Page 3 Beekeeper's Meeting Nelson County Fair and the Bardstown Craft fair were discussed. Susan will put information on the Fair on facebook and the June newsletter. American foulbroods test kits should be available for the members to use. New beekeepers should check all information they gather from the internet and YouTube with experienced beekeepers to make sure they have the right idea.

A question and answer session followed with Gene Englert as our local expert.

Again most members seemed to really enjoy this and there was much participation. Thanks to Mike Vittitow and Larry Marks for sharing their knowledge of beekeeping. The door prize winners were David Donathan and Nicole Soteropoulos. Our State Senator, Jimmy Higdon will be our guest speaker at the next meeting and his topic will be”Kentucky Proud”and what regulation need to change. Next meeting will have our picnic theme. There will be Butterflied Pork, Hamburgers and Chicken so bring the sides and desserts.

There were 36 in attendance.

SWAP MEET – YARD SALE @ Every Meeting If any member has beekeeping items for sale, list them in the newsletter and/or bring them to the meeting. We can do some bartering after the regular meetings are over.

Good time to save some money on necessary items. Be sure and bring items in good clean condition. Make sure they are priced and have your name. We will set up special tables for your items.

Page 4 NELSON COUNT FAIR The Nelson County Beekeepers are sponsoring a new category at the fair this year. We will have a division for honey with several classes, which are listed below. We encourage you to enter your honey even if you are not a member of the Bee Club.

The Nelson County Fair will be held July 17th through the 22nd of 2017 Rules for Nelson County Fair Samuels Hall must be followed Each entry of honey exhibited must be produced in the exhibitors apiary.

Entries accepted between 1:00 and 3:00pm on July 16 and between 9:00 and 11am on July 17th. Judging will be conducted from 1:30 to 5:00pm. Viewing hours are 5 to 10pm during the fair. Exhibitor will not be allowed to

remove items until Sunday July 23rd between 1:30pm and 2:30pm.

Honey Classes Class 1. Light Extracted honey Class 2. Light Amber Extracted honey Class3. Amber Extracted honey Class 4. Dark Amber Extracted honey Class 5. Black Jar (for taste judging only).

HONEY BOOTH VOLUNTEERS Nelson County Fair hours for Samuels Hall are from 5:00 pm to 10:00 pm Monday the 17th to Friday the 21st. Hours for Saturday the 22nd are from 3:00 pm to 10:00 pm. Set up for the honey booth will be Friday 14th of Saturday the 15th .

Breakdown will be on Sunday the 23rd.

Volunteers who will be working the honey booth will be given free passes for entry and parking. I will be asking for volunteers at the June meeting. What ever time you can spare would be appreciated.

Page 6 State Apiarist’s report for June Thus far, I have seen a few cases of chalkbrood and European foulbrood, no surprises with either one since both diseases seem to make an appearance in springtime. With European foulbrood Mellitococcus pluton, you can see discolored larva in open cells, there is no need to puncture a wax capping to detect a disease, and, generally speaking, it will clear up with a honey flow or simply re-queening the weak hive. Chalkbrood is caused by a fungus, Ascosphaera apis; the spores are nearly always present; and re-queening is the best option. Nurse bees distribute the spores in brood food, and the affected larvae die in capped cells. When the worker bees remove the “mummies,” they appear “chalky white.” You may need to care for a hive that has had chalkbrood by putting an extra frame of brood into the colony until it gets up to strength.

In both cases, the recommended treatment is to re-queen the hives.

Remember to leave the weak hives queenless for

approximately 24-48 hours before merging the weak hive with a nuc or adding a new queen. *** We seem to have managed to scoot through the spring without any Derby-day freezes. Black locust and tulip poplar have had good yields, with some beekeepers putting on their second honey supers and others beginning to bottle.

Give your bees plenty of room so that the hive does not become honey bound and want to swarm. June is still a month when swarms will happen frequently.

GRILLED CHICKEN SALAD WITH HONEY-JALAPENO VINAIGRETTE YIELD: Makes 6 servings INGREDIENTS Honey-Jalapeno Vinaigrette divided (recipe below) 6 - boneless skinless chicken breasts 4 oz. each 9 cups - lightly packed baby spinach 1 1/2 cups - shredded Monterey Jack cheese 3 slices - crisp-cooked thick bacon crumbled 3 - small tomatoes each sliced into 4 wedges lengthwise Honey-Jalapeno Vinaigrette 3 tablespoons - white wine vinegar 3 tablespoons - fresh lime juice 2 tablespoons - fresh cilantro coarsely chopped 1 tablespoon - jalapeno pepper seeded and coarsely chopped 2 - large cloves garlic quartered 1 teaspoon - salt 1/2 teaspoon - freshly ground black pepper 2/3 cup - honey 2/3 cup - vegetable oil DIRECTIONS

Page 7 Honey Recipes from the National Honey Board Place chicken in a large resealable plastic bag and add 3/4 cup HoneyJalapeno Vinaigrette. Seal bag and refrigerate for 30 minutes or overnight. Drain and discard marinade. Grill chicken, covered, over medium heat for 6-7 minutes on each side or until juices run clear. Cut chicken across the grain into 1/2 inch-wide strips.

Put 1 1/2 cups of spinach on each of six serving plates. Drizzle each with 1 tablespoon vinaigrette. Top each with chicken strips, 1/4 cup cheese and crumbled bacon; garnish with two tomato wedges and drizzle 1 tablespoon of vinaigrette on top.

For Honey-Jalapeno Vinaigrette: process vinegar, lime juice, cilantro, jalapeno, garlic, salt and pepper in a blender or food processor. With blender running, add honey, then oil; mix well. Refrigerate until needed.

BLUEBERRY COFFEECAKE YIELD: 8 servings INGREDIENTS 2 cups - blueberries fresh

or frozen 1 Tablespoon - all-purpose flour 1/2 cup - honey 2 Tablespoons - fresh lemon juice 1-1/2 cups - all-purpose flour 2 teaspoons - baking powder 1/2 teaspoon - salt 1/2 cup - honey 2 - eggs 1/4 cup - milk 2 Tablespoons - fresh lemon juice 1 teaspoon - freshly grated lemon peel 1 teaspoon - vanilla extract 6 Tablespoons - butter melted 1/2 teaspoon - baking soda DIRECTIONS Coat the bottom of greased 9inch round cake pan with a thin layer of cornmeal and layer blueberries; distribute evenly. Sprinkle with flour; drizzle with honey and lemon juice. Set aside. In a small bowl, combine flour, baking powder, baking soda and salt; set aside. In a medium bowl, combine honey, eggs, milk, lemon juice, lemon peel and vanilla; beat with folk until well mixed. Add flour mixture; mix well. Stir in melted butter; mix well. Pour

batter over blueberries in pan; spread to cover evenly.

Bake at 350°F for 30 to 35 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan on wire rack 10 minutes.

Invert cake onto large plate; cool.

HONEY CITRUS GLAZED CARROTS YIELD:4 servings INGREDIENTS 1 Tablespoon - butter or margarine 4 cups - sliced carrots 1/4 cup - honey 1/2 cup - chicken broth 1/2 cup - orange juice 1/2 teaspoon - minced orange zest 1 teaspoon - salt 1/4 teaspoon - pepper DIRECTIONS In large skillet over mediumhigh heat, melt butter. Add carrots and sautĂŠ for several minutes. Add honey, broth, orange juice and orange zest. Reduce heat to medium-low and simmer until carrots are cooked and liquid is thick. Season with salt and pepper.
