This week... From the editor Level one water restrictions will take effect from 16 September in Newcastle, Lake Macquarie, Maitland, Dungog, Cessnock, Port Stephens and parts of Singleton. Restrictions include: no outdoor watering without a trigger nozzle between 10am and 4pm; no hosing of hard surfaces such as concrete, paths and driveways; washing your vehicle on the grass using a trigger nozzle; and no sprinkler use. The news comes as the Hunter experiences its lowest dam levels in more than two decades. You might have noticed an increase in Hunter Water campaigns, calling on the community to preserve the precious resource while the drought drags on. It's true â€“ it's all up to us to make a collective difference. To be proactive, extra ways you can save water around the home are: waiting until you have a full load to wash laundry and a full dishwasher to start a cycle; fi xing leaks and installing water efficient tapware; and watering your lawn for longer, but less often, encouraging deeper roots and drought tolerance. If you see someone breaching level one water restrictions, you can report it online. Fines of $220 for individuals and $550 for businesses will apply after a three-month grace period. The cloud over retail giants IKEA and Costco’s speculated expansion to Newcastle has lifted. An acquisition deal will see the Hunter & Central Coast Development Corporation (HCCDC) take control of the former Pasminco lead and zinc smelter site at Boolaroo on the state government’s behalf, unlocking billions of dollars in commercial and residential development potential. Ownership of the 92-hectare site will be

transferred from administrator Ferrier Hodgson to HCCDC, which will also assume responsibility for the ongoing maintenance of the containment cell established during remediation. Lake Macquarie council chief executive Morven Cameron said this would fast-track the site’s redevelopment. “The interest of the international large-format retailers has been put in doubt during the process, but with this change in ownership, we are now confident that progress can be made,” she said. “We will work with all interested developers, the HCCDC and the local community to provide the best outcome.” In addition to an estimated $1.8 billion economic benefit to the region and the creation of 837 full-time jobs post-construction, there is scope for 730 new homes. “This is a fantastic result for Lake Macquarie that will see stalled opportunity removed and way too much gloom over the area lifted,” independent Lake Macquarie MP Greg Piper added. “This deal puts [interested retailers] firmly back on the table.”

The news came after the council and the government worked at length with Ferrier Hodgson to develop a long-term environmental management plan for the site’s containment cell in the wake of the smelter’s closure in 2003, which left homes in Boolaroo, Speers Point and Argenton covered in lead and black slag. In 2017, Summerhill tip opened its gates to affected residents for them to dispose of contaminated soil, while the following year the government committed $800,000 over four years to help manage lead contamination, including the establishment of a grant program to assist landowners. However, Shortland MP Pat Conroy said the government must now commit to allocating all profits it made from redeveloping the site to helping residents further. “It is unfair that the burden of remediation of privately-owned blocks of residential land, at a cost of up to $100,000, has fallen on individual property owners,” he said. Two Septuagenarians have pedalled thousands of kilometres across the United States. Bruce Armstrong and Bob Dally, both aged in their early 70s, were joined by a third participant, 63-yearold Marshall Innes, as they embarked

on a 7,120-kilometre journey over 74 days, starting in Yorktown, Virginia, in the east and ending at Astoria, Oregon, in the west. The trio are part of a Hunterbased social push bike group called Let’s GO, which undertakes morning

rides each week in the Greater Newcastle area. Bob said he was inspired to complete the trans-America ride when he met fellow member, Bruce, and learned of his adventures. “Bruce rode across Australia, from Perth to Sydney, when he was 60; I talked to him and thought ‘I’d like to do a ride like that,’” Bob said. “So, in 2016, I rode up to Dungog and back and, the following year, I went to Victoria and rode from Melbourne to Sydney. “We then started to plan this [American] one.” Bob said the trio had to endure physical challenges, as well as tough weather conditions, but added companionship kept them going. “We just took it one day at a time – we climbed about 56,000m in total, which Bruce worked out is like going to the top of [Mount] Everest seven

times,” he said. “Each day, one of us was feeling sore or worn out, so it was a real team effort to complete it.” Despite the challenges, Bob believed the group’s achievements had unwittingly encouraged others to undertake similar journeys. “We didn’t realise until we got going, but we met a number of people who stopped us on the way across and said: ‘I’ve been planning something like that for 20 years’ and they promised to do it,” he said. “They were inspired by it, just like I was inspired by Bruce.” The Let’s GO social bike group rides on Sunday mornings, starting near Speers Point pool at 8am in winter and 7am in summer. Host a barbie for boobs Everyone loves a barbie, and now there’s a way to support a worthy cause at the same time. The Hunter Breast Cancer Foundation has launched a new workplace fundraising initiative called BBQ for Boobs. The foundation, which supports Hunter people living with the disease, is asking businesses to host a barbecue to raise much-needed funds for its support programs. Staff and colleagues are encouraged to donate the amount they would normally spend on lunch, to the foundation. Participating businesses receive a ‘Super Booby BBQ Kit’, packed with all the essentials to host a barbecue, including a pink apron, chef’s hat, pink balloons, serviettes, a tea towel and a fundraising tin. All they need to supply is the barbecue, snags, sauce and bread. There’s even a chance to win a

new barbecue for the workplace when photos are shared on social media. Hunter Breast Cancer Foundation president Lisa Bartley said community-led fundraisers were the lifeblood of the foundation. “Our approach to supporting people with breast cancer is a very personal, community-oriented approach,” she said. “And what is more communityoriented than a shared BBQ?” Each year, about 600 people are diagnosed with breast cancer in the Hunter Region. The foundation aims to make their journey as comfortable as possible, from diagnosis onwards. Grants up for grabs The Mark Hughes Foundation sold 170,000, $25 beanies this year through its annual Beanies for Brain Cancer campaign. Sales peaked most notably during the NRL Beanies for Brain Cancer Round last month. Thanks to the community’s generous support, the Hunter Medical Research Institute is now conducting a nationwide call-out for research projects aimed at making a difference to patient outcomes. Up to $2 million in funding has been allocated this round, with grants awarded for projects up to $200,000. Support for region’s dads When Jordan Hammond found out his partner was pregnant, the then 20-year-old felt scared and pressured by the thought of fatherhood. “We didn’t know what to do – being so young, we were still

partying, and finding out she was pregnant woke us both up,” he said. “We were both scared to tell our parents and I felt a lot of pressure being the dad and needing to find full-time work.” Mr Hammond turned to Stayin’

on Track, a project that focuses on the experiences of young Aboriginal fathers in Moree, Tamworth and Newcastle, for support. The initiative saw University of Newcastle Family Action Centre associate professor Richard Fletcher and his team work alongside the Young and Well Cooperative Research Centre, as well as Aboriginal communities, to develop a website. A pivotal component of the project involved the participants sharing their stories, with filmed interviews available online for other fathers to access. Stayin’ On Track is a spin-off of the SMS4dads program, in which users are sent text messages with tips, information and links to other services. Mr Hammond said the programs had been beneficial as he transitioned into fatherhood. “I found it a little bit tough being

so young and those messages and phone calls really helped a lot,” he said. “I felt more relief when I spoke about what I was going through.” While he struggled initially, the Rutherford resident is now the proud father of four girls – Jaylea, Kallie, Zarlia, and Layla-Rae. news Honor helps vulnerable Budding artist Honor Adams has painted portraits of celebrities like Simon Cowell and the Queen, but it’s her work on an unfamiliar subject that is having the biggest impact. The eight-year-old Cardiff artist’s portrait of her family’s sponsored child, Pretty, caught the eye of Compassion Australia, who commissioned her art as the prize in a competition. “Pretty is seven years old and lives in Indonesia,” Honor says. “I painted Pretty because I thought she might like a painting of herself – she likes to do drawings just like me.” Honor will donate half of her artist’s fee to Compassion to help more children living in poverty. “I think Australian kids should

Newcastle Northstars general manager Garry Doré says the Australian Ice Hockey League’s decision to move this year’s finals to Lake Macquarie shows the sport’s popularity in the region.

The AIHL finals will be played at Hunter Ice Skating Stadium for the first time since 2012. The league cited empty seats in 2018, plus Newcastle’s second-place standing on the ladder and strong

volunteer base, as key reasons behind ending a six-year stint in Melbourne. The Northstars will vie for the coveted Goodall Cup against Canberra Brave, Perth Thunder and Sydney Bears on Saturday 31 August and Sunday 1 September. Doré says he is excited about the chance to “give back” to the club’s volunteers, fans, and sponsors. “It is responsible for the league to understand that we are a national league and the hockey should be spread all over the country,” he tells Newcastle Weekly. “Melbourne does have a great ice rink, but so do we and it is suitable for the finals – we’ve had national championships here. “It’s just great to be able to host the best four teams in the league playing their hearts out to win a championship.”

The first semi-final between the Brave and Bears will start at 3pm on Saturday, followed by the Northstars and Thunder at 7pm. The two winners then face each other in the grand final on Sunday, with the puck to drop at 3:30pm. Pop-up bars and food trucks will be available at the stadium before and in between games, while a live site is being set up at Warners at the Bay. “It’ll be great for the Warners Bay area – there’ll be people visiting the restaurants, hotels, and getting transferred into the city to check out our great beaches,” Doré adds. “Newcastle, and the Hunter, is such a sporting-prominent region and we’re just so proud to be part of the sporting limelight in the area.” Live streams will also be shown on the AIHL’s YouTube channel. - Ben Murphy

Leah Itstines’ asparagus pizza with ham and cheese Serves 2 Prep: 15 mins Cook: 20 mins 2 pita breads, oiled 4 asparagus spears, peeled

Preheat oven to 180°C. On a small pan, heat over a medium to high heat. Place oiled pita bread and cook for 1-2 minutes on each side to slightly crisp up. This isn’t a necessary step, but stops it becoming soggy in the oven.

2 Tbsp parmesan cheese

Add cooked pitas to a lined baking tray and evenly divide the mozzarella, parmesan, ham and asparagus spears.

4 slices ham off the bone, roughly torn

Add a small pinch of salt, pepper and chilli flakes to each pizza.

2 Tbsp balsamic glaze, to drizzle

Place into the oven for 15 minutes or until cooked to your liking. Drizzle balsamic glaze over each of the pizzas.

Asparagus pesto grilled chicken pasta Serves 4 Prep: 5 mins Cook: 15 mins 2 bunches asparagus, trimmed ¼ cup basil leaves ¼ cup pine nuts or walnuts 1 clove garlic, crushed ¼ cup olive oil, plus 2 tsp extra ¼ cup grated parmesan cheese 1 Tbsp lemon juice 500g pasta spirals 400g chicken breast sea salt and cracked black pepper

Blanch one bunch of asparagus in boiling water for one minute until bright green. Immediately drain and refresh under cold water. Place blanched asparagus, basil, nuts and garlic into the bowl of a food processor and pulse until ingredients are finely chopped. Add 1/4 cup olive oil and blend to combine. Add parmesan, lemon juice, and a good pinch of salt and pepper, and pulse once or twice to incorporate. Prepare pasta according to packet directions. While pasta is cooking, drizzle chicken breast with one teaspoon of the oil and season with salt and pepper. Cook on a preheated grill pan or barbeque for 3–5 minutes each side – depending on thickness – until cooked through. Set chicken aside to rest. Toss the second bunch of asparagus with remaining 1 teaspoon of oil and cook on a hot grill pan or barbeque for 3-4 minutes until bright green and tender-crisp. Cut grilled asparagus into bite-sized lengths. Drain pasta, reserving 1/2 cup of cooking water, and return pasta to the pan. Stir through asparagus pesto, adding a bit of the reserved water to create a sauce. Serve pesto pasta topped with grilled chicken and asparagus. 29

“I’m super excited to be coming back to Australia, this time with a whole new cast,” Baldesarra adds. Research commissioned by the Remarkables Group shows there are more than 700,000 over-45s on the social media platform, strutting their stuff. Sweet dreams When it comes time to choosing a new bed for your child, many parents make the mistake of buying for the now and not for the future. Selecting the right bed and mattress is key to ensuring they get the quality sleep they need for

brain function and growth. Focus on Furniture interior stylist Melissa Gullifer shares some tips to help you choose the right bed:

1. Keep it simple Over-complicated styling is unnecessary as children grow

up so quickly and their tastes change as they transition through their childhood years. Don’t go out and buy your three-year-old daughter an expensive princess bed because in three to four years’ time, she will want something else. Be practical and think about a timeless bed option in a simple colour, or a timber bed frame or upholstered bed, which will give you the flexibility to add a variety of affordable quilt covers to update as your child grows into a new phase.

Interior stylist Julia Green shows us how to create a room that ticks all the boxes: • Use the colours in an artwork as inspiration for your palette. Dimensions are key: it should be big enough to connect with one or two pieces of furniture in the room, and not so small that it gets lost in the space. • Include greenery. A beautiful trailing plant or two on the desk or shelves will bring nature into the room and freshen the air.

Springtime gardening I am a little ahead of time as spring is still three days away, but I have been tempted by the increase in temperature. Although many spring flowers are still waiting to bloom, keep the tissues and antihistamines handy if the many scents spoil spring for you. I find, as beautiful as it is, one of spring’s showy climbers, Jasminum polyanthum, probably causes more allergies than others. Once camellias and azaleas finish blooming, they may need pruning, and definitely fertilising. If in a pot, apply a slow-release fertiliser with a neutral pH. Ground-grown plants need an acid-loving fertiliser. Apply Flourish to annuals and spring bulbs to prolong flowering.

Other plants, such as agapanthus, hydrangea, murraya, box, and golden duranta, will also respond to feeding at this time to encourage growth. Gardenias can become a problem as they set bud; they require regular watering and fertilising with cow manure if ground grown. Yellowing leaves are a sign of stress from lack of water or lack of magnesium or iron. Potted gardenias will need a daily drink, plus a weekly application of a foliar fertiliser. Lawns should have been sprayed for weeds now before the grass begins growing – use an all-purpose product safe for use on an all grasses.

My favourite things BUSH TOWNS I was born in Narrabri in north-western NSW and had a sort of Huckleberry Finn lifestyle as a kid, which included swimming in pristine creeks, catching crayfish, and raiding the local fruit orchards. I really enjoy random stays in old pubs in small country towns, discovering the area’s history, and having beers and yarns with the local characters. To me, the bush people are the real Australians.

JOKES There’s an old saying: “Laughter is the shortest distance between two people”. For some reason, I can remember hundreds of jokes. There’s no better feeling than making people laugh. I can’t remain serious for long at all. The world should laugh a bit more.

BATTLEFIELDS If you stand on a battlefield, close your eyes and imagine around you the thunderous noise, clamour, and tragedy as it happened there way back when, then it is an exciting and emotional experience to be standing right on that spot where history unfolded. Culloden (Scotland), Little Bighorn (Montana), Hastings (Sussex) and the Somme (France) are all special places I’ve visited, and each has an eerie atmosphere.

Lindsay Young RADIO COMMENTATOR AND POET

After Lindsay Young retired from rugby league, he turned his attention towards commentary on Newcastle-based radio station 2HD. In 1986, Lindsay wrote a short piece of verse and read it on air. The piece – a compressed recount of what happened in the week of sport – was well received and he has done it ever since. More than 30 years and over 1,500 poems later, you can still hear Lindsay’s take on 2HD – Newcastle’s 1143AM – each Friday at about 3.45pm. The 65-year-old, who started his career at NBN TV as a cameraman, eventually moved on to media advertising with the mainstream press and radio. Lindsay has also worked in corporate marketing, the hospitality industry, and been a master of ceremonies (MC) at many sporting luncheons and functions. He has four adult children and seven grandkids. 62
