6 hamburger buns, split 1. Heat the grill to 425 F for gas or achieve light ash for charcoal or light ash for wood. 2. Using your hands, mix the beef, water, ketchup and pepper in a bowl until well blended; do not overmix. Using a light touch, form into 6 patties no more than 1 inch thick. Everyone can benefit from having a tried-and-true burger recipe in his or her repertoire when enjoying a cozy weeknight meal with the family. Many things constitute a great burger, including flavorful meat, the right ratio of fat content, a crispy roll or bun and fresh, cold toppings and condiments. Master Burger Cooking In Time For Grilling Season
According to the high-quality ground beef purveyor Schweid & Sons, the most common ground beef choice among burger chefs is 80 percent lean, 20 percent fat. Law prohibits the sale of any ground beef with a fat content above 30 percent. While some consumers may scoff at the notion of
buying beef that’s 20 percent fat, Schweid & Sons notes that the fat that surrounds the meat gives it a rich, juicy flavor. In fact, Schweid & Sons says that beef with lowerfat compositions, such as 85 percent lean and 15 percent fat, tends to dry out fast, which can adversely affect the flavor of the burger.
3. Brush the grill grate and coat it with oil. Put the burgers on the grill, cover and cook for 7 minutes, flipping after about 4 minutes, for mediumdone (150 F, slightly pink). Add a minute per side for well-done (160 F). 4. If you are making cheeseburgers, put 2 slices of cheese on each burger 1 minute before the burgers are going to be done. 5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking. 6. If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and the burgers separate until just before eating. The best garnishes for burgers are the classics: a slice of ripe beefsteak tomato, a mound of sautéed onions, a leaf of romaine lettuce, a dollop of coleslaw or a few slices of dill pickles.

Hospital Association Offers Scholarship The Nassau-Suffolk Hospital Council (NSHC) announces a $2,000 scholarship for college juniors/seniors or post graduate students who are studying Journalism, Marketing/ Communications, or Healthcare Administration. The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. They are overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the animals, building doghouses, taking in new rescues and trying to cover all their expenses. “The pandemic has created a host of problem for the animals,” says Robert Misseri, President of this organization. “I hope that we can make it through this difficult time, so that we can continue to help the animals in need.” Robert is also the President of Paws of War, another non-profit right here on Long Island. This organization trains and places shelter dogs to serve and provide independence to our U.S. military veterans that suffer from the emotional effects of war. In turn, each veteran can experience the therapeutic and unconditional love only a companion animal can bring. Throughout this pandemic, they have been tending to the most at risk veterans. They find that their older senior veterans typically are very prideful and refuse to ask for any handouts. Many live alone and
will still go out and put themselves at risk to get food for their pets. However, Paws of War will at times arrive at their homes with no warning, knock on their door and tell them that they have some items to drop off for them. “You always see that tear in their eye” says Robert. “That someone actually cares enough to come to their home and bring them something is very special.” A lot of these veterans suffered for many years, all of which now have lifelong disabilities due to their service to our country. Paws of War feels that at the very least they can bring them pet food to give them a helping hand during these tough times. Additionally, Paws of War has partnered with Cambridge Catering, who is providing hot cooked meals free of charge to our veterans. Hank, a Smithtown resident and veteran, was someone that Paws of War helped. When they arrived at his home, they noticed a his two very proud flags were destroyed. They handed off the pet food and trays of hot food that Cambridge Catering has provided, but they didn’t stop there. They then went to the hardware store and purchased everything to fix and replace his flags. Guardians of Rescue and Paws of War can both use your support so they can continue to help others. Memorial Day weekend as the unofficial start of summer, the weekend should not be celebrated without also pausing to reflect on and recognize the military personnel who lost their lives in defense of freedom and the American way of life. Veterans Day is celebrated annually on November 11 and recognizes all men and women who have served in the military. Veterans Day coincides with Remembrance Day, which is a celebrated by the Commonwealth of
Nations, an association of 53 member states with connections to the British Empire. Though Veterans Day and Remembrance Day are each celebrated on November 11, the latter recognizes armed forces members who died in the line of duty, making it more similar to Memorial Day than Veterans Day. It’s not uncommon for people to recognize fallen soldiers on Veterans Day, but many use the holiday to express their appreciation to existing veterans. Memorial Day, which is celebrated annually on the last Monday in May, honors the brave men and women who lost their lives while serving in the American military. Many communities host memorial ceremonies honoring their fallen soldiers on Memorial Day, ensuring such soldiers’ bravery and sacrifices are never forgotten. While many people now view

Third Graders Take On “Tape-Estry” Challenge As part of a distance learning unit on geometry, third graders at Islip’s Commack Road Elementary School took on a “Tape-estry” Challenge. Each student was asked to create a design with tape and sidewalk chalk, using geometric shapes such as triangles, squares, rectangles, diamonds and rhombuses, then explain the design with any combination of mathematical
systems including addition, subtraction, multiplication, division and fractions. Students with limited concrete canvas space could use anything they could find around the house to meet the challenge, such as paper, rulers, crayons and paint. “The response to the challenge was overwhelming, as students took to their driveways, their porches, and garages
to create extraordinary geo-art,” said teacher Brian Smith. The initial inspiration for the activity came from student Keleigh Franz, who had sent in driveway chalk art she created with her siblings, guided by their mother in an effort to keep them intellectually stimulated while providing a fun outdoor activity to work on as a family.
USING FACS SKILLS TO SEW MASK HEADBANDS - Riley Tamburello, a sixth grader at Islip Middle School, has been making special headbands for her mother, an occupational therapist in Middle Island, and her mother’s coworkers, using sewing skills learned in Natalie DeSena’s family and consumer science class. How To Clean When Faced With A Shortage Of Supplies In light of concerns about COVID-19, various health organizations have issued specific instructions on how to maintain personal safety and cleanliness. These recommendations involve using common household products to sanitize homes, offices and public spaces. As people take such precautions, many are stocking up on extra

Everything from hand sanitizers to paper towels may be hard to find on grocery store shelves, leaving some to wonder what they can do to remain safe without sanitizers? The Environmental Protection Agency states that coronaviruses are some of the easiest types of viruses to kill because
they have an envelope around them that enables them to merge with other cells and infect them. If that protective coating can be disrupted, the virus can’t do its job. For those having trouble finding well-known cleaning agents, these alternatives may suffice. Hot Water And Soap The reason handwashing is at the top
of the list of sanitizing methods is because it is so effective at washing away viruses and bacteria. Friction from scrubbing with soap and water can help break the protective envelope, states the EPA. Soap and water can clean all surfaces in a home, especially when applying a little extra elbow grease. Hydrogen Peroxide As people clear isopropyl
(rubbing alcohol) off the shelves, do not discount hydrogen peroxide. The CDC says household hydrogen peroxide at 3 percent concentration can deactivate rhinovirus, the virus that causes the common cold, within six to eight minutes of contact. Coronavirus is easier to destroy than rhinovirus, so hydrogen peroxide may be effective
at combatting that virus as well. Natural items can be used for general cleaning, but have not been endorsed for use on COVID-19 disinfection. In lieu of shortages, white vinegar, baking soda pastes and citrus oils and juices could fill the void of chemically-based cleansers for other home tasks.

Girls On The Run Long Island To Hold Its First Virtual 5k In June Local nonprofit Girls on the Run Long Island will be holding its first Virtual 5K run for free on June 20, 2020 open to all who wish to participate. Traditionally a run held at Hofstra University to conclude the organization’s 10-week program for girls, the Spring 5K became a virtual run in response to COVID-19 and social distancing regulations. With options to complete the 3.1 mile distance at “your place, your pace,” kids and adults alike are welcome to participate at no cost to them. By registering for the run at www.gotrlongisland.org/5k, participants will receive free downloadable goodies, such as a race bib to decorate and a finisher’s certificate. GOTR Long Island prize packs will also be raffled off, chosen from those who have registered, on June 20. Leading up to the run, GOTR Long Island will share information about the run and fun activities on its social media channels, including Facebook, Instagram, and Twitter at @gotrlongisland. This will include training for walking or running the 5K, indoor alternatives, and safety tips along with fun activities usually seen at a GOTR 5K. The traditional Happy Hair, kid-friendly hair coloring, and Bling Your Bib activities will be included. It's always the right time of year for fresh apple pie

ertain foods are synonymous with particular holidays or times of year. For example, few people can imagine celebrating Valentine’s Day without ample supplies of chocolate on hand. And what summer barbecue is complete without grilled hot dogs and hamburgers? While these foods and others are must-haves during certain times of the year, that doesn’t mean they cannot be enjoyed whenever a craving arises. Apples, and particularly apple pie, are a staple of many holiday season celebrations. But apple pie is just as delicious in March, April, May, etc., as it is during the weeks between Thanksgiving and Christmas. That’s especially true when the apples are fresh. Whether yours is a seasonal or non-seasonal craving for apple pie, be sure to satisfy it with this recipe for “French Apple Pie” from Mollie Cox Bryan’s “Mrs. Rowe’s Little Book of Southern Pies” (Ten Speed Press). FRENCH APPLE PIE

apples (preferably a tart variety)
1 recipe Plain Pie Pastry (see below)

Makes one 9-inch pie
RAISIN FILLING

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes. Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust.
PLAIN PIE PASTRY Makes two 9-inch pie crusts cups all-purpose flour teaspoon salt cup vegetable shortening to 7 tablespoons cold milk

Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then add to the apples and gently stir until evenly mixed.
Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center. Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.
To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving.
Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas. Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl. Repeat with the remaining milk until all of the flour mixture is moistened. Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1⁄8 inch. Use a light touch and handle the dough as little as possible.

DIRECTIONS To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat. Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.
