Ancient Romans celebrated the festival of Flora, the Roman goddess of flowers. But May Day is also related to the Celtic festival of Beltane, a springtime festival of optimism, and the Germanic festival of Walpurgis Night, which also celebrates the arrival of spring.

Many past May Day celebrations included spending time outdoors standing around bonfires and dancing. A traditional British May Day celebration included crowning a May Queen and dancing around a Maypole, which was covered in ribbons.

While May Day has lost many of its pagan origins since the widespread conversion to Christianity, there are some who see May Day as a special time and a harbinger of spring.

In the United States, May 1st is also recognized as Law Day and is meant to highlight the importance of law in the foundation of the country and how law benefits society.

Earth Day Though Earth Day is synonymous with protecting the environment, the holiday can trace its roots to an environmental disaster that occurred in Southern California in 1969.

Over a 10-day period that began on January 28th, 1969 just six miles off the coast of Santa Barbara, California, roughly 80,000 to 100,000 barrels of crude oil spilled into the Santa Barbara Channel and onto the beaches of Santa Barbara County. Thousands of birds and marine animals, including dolphins, elephant seals and sea lions, were killed as a result of the spill, which at the time was the largest such spill to ever occur in United States waters (it is now the third-largest spill after the Deepwater Horizon spill in 2010 and the 1989 Exxon Valdez spill).

Though devastating, the Santa Barbara oil spill proved inspiring to Senator Gaylord Nelson of Wisconsin, who is today considered the founder of Earth Day. Senator Nelson used the sense of social consciousness that prevailed throughout much of the United States in 1969 and the outrage at the Santa Barbara oil spill to infuse energy into a growing movement to raise awareness about air and water pollution.

His risk paid off, as more than 20 million Americans took to the streets on April 22nd, 1970 to demonstrate for a healthy, sustainable environment.

In keeping with that theme, we have chosen to highlight several topics in this issue, from healthy eating tips to methods of combatting stress to exercise tips for those looking to get in shape for the upcoming summer bathing suit season.

Hungry for a new recipe to try? We have a scrumptious Rack of Lamb dish, as well as a new spin on Barbeque Chicken Wings with Bleu Cheese Dressing. These may not help cut the calories, but we all deserve to indulge a little from time to time!

Of course, Spring is also the season for Mother’s and Father’s Day celebrations and Memorial Day, the unofficial kickoff to the summer barbeque season - plenty of opportunities for fun family gatherings and outings with friends and neighbors. Time to shake off that Winter hibernation!

The right combination of diet and exercise is one of the keys to a long and healthy life. While many people find adapting to a healthier diet challenging, that challenge often pales in comparison to the intimidation felt when working out for the first time in years.

Exercising after an extended period of inactivity may intimidate people who choose to workout at gyms, where fellow gym members may appear to be in tip-top shape. Overcoming that intimidation factor can be as simple as working out with a friend or working with a personal trainer, each of whom can offer the support and guidance beginners need when reacclimating themselves to more active lifestyles. In addition to the buddy system, beginners can employ the following strategies to make their return to exercise go as smoothly as possible.

Gradually build up your exercise tolerance. When you exercise, your body releases neurotransmitters known as endorphins, which trigger positive feelings in the body. Those positive feelings can be addictive, but it’s important that beginners do not go too hard too quickly when beginning a new exercise regimen. Gradually build up your exercise tolerance, exercising two or three days per week and taking a day off between workouts when you start. As your body becomes more acclimated to exercise, you can start to workout more and with more intensity.

Track your progress. One way to stay motivated is to keep track of your progress. If you’re working out but not monitoring your results, you may not feel like you’re getting anywhere.

Keep a workout diary, tracking both your successes and failures, so you can see what’s working and what’s not. The longer you stay committed to your workout routine, the greater the likelihood that you will be tracking more successes than failures, and those successes can provide the motivation to keep you going on those inevitable days when you want to skip workouts.

Returning to exercise after an extended period of inactivity can be quite the challenge, but it’s nothing motivated men and women cannot overcome.

Stretch after working out.

Stretching can improve flexibility, and that may decrease your risk of future injury. In addition, improved flexibility may improve your exercise performance by improving your range of motion and helping your muscles work more effectively. Muscles contract during a workout, and stretching after workouts can help reset those muscles to their natural position. Include both static stretching and foam rolling in your post-workout stretching routine.

Include Good Fats & Carbs in a Healthy Eating Plan Come the spring season, many people resolve to rest, recharge and get back to healthy eating habits.

Time magazine reports that losing weight and getting fit are the most popular New Year’s resolutions, but also the ones that people are most likely to abandon after a short time. That may be because New Year’s dieters are too often choosing diets that are impractical and not conducive to long-term success. Some may stop eating certain foods or ingredients entirely, while others look to diets that require a level of commitment beyond busy adults’ capabilities.

Many fad diets target fat and carbohydrates, but dieters may not know that fat and carbs are necessary for a healthy metabolism. According to Dr. Walter Willett of the Harvard School of Public Health, low-fat diets don’t work for many people.

In fact, dozens of studies have found that low-fat diets are no more healthy than moderate- or high-fat diets and may, in fact, be worse. Foods that are low in fat may be full of ingredients that can be detrimental when eaten in high amounts. Processed low-fat foods can be made to taste better with copious amounts of salt or sugar.

Some low-fat foods are actually high in simple carbohydrates, which can cause spikes in blood sugar and increase bad fats called triglycerides in the blood.

Simple carbohydrates are generally those that break down

fast and do not provide much value beyond the initial energy burst. Although some simple carbs, such as fructose and lactose, can be beneficial and are generally found in healthy foods, it’s best to avoid simple carbs.

Eating healthy doesn’t mean avoiding carbohydrates and fats altogether. The key is to find good fats and carbs that provide a host of benefits. Good fats, such as monounsaturated fats, polyunsaturated fats and omega-3 fatty acids, help to manage mood, maintain mental acuity, fight fatigue and control weight. Good fats are largely found in olives, nuts, legumes, soy and fatty fish.

Keep total fat intake to 20 to 30 percent of your calories.

Good carbs are complex carbohydrates. They’re starches that take a longer time to metabolize in your digestive system. Good carbs will raise blood sugar, but they will keep it at a stable level for an extended period of time. Complex carbs usually contain a lot of fiber, which can help keep a person feeling full for long periods of time. Plus, they help keep digestion moving smoothly to help you avoid constipation.

Fibrous vegetables, fruits, whole grains and beans are high in fiber and are good carbohydrate choices. Some foods contain both good carbs and good fats.

Eating healthy means finding a balance that includes the right fats and carbohydrates.

Tips for a Fun and Frugal Road Trip Driving vacations are popular for a variety of reasons, not the least of which is flexibility. Such excursions are not restricted by flight schedules, and travelers often feel as though they have more control over their trips when traveling by car rather than traveling by air.

Road trips also can save travelers money, especially when traveling in groups of three or more, and expenses such as fuel and tolls are shared. In addition to sharing the road with a few friends and family members, road trip enthusiasts can employ several other strategies to enjoy a vacation that’s both frugal and fun: Downsize your vehicle. While prices at the pump have been more driver-friendly in recent months, road trippers who drive large sedans, trucks or SUVs might be able to save money by driving smaller vehicles during their trips.

Especially small vehicles may be impractical and uncomfortable depending on the number of people who are making the trip,

but mid-size vehicles with ample storage space tend to be more fuel-efficient than large trucks or SUVs. If someone in your traveling party drives such a vehicle and it’s in good shape, take that car instead of a larger alternative.

Get a tuneup. Another way to save money on your road trip is to get a vehicle tuneup in the days before your trip is set to begin.

Let your mechanic know you are planning a road trip and ask that a full diagnostic test be conducted to make sure everything is running efficiently. An air filter nearing its expiration date may be worth replacing, as a new filter will help to save money on fuel. In addition, replace tires with worn tread, as old or inadequately inflated tires will force the engine to work harder, wasting fuel and costing you and your fellow travelers money along the way.

Consider various types of lodging. Road trippers who plan well in advance may be able to find great deals on lodging, but too much planning may cost

travelers some of the flexibility and freedom they were hoping to enjoy during their vacations.

Weather permitting, campsites can be unique and affordable places to stay. When planning your routes, choose roadways that are close to popular campsites, avoiding campsites that are too remote, as such sites may cost you in time and fuel what you’re saving on lodging. If campsites a r e unavailable, download hotel website apps on your phone and use these apps to find affordable rooms as you go. Simply showing up to hotels without reservations is unlikely to yield great rates, but apps may offer discounted rates on rooms hotels are simply looking to fill at the last minute.

Bring your own food. Fuel,

lodging and food tend to be the three biggest expenses on driving vacations. Travelers who bring their own food can save a substantial amount of money and maintain some control over what they eat. That’s a big benefit for men and women who like to eat healthy and prefer to avoid the

fast food fare that tends to be the only options available at rest stops.

DIRECTIONS 1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce and salt in the bowl of a food processor and blend on low until smooth.

2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the larger bleu cheese crumbles. Place in a covered container and refrigerate overnight.

3. Mix all the marinade ingredients in a large mixing bowl. Place the wings in a large container with a lid and pour the

mixture over the wings. Toss until the wings are thoroughly coated.

Cover and refrigerate for 2 days.

4. Preheat the grill or smoker to 245º F. 5. Spread out the wings on a sheet pan and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over.

6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker or hickory chips on the coals or gas burners.

7. Cook the wings for about 3 hours, flipping every 30 minutes (their internal temperature should be about 165º F when cooked).

8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate.

Whisk the cornstarch into the white vinegar, in a small bowl.

9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat.

Fit clothing to your current size. Some students hope to lose a little weight prior to prom. But it’s best to avoid purchasing a gown or suit in a size you hope to be, as it’s easier to alter clothing to smaller sizes than make sizes bigger.

Browse magazines for inspiration. Professional stylists are often behind the amazing looks of magazine spreads. Wash Your Car Like a Pro to Protect its Value Vehicle owners know maintaining a vehicle can be a lot of work.

Taking the time to properly care for a vehicle can prolong its life expectancy and help owners avoid breakdowns and other issues along the way.

Regular washing is an aspect of vehicle maintenance that some may classify as a purely cosmetic benefit. Certainly, a car wash can keep the vehicle looking its best, but there are other advantages to washing as well. Washing offers preventative maintenance for the car’s paint and can help prevent rust and corrosion resulting from dirt, acid rain and road salt. Rust can compromise hydraulic brake and fuel lines, as well as many moving parts in the chassis and frame. Corrosion of electrical connectors and other parts under the hood can lead to leaks, electrical shorts and a host of additional problems. It’s easy to see how washing the car is more essential than one might have suspected.

If you live in an area with a

high amount of dust or industry, you may need to wash your car as frequently as once a week.

Drivers who live along or near coastal areas may need to wash their vehicles frequently to combat sea salt buildup. Garagekept vehicles may be able to go longer between washes, but, in general, washing a vehicle every two to three weeks is a good rule of thumb. In addition, a good sealant will protect the paint and other trims throughout the year.

The following are some other carwash tips to follow: • Always use a proper washing soap solution. This will preserve the car’s finish better than other homemade soaps. Avoid using dishwashing liquid, which can strip protective wax coatings.

• Be prompt when cleaning off bugs, sap and bird droppings that may stick to the paint and become difficult to remove over time.

• Wait until a car has cooled down

before washing. Heat speeds up the drying of soap and water and can make it more difficult to clean.

• Always use a clean, non-abrasive sponge. Resist the urge to move the sponge in circles as you clean.

Doing so can create noticeable swirl scratch marks. Instead, move the sponge lengthwise across the body panels and hood.

• Keep a separate rinsing bucket to clean the sponge or washing mitt so that dirt is not mixed into the clean, sudsy water.

• Consumer Reports suggests using a soft squeegee to remove most of the water on the body of the car after washing and rinsing. Blot up any extra water with a chamois.

Tackle Wardrobe Organization this Spring A task to tackle as spring settles in is sorting through wardrobes and making room for new clothes, as extra clothing can quickly take over a home. In fact, according to the National Association of Professional Organizers, too much clutter, general disorganization and difficulty determining what to keep and/or discard are the primary reasons individuals reach out to professional organizers.

If clearing away closet clutter is on the top of your winter todo list, consider the following tips:

Healthy Habits to Combat Stress Stress has an immediate and potentially long-term effect on the human body. Though it’s a natural response to both good and bad experiences, stress, when chronic, can produce a host of negative consequences that greatly diminish one’s quality of life.

Combatting stress can sometimes be difficult, as the causes of stress are never too far away for

Studies also have shown that regular exercise can decrease tension, which tends to increase as stress levels rise, and elevate and help to stabilize mood, which often decreases as stress levels increase.

Don’t lean on alcohol after stressful days. Many people

respond to stressful days by consuming alcohol. While alcohol helps some people forget a stressful day, it also produces psychological and physiological side effects that can compound the effects of the very stress drinkers are looking to relieve.

People who drink to alleviate stress may only be doing more harm with each drink, so find a way to cope with stress that has a more positive impact on both your body and mind than that produced by alcohol.

Breathe deeply. The American Institute of Stress notes that focused breathing is a relaxation response that stimulates the nervous system and promotes a sense of calmness. There’s a whole new faction of 50+ boomers out there who are entering a new phase of life where the kids are grown and even the grandchildren aren’t babies anymore. Retired, semi-retired or just pulling back, we find ourselves finally with the time to do the things we’ve always wanted to do. We are volunteering and donating time and experience. We are hungry for learning and exploring. And, we look to our friends to help us along the way.

Friendship is as important now as it was through adolescence; we just have better toys.

A true test of friendship, like any relationship, is discovering how well you can travel together So, when eight friends from the New York metro area: Lynne Colatrella, Alon Marom, Carol Shwidock, Michael Turner, Anthony Palazzo, Todd Kosakowski, Philip Heilman and me, Laurie Guzda, freelance writer, decided to plan our “UnWeekend” getaway, we began inquiring upon our resources. With so many schedules to coordinate while looking for a location that offered fun, variety and comfort, after hours of searching, endless e-mails and texts, we stumbled upon one of the best kept secrets…

Woodloch.

Only a 2 – 2.5 hour drive away, Woodloch is a family-owned resort that has been operating since 1958.

It’s actually three resorts – the original Pines, the Springs golfing community that rents houses, and The Lodge at Woodloch, a destination spa.

Although the Pines is predominately known as a family resort (voted the #1 family resort in the U.S. according to Trip Advisor), it’s a haven for adventurous adults during the week when kids are in school.

If you have the ability to travel weekdays, then you can find some great deals like we found at Woodloch. Many resorts eliminate staff and activities during the week, but not here.

newly or semi-retired folks, business owners, business people who don’t need an office – just the internet, or people with jobs that allow for weekday travel.

Here we discovered the AWAY package. AWAY stands for Art, Wine, Adventure and You. And we dove in to all of the offerings. The wine tasting was fantastic.

It was actually a wine and chocolate tasting that not only delighted my palette but taught me something new that I could bring home to share. It’s a little trick on how you hold the wine and chocolate flavors in your mouth, time it just right, to experience the full explosion of its essence. The tasting included four wines, four chocolates, cheese and fresh berries.

The wine was easy, something we all enjoyed and did not fear. Next we headed to the

Watercolor class. Several of us enjoy doing art and welcomed the class, while others were maybe not so much afraid as reluctant. This is when sharing with friends takes the edge off.

It’s frustrating to hear someone say, “I have no creative talent.” Most likely a teacher, a parent, sibling or friend long ago instilled that thought; Shame on them. Through nervous laughter, we trusted the enthusiastic and animated instructor, John Leoni, as he guided us stepby-step along with his personal stories and antidotes. It wasn’t long before a beautiful painting began to emerge. They were all amazing!

Todd and Lynne were probably the two most reluctant to paint and yet produced two of the most stunning pieces of art. Later at dinner, Todd commented on how much he enjoyed the class and would do it again the next day. However, we had something else planned.

Fear is a funny thing. It’s a thought that gets into your head

and can easily paralyze you. But, with trusted friends by your side, you can face any fear head on. Carol was terrified to zip line. She was open and honest about her fear. Because she was surrounded by loving friends, she had the courage to face and overcome it.

As far as zip lines go, this is a small zip line but it’s fast. And, after you zip down the hill, you then have to leap off a platform to be lowered to the ground. That’s not something for the faint of heart. I don’t think Carol was the only one who had reservations, but she was the only one who was honest about it. Everyone zipped and everyone’s adrenaline was pumping!

Carol’s sense of accomplishment was obvious in her smile after completing the run. In fact, her whole face smiled and radiated her inner strength.

We did art, wine and adventure. We also enjoyed the nightclub, which featured a song and dance review that was delightful. It was followed by a comedian named Eric Lyden, who was very funny. The food was abundant and good. We had choices that served all of our needs.

Our rooms were very spacious and remarkably clean.

Speaking of service, I don’t think you can speak of Woodloch without speaking about its exceptional customer service. People have been working here for years, some 25 and more. They are so happy that it almost makes you think there’s something in the water.

Woodloch is a happy place. I would imagine it starts with the owners, who are clearly present and engaged. You feel like you’re invited into their home, making us all feel like we now have new friends.

Rack of Lamb

with Coffee & Avocado Honey Crust Leg of lamb is a popular dish at family outings. Whether it’s a holiday meal, anniversary dinner or a double date at home with friends, lamb can set the tone for a memorable night. Hosts who want to experiment with a less traditional take on lamb can try the following recipe for “Rack of Lamb With a Coffee and Avocado Honey Crust”:

Serves 4 INGREDIENTS 1/4 cup toasted fresh bread crumbs 1/4 cup honey, preferably avocado honey 1/4 cup coarse-ground mustard 1 small rack of lamb (about 2 pounds) Sea salt Coarsely ground black pepper Granulated garlic 1 cup strong brewed coffee or espresso 1/4 cup white wine

DIRECTIONS 1. Preheat the oven to 375º F. 2. Make a paste of the bread crumbs, honey and mustard in a small bowl, mixing until just combined.

3. Season the lamb rack with salt, pepper and granulated garlic.

Spread the honey-mustard paste on the meat side of the rack.

Place the lamb rack in a baking dish just large enough to hold it,

preferably one that can also be placed directly on the stove top.

Pour the coffee into the bottom of the baking dish.

4. Bake for 10 minutes, or until the crust is set, then baste with the pan drippings, trying not to dissolve the honey-mustard mixture. Continue to bake until a meat thermometer reads 130º F, 20 minutes or longer. Keep a careful watch. If your racks are small, this may take less time. Similarly, larger racks will take longer. When the proper temperature is reached, remove from the oven. Transfer the lamb rack to a warmed plate to rest while you prepare the sauce.

5. Place the baking dish on the stove. Simmer the drippings over the medium-high heat and add the wine to deglaze the pan, stirring with a wooden spoon.

Add any additional juices that might have collected on the plate from the resting lamb. Stir until the drippings and wine are well mixed and slightly thick, about 5 minutes.

6. Cut the rack into rib portions and serve with the warmed sauce.

Note: To make fresh crumbs, simply cut a few slices of bread into tiny pieces or pulse a few slices in a food processor for a few seconds.

You are looking for coarse crumbs, not grains of sand. To toast, toss in a dry saucepan over medium heat for a few minutes, until the bread dries and turns golden brown.
