Plan Your Holiday Escape Millions of travelers take to the roads, rails and sky in the days surrounding major holidays. While a large percentage of people travel miles and miles to visit with friends and family members these times of year, others use days off from school and work as prime times for vacations. Holiday excursions can be exciting, but they may require some extra planning and patience. Larger crowds at airports and more cars on the roads can make holiday-timed travel challenging. Make these trips memorable by reducing travel-related stressors. Research Thoroughly Study your travel options to determine the best way to get from point A to point B. Weigh the cost of your trip, as well as the time involved in traveling. Driving may seem like a good idea if you don’t want to stretch your budget, but it may eat up too much of your vacation time if you’re traveling long distances. If you will be flying, learn the airline baggage restrictions and the security measures in place at your departing airports. This makes navigating the airport that much easier. Planning well in advance also enables you to get the best prices possible. Studies have found that those who booked tickets for domestic travel 49 days prior to departure saved the most money. Develop a Contingency Plan Even the best laid plans can go awry. Know what to do in the event a particular rest stop or scenic spot along the way is closed or if travel plans get delayed or rerouted. Certain travel apps provide real-time updates on delays or provide gate numbers prior to arriving at the airport. Other apps indicate which gas stations have the lowest prices or which rest stops offer the cleanest bathrooms. Pack Light Ship gifts or keepsakes ahead of time so you do not have much to lug through airport terminals or rail stations. If you must take gifts with you, wait until you arrive at your destination before wrapping them, as this makes items easier to inspect. If you’re going on vacation instead of just a weekend getaway, you will probably return home with more items than you brought because of gifts or souvenirs. Pack an extra tote bag or an empty carry-on suitcase where you can store extra items accumulated on the trip. Otherwise, see if these things can be shipped home. It may be cheaper to ship items than to pay airline baggage fees. Travel Off-Peak It’s often quicker and less stressful to travel during off-peak hours when roads and airports are less crowded. Off-peak hours include overnight, early morning or late evening. Red-eye flights or offpeak travel times also may be less expensive. Travelers looking to avoid crowded roadways or airports may also want to avoid especially popular travel days, such as the Wednesday before Thanksgiving. Leave a few days before a major holiday or arrive a few days after to avoid the crowds.

Thousands of people flock to the coasts of oceans and lakes to enjoy refreshing dips into the water and soak up some rays on the sand. But enjoyable days can turn somewhat aggravating if sand from the beach was not washed off prior to leaving the surf and sun behind. Ensuring sand stays at the beach and isn’t tracked home may require a little patience, but it is possible to hit the beach without taking sand home.

Arrive prepared. Bring supplies to the beach that will make it easy to keep sand from finding its way into your car or home. A large trash bag, some extra towels that never hit the sand and some moist wipes to clean leftover sand off your arms and legs can help you leave the sand at the beach where it belongs. Also, establish a time to leave the beach well in advance so everyone has time to clean up. Reserve bags specifically for the beach. Reserve bags for the sole task of transporting items to and from the beach so you are not adding to your collection of bags that have sand on them with each beach visit you make. These also can be used to store sandy kids’ toys. Protect electronics and other sensitive items. Sand can damage phones, tablets and other electronics. Zip-top bags provide ample storage and can keep devices safe from sand that
can be lodged in crevices or can scratch screens. Clean sand off of clothes and chairs in the parking lot. Give clothes, beach chairs and other items exposed to sand a good shake or wipe-down in the parking lot before driving home. Give extra attention to sunblockcovered bodies. Sprinkle some cornstarch or baby powder on your skin before toweling off, as doing so can help release any sand that’s stubbornly sticking to your skin. Do not forget to wipe off sandy feet as well. Wrap up towels and sandy items. Put anything used to wipe off sand into a garbage bag and make sure it is tied tightly. After shaking the items off in the parking lot, do so again in your yard before dropping them into the hamper. Keep dry towels in the car. Even the most ardent cleaner may still track some sand along. Placing towels over the seats in the car will catch any errant sand. Towels also protect the seats from damp swimsuits. Do an extra cleaning at home. Hose down any chairs and items brought to the beach once you return home. This will dislodge any remaining sand and prevent it from being tracked inside. Store belongings in a shed or garage. Avoid tracking sand indoors by keeping beach supplies in the garage or a backyard shed.

Kiwi Fruit Sorbet Dessert and summer are a match made in heaven. Sweltering summer afternoons might not be comfortable, but any discomfort can be quickly washed away with a refreshing dessert, such as the following recipe for “Kiwi Fruit Sorbet”... Makes about 1 quart Ingredients 2 teaspoons grated lime or lemon zest 3⁄4 cup sugar, divided 3⁄4 cup water 2 pounds kiwi fruit (about 8 kiwi fruit), peeled and quartered 6 tablespoons freshly squeezed lime or lemon juice 2 limes, quartered Directions In a small bowl, mash the zest with 1 teaspoon of the sugar to release the oils. Combine the remaining sugar and water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Cook until the syrup is clear. Remove from the heat and let cool to room temperature. In a food processor or blender, purée the kiwi fruit with the juice, syrup and sugared zest. Transfer to a container, cover and refrigerate until thoroughly chilled, about 3 hours. Freeze in an ice cream maker according to the manufacturer’s instructions. Or, to freeze without an ice cream maker, pour the mixture into a 9-inch nonreactive square pan. Cover with aluminum foil or plastic wrap and freeze just until solid, 2 to 3 hours. Scrape out into an electric mixer or food processor and process briefly until light and fluffy.
Kansas City Fried Chicken While backyard barbecue menus are often dominated by hot dogs and hamburgers, hosts can expand that menu however they see fit. For example, fried chicken is a natural complement to popular backyard barbecue fare, such as potato salad and fresh watermelon. Store-bought fried chicken can suffice in a pinch, but hosts who want to go the extra mile and offer a delicious homemade meal can prepare the following recipe for “Kansas City Fried Chicken”... Serves 4 to 6 Ingredients 1⁄2 cup buttermilk 1⁄2 cup hot sauce 51⁄2 tablespoons fried chicken spice mix (see below), divided 2 tablespoons kosher salt 2 4-pound whole roaster chickens, cut into 10 pieces each 5 cups all-purpose flour 21⁄2 cups canola oil Directions In a large mixing bowl, thoroughly blend the buttermilk, hot sauce, 2 tablespoons of the fried chicken
spice mix, salt and 1 cup cold water. Press the chicken pieces into the marinade. Place in a covered container (ensuring that the chicken is covered with marinade) and refrigerate for 24 hours. Thoroughly combine the flour with 31⁄2 tablespoons of the fried chicken spice mix in a medium bowl. In a large and deep pan, or an electric skillet, add enough canola oil to fill the pan one-third full. Heat the oil to 350º F. Set the marinated chicken next to the bowl of flour, close to the skillet. Remove a piece of chicken from the marinade, allow any excess to drain, then dredge in the flour mix. Shake off the excess flour and slide into the skillet. Fry the chicken for 4 to 5 minutes on each side, or until the internal temperature reaches 165º F. Fry the chicken in batches, being careful not to crowd the skillet and to maintain the right temperature.
Remove the fried chicken to a sheet pan covered with three or four layers of paper towels. When all the chicken has been fried and dried on the paper towels, allow to cool slightly before serving.
FRIED CHICKEN SPICE MIX Makes 2 cups, plus 2 tablespoons Ingredients 6 tablespoons kosher salt 6 tablespoons sweet paprika 5 tablespoons onion powder 5 tablespoons garlic powder 3 tablespoons dry mustard 3 tablespoons cracked black pepper 1 tablespoon ground cumin 1 tablespoon dried thyme 1 tablespoon poultry seasoning 1 tablespoon dried oregano 1 tablespoon dried sage
1 tablespoon chili powder Directions Thoroughly blend all of the ingredients in a medium mixing bowl and transfer to a covered container. Keep in a cool, dry place until needed.

Many people experiment with fireworks on their own, but that can be dangerous. Thousands of people are injured by fireworks in the United States each year. Whether purchased legally or on the black market, fireworks pose a considerable threat. Fireworks purchased on the black market may be especially dangerous, as they likely were not subjected to government regulations and inspections. While summer might be the season of fireworks, it’s important that people who intend to incorporate fireworks into their summer festivities keep safety in mind at all times. Eat Healthy on the Go Nice weather often equates to an uptick in road trips. During such trips, motorists and their passengers will need to take breaks to refuel both their vehicles and their bodies. Rest stop and convenience store snack options are often unhealthy, and it can be difficult for nutrition-minded travelers to find acceptable fare. But a little creativity, coupled with some smarter choices, can ensure road trips don’t derail healthy diets. Bring food along. One of the easiest ways to eat healthy while traveling is to bring meals and snacks with you. Look for portable foods that may not require much refrigeration, such as fruit bars or trail mix. If you have room in the car for a small cooler or insulated lunch packs, fill them with fresh fruits and sandwiches. Opt for lean lunch meats like chicken and turkey. Avoid using cheese or dressings like mayonnaise that can quickly spoil. Some other easily portable foods include applesauce cups, oatmeal packets (all you need is hot water from a rest stop) and low-sodium, low-fat jerky. Pack plenty of water, a healthier choice than soft drinks that will also keep you hydrated when sitting in the car for extended periods of time. Find healthy fast food. If packing food is not an option or if you just prefer the convenience of getting something along the way, you can still make informed choices. Opt for foods that are roughly 500 calories or less and boast plenty
of protein and whole grains to help you feel full longer. You may not be able to enjoy lowsodium foods, as many fast food options go heavy on the salt. Just steer clear of extra condiments that only increase those already considerable sodium levels. If you must opt for fast food, do not order sides of fries or chips, which will only make meals less healthy. Also, avoid sugary sodas. Many fast food restaurants offer some healthy fare, such as grilled chicken sandwiches. Order such sandwiches plain or with extra lettuce and tomato for a healthy crunch. Order sandwiches on whole-wheat buns when possible. Kids’ meals tend to have healthy portion sizes. If possible, purchase a kid’s meal and opt for a side of sliced apples or another healthy alternative.

Tips for Finding a Great Summer Rental The growth of lodging websites such as Airbnb and VRBO has given travelers more temporary housing options than ever before. Such sites may appeal to those vacationers who want a taste of home away from home without having to pay potentially exorbitant hotel prices. The cost savings of vacation rentals can be considerable, providing more bang for budgetconscious travelers’ bucks. But vacationers who have never strayed from the hotel/resort path may be hesitant to dip their toes into the vacation rental waters. While travelers accustomed to staying in luxury hotels may need to adjust their expectations when booking vacation rentals, the following are some ways to find a great vacation rental that suits you and your fellow vacationers: Make a list of your lodging priorities. Popular lodging and vacation rental websites offer an array of options, so make a list of your lodging priorities so you can
find the right fit without having to peruse hundreds of listings. If you want to save money by cooking your own meals, then a home with a full kitchen may be your biggest priority. If beach access tops your list, then you can save time by searching for oceanfront homes or condos. If saving money is your biggest priority, then expand your search to properties further away from coastal areas or homes, but are within walking distance of local nightlife. What you sacrifice with regard to view and convenience you’ll recoup in cost savings. Don’t pull the trigger too quickly. Low prices may tempt prospective travelers, especially those accustomed to staying in expensive hotels, to book lodging before they fully vet a property. Fight the temptation to book a rental before you have done your homework. Learn as much about the rental as you can before booking your stay. Read reviews of the property and carefully examine the property listing so you know exactly what you are
getting. Carefully examine any photos included in the listing, and try to confirm that the property is not in foreclosure, which may pose problems when you’re ready to embark on your trip. Find out as much as you can about the property owner as well. Some are renter-friendly, while others may have poor reputations. Determine who handles any potential problems that arise during your stay. Unlike a hotel stay when you can simply call the front desk and request a maintenance staffer be sent up to address any problems that arise in your room, you may be on your own in a vacation rental should the refrigerator go on the fritz or the air conditioning unit suddenly stop working. Determine how problems are handled before booking a rental. Rental homes that are part of a homeowners’
association may have on-site maintenance ready to respond to any issues, while homes offered by private homeowners may come with no such benefits. Book early if you’re attending a specific event. Hotels book up quickly on busy weekends, and so do vacation rentals. Vacation rental prices fluctuate just like the cost of hotel rooms, so begin your search early if you are traveling to attend a festival or another event that figures to attract large crowds. Rentals can save travelers money, but be sure to find the right fit.

Boating Tips for Beginners Learning to boat or sail is similar to learning to drive an automobile. Neither one happens overnight. Learning to get around on the water can be exciting, but it can also be intimidating to take over the reins of a boat for the first time. Though beginners might be apprehensive when they first start to boat or sail, there are some tips that can make it a little easier for those new to captaining their own ship: Start small. Much like teenagers learning to drive are often more comfortable learning behind the wheel of a compact car, boating beginners might be more comfortable learning to sail on a small boat. Smaller boats are easier to maneuver, making even the most nervous novice a little more comfortable. Choose calm waters in which to practice. According to the United States Coast Guard, in 2010 there were more than 4,600
recreational boating accidents that involved 672 deaths. Though boating accidents in both the United States and Canada have been on the decline, accident statistics illustrate just how dangerous it can be even for fully licensed and experienced sailors to operate a boat. That said, beginners should always practice in calm waters that don’t boast big waves or lots of fellow boaters. This gives beginners the chance to learn the feel of the boat without the added pressure of handling choppy waters or traffic. Read the weather reports. Veteran boaters struggle with inclement weather from time to time, so beginners should expect to struggle with adverse conditions as well. But don’t be caught off guard by bad weather. Always check the weather reports before going out, and be sure to bring along appropriate attire and gear. Don’t go it alone. Boating and sailing come with their own
t e r m i n o l o g y, which beginners are typically unfamiliar with. Before heading out on the water, learn as much of this terminology as possible, be it by studying manuals or books, or even asking experienced friends for help. When taking to the water, bring those friends along. Respect other b o a t e r s . Boating is a hobby enjoyed by millions, and boaters should always respect that there are other people on the water as well. Whether you’re out in the middle of the ocean or relaxing at the pier on your docked boat, respect the other boaters by keeping the music
down and always discarding of trash in a responsible way. Far too many boaters or boat passengers dump their garbage over the side of the boat, so always be sure you and your passengers are respectful of Mother Nature and other boaters.

Considerations for Outdoor Entertaining Outdoor parties have a flair all their own. Entertaining outside means being able to enjoy the fresh air, sun and extra space that the great outdoors allows. Entertaining outdoors may include intimate barbecues with friends, or weddings with hundreds of guests. While parks, yards and gardens can make beautiful backdrops for parties, hosts still need to emphasize preparation when throwing an outdoor party. Select and Prepare the Space Many homeowners host parties for friends and family in their backyards. Whereas other spaces, including parks, require the transport of food and other supplies, backyards offer the ultimate in convenience, allowing homeowners to cook foods in their kitchens and then carry items directly to the backyard.

Backyards are not always set up or equipped for events, and preparation will be required to turn the yard into a party-worthy
area. Plan a day for cleanup. Remove toys, tools and debris. Be sure the grass is mowed and clippings are removed. Address any tripping hazards and make sure there is an easy path in and out of the party, as well as to the restrooms. Take inventory of tables and seating options and rent or buy extra seating if necessary. Provide Shade and Shelter Every party host hopes for good weather when entertaining outside, but it is best to have a contingency plan in place just in case Mother Nature does not cooperate. Awnings and patio umbrellas can only do so much, and it may be necessary to install pop-up tents or stationary gazebos to protect guests from the elements. Think about renting tents from party supply companies, which usually will erect the tents and take them down after use. Even if the weather will be pleasant, have spots where guests can escape the sun. It can be

uncomfortable and dangerous to sit in the sun for long periods of time. Keep Food Temperatures Consistent If you plan to offer buffet-style cuisine, arrange for serving dishes that will keep foods hot or cold as needed. The U.S. Food and Drug Administration’s Center for Food Safety and Applied Nutrition advises that it is important to keep foods safe when entertaining outside. Cold foods should be kept in coolers or served on beds of ice. Use hot chafing dishes to keep hot foods at a serving temperature at or above 140º F. Refrigerate or refreeze foods within two hours or after one hour if it is above 90º F outside.

lighthouses a summer guide FIRE ISLAND LIGHTHOUSE
4640 Captree Island • 631.661.4876 • www.FireIsland.com The Fire Island Lighthouse is located on the western end of the Fire Island National Seashore, between the town of Kismet and Robert Moses State Park. Visitors can access the lighthouse via a quick walk from the Field 5 parking area; from Kismet, the Fire Island Lighthouse is just a short 10 minute walk down the beach. The Fire Island Lighthouse is the oldest and most significant landmark associated with Fire Island history. This magnificent lighthouse was built in 1857, and served as the guiding light for many European immigrants sailing into New York Harbor. The Fire Island Lighthouse Preservation Society has restored the lighthouse and it is open to the public as an observatory and museum. The lighthouse is open from 9:30 a.m. to 5:30 p.m. daily during the summer, and guided tours are available. The Fire Island Lighthouse observatory offers amazing views of Long Island, the Atlantic Ocean, the Great South Bay and Fire Island beaches. On a clear day, the Fire Island Lighthouse offers views of the New York City skyline – a truly spectacular vista that must be experienced to be believed.

Located at the tip of eastern Long Island, the lighthouse provides unforgettable 360° views of Block Island Sound, the Atlantic Ocean and beyond. The Montauk Point Lighthouse is the oldest lighthouse in New York State. The lighthouse was authorized by the Second Congress, under President George Washington, in 1792. Construction began on June 7th, 1796, and was completed on November 5th, 1796. It still serves as an aid to navigation. The Montauk Point Lighthouse was designated a National Historic Landmark in recognition of the property’s national significance in the history of the United States on March 2nd, 2012, by the Secretary of the Interior.

The Huntington Lighthouse Preservation Society, Inc. was formed in 1985 by concerned citizens to prevent the tear down and demolition of the Lloyd Harbor Light Station and its replacement with an automated light tower by the United States Coast Guard. The objectives of the organization are to restore, preserve and maintain the historic lighthouse listed on the National Historic Register as the Huntington Harbor Lighthouse. The organization is dedicated to ongoing preservation of the interior and exterior, and to preserve it for public use as an educational and historic resource, while maintaining its use as an active aid to navigation.

Tips to Grill the Perfect Burger Hamburgers are a staple at backyard barbecues. Though burgers are a relatively simple food, mastering the technique to grill burgers is no small feat, as there is more to great grilled burgers than simply firing up the grill and dropping down a patty. Choose fresh ground beef that has a decent percentage of fat. The fat-to-lean meat ratio should be around 20 percent fat to 80 percent meat. Spend a little more to get freshly ground meat that has not been previously frozen. Don’t overwork the burgers with a lot of handling. This will warm up the fat in the burger, which causes it to emulsify and could
make the meat rubbery. Reconsider adding a lot of herbs, spices or add-ins to the burgers, as such items can detract from the flavor of the meat. Extra herbs and spices also may require extra mixing, which can lead overhandling. Push a dimple into the top of the burger, which will help prevent the burger from expanding upward and out while cooking and rounding out in the process. The dimple will keep the top of the burger flat, which facilitates easy topping.

Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste and add more sugar if desired. Garnish with lime wedge and mint. Variations: Add some strawberries or raspberries
