in a meditative state; you put your head under the water and it washes it away. “The chemistry of the brain when you’re doing something physical and getting those endorphins released – it’s pretty powerful stuff.” That, along with his career as a mental health occupational therapist, inspired him to start Waves of Wellness (WOW) – a surf therapy charity that promotes positive mental health and wellbeing. “We get people who are at risk of, or have experienced, mental health challenges down to the sand and normalize them by talking about

them and learning some tips and tricks to managing mental health,” Mr Pilgrim said. “Our message is simple – it’s okay not to be okay, and you don’t ever have to go it alone.” WOW is now looking to expand thanks to a $58,000 grant from the Newcastle Permanent Charitable Foundation, which went towards a new van. “We now have a dedicated van for our own specialised equipment, which is safer and easier than using a trailer and our vehicles,” Mr Pilgrim said. “It was a bit of a juggle before, but this is allowing for the next chapter of WOW.” The grant is also enabling the charity to target more areas of coastline across the region.

“Lake Macquarie is a big one for us, there are a lot of people asking for our program and wanting our program to go down to Caves Beach, so this will allow us to come down there,” Mr Pilgrim added. “We will also be going to the Central Coast and as far as Yamba, so the van will be helping us to transport equipment all around the state.” Mr Pilgrim said he had noticed a

surge in demand since COVID-19. “We’ve seen a huge increase in the amount of conversations, as well as people struggling with mental health challenges,” he said. “What’s amazing is it’s giving people dialogue. If you are struggling, that’s okay, there’s a lot of people out there finding it tough – it’s about finding the right people to support you.” - Emma Murphy

news Community takes a stand An annual campaign has urged the community to take a stand against domestic violence. The Country Women’s Association (CWA) of NSW is shining a light on the issue and calling for action in the areas of support services, perpetrator rehabilitation and prevention programs amid its Awareness Week (6 to 13 September). CWA of NSW has partnered with White Ribbon and Domestic Violence NSW on the campaign this year to promote the lobbying efforts of both groups and the assistance they offer to victims and their families. Belmont Branch President Nan Sellen says Awareness Week is also a vehicle for the CWA’s own member policies, which aim to help turn around confronting domestic violence statistics. According to

the Australian Institute of Health and Welfare, one woman is killed every nine days and one man is killed every 29 days in a domestic violence-related situation. CWA members endorsed policy motions earlier in the year that urged governments to consider domestic violence as a “national emergency”, and called for the utilisation of existing research and implementation of relevant recommendations and best practice relating to protecting survivors of domestic violence. This includes recommendations from the Australian Law Reform Commission’s family law review and the National Research Organisation for Women’s Safety. “This is something our members are passionate about raising awareness around and we’re determined to get the

message out that more needs to be done to increase support services – particularly in rural and regional areas – and implement strategies and programs focused on prevention and rehabilitation of abusive behaviour,” Nan says. domestic violence is in even sharper focus this year due to the COVID-19 pandemic. Club kicks on as raffle offers ‘get out of jail free’ card Newcastle City players almost didn’t take to the field this AFL season. COVID-19 put a stop to several revenue streams that make playing possible, such as fundraising events like pub raffles, trivia nights and karaoke. Newcastle City Vice President Courtney Knight said it was losing the club’s major sponsor that hit the hardest. “The Commonwealth Hotel was our major sponsor and, because the pubs had been closed, they couldn’t sponsor us this season,” he said. The club also factored in the loss it would record from its usual match day revenue due to limited home games, such as vehicle entry fees, canteen takings and spectator fees. “It’s had a significant effect on the club, and we were looking to fill

a hole of about $30,000 to $40,000,” Knight said. “We were at risk of not being able to conduct footy, so we sat down as a committee and devised a plan to bridge that revenue gap, and our answer was the raffle.” The Toyota Good for Footy raffle has been helping grassroots football clubs since 2015, with 100% of the funds raised going directly to each club involved. Prizes include Toyota vehicles, with four given away nationally, along with coaching clinics with star players and signed memorabilia. “To have the raffle has been a positive for us and a ‘get out of jail free’ card,” Knight said. “Without it, we wouldn’t be able to hold footy this year.” So far, it has raised $12,000 – the

highest ever call to arms the club has seen. The money has gone towards operational costs, such as ground hire, uniforms, trainers, physios, and new equipment. Finances aside, things have still been challenging for the club, with 150 senior players and 400 juniors registered this season. “The raffle allowed us to focus on footy and what we are doing on the field and not stress too much off the

field,” Knight added. “But the impact of COVID-19 has been huge, not just financially. “We’ve had to buy hygiene products, split training sessions, and schedule different times and access to the grounds. “It’s been an onerous burden on the club – it’s necessary and we support the direction, but that’s not to say it’s been easy, it’s been hard to manage.” - Emma Murphy

Delayed road to Tokyo Novocastrian athlete Rheed McCracken was heading into the Tokyo Paralympic Games full of confidence, following a silver medal win in the 100-metre T34 at the World Para Athletics Championships in Dubai. In fact, if COVID-19 hadn’t happened, he would be competing against the best in the world right now. “Heading into the [world] championships, I’d had some of the best preparation for a major event and I was a little bit disappointed not to win but that’s what racing is all about,” he said. “I have been very consistent in that silver medal spot, and I felt confident coming out of that and heading into Tokyo.” That’s when the announcement came – both the Olympics and Paralympics were to be postponed for a year. “It’s going to sound bad, but at least it was early enough, it wasn’t July,” McCracken said. “You build into it (training) and, if it was a few weeks to go, that would be even harder because you would be ready to go.” So, McCracken was faced with the challenge of having to manage his training for yet another year of preparation. “It was very overwhelming when the games were postponed – you’re left thinking: ‘Do I need to maintain this condition for a year’

as it’s physically demanding on the body and it’s almost just not possible,” he said. “I’m still training every day for two reasons: to keep fit in case something changes and it’s easier to keep a base fitness – it’s better to be semi-fit and keep a healthy mind. “My sessions are still hard, but not of the same intensity as if racing was coming up, like speed work – I don’t need to do so much of that.” The problem with still training at a high level is there are no events to test out his hard work. “Now I have more time to work on things but it’s hard not getting the racing in to test those things out,” McCracken said. The 23-year-old is using the extra down time to his advantage as he juggles training with studying community pharmacy at TAFE. He hopes to then move onto a Bachelor of Pharmacy at university. “I’d really like to study at university eventually,” McCracken said. “I’ve been out of school for a while so I’m getting back into the rhythm and hopefully I’ll go into a uni degree at some point. “It keeps me occupied – I go to training in the morning and TAFE the rest of the time.” - Emma Murphy

500g dried risoni or orzo pasta 2 red chillies (optional), coarsely chopped Grilled haloumi, lemon wedges, crusty bread and a green salad, to serve Preheat oven to 100°C. Season lamb shoulder with salt and freshly ground black pepper

Add paprika, lemon zest and honey, and stir to coat. Place seasoned lamb shoulder on top and add tomatoes, cinnamon, lemon juice, herbs and 500ml (2 cups) of stock or water. Bring to the boil. Put lid on and pop it on the bottom shelf of the oven. Let it gently cook for an hour or so, allowing the lamb to release some juices and fat. Take saucepan out of the oven to check and add the rest of the stock or water, pop it back in and leave it for another 6 hours or so. Half an hour before you’re planning to eat, take pan out, and add risoni or orzo and mix well. Return pan to the oven for another 25 minutes or until the pasta is cooked. Serve with grilled haloumi dressed with a squeeze of lemon juice, fresh crusty bread and a crisp green salad.

Hummus with spiced lamb

In need of some easy weeknight dinner inspiration? Look no further than this delicious recipe for hummus and spiced lamb by Elena Duggan for Australian Lamb. Prep: 5 mins Cook: 20 mins Serves 4 Spiced lamb 1 large brown onion, finely diced 5g allspice, ground 5g cinnamon, ground 5g cumin, ground 5g coriander, ground 500g lamb mince 25g pomegranate molasses Hummus 2 x 400g can chickpeas, rinsed, drained 150g tahini 1 large lemon 1 head garlic Up to 250g olive oil To serve 25g pomegranate jewels, when in season Flat leaf parsley, finely sliced Mint leaves, finely sliced 25g pine nuts, lightly toasted Pita bread, toasted

Heat olive oil in a large cast-iron saucepan over medium heat, add onion and garlic and cook gently, stirring occasionally, for 5 minutes until softened.

Heat a large non-stick fry pan to high heat. Add oil and onions, sauté for 2 minutes. Add spices, toast for 1 minute before adding lamb. Break mince up and stir through spices and onion evenly. Stir every minute or so until starting to brown and caramelise. Total time should be approximately 12-15 minutes. Adjust seasoning to taste. Whilst still on heat, deglaze the pan with pomegranate molasses and scrape up any crispy bits on the bottom of the pan and stir through. Whilst lamb is cooking, prepare hummus by placing all ingredients, reserving olive oil, into a high-speed food processor. Blitz on high whilst drizzling olive in, until desired consistency is achieved. To present, place a pool of hummus on your plate and sprinkle a pile of the lamb on top. Sprinkle over pomegranate, herbs, pine nuts and drizzle of olive oil. Serve with toasted pita bread.

While most Hunter residents are sleeping at 2am, Wallsend’s Jeff Carr is creating wooden art pieces, hoping to bring a smile to the face of at least one stranger. Finding inspiration in the curves of 100-year-old table legs and the bends in the back of armchairs, the shy, unemployed fatherof-four uses nothing but his hands, a hammer and a saw to create unique, life-sized creatures. Jeff has made more than a dozen pieces in the past 12 months, including an eagle with a two-metre wing span, a five-foot woman drinking coffee, a motorbike complete with a COVID-19 number plate, and a giant squid with tentacles that stretch more than three feet in length. His creative outlet, he says, is the result of his ADHD (Attention Deficit Hyperactivity Disorder), which he has battled with for most of his 51 years.

While it has frustrated him for years, he now spends his sleepless nights finding inspiration. “I just don’t sleep,” he said. “I’d be lucky to get four hours a night. “I get up at 2am and sit with my cuppa and stare at them (the pieces of furniture). I get lost in it. “I see the curves and I ponder for hours and it sort of evolves itself. “Then I can’t walk away from it.” Jeff’s background is in steel, working as a boiler maker for more than 35 years. “I’ve never built anything out of wood before in my life,” he said. “Steel can bond and squish, but timber’s beauty is as it is. “When I see a piece of furniture that’s 120-years-old I think: ‘I shouldn’t be doing this – it’s too beautiful’, it breaks my heart, but everyone says they’ve got nowhere to

put it anymore. We’ve all got smaller homes nowadays I suppose.” Jeff is a self-confessed drifter, having had 54 addresses in 51 years, including many spent working in the mines of Mt Isa. “I’ve always lived in open spaces and I can breathe there, now I’m in a shed. “I get frustrated in the city and this helps calm me.” This newest venture began after Jeff placed a newspaper advertisement offering to help locals transport heavy items for a “bit of extra cash”. He was out of work and on a disability pension at the time. After delivering the items, many would ask Jeff to remove old furniture to make way for the new. “It kind of exploded from there,” he said. “I get a lot of parts out of chairs and table legs. “I like the scrolls, the curves, the shapes, just nothing flat.” His creations, like his processes and planning, are unique. “It depends on what timber I find,” he said. “My first motorbike came to me after I pulled apart a chair and the edges looked like handlebars. “There’s no grinder or power saw, no machinery, it’s all very primitive. “And, it’s as frustrating as it is rewarding.” His hopes for his new hobby remain simple. “There’s not much point in having a shed and keeping them all in it,” he said. “I’d rather see them around the place, having kids climb all over them and making people stop and talk about them. “I’m not in it for the money.” Not one for setting future goals, Jeff does harbour one small dream. “I’d like to get kids with autism involved,” Jeff said. “They’re so clever, they have such amazing minds, it’s incredible the way they see the world. “They don’t have a disability, they have a super ability, and I'd love to see what they come up with using wood.” - Rebecca Riddle

Gratitude blossoms within Hunter-based boutique

For Jess Shuwalow, a life-changing trip through South America and Africa sparked an idea that would pay it forward to the community. She is the Founder and Lead Driver of Happiness for Newcastle-based business, The Grateful Boutique, where every purchase provides a donation to someone in need. “When I was in Africa we stayed in an orphanage and hiked up to a little village that had 20

just had a clinic put in,” she said. “When we were visiting the clinic there were people with malaria on their death beds just staring at some blank mud brick walls and I remember thinking this is the second time I have visited somewhere like that and to be in that situation, even though they are getting treatment, stuck with nothing to look at to ease their minds of the pain would be really hard.” So, Jess came up with a plan. The next time she went travelling she would take some items to help brighten up spaces like the clinic. But, when she returned home, she realised that it was also happening on a smaller scale in Newcastle. “When I was at the John Hunter Hospital, I saw that it was a really big place and thought: ‘Why wait’ when we could start something now to take flowers up to the hospital to brighten the space for the people there.” Jess then enlisted the help of a friend, Amee Duncan, and the business blossomed from there. It’s been four years and, for every posy they sell, they donate another one to John Hunter Hospital or Ronald McDonald House. About a year into operation, they also decided to expand into a boutique store, where a small

percentage of their profits go towards domestic violence charity Got Your Back Sista. The funds sponsor women who are escaping domestic violence to attend self-defense classes. Jess said the boutique was a great space for people to come in and get something for anyone they knew. “It’s nice because people can say: ‘I just bought a random stranger flowers or a sick child at Ronald McDonald House’ or ‘I’ve just potentially saved a woman’s life’ by buying a $50 t-shirt, which will help sponsor her to take self-defense classes,” she said. She added it was win-win for all because you could take home something nice for yourself while someone in need also had their spirits lifted. “Initially I wondered if we could trick people into self-care,” she said. “Mums or people who are having a [bad] day can buy flowers for themself and they think: ‘Oh yeah, if I buy this it’ll help someone that’s in need’ but, in turn, they are actually taking those flowers for themselves to have in their own home which benefits their wellbeing.” Go to thegrateful.com.au or visit the boutique at 122 Young Street, Carrington, to make a purchase. - Elizabeth Symington

How to care for your houseplants Houseplants are the most sought after plant in the garden world. This could partly be blamed on COVID-19, but I have noticed an upsurge in the last two years, particularly as there is a trend to downsize to apartment living. This presents minor problems as many balconies are now quite high, where the wind inflicts damage.

In this situation, many plants suitable for indoors won’t survive and professional advice may be needed. Light and fresh air plays a significant role in determining which houseplant is the most suitable. In low light areas choices will be restricted to Kentia Palms, Parlour Palms, Peace Lillies and syngoniums. Tall growing plants, such as
