Lemon Coconut Cashew Collagen Fudge

This is super quick and easy. So it’s perfect if you are short on time as you can whip up in 15 minutes. This snack gives you energy and with the added collagen you are being kind to your gut too. Just an extra way to get that daily dose of collagen in.

Ingredients:

1 cup raw cashews

½ cup plain collagen (your collagen of choice)

3 heaped tbsp raw honey

1 tsp vanilla

¼ tsp sea salt

1½ heaped tbsp lemon rind

2 tbsp fresh lemon juice

⅓ cup desiccated coconut

4 tbsp desiccated coconut, extra

Method:

Line a 10cm x 15cm container with baking paper and place aside. Now the easy bit. Throw everything into a very high-speed blender like a Vitamix, except the 4 tbsp extra coconut, and blend on medium to high using the tamper stick to press into the blades. The mixture is very thick and sticky, so this is important. Turn to high speed and as if you were making a smooth nut butter continue until smooth. Do this in intervals so the mixture doesn’t get too hot.

Once smooth, stir through 3 tbsp of the extra coconut. With damp hands, press onto the base evenly and sprinkle remaining 1 tbsp coconut. Place into the freezer for 2 hours. Cut into bars or squares. Store in the fridge. Makes 6 bars or 12 squares.

Note: if you have a Thermomix, you may need to double mix to have ‘smooth sailing’ with blending.
