Islip’s Staff Car Parade Spurs Pride And Positivity

For more than two hours on the afternoon of April 28, Islip resounded with cheers and car horns as Islip High School held a staff car parade, with more than 50 teachers and administrators driving through the school community to waves and smiles from overjoyed students and families.

at Maud S. Sherwood Elementary School to wave to the families of valedictorian Darienne Rogers and salutatorian Maddie Germano.

Serve Steak Alongside A Backyard Barbecue Staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening.

Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame.

The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue.

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)

Melt 1 tablespoon of the butter in a medium skillet over medium-low heat.

Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate.

In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes.

Transfer to the plate with the shallot and let cool.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined.

Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log.

Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes.

Set the steaks on the counter for 30 minutes to

bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper.

Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes.

Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

Renu And Promise Of Hope Provide Masks For Islip’s Children

Children’s masks were distributed at Islip High School on April 23 and 24, donated by the district’s vendor Renu. The initiative was organized

by Scott Colletti and Mike VanDenburg, who formed the Promise for Hope organization to help students in need. They

have also donated masks to the Brentwood, Bay Shore, Central Islip and East Islip school districts.

“We are very grateful for their thoughtfulness and generosity, as masks are difficult to get,” said Islip Superintendent Ellen Semel.

During the schools’

closure due to the coronavirus, Islip has been providing meals for students’ families daily, with pickup at the high school. The masks were offered during the district’s regular lunch distribution hours from 10 a.m. to noon.

Baked Beans Serves 10 2

15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

Add the salt and stir.

Uncover and let sit for 15 to 20 minutes before serving.

Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of.

We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans.

Animals are also being impacted in numerous ways by this situation.

Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times.

Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can.

Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

animals, building doghouses, taking in new rescues and trying to cover all their expenses.

“We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.”

“The pandemic has created a host of problem for the animals,” says Misseri.

“I hope that we can make it through this difficult time, so that we can continue to help the animals in need.”

Couch� series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other.

On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22.

The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters.

Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial.

Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17.

Woodloch owns and

operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station.

As part of its new program, “Goodwill Fridays,� the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,� said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. We wish everyone health and safety and look forward to much brighter days ahead.�

The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait.

Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives.

In 2014, Tricarico was recognized by the Nassau County Legislature for demonstrating commitment, leadership and dedication when his PAL hockey team represented the United States in the United World Games Lighthouse Tournament in Harbin, China.

Frontline medical workers providing lifesaving treatment at Good Samaritan Hospital in West Islip amid the COVID-19 outbreak were treated to a special delivery of several hundred meals donated by the Barasch McGarry law firm at lunchtime on Saturday, April 25.

For weeks, these medical workers have confronted an unprecedented crisis, as local hospitals provide health care for thousands of patients affected by the coronavirus even as their workers lacked access to basic safety equipment to prevent the spread of the disease.

Barasch McGarry, a longtime advocate for first responders and the entire 9/11 community, has also provided meals for medical professionals at Glen Cove Hospital,

New York Presbyterian in Manhattan, Mount Sinai Hospital in Manhattan, St. Francis Hospital in Roslyn, NYU Winthrop Hospital in Mineola, St. Catherine of Siena Medical Center in Smithtown, Stony Brook University Hospital, and Southside Hospital in Bay Shore.

In addition, snacks and sports drinks have been donated to 14 area police precincts, in partnership with the FealGood Foundation, the Retired Sergeants Association of the New York City Police Department, and the New York State Fraternal Order of Police, Nassau Police Lodge 69, and groceries have been delivered to local food pantries for distribution.

“These people are our heroes – they need to be fed and they need to be taken care of, so they

She was elected class president for four consecutive years and has been a member of and annual medalist with the Science Olympiad team

since 2014 and co-captain since 2018. As a member of the varsity tennis team since 2014 and co-captain since 2017, she contributed to the Lady Bucs six consecutive undefeated seasons and league and division championships, earned 100 varsity wins and won the 2019 NYSPHSAA Sportsmanship Award.

Germano will attend the University of North Carolina at Chapel Hill, majoring in neuroscience.
