The Charity of The Month for May is: Guardians of Rescue animals, building doghouses, taking in new rescues and trying to cover all their expenses.

“We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.”

“The pandemic has created a host of problem for the animals,” says Misseri.

“I hope that we can make it through this difficult time, so that we can continue to help the animals in need.”

Serve Steak Alongside A Backyard Barbecue Staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening.

Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame.

The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue.

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6 8

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)

Melt 1 tablespoon of the butter in a medium skillet over medium-low heat.

Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate.

In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes.

Transfer to the plate with the shallot and let cool.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined.

Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log.

Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes.

Set the steaks on the counter for 30 minutes to

bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper.

Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes.

Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

Baked Beans Serves 10 2

15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

Add the salt and stir.

Uncover and let sit for 15 to 20 minutes before serving.

Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of.

We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans.

Animals are also being impacted in numerous ways by this situation.

Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times.

Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can.

Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

Couch” series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other.

On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22.

The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters.

Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial.

Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17.

Woodloch owns and

operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station.

As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods.

“Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines.

Such strange times we are in, and rightly so, we are hyper focused on the health and safety of everyone. We are and must continue to take precautions to save lives and to not completely overwhelm the hospital facilities, but in this type of a shutdown response, there will be other types of fatalities.

What will our local, national and global economy look like after the virus passes? It will pass, and as it does, my focus continues to be on the small businesses around town.

All businesses have been affected greatly, but in different ways. Many have had to get creative to stay alive through this. For example, many food establishments

the next steps.

A good business adapts with the times and we are seeing some other great examples of this as well. A few places came up with their own unique ways to still sell their services. Brilliant ideas like the few hair salons that came up with a way to mix color and package it so people can pick it up and touch up their own hair. Arts and crafts type places made grab and go kits that can be purchased and brought home to keep the kids busy and all ages could get everything they need to make and decorate your own donuts or cupcakes.

Some businesses are staying relevant, even when

they cannot be open, by serving others. Think real estate agents who are sending food to the hospital workers, others who have held food drives or offered educational videos for free, yoga and fitness instructors who are teaching their classes live online for anyone to tune in and follow, and even lawyers and financial advisors that are offering free advice for anyone with a question on how to weather this storm. These thoughtful actions, done with the best of intention to just lend a hand, to help someone, somehow, will bring about its own reward at a later date.

So when this pandemic comes to an end, some

businesses sadly will not have made it, but the many who got creative, thought out of their box, and ramped up their efforts, will have a chance to still be standing when we “reopen� the economy.

Worth mentioning too, those businesses who previously were actively involved in the community will have fared better than those that aren’t. Anyone paying attention on social media is witness to a fierce protectiveness and organic, word of mouth promotion of the businesses that community members feel a real connection with. We really are all in this together!

According to the National Council of State Boards of Nursing, nurses are the second largest group of licensed professionals in the United States. While laws vary depending on where nurses work, many nurses must have their licenses renewed at certain intervals. State boards of nursing, sometimes referred to as “BONs,” were established to oversee and assure the safe practice

of nursing in an effort to protect the public’s health.

Part of the responsibilities of a BON is to evaluate licensure applications, and some BONs, depending on the state laws, will handle license renewals as well. The goal of license renewals is to ensure licensed nurses are up to date on the latest best practices and procedures.

In addition, nurses who have not practiced in some time but want to return

to practicing may need to take a refresher course to ensure they can still serve as competent nurses. In states where renewals are required, nurses who continue to practice without renewing their licenses may be subject to discipline.

Nurses are urged to stay abreast of the licensing laws where they practice and to contact their BON if they have any questions about the licensure process.

“This truly is an allhands-on-deck effort and it has been heartening to see so many residents and organizations step up to help their neighbors in need while we fight to reduce the spread of the

virus,” said Suffolk County Executive Steve Bellone.

“I want to thank Lidl for this generous and critical donation of masks that will go directly towards keeping our front-line workers safe.”

“The NCPD Foundation is greatly appreciative of this generous gift of masks that will be distributed to

the Nassau County Police Department officers on the front lines keeping our community safe,” said Alexandra Nigolian, Executive Director of Nassau County Police Department Foundation.

“From the very beginning of this pandemic, Suffolk County business leaders and residents have stepped

up to the plate as we’ve collected hundreds of thousands of donated personal protective equipment at Suffolk County Fire Rescue and the County’s Point of Distribution Center. We are very grateful for these donations and are very appreciative of Lidl for providing 20,000 surgical masks, which will help to protect our hometown heroes,” said Suffolk County Fire, Rescue
