My Journey With Anxiety Many of you read my Living Well column each week where I shared what I have learned about living your best life. Like you, my wisdom was hard earned through years of ups and downs, and evolution.

One of my major downs was years of suffering with anxiety and panic attacks. Since having my book, Journaling Fame: A memoir of a life unhinged

and on the record, come out in the spring of 2017, I have come to learn just how common this is. Forty million Americans suffer with, or have suffered from, various forms of anxiety, depression, OCD and panic attacks. If you are currently struggling with this, know that you are not alone.

Below is a small excerpt from my book to give you

me?” I thought.

As a chronic baseline anxiety sufferer my entire life, I was in the throes of the worst and most extended episode of acute anxiety I’d ever known. I was experiencing five or six full blown panic attacks per day, generalized anxiety, agoraphobia and unbearable physical sensations. I feared I was dying, or worse, losing my mind and “going crazy,” a common fear among those with anxiety and panic disorder.

It all started when I was seven or eight years old (the age my son is now) and I began to experience intense feelings of worry connected to my physical health. As I reached my preteen years my anxiety grew more ambitious and branched out to what we now commonly refer to as OCD (obsessive compulsive disorder). But at twelve years old it just

Braised Lentil and Chard with Sausage

Kristen Link grew up in a German home where Sunday dinners often meant a feast of sausage or bratwurst. Now, an Integrative Holistic Health Coach and Founder of Wellness By Kristen (www.wellnessbykristen.com), she’s created an updated and more nutritionally dense version of her childhood favorite.

“This dish is comfort, homestyle cooking for the winter,” says Link.

“It’s a one pot dish, so you can make it during the week and have plenty of leftovers the next day.”

What You Will Need:

Let the pot come to a low boil before setting the burner to low heat and simmering with the lid off.

After 15 minutes, add in chard leaves and stir. If at this point the lentils still seem al dente or are no longer covered in liquid, add a little more stock or water until they are submerged. Season as needed with your red chili flakes, salt and pepper.

Place sausage links into the lentil mixture so that they are halfway covered. Let cook for another 10 minutes or until the lentils absorbed.

Serve with crusty bread if desired!

Kitchen Tools: Large Dutch oven or crock-pot (or large pot with lid) Large wooden spoon Sharp knife Preparation: In a large Dutch oven or saucepan with a lid, heat 1 tablespoon of oil over medium heat. Add sausages in a single layer. Cook on each side until they are brown. Remove sausages from pan and set aside.

Add the remaining oil to the pan and add in onion. Cook onions for 5 minutes until they are tender.

Add garlic and cook 1 minute before adding in carrots, celery, fennel and chard stems. Stir well and cook for 5 more minutes.

Let’s Take In Some Culture This Weekend “Give every day the chance to become the most beautiful day of your life.” - Unknown When was the last time you took in a nice play, or a concert in an intimate venue? Perhaps an art gallery showing, featuring some local up and coming artists, or a museum exhibit?

I don’t know about you, but culture really feeds my soul. A weekend spent entrenched in the arts or science or history can feel akin to a mini-vacation, and makes me feel connected to my humanity and the world around me. Come to think of it, a nourishing hobby can do the same; whether it is volunteering at your local animal shelter, jewelry making, horseback riding (my personal favorite) or rockclimbing. It could be just about anything.

I can’t speak for everyone, but for those of us who are often entrenched in the routine of grocery shopping, play dates, errands and preparing for the

week ahead, we can sometimes lose sight of the opportunity that each weekend holds for us.

As I edit the Coming Events Around Town calendar each week for the newspaper, I see so many interesting and culturally enriching events taking place throughout Long Island. I will admit, I have been guilty of thinking, “Note to self. You have to go check this out,” and then I’ll get sidetracked and forget to go. I’ll let myself get so swept up in life that the days will get away from me. It happens to the best of us. But the twenty-four hours that we are granted each day are filled with endless promise, and we owe it to ourselves to make the most of them whenever possible.

When it comes to squeezing every ounce of opportunity out of each weekday in terms of career, I’m batting a thousand. But I’ve been slacking a bit on squeezing every ounce of life and enjoyment out of the 48 hours between Friday night and Sunday night.

Let’s make this a collective challenge! Each weekend, let’s

comb through What’s Happening Around Town in South Bay’s Neighbor as well as other local Long Island newspapers. Look at everything the area has to offer, from movie screenings and crafting, to classes, lectures and music events. Next time something catches your eye, stop in your tracks, make plans and get tickets, or simply make a reservation. Incidentally, you would be surprised at the amount of free activities around town.

Feeling like a homebody this winter? Invite a bunch of friends over for a Saturday night potluck dinner and classic movie screening. Share laughs, memories and great food. Then take in some classic films in your living room. Maybe even break out a board game or two.

Do something that will have you skipping back to work or school, or the Monday routine, with newfound vigor. I’m holding myself to this one too.

1 1/4 lb. sweet Italian Sausage 2 tablespoons olive oil 1 up diced yellow onions 1 large garlic clove minced 1/2 cup diced carrots 1/2 cup diced celery 1 cup diced fennel bulb (stems removed) 2 cups packed, roughly chopped Swiss Chard - stems removed and diced 1 cup green or brown lentils washed 1 bay leaf 1/2 dry red wine 2 1/2 cups beef stock 1/2 teaspoon red chili flakes salt and pepper to taste

Add in lentils and stir. Pour in wine to de-glaze the pan, scrapping any bits up off the bottom if necessary. Pour in the remaining stock (or water) making sure the lentils are almost entirely submerged. Add the bay leaf.

Empathy Through Bologna Just prior to the winter break, students at Islip’s Commack Road and Wing elementary schools, aided by parent volunteers, decided to forgo winter crafts and concentrate on making and donating bologna sandwiches for people in need.

At Commack Road, class moms came up with the idea, and students and their families donated bread and bologna, then formed an assembly line to make more than 120

sandwiches and donate them to a nearby homeless shelter.

“The students learned empathy and loved helping a community in need,” said teacher Nicole Chirco.

“The students will never forget this.”

Wing’s students, firstgraders in Justin Lollo’s classroom, surpassed their initial goal of 100 and made 138 sandwiches destined for the Mercy Inn in Wyandanch. The students also decorated

holiday-themed bags to put the sandwiches in.

“This is just another sign of how Wing works together for positive youth development by giving back to the community,” said Principal Michael Giacchetto.

“Engaging young children in community service helps students grow empathy and allows them to see where they fit in a society that cares for one another.”

January’s Charity of the Month is: PBS Community Foundation

The PBS Community Foundation, a 501(c)3 non-profit organization, was established to help people with autism spectrum disorders, developmental disabilities and other special needs. They particularly focus on selfdetermination and full inclusion in the local community.

Their mission is to help these individuals access the support and services they need to become active and productive members of the community, as well as encourage long-term planning and to support efforts towards establishing social connections and friendships in the community.

For individuals with disabilities, the movement away from inadequate and segregated institutional congregate custodial care has been taking place for 40 years. Now more than ever, individuals with disabilities are seeking the opportunity to stay in their own communities and pursue their personal goals, while receiving the needed levels of support to make full community inclusion a sustainable reality.

In New York State, anyone who is eligible for OPWDD Services (NYS Office For People With Developmental Disabilities) and enrolled in the Home and Community Based Services (HCBS) Waiver, can choose to selfdirect their services. As of September 30, 2018, there were 2,926 individuals enrolled in ‘Self Direction’ on Long Island. (Source: NYS OPWDD) Self-Direction is a person-centered approach that empowers individuals with developmental disabilities to create a life plan with supports that they chose, based on their unique strengths, needs and goals.

It also gives the individual more control over

how funding is used to purchase needed support and services.

While the number of individuals choosing to self direct their services is quickly growing, the PBS Community Foundation aims to provide support through grass roots, community based networks.

The PBS Community Foundation initiatives started with Big Time Glee, a singing group that now meets twice a month in Smithtown.

This group performs at various events such as Long Island Ducks games!

In response to numerous requests from the Self-Directed community, the Foundation created a similar group in Nassau, which meets monthly in Bellmore. This is called the Nassau Voice.

Aditionally, another initative, The Crafting Connection, meets every other week to work on different crafty projects or just to socialize and play games.

More recently, Self-Directed individuals are focusing on the health of their mind and body. The PBS Community Foundation offers Yoga Without Boundaries twice a month at the Yoga Darshana Center in West Babylon.

This center generously donates the space and Dan Elfawal, a certified special educator and yoga instructor, leads a free yoga class open to individuals with all abilities. Dan says the students walk away focused, calm and self confident. Through the practice of yoga, students build strength and develop coping skills, which can lead to a healthier lifestyle.

Robotics Victory in East Islip East Islip High School students from James Connell’s Robotics I and II classes recently put on a demonstration in the school library, showcasing their newly designed robots, which consisted of team-designed “manipulators.”

In robotics, a manipulator is a device used to manipulate materials without direct human contact. These manipulators were designed to play the VEX EDR “Swept Away” game, with students competing in a two-day tournament to

determine which group’s design was most effective.

The team of Jairo Alvarado, Sophia Bates, Jonatan Caravantes, Franklin George, Tristan Herr and Selvin Yanes – all first-year robotics students – won the overall competition with their robot Stardust.

Alvarado, Caravantes, George and Yanes are all members of East Islip’s Cleary School for the Deaf program, while Bates and Herr are veterans of the school’s video production and CAD technology classes: “I was extremely proud

of this group, as they worked very diligently to create their design,” said Connell. “Through positive teamwork and collaboration, there was no doubt as to why their design won the competition.”

For the remainder of the school year, Robotics I students will continue to learn the basics of robotics technology and move into robotic programming as well as the creation of bigger and more complex robots that will play in the VEX EDR “Turning Point” game.

Weddings tend to be formal affairs, but there are no laws prohibiting happy couples from hosting more casual affairs.

In fact, many couples confronted with the rising costs of tying the knot are doing just that.

According to The Knot Real Weddings Study, the average cost of a wedding in 2016 exceeded $35,000, and that price tag does not include couples’ honeymoons. Some couples may not have the means to finance such lavish affairs, while others may want to save for larger expenses such as a house, while still being able to celebrate their nuptials with family and friends. Casual weddings can provide that opportunity. While casual weddings are less formal, couples will still need to keep some things in mind to make their ceremonies and receptions both fun and memorable.

Let guests know the wedding will be casual. Perhaps the most important thing couples can do when hosting a casual wedding is inform their guests that the ceremony and reception will not be a formal affair. Be as specific as possible regarding the dress code so guests don’t feel embarrassed if they overdress.

Casual weddings are always more fun with a theme. From a Mardi Gras theme to a garden theme or even a Baseball-themed wedding, a theme will add just the right amount of whimsy and camp to a casual affair.

Don’t abandon tradition entirely. Couples hosting casual weddings may not feel beholden to all the traditions associated with more formal affairs, but that does not mean tradition should be abandoned entirely. For example, fathers-of-the-bride may still hope to share a spotlight dance with their daughters, while siblings or

friends may still hope to serve as bridesmaids or groomsmen. Just because a wedding is less formal does not mean it has to completely abandon tradition, especially those traditions that can let couples’ closest loved ones know how much they are loved and appreciated on your special day.

Create your own traditions. Embracing some tradition does not mean couples cannot simultaneously create their own wedding traditions. Guests at casual weddings will likely be expecting something different than they’re used to, so couples should not hesitate to provide just that.

Couples should strive to keep things tasteful but not shy away from unique ideas that fit into the casual theme.

Don’t overlook logistics. Small details, like transportation, parking and lodging will still need to be arranged. If hosting guests at your home after the ceremony, make sure guests will have ample places to park their vehicles. In addition, make the same efforts regarding lodging for guests that you would if planning a formal wedding, as out-of-town guests will still need a place to sleep.

East Islip Middle School held another exciting spelling bee on Jan. 4, welcoming a jam-packed audience of students, parents, teachers and administrators. This year’s bee went seven rounds, with eighth-grader Robert Hilbert, the winner of the 2018 bee, again proving victorious, correctly

spelling the championship word “treacle.” Sixthgrader Lee Daubaras was the runner-up, with eighth-grader Daniella Chillemi finishing in third place.

“All of our classroom participants did an excellent job representing their school,” said teacher Mingione, who served as

co-coordinator and judge alongside Brian Deedy.

Barbara Huether was the official word announcer.

“The only thing better than the bee was the enthusiasm of the audience and the tremendous support they showed the contestants,” said Principal Bill Brennen.

Joseph Thomas Bucci, of East Islip, New York, successfully completed his Eagle Board of Review on November 27, 2018, officially making him the 80th Eagle Scout of Troop 205 of Great River, East Islip, and Islip Terrace, NY. Joseph Eagle Court of Honor will be held on Saturday, March 2, 2019, starting at 11:00AM at the Timber Point Elementary

School, 200 Timber Point Road, East Islip, NY 11730.

Joseph is a member of Troop 205, sponsored by the Great River Fire Department, under the direction of Scoutmaster Mark Businski. On his “Road to Eagle,” Joseph has served Troop 205 as Assistant Senior Patrol Leader of Patrols, Bugler, Chaplain’s Aide, and, Troop Guide – where he has assisted his younger Scouts in their Rank Advancements.

As Joseph reflects on his Scouting experience, he recently said, “Scouting has introduced me to leadership. At a young age, Boy Scouts provides valuable leadership positions, which is great experience. I have learned the important components of being a good leader

through Scouting.”

Joseph went on to say, “Setting a good example and communications are traits that every good leader has.”

Joseph is currently a senior at East Islip High School, East Islip, New York, where he has been on the academic honor roll since the ninth grade and a member of the East Islip High School Foreign Language Honor Society and the East Islip Boy’s Leaders Club.

Joseph is the son of Lisa and Tom Bucci of East Islip, and brother to Emily.

Joseph’s father, Tom, is an Assistant Scoutmaster of Troop 205.

My Journey With Anxiety

Continued From 6 something resembling it.

By the time I was a teenager I had graduated to the trifecta: anxiety/ panic, OCD and depression.

It was also around this time that I discovered

that my well of creativity, intuition and compassion ran deep. The spoken and written word became my solace, and the gift I felt I had to offer the world. My highly sensitized being may have created anxiety, but it also blossomed into

an ability to connect with others in a rarefied way, and to express myself as a successful journalist and writer.

This excerpt from my book was also published by the ADAA - Anxiety and Depression Association of

America, with the purpose of lending my voice and support to this community.

After years of asking, “Why me?” I never again have to ask that question.

Through sharing my story in the media, and through speaking engagements, I

have turned it around from a challenge to a gift.
