Make Flowers Last What would Valentine’s Day be without a beautiful bouquet of flowers? In addition to chocolate, cards and dining out, flowers particularly roses - are among the most popular gifts. According to a survey by the National Retail Federation, 58 percent of American men and 16 percent of American women were projected to buy flowers for Valentine’s Day 2016, spending a total of $1.9 billion. Similar spending is predicted for in 2017.

Flowers of all shapes, sizes, colors and aromas can make popular gifts this February. Prolonging the life of beautiful blooms is a priority for those who want their Valentine’s Day arrangements to endure for as long as possible.

Florists and other experts differ with regard to the best methods of preserving flowers. Here are some ideas to try.

Trim Stems Before Immersing Them in Water The natural emollients and sap in the stems of flowers may cause a film to form over the bottom of

This can reduce the flower’s uptake of water. To alleviate this, cut the stems once the flowers are home. A 45-degree angle allows for the absorption of the most water. You can recut them at each water change as well.

Clean Vases of Bacteria Be sure that vases or other vessels you use to hold flowers are completely clean. Bacteria can cause the flowers to decompose prematurely. Use a diluted bleachand-water solution to clean vases thoroughly between uses.

Watch Flower Placement Sunlight and heat may dry out the blooms. Prolong the life of flowers by placing them in the darkest, coolest area of the home.

Treat the Water To preserve flowers, do your best to reduce bacteria, provide a food source for the flowers and manage the pH so that the uptake of water will continue to be strong. Sugar can be an adequate food source.

Scrapbooking to Document Your Year Many interesting and special events take place during the course of a typical year. While the trend is to share photos and anecdotes via social media, these memories tend to be forgotten soon after they are posted. Rather than relegate birthdays, holidays, school milestones and other such yearly events to the black hole of cyberspace, crafty men, women and children may want to display them in more prominent ways.

Scrapbooking is a popular hobby that can help people document various events over the course of the year. But scrapbooking can be much more than that as well.

Scrapbooks can serve as valuable resources that speak to the way life once was.

Such traditions are not new. Books highlighting family memorabilia, such as recipes, poems, letters and illustrations, were popular in England as early as the 15th century. Even school yearbooks are a type of scrapbook, highlighting students and events in a single convenient book.

The reasons for scrapbooking are the same today as they once were. Scrapbooks preserve memories, record family stories and pass down information through generations. Scrapbooks can even be customized in any manner their creators desire.

For those who have resolved to devote more time to documenting happy times and special events in the year ahead, scrapbooking is a great way to do just that. Here’s how to make the process creative and successful: Devote a box to “scraps.” At the beginning of the year, set aside a medium-sized box, such as a

shoebox, that can store various items you want to include in your scrapbook. These may include ticket stubs, receipts, brochures from trips or any other items you deem worth saving.

Make time to scrapbook. Set aside a few days each month to go through collected items and organize them so you have an idea of what will be included on your pages. Every event may not make the final cut, but that’s up to you.

Indulge in some craft-store shopping. Not everyone has the time to design each scrapbook page from scratch. Fortunately, there are numerous pre-designed templates or slip-in pages that require little work on the part of scrapbookers.

Use your own handwriting.

Handwritten sentiments can make the scrapbook even more meaningful.

Don’t overload with photos. Let one or two photos on a page best convey the emotions and stories.

Create balance with white space, text and other accents.

Categorize your photos.

Disorganized photos can make scrapbook creation more challenging and ultimately frustrating. Organize your photos by month and rely on cloudbased photo storage systems to keep them safe. Then, when you need them, you can print only those images you want to include in your book.

Have fun with the process. You have the entire year to create a beautiful scrapbook. Take your time and experiment with different ideas.

Many people spend winter huddled indoors. For winter sports enthusiasts, however, the arrival of snow and chilly temperatures means the start of a season of outdoor fun. Those who see winter as a time to embrace their love of sports may appreciate learning more about some of the sports that are most popular during the colder months of the year.

Ice Hockey Hockey is one of the most popular winter sports. In 1994, Parliament passed the Canada’s National Sport Act, which declared hockey the official national winter sport of Canada. The origins of ice hockey are somewhat uncertain, though some historians claim the first set of rules to govern the sport were written by students at Montreal’s McGill University in the 1870s.

Downhill (Alpine) Skiing SnowSports Industries America indicates that, in the 2014-2015 season, more than nine million American Alpine skiers took to the slopes, and the sport continues to attract new devotees each year.

Historians state that skiing evolved as a method to cross the landscape in the winter when marshlands froze over. Cave drawings suggest that man used skis during the last Ice Age in the Palaeolithic period. Yet the birth of modern downhill skiing is often traced to the 1850s when Norwegian legend Sondre Norheim popularized skis with curved sides and made skiing a sport instead of just a mode of transport. Skiing ultimately became quite popular in Russia, Finland, Sweden and Norway. Today there are various types of downhill skiing, including mountain skiing, extreme cat skiing and heli skiing.

Curling Curling may now be seen as a largely Canadian sport, but it is widely believed to be one of the world’s oldest team sports, tracing its origins to Great Britain. The World Curling Federation states paintings by the 16th Century Flemish artist Pieter Bruegel portrayed an activity similar to curling being played on Scotland’s frozen ponds. The earliest known curling stones came from the Scottish regions of Stirling and Perth, dating all the way back to 1511.

Ice Skating Speed skating and figure skating are derivatives of early ice skating, which is believed to have started in Finland more than 3,000 years ago.

Skates were sharpened, flattened bone strapped to the bottom of a shoe and glided on top of the ice. The Dutch added edges to steel blades around the 13th or 14th centuries. Eventually, skating was brought to England from the Netherlands.

Winter Hazards Winter can be a beautiful time of year, particularly when freshly fallen snow blankets the landscape. However, winter is also a time fraught with potential peril.

The same winter weather that makes landscapes so pristine can make roads and walkways - and even being outside - dangerous.

The U.S. Department of Transportation says weatherrelated vehicle crashes killed 6,253 people last year and injure more than 480,000 per year.

These accidents most often occur when roadways are wet, snowy or icy. Yet, winter driving is not the only seasonal hazard. Here are some common winter activities and how to avoid getting hurt when engaging in them.

Driving Exercise extra caution when driving on roadways during the winter, as they may contain ice or snow. All it takes is a small coating of precipitation on roadways to make driving treacherous. Wetlooking roadways may be wet, or they may be covered by ice, and it’s difficult to tell the difference with the naked eye. Always slow down and assume you are driving on ice. Make every effort to improve visibility. This includes checking windshield washer fluid levels and ensuring windshield blades are in good working order.

Snow Removal Shoveling or removing snow by various methods can be strenuous work, taking even those who feel they are in good shape by surprise. A 2011 study conducted by researchers at the Center for Injury Research and Policy of The Research Institute at Nationwide Children’s Hospital found that an average of 11,500 snow-shovelingrelated injuries and medical emergencies were treated in U.S.

Lower back injuries, falls, injuries to the arms and hands and cardiacrelated injuries account for many of the incidents sustained while removing snow. There’s also the risk of injury from collisions with pedestrians and snow plows.

Plows and bobcat-type devices can cause serious injury. Exercise caution when operating such machines.

Roof Snow Removal Removing snow from a roof can be a dangerous prospect. Always use the appropriate equipment, which includes telescoping poles, rather than climbing on slippery roofs. This may be a job best left for a professional, who will have fall-arrest systems and nonslip safety boots.

Dressing for Conditions Venturing outdoors for winter fun may be enticing, but never put your health at risk for the sake of fun. The Mayo Clinic says hypothermia is a medical emergency that occurs when the body loses heat faster than it can produce heat, causing a dangerously low body temperature. Wear appropriate clothing to prevent hypothermia, which may not produce any initial symptoms. If shivering stops or confusion and slurred speech set in, severe hypothermia is in effect and a person should be moved indoors and gently warmed. Mild hypothermia is also possible indoors, typically when the elderly spend several hours in poorly heated homes.

Winter may be beautiful, but it also can be hazardous. Taking precautions and using common sense help avoid dangerous situations.

Get Prepared for Summer Camp Season Summer camp season is just around the corner. Each summer, millions of children depart for campsites around the country to swim, hike, craft and enjoy the companionship of friends.

Summer camps in North America were first established in the 1880s and were attended by children without their parents for overnight stays. By the 20th century, summer camps had become an international phenomenon, and various organizations hosted traditional summer camps or camps geared toward religion, sports, music and other subjects and activities. According to the American Camp Association, each year, more than 14 million children and adults in the United States attend camp. America is home to more than 14,000 day and resident camps (8,400 are overnight camps and 5,600 are day camps). Nonprofit groups are the largest sponsors of summer camps.

Many people put off summer camp planning until it is too late. Parents should keep in mind that camps begin registration early in the year and have specific cut-off dates for enrollment. Parents who want to beat the crowds this year can use this guide to help plan a summer camp agenda: Attend an orientation seminar.

Take the time to visit prospective camps for a tour, and use this open house as an opportunity to learn more about the programs offered.

If available, find a camp employee to discuss your child’s eligibility for enrollment. Some camps may offer webinars for convenience.

Fill out the enrollment package completely. Each camp has their own requirements for registration.

Expect to submit some personal information, including a medical

background and proof of insurance, names and numbers of emergency contacts, and any other pertinent information as it applies to the camper. This may include allergies, fears, physical or mental disabilities, or even preferences in camp courses.

Establish payment schedules.

Summer camps vary in price. The ACA says camp costs range from $100 to more than $1,500 per week. However, many accredited camps offer some sort of financial assistance for children from families with limited financial means. If cost is a factor, be sure to broach the subject.

Prepare children for the physical challenges a camp may present.

Summer camp activities may be rigorous, and campers may need to be cleared by a physician before starting. Be sure to schedule your child a physical and bring along any pertinent forms. Children also can increase their levels of physical activity compared to the often sedentary nature of winter. Such preparation can prevent injuries when engaging in outdoor and physical activities.

Shop for supplies. Camps are likely to provide a list of requirements with regard to clothing and other equipment campers will need.

Make sure kids have enough shorts, T-shirts, socks, athletic shoes, swimsuits, toiletries and other camp necessities before they leave.

Keep children in the loop. Engage children in the planning process to help alleviate their fears and get them excited about summer camp.

Summer camp can foster lifelong memories. Parents can help kids prepare in advance for the fun that’s soon to arrive.

Scan important documents and save them on a computer. Some documents cannot be discarded, but that does not mean they have to be stored in bulky file cabinets or desk drawers. Scan important documents such as medical receipts or tax returns and save them on your computer where they won’t take up any physical space. Purchase an external hard drive as a safety net where you can store backups of important documents in case a computer crashes and cannot be rebooted.

Thin out DVD and CD libraries.

Thanks to streaming services and digital music players, DVDs and compact discs have become somewhat obsolete. Discard or donate DVDs that you can just as easily stream through your television, and convert compact discs to digital files that you can play on your computer and MP3 players, ultimately donating the discs and clearing space.

Purchase furniture that doubles as storage. Storage ottomans and benches can help clear common areas and bedrooms of clutter such as blankets and bed linens that can make rooms feel more claustrophobic. Storage furniture might not get excess items out of the house, but such furnishings can create a more comfortable, welcoming environment.

Switch to e-statements for bank documents and utility bills. Paper is a big contributor to household clutter. That’s still the case even though many adults now pay the majority of their bills online. When given the chance to choose between paper or e-statements, opt for the latter so bills and bank statements don’t pile up on your desk or throughout your home office. If you still want to keep important bills and bank statements, download them to your computer and keep them in a designated folder on your desktop.

Adopt an “out with the old, in with the new” mantra.

Resolve to discard old items after purchasing new ones or receiving birthday or holiday gifts. Rather, a lifestyle overhaul is often the most effective weight loss strategy.

Weight loss is a popular resolution come the new year. But in spite of that popularity, the resolution to lose weight is no small task.

When resolving to lose weight, men and women will encounter an abundance of information about dieting and weight loss. It’s difficult to know who to believe and to determine which plans will be effective.

Recognize that quick fixes do not work. Drastic weight loss approaches may produce immediate results, but such plans are not sustainable. Drastic plans include certain detoxes and cleanses; diets that eliminate all but a few foods; some prepackaged foods; and foodreplacement strategies. Feelings of deprivation or boredom may make people following these diets unsuccessful in the long run.

Losing weight means changing one’s food and exercise plans over the long haul.

Research published by Shape magazine says nearly one in three young people embark on a new diet each month, but 45 percent give up after one week, and about half abandon their goals within a month. Data released in the Daily Mail in 2013 said that although one in seven (13 percent) women in the United Kingdom stick to a diet for 13 weeks or more, nearly one in five (19 percent) succumb to their favorite food cravings after a month.

Oyster Stew

Makes 8 Servings

Ingredients 24 fresh oysters, shucked, juices reserved 4 bacon slices, minced 1 onion, minced (about 11⁄4 cup) 1⁄4 cup all-purpose flour 11⁄2 quarts milk 1 bay leaf 1 cup heavy cream, heated 1⁄2 teaspoon salt, or to taste 1⁄4 teaspoon freshly ground black pepper, or to taste Oyster crackers

Ingredients 6 ounces pancetta, cut into 1⁄2-inch pieces 1 tablespoon plus 1 teaspoon olive oil 1 cup finely chopped onion 2 large cloves garlic, finely chopped 1⁄4 cup lightly packed, coarsely chopped fresh basil 3⁄4 cup chicken broth (low sodium, if canned) 1/4 cup heavy whipping cream 1⁄4 cup freshly grated Parmesan cheese pinch of salt pinch of freshly ground black pepper 9 ounces cheese-filled egg tortellini 9 ounces cheese-filled spinach tortellini Extremely Flaky Sour Cream Crust (see below)

Few dishes match a season better than stew matches winter. Stew is an ideal meal for cold days. Though traditionally served on New Year’s Eve, this recipe for Oyster Stew makes a perfect dish all winter long.

Directions Drain the oysters in a colander over a bowl. Reserve the juice. Heat a soup pot over medium heat. Add the bacon and cook until crisp, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate. Add the onion to the bacon fat and cook until translucent, about 6 minutes. Do not brown. Reduce the heat to low, add the flour, and cook, 3 to 4 minutes, stirring constantly with a wooden spoon.

Add the milk and reserved oyster juice in batches, using a whisk to work out any lumps between each addition. Add the bay leaf and simmer, 20 minutes, skimming as necessary. Add the whole oysters and continue to simmer until the oysters are barely cooked, about 5 minutes. Remove from heat. Add the hot cream and season with salt and pepper. Serve in heated bowls, garnished with the reserved bacon and oyster crackers.

As warm weather slowly turns cold, certain dishes that don’t make much sense serving during the summer start to sound more appealing. Potpie is one such dish. Cooks who want to try something new with potpie can try the following recipe for Tortellini & Pancetta Potpie.

Directions Position a rack in the middle of the oven. Preheat the oven to 400º F. Rub 1 teaspoon olive oil inside a baking dish with an 8-cup capacity. In a medium skillet, cook the pancetta pieces over medium heat until the edges brown, about 10 minutes. Transfer the pancetta to a large bowl. In the same skillet, heat the 1 tablespoon olive oil over medium heat for 1 minute. Add the onion and cook until it softens, about 5 minutes. Add the garlic and basil and cook for 1 minute.

Stir in the chicken broth and adjust the heat to cook it at a gentle boil until it is reduced to about 1⁄2 cup, about 5 minutes. Add the cream, bring to a boil, then immediately remove the pan from the heat. Stir in the Parmesan cheese. Stir the sauce into the pancetta in the bowl. Add the salt and pepper and taste for seasoning. Set aside.

In a large pot of salted boiling water, cook the tortellini for 5 minutes. Drain the tortellini well and stir them into the pancetta and sauce to coat them with sauce. Transfer the pasta to the baking dish.

Ingredients 1 cup unbleached all-purpose flour 1⁄2 teaspoon baking soda 1⁄4 teaspoon salt 1 stick cold unsalted butter, cut into 16 piece s 1⁄4 cup cold sour cream Directions To make the pastry in an electric mixer: Sift the flour, baking soda and salt into a large bowl. Add the butter pieces and mix them with an electric mixer on low speed until the largest of the butter pieces are the size of small lima beans, about 1 minute. The butter pieces will be different sizes and there will still be some loose flour. Add the sour cream and continue mixing until large clumps of smooth dough that pull away from the sides of the bowl form , about 30 seconds.

Stop the mixer and scrape the beaters clean , if needed.

To make the pastry by hand: Sift the flour, baking soda and salt into a large bowl. Use a pastry blender, your fingertips or 2 dinne r knives to combine the flour mixture and the butter until lima bean-size pieces form. Add the sour cream and stir with a large spoon for about 2 minutes until clumps of smooth dough form .

Form the dough into a smooth ball, flatten it into a 6-inch disk, wrap it in plastic wrap, and refrigerate for 30 to 60 minutes.
