Welcome Spring! We hope you are enjoying the mild temperatures and blossoming flowers after the long Winter we experienced. There is something about this season of revitalization that brings a sense of renewal and growth to everything, life on Long Island included. In keeping with that theme, we have chosen to highlight several topics in this issue, from healthy eating tips to methods of combatting stress to exercise tips for those looking to get in shape for the upcoming summer bathing suit season. Hungry for a new recipe to try? We have a scrumptious Rack of Lamb dish, as well as a new spin on Barbeque Chicken Wings with Bleu Cheese Dressing. These may not help cut the calories, but we all deserve to indulge a little from time to time! Of course, Spring is also the season for Mother’s and Father’s Day celebrations and Memorial Day, the unofficial kickoff to the summer barbeque season - plenty of opportunities for fun family gatherings and outings with friends and neighbors. Time to shake off that Winter hibernation! Those positive feelings can be addictive, but it’s important that beginners do not go too hard too quickly when beginning a new exercise regimen. The right combination of diet and exercise is one of the keys to a long and healthy life. While many people find adapting to a healthier diet challenging, that challenge often pales in comparison to the intimidation felt when working out for the first time in years.

The best approach and the one that’s likely to be most successful over the long haul is to find an exercise routine that engages you and that you find enjoyable. Strength training can make your body more durable, and cardiovascular exercise can reduce your risk for various health problems, including heart disease. Track your progress. Returning to exercise after an extended period of inactivity can be quite the challenge, but it’s nothing motivated men and women cannot overcome.

Stretch after working out. Stretching can improve flexibility, and that may decrease your risk of future injury. In addition, improved flexibility may improve your exercise performance by improving your range of motion and helping your muscles work more effectively. Muscles contract during a workout, and stretching after workouts can help reset those muscles to their natural position. Include both static stretching and foam rolling in your post-workout stretching routine. Find a routine that works for you. Many men and women feel they must sign up for a gym

Smoked Chicken Wings with Bleu Cheese Dip

Chicken wings are beloved by people of all ages and appetites. While many people only eat wings when out on the town, this lovable bar food can be enjoyed at home as well. The next time the big game is on or you simply have a hunger for homemade wings, try your hand at the following recipe for “Smoked Chicken Wings With Bleu Cheese Dip”:

Serves 4 INGREDIENTS Blue Cheese Dip 2 cups bleu cheese crumbles, divided 1 cup mayonnaise 1/2 cup buttermilk 2 teaspoons hot sauce 1 teaspoon Worcestershire sauce 1/2 teaspoon kosher salt 1/4 cup finely chopped scallions 1/4 cup finely chopped celery Marinade 1/2 cup vegetable oil 1/2 cup hot sauce 4 tablespoons Virgil’s Dry Rub 4 tablespoons granulated garlic 4 tablespoons granulated onion Juice of 1/2 lemon Wings 8 large chicken wings 1/2 cup Virgil’s Dry Rub (see below) Sauce 10 tablespoons unsalted butter 1 teaspoon cornstarch 4 tablespoons white vinegar 3/4 cup hot sauce 1/4 teaspoon cayenne pepper

DIRECTIONS 1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce and salt in the bowl of a food processor and blend on low until smooth. 2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the larger bleu cheese crumbles. Place in a covered container and refrigerate overnight. 3. Mix all the marinade ingredients in a large mixing bowl. mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days. 4. Preheat the grill or smoker to 245º F. 5. Spread out the wings on a sheet pan and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over. 6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker or hickory chips on the coals or gas burners. 7. Cook the wings for about 3 hours, flipping every 30 minutes (their internal temperature should be about 165º F when cooked). 8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate. Whisk the cornstarch into the white vinegar, in a small bowl. 9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat. 10. Add the cayenne and slowly whisk in the cold butter. Keep warm until serving. 11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce and toss. Repeat with the remaining wings and serve on a platter, with the bleu cheese dip on the side.

Virgil’s Dry Rub Makes 5 to 51/2 cups 21/2 cups sweet paprika 1 cup granulated sugar 1/2 cup Texas-style chili powder 1/2 cup minced onion 1/2 cup granulated garlic 1/4 cup dried parsley flakes 6 tablespoons kosher salt Combine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tight-fitting lid. Store in a cool, dry place.

Healthy Habits to Combat Stress Stress has an immediate and potentially long-term effect on the human body. Though it’s a natural response to both good and bad experiences, stress, when chronic, can produce a host of negative consequences that greatly diminish one’s quality of life. Combatting stress can sometimes be difficult, as the causes of stress are never too far away for

Routine exercise is another healthy way to combat stress. According to the Anxiety and Depression Association of America, studies have shown that exercise can reduce fatigue, improve alertness and concentration and enhance overall cognitive function. Those are considerable benefits to people dealing with elevated levels of stress, which can contribute to both physical and mental fatigue and negatively impact one’s ability to concentrate. Studies also have shown that regular exercise can decrease tension, which tends to increase as stress levels rise, and elevate and help to stabilize mood, which often decreases as stress levels increase. Don’t lean on alcohol after stressful days. Many people

respond to stressful days by consuming alcohol. While alcohol helps some people forget a stressful day, it also produces psychological and physiological side effects that can compound the effects of the very stress drinkers are looking to relieve. People who drink to alleviate stress may only be doing more harm with each drink, so find a way to cope with stress that has a more positive impact on both your body and mind than that produced by alcohol. Breathe deeply. The American Institute of Stress notes that focused breathing is a relaxation response that stimulates the nervous system and promotes a sense of calmness. Deep breathing can combat stress, lower blood pressure and draw your attention away from those things that are causing your stress. Visit www. stress.org to learn about deep breathing exercises. Stress if a fact of life for many people. But while stress may be inevitable, it can be overcome.

Tips for Dining Out on Mother’s Day Mother’s Day is right around the corner, and this special holiday serves to honor all those women who devote so much time and effort to their families. While gifts and other trinkets are certainly part of the celebration, a vast majority of children opt to treat Mom to a night out on the town come Mother’s Day. Not only does this give mom a night off from cooking, but also it presents an opportunity to get dressed up and spend time together as a family. A vast number of families travel to their favorite restaurants for Mother’s Day meals. Mother’s Day is one of the busiest holidays of the year for restaurants. The National Retail Federation says 54.8 percent of Americans treat their mothers to a special meal out on Mother’s Day. Billions of dollars are generated by people eating out with their mothers. With large crowds to be expected, diners can follow a few tips when treating Mom to a meal: Book early ... very early. To guarantee a reservation at any restaurant, namely your favorite

restaurant, you will need to make a reservation well in advance of Mother’s Day. It’s never too early to put your name on the reservation list. Don’t forget Mother’s Day is Sunday, May 8th, 2016.

and the ability to order whatever you desire, it may be a better idea to celebrate Mother’s Day in advance. Then have Mom enjoy a relaxing day at home on her special day.

Expect to wait. Even with a reservation, you’re bound to spend some time waiting at the restaurant. Other families may be lingering at their tables, as no one wants to rush Mom out of the door. Plan accordingly for a potentially long wait time. This means having a snack before you leave. Don’t arrive famished, as no one wants the dining party to be hungry and cranky, which is not a good way to celebrate Mom. Have plenty of snacks and drinks on hand for young children, as well as activities to keep them entertained.

Take-out is an option. Families can treat Mom to a dinner out, without really having to go out. Many restaurants offer takeout service, so you will not be limited to pizza or Chinese. Even chain restaurants have curbside service, so if Mom is in the mood for a burger or something more elaborate, she’ll have that option.

Consider dining out a day before or after. Restaurants are generally packed on Mother’s Day, and as a result, kitchen and wait staffs might be overtaxed. What’s more, diners might be relegated to a special or abbreviated menu. If you want a more relaxed setting

Include Good Fats & Carbs in a Healthy Eating Plan Come the spring season, many people resolve to rest, recharge and get back to healthy eating habits.

Earth Day Though Earth Day is synonymous with protecting the environment, the holiday can trace its roots to an environmental disaster that occurred in Southern California in 1969. Over a 10-day period that began on January 28th, 1969 just six miles off the coast of Santa Barbara, California, roughly 80,000 to 100,000 barrels of crude oil spilled into the Santa Barbara Channel and onto the beaches of Santa Barbara County. Thousands of birds and marine animals, including dolphins, elephant seals and sea lions, were killed as a result of the spill, which at the time was the largest such spill to ever occur in United States waters (it is now the third-largest spill after the Deepwater Horizon

spill in 2010 and the 1989 Exxon Valdez spill). Though devastating, the Santa Barbara oil spill proved inspiring to Senator Gaylord Nelson of Wisconsin, who is today considered the founder of Earth Day. Senator Nelson used the sense of social consciousness that prevailed throughout much of the United States in 1969 and the outrage at the Santa Barbara oil spill to infuse energy into a growing movement to raise awareness about air and water pollution. His risk paid off, as more than 20 million Americans took to the streets on April 22nd, 1970 to demonstrate for a healthy, sustainable environment.

Time magazine reports that losing weight and getting fit are the most popular New Year’s resolutions, but also the ones that people are most likely to abandon after a short time. That may be because New Year’s dieters are too often choosing diets that are impractical and not conducive to long-term success. Some may stop eating certain foods or ingredients entirely, while others look to diets that require a level of commitment beyond busy adults’ capabilities. Many fad diets target fat and carbohydrates, but dieters may not know that fat and carbs are necessary for a healthy metabolism. According to Dr. Walter Willett of the Harvard School of Public Health, low-fat diets don’t work for many people. In fact, dozens of studies have found that low-fat diets are no more healthy than moderate- or high-fat diets and may, in fact, be worse. Foods that are low in fat may be full of ingredients that can be detrimental when eaten in high amounts. Processed low-fat foods can be made to taste better with copious amounts of salt or sugar. Some low-fat foods are actually high in simple carbohydrates, which can cause spikes in blood sugar and increase bad fats called triglycerides in the blood. Simple carbohydrates are generally those that break down

fast and do not provide much value beyond the initial energy burst. Although some simple carbs, such as fructose and lactose, can be beneficial and are generally found in healthy foods, it’s best to avoid simple carbs. Eating healthy doesn’t mean avoiding carbohydrates and fats altogether. The key is to find good fats and carbs that provide a host of benefits. Good fats, such as monounsaturated fats, polyunsaturated fats and omega-3 fatty acids, help to manage mood, maintain mental acuity, fight fatigue and control weight. Good fats are largely found in olives, nuts, legumes, soy and fatty fish. Keep total fat intake to 20 to 30 percent of your calories. Good carbs are complex carbohydrates. They’re starches that take a longer time to metabolize in your digestive system. Good carbs will raise blood sugar, but they will keep it at a stable level for an extended period of time. Complex carbs usually contain a lot of fiber, which can help keep a person feeling full for long periods of time. Plus, they help keep digestion moving smoothly to help you avoid constipation. Tips for a Memorable Memorial Day BBQ To many Americans, Memorial Day marks the unofficial beginning of summer. Though summer does not actually begin until later in June, Memorial Day weekend has become synonymous with backyard barbecues and trips to the beach.

Backyard barbecues, in particular, have become a staple of Memorial Day weekend and the focus of many people’s festivities. This year, consider the following tips to make your Memorial Day barbecue safe and memorable: Place the grill in a safe spot. Before any guests arrive or any fires are lit, make sure the grill is safely located on flat ground. Ideally, the grill should not be on the grass and should be away from trees or shrubs and any other flammable materials. If you need lighter fluid to start a fire, promptly put the fluid back in storage, away from the grill, once the fire has been lit. Clean the grill. Memorial Day marks the opening of grilling season for many grillmasters. Make sure the grill has been thoroughly cleaned and that there are no leftover ashes from last season clogging the vents. Even if you thoroughly cleaned the grill at the end of last season, give it a once-over with a soapy sponge at the start of the season to clean

Shop Smart for Prom Season Graduation and prom season can be an exciting time in a teenager’s life. This time in a young person’s life marks a rite of passage and a pivotal time bridging childhood and adulthood, while giving students the opportunity to let loose and celebrate their academic successes. Prom also serves as a way to make memories with a group of friends who may go in different directions after graduation. Many students are eager to begin planning their prom experiences as early as possible. Promgoers may want to begin browsing stores and shopping for prom apparel in the months leading up to the big night, but it’s important to follow a few bits of advice before making any prom purchases: Pay attention to the rules implemented by the school or venue. #ILoveMyFriends Spending time with friends can be enjoyed over a lovely dinner, sharing an art film or an art opening. As friends, we support each other’s causes, attend parties and help overcome challenges. There’s a whole new faction of 50+ boomers out there who are entering a new phase of life where the kids are grown and even the grandchildren aren’t babies anymore. Retired, semi-retired or just pulling back, we find ourselves finally with the time to do the things we’ve always wanted to do. We are volunteering and donating time and experience. We are hungry for learning and exploring. And, we look to our friends to help us along the way. Friendship is as important now as it was through adolescence; we just have better toys. A true test of friendship, like any relationship, is discovering how well you can travel together So, when eight friends from the New York metro area: Lynne Colatrella, Alon Marom, Carol Shwidock, Michael Turner, Anthony Palazzo, Todd Kosakowski, Philip Heilman and me, Laurie Guzda, freelance writer, decided to plan our “UnWeekend” getaway, we began inquiring upon our resources. With so many schedules to coordinate while looking for a location that offered fun, variety and comfort, after hours of searching, endless e-mails and texts, we stumbled upon one of the best kept secrets… Woodloch. Only a 2 – 2.5 hour drive away, Woodloch is a family-owned resort that has been operating since 1958. It’s actually three resorts – the original Pines, the Springs golfing community that rents houses, and The Lodge at Woodloch, a destination spa. Although the Pines is predominately known as a family resort (voted the #1 family resort in the U.S. according to Trip Advisor), it’s a haven for adventurous adults during the week when kids are in school. If you have the ability to travel weekdays, then you can find some great deals like we found at Woodloch. Many resorts eliminate staff and activities during the week, but not here. In fact, they’ve amped up their offerings for

newly or semi-retired folks, business owners, business people who don’t need an office – just the internet, or people with jobs that allow for weekday travel. Here we discovered the AWAY package. AWAY stands for Art, Wine, Adventure and You. And we dove in to all of the offerings. The wine tasting was fantastic. It was actually a wine and chocolate tasting that not only delighted my palette but taught me something new that I could bring home to share. It’s a little trick on how you hold the wine and chocolate flavors in your mouth, time it just right, to experience the full explosion of its essence. The tasting included four wines, four chocolates, cheese and fresh berries. The wine was easy, something we all enjoyed and did not fear. Next we headed to the

Watercolor class. Several of us enjoy doing art and welcomed the class, while others were maybe not so much afraid as reluctant. This is when sharing with friends takes the edge off. It’s frustrating to hear someone say, “I have no creative talent.” Most likely a teacher, a parent, sibling or friend long ago instilled that thought; Shame on them. Through nervous laughter, we trusted the enthusiastic and animated instructor, John Leoni, as he guided us stepby-step along with his personal stories and antidotes. It wasn’t long before a beautiful painting began to emerge. They were all amazing! Todd and Lynne were probably the two most reluctant to paint and yet produced two of the most stunning pieces of art. Later at dinner, Todd commented on how much he enjoyed the class and would do it again the next day. However, we had something else planned. Fear is a funny thing. It’s a thought that gets into your head

and can easily paralyze you. But, with trusted friends by your side, you can face any fear head on. Carol was terrified to zip line. She was open and honest about her fear. Because she was surrounded by loving friends, she had the courage to face and overcome it. As far as zip lines go, this is a small zip line but it’s fast. And, after you zip down the hill, you then have to leap off a platform to be lowered to the ground. That’s not something for the faint of heart. I don’t think Carol was the only one who had reservations, but she was the only one who was honest about it. Everyone zipped and everyone’s adrenaline was pumping! Carol’s sense of accomplishment was obvious in her smile after completing the run. In fact, her whole face smiled and radiated her inner strength. We did art, wine and adventure. We also enjoyed the nightclub, which featured a song and dance review that was delightful. It was followed by a comedian named Eric Lyden, who was very funny. The food was abundant and good. We had choices that served all of our needs. Our rooms were very spacious and remarkably clean. Speaking of service, I don’t think you can speak of Woodloch without speaking about its exceptional customer service. People have been working here for years, some 25 and more. They are so happy that it almost makes you think there’s something in the water. Woodloch is a happy place. I would imagine it starts with the owners, who are clearly present and engaged. You feel like you’re invited into their home, making us all feel like we now have new friends.

Rack of Lamb

with Coffee & Avocado Honey Crust Leg of lamb is a popular dish at family outings. Whether it’s a holiday meal, anniversary dinner or a double date at home with friends, lamb can set the tone for a memorable night. Hosts who want to experiment with a less traditional take on lamb can try the following recipe for “Rack of Lamb With a Coffee and Avocado Honey Crust”:

Serves 4 INGREDIENTS 1/4 cup toasted fresh bread crumbs 1/4 cup honey, preferably avocado honey 1/4 cup coarse-ground mustard 1 small rack of lamb (about 2 pounds) Sea salt Coarsely ground black pepper Granulated garlic 1 cup strong brewed coffee or espresso 1/4 cup white wine

DIRECTIONS 1. Preheat the oven to 375º F. 2. Make a paste of the bread crumbs, honey and mustard in a small bowl, mixing until just combined. 3. Season the lamb rack with salt, pepper and granulated garlic. Spread the honey-mustard paste on the meat side of the rack. Place the lamb rack in a baking dish just large enough to hold it,

preferably one that can also be placed directly on the stove top. Pour the coffee into the bottom of the baking dish. 4. Bake for 10 minutes, or until the crust is set, then baste with the pan drippings, trying not to dissolve the honey-mustard mixture. Continue to bake until a meat thermometer reads 130º F, 20 minutes or longer. Keep a careful watch. If your racks are small, this may take less time. Similarly, larger racks will take longer. When the proper temperature is reached, remove from the oven. Transfer the lamb rack to a warmed plate to rest while you prepare the sauce. 5. Place the baking dish on the stove. Simmer the drippings over the medium-high heat and add the wine to deglaze the pan, stirring with a wooden spoon. Add any additional juices that might have collected on the plate from the resting lamb. Stir until the drippings and wine are well mixed and slightly thick, about 5 minutes. 6. Cut the rack into rib portions and serve with the warmed sauce. Note: To make fresh crumbs, simply cut a few slices of bread into tiny pieces or pulse a few slices in a food processor for a few seconds. You are looking for coarse crumbs, not grains of sand. To toast, toss in a dry saucepan over medium heat for a few minutes, until the bread dries and turns golden brown.
