Healthier Salad Makes Barbecues Better

WGreek Yogurt Potato Salad

Serves 6

2 pounds potatoes (Yukon Gold or red potatoes)

1/2 onion

6 eggs

1 cup plain Greek yogurt

4 tablespoons sour cream

1 tablespoon vinegar

2 tablespoons yellow mustard

3/4 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon celery seed

1/2 teaspoon dried dill weed or 1 teaspoon fresh

1/2 cup dill pickles, chopped

Paprika, for garnish (optional)

Parsley, for garnish (optional)

Al fresco dining offers a chance to spend even more time outdoors, and many people will attest that no outdoor gathering is complete without the requisite grilled fare and complementary sides that are staples of spring and summer dining. Potato salad is one such food that turns up regularly this time of year in many shapes and forms. Traditional potato salad is delicious, but it may not be so great for health-conscious individuals, as it’s typically swimming in mayonnaise. A lighter version featuring Greek yogurt in the dressing is ideal for those who want to eat healthy. Greek yogurt also adds gut-healthy live active cultures to the recipe, which may provide gastrointestinal benefits. Enjoy this recipe for “Greek Yogurt Potato Salad” courtesy of The Diabetes Council and Pitchfork Foodie Farms.

Directions:

1. Peel and dice potatoes and onions. Put them and a teaspoon of salt in a pressure cooker and cover with an inch of water. Close valve. Set pressure cooker to high pressure. Set timer for 5 minutes, cook and quick release when it’s done. Drain potatoes. Cool until just warm. (If you don’t have a pressure cooker, boil potatoes in a pot of water on the stove until tender.)

2. Set eggs on a rack in the pressure cooker. Add 1/2 inch of water. Close valve, set to high pressure for 5 minutes. Cook for 5 minutes, quick release, and leave lid closed for 5 minutes. After 5 minutes, take lid off. Drain eggs and cover with ice water to stop the cooking process. Let sit in ice water bath for about 5 minutes, then peel eggs. (If you don’t have a pressure cooker, hard-boil eggs according to your favorite recipe.)

3. Add Greek yogurt, sour cream, mustard, vinegar, salt, pepper, celery seed, and dill weed to a large mixing bowl. Stir until smooth. You can taste test to see if you need to add ingredients.

4. Add cooled, diced potatoes, pickles and hard-boiled eggs. Gently stir until potatoes are coated with dressing. Adjust seasonings to taste. Refrigerate for at least 1 hour.

Notes: Yukon Gold or red potatoes hold their shape best in potato salad. White distilled vinegar is classic in potato salad, but you also can use cider vinegar, white wine vinegar or even lemon juice.

Dads do a lot for their families, and Father’s Day is the perfect time to acknowledge those efforts. The days when dads would receive a colorful necktie for Father’s Day are largely (and, for fathers,

thankfully) a relic of the past. Modern Father’s Day celebrations tend to involve more careful planning, and the following are some ways to make this year’s day for dads one to remember.

• Take Dad on a tour through his own history. The popularity of genealogy has skyrocketed over the last decade-plus, as various firms have made it easier than ever for individuals

to trace their family histories. If Dad counts himself among the millions across the globe interested in their family histories, moms and kids can work together to create a virtual tour through that history. Present the history as a printed book or as a video, sharing interesting things you learned about Dad’s ancestors but also highlighting key moments in his life. This presentation can be accompanied by a subscription to a genealogy service and a tour of some of Dad’s childhood haunts before the family enjoys brunch or dinner in the neighborhood where Dad grew up.

• Take to the great outdoors. Father’s Day is celebrated in midJune, making the day a perfect time to enjoy the great outdoors (weather permitting). Plan a day

around Dad’s favorite outdoor activity. If Dad is an avid fisherman, book a family outing on a charter boat so Dad can focus on catching fish and not navigating. If Dad loves being in natural settings, camp out the night before Father’s Day so he can wake up to the sound of birds chirping in the crisp morning air. If Dad has a favorite baseball team, take him out to the ballgame so he can soak up some Father’s Day sun.

• Book a private chef. If Dad has a fascination with food, perhaps nothing can make Father’s Day more memorable than a delicious meal served by a private chef. Private chefs will do all the work, giving moms and kids more time to spend with Dad throughout the day, and then the whole family can enjoy a special meal made by

someone whose specialty is crafting delicious dinners. Offerings vary, but many private chefs handle all the cooking and cleaning. Identify Dad’s favorite dish and then look for a chef who specializes in that type of cuisine.

• Appeal to Dad’s inner adventurer. Some Dads may just want to relax on Father’s Day, while others may prefer a more adventurous celebration. If Dad falls into the latter group, book a fun and adventurous activity the whole family can enjoy together. A kayaking trip, a skydiving session, a round of paintball, or even tickets to a rock concert on Father’s Day weekend can connect Dad with his inner adventurer. There’s no shortage of ways for families to make this Father’s Day one Dad won’t soon forget.

Art Students Beautify Gilgo Beach Tunnel

On May 17, North Babylon High School’s National Art Honor Society students participated in a mural painting and restoration project in the tunnel under Ocean Parkway at Gilgo Beach. This project was sponsored by the Town of Babylon Parks Department and Babylon Citizens Council on the Arts and

included students and teachers from Amityville, Babylon, Deer Park, Lindenhurst, North Babylon, West Babylon and Wyandanch high schools. North Babylon students who participated in the painting were: Marguel Allen, Joseph Bacchi, Anaya Cruz, George Folise, Kristina Kasenchak, Mairead Matthews, Emily Miccio and Peyton Silvestri. They restored a 20-year-old mural and painted two original designs that were created by North Babylon High School students Peyton Silvestri and Angela Shi. West Babylon Junior High Inducts 97 New Members To NJHS

Close to 100 new members were inducted into West Babylon Junior High School’s National Junior Honor Society at a ceremony held in the school’s auditorium on May 22.

National Junior Honor Society advisor Tara Limperatos welcomed family, friends, board of education members, administrators and faculty to the ceremony. The National Junior Honor Society officers spoke about the traditions of the organization and the five pillars of leadership, scholarship, service, citizenship and character.

Dr. Carlos Falcon congratulated students on their successful accomplishments thus far. “I look forward to working with you for the remainder of the year and I take pride in knowing that you all will

Students were called up one by one to the center of the stage to receive their certifications. West Babylon School District Superintendent of Schools Dr. Yiendhy Farrelly then administered the oath of induction to the newest National Junior Honor Society members.

NOTICE IS FURTHER GIVEN that the proposed budget for the fiscal year 2024/2025 will be prepared and will be available at each school building and at the West Babylon School District Office, school district Library and on the website (www.wbschools. org) no later than fourteen (14) days before the Budget ReVote.

AND FURTHER NOTICE IS HEREBY GIVEN, that personal registration of voters is required and no person shall be entitled to vote at said meeting and election whose name does not already appear on the register of said school district, or who does not register as hereinafter provided.

AND FURTHER NOTICE IS HEREBY GIVEN, if a voter is registered pursuant to §2014 of the Education Law in the West Babylon Union Free School District and eligible to vote under Article 5 of the Election Law, he or she is also eligible to vote at this election. The register so prepared pursuant to §2014 of the Education Law will be filed in the Office of the Clerk of the School District in the Administration Building, 10 Farmingdale Road, West Babylon, New York 11704, and will be open for inspection by any qualified voter of the District beginning on June 13, 2024, between the hours of 8:00 A.M. and 4:00 P.M., prevailing time, on weekdays, and each day prior to the day set for the Budget Re-Vote, except Sunday and by advance appointment on Saturday, June 15, 2024 and at the polling place(s) on the day of the Budget Re-Vote.

AND FURTHER NOTICE IS HEREBY GIVEN, that the Board of Registration will meet on Tuesday, June 18, 2024 between the hours of 6:00 A.M. and 9:00 P.M., prevailing time, in the Board Room of the Administration Wing of the Senior High School to prepare the Register of the School District to be used at any election or special district meeting that may be held after the preparation of said Register, at which time any person will be entitled to have his or her name placed on such Register provided that at such meeting of said Board of Registration he or she is known or proven to the satisfaction of such Board of Registration to be then or thereafter entitled to vote at the school election for which said Register is prepared, or any special district meeting held after June 18, 2024.

AND FURTHER NOTICE IS HEREBY GIVEN, that applications for absentee or early mail ballots may be obtainable at the Office of the Clerk of the District (Administration Offices, 10 Farmingdale Road, West Babylon, New York 11704). The completed application must be received by the District Clerk, at least seven

(7) days before the Budget Re-Vote if the ballot is to be mailed to the voter, or the day before the Budget Re-Vote if the ballot is to be delivered personally to the voter or their designated agent. No absentee or early mail voter’s ballot shall be canvassed unless it shall have been received in the Office of the Clerk of the School District no later than 5:00 P.M., prevailing time, on the day of the Budget Re-Vote. A list of all persons to whom absentee and early mail ballots shall have been issued will be available for inspection by qualified voters of the District in the said Office of the Clerk on each of the five (5) days prior to the day of the Budget Re-Vote, except Saturdays, Sundays and holidays, between the hours of 8:00 A.M. and 4:00 P.M., prevailing time and shall be available at the polling places on the day of the vote. Any qualified voter may, upon examination of such list, file a written challenge of the qualifications as a voter of any person whose name appears on such list, stating the reasons for such challenge. A challenge to an absentee ballot may not be made on the basis that the voter should have applied for an early mail ballot.

AND FURTHER NOTICE IS HEREBY GIVEN, that military voters who are not currently registered may apply to register as a qualified voter of the school district. Military voters who are qualified voters of the district may submit an application for a military ballot.
