Sweet potatoes are a staple of many families’ Thanksgiving dinner tables, and different cooks have their own special sweet potato recipes.

Preheat the oven to 375º F. Spray a large roasting pan with nonstick cooking spray. In a large bowl, thoroughly combine the olive oil and herbs. Add the sweet potato dice to the mixture, and use your fingers to coat them well. Season with salt to taste.

Prepare for Fall Sports Summer is a season of relaxation, especially for school-aged children who are not yet old enough to work. Such youngsters no doubt enjoy the chance to spend summer days lounging poolside or at the beach, all without a care in the world or any homework to complete.

Summer vacation may be the only extended period all year that youngsters’ bodies get to heal.

While it’s important that kids stay physically active throughout the summer, make sure they don’t overdo it, as you should emphasize the importance of rest.

Though summer is synonymous with R&R, parents of young athletes who hope to compete in scholastic athletics when the school year begins in autumn may need to take steps to ensure their kids aren’t at risk of injury once the curtain comes up on fall sports season.

Gradually get back in the swing of things. While rest gives kids’ bodies a chance to heal and develop, it’s important that young athletes stay in shape over the summer. As the fall sports season draws near, help kids gradually get back in the swing of things.

Tryouts tend to be physically demanding, so kids who have not lifted a finger all summer may be at risk of injury or missing the cut. Let kids ease back into regular exercise to make sure they are not starting from scratch come their first tryout.

Examine and replace equipment if necessary. The right equipment can protect kids from injury and help them realize their full athletic potential. But damaged or outdated equipment can increase kids’ risk of injury. Examine kids’ equipment long before fall sports season begins so you have time to bargain hunt should anything need to be replaced.

Schedule a physical for your child. Many school districts mandate that athletes receive and pass physicals before they can compete. Speak with the athletic director at your child’s school to learn the guidelines that govern athletic physicals. The physical will need to be conducted by a predetermined date, but you may also need the physical to be conducted after a certain date for it to be considered valid. Speak with your child’s physician if any problems are found during the physical.

Let kids heal. Kids’ schedules are busier than ever before, and many youngsters play several sports during the school year.

Speak with coaches. Coaches can be great assets to parents who want to make sure their youngsters enjoy the summer without sacrificing their chances of making the team in the fall.

Speak with kids’ coaches to determine if there is any area your son or daughter can work on over the summer to improve his or her chances of making the team. Make sure kids are the ones leading the charge to improve their games; otherwise, they may feel pressured into doing so and that can take away the fun of playing sports.

Scholastic athletes should take advantage of the opportunity to relax and recover that summer presents. But athletes who hope to compete in the fall can still work with their parents to ensure they’re ready once the school year and sports season begins.

Take Your Pick of Apple History Though apples are enjoyed across the globe, many people associate apples with the United States of America. That’s in spite of the fact that the first apples were cultivated on the opposite side of the world from North America in Asia.

There are more than 7,500 known cultivars of apples that produce various characteristics for flavor and appearance. Apples are often a topic of discussion in the fall, when many trees produce their largest bounties of fruit.

Autumn is a good time of year to take a closer look at apples, and explore some of the most popular varieties for picking and eating.

Apple Origins Malus deomestica, or the common apple tree, is a descendent of apple trees that originated in Central Asia in what is now southern Kazakhstan. Apples have been grown for thousands of years in Asia and Europe. The original apple tree was the wild apple, or Malus sieversii. DNA analysis has confirmed that the

wild apple is the progenitor of the cultivated apple enjoyed today.

European colonists likely brought apple seeds and trees with them when they emigrated to North America, introducing that part of the world to the apple tree.

Records from the Massachusetts Bay Company indicate that apples were being grown in New England as early as 1630. Americans also enjoy the popular story of Johnny Appleseed, who was believed to have distributed apple seeds and trees to settlers across the United States.

While apples can be produced from seeds, nowadays many apples are propagated by grafting so that they retain the parent tree’s characteristics of flavor, hardiness and insect resistance.

Apples and Symbolism Apples have become the main symbols of many different stories and tales throughout history.

Apples are linked to the Biblical tale of Adam and Eve and their ultimate expulsion from the

Garden of Eden.

However, the apple is never named in any of the religious texts as the fruit Eve picked from the tree of knowledge.

Apples have appeared in fairy tales and folklore. The Brothers Grimm had the character Snow White fall ill after eating a poisoned apple.

In Norse mythology, the goddess Iounn was the appointed keeper of golden apples that kept the Aesir young forever.

Apples have also played a role in science, most notably Sir Isaac Newton’s study of gravity.

While myth surrounds the story of Newton and an apple falling from a nearby tree, it’s likely that witnessing an apple fall from a tree did spark something in the famed scientist.

Most Popular Apple Varieties Many varieties of apple stand out as perennial favorites. In the United States, the Red Delicious is the country’s most popular

grown apple.

It was called the hawkeye when discovered in 1872. The Golden Delicious is the second most popular grown apple in America.

The Delicious apples tend to have mild, but grainy flesh that can fall apart when cooked, so they’re best used for snacking. Cortland, Empire, Fuji, Gala, McIntosh and Macoun are some of the other most popular varieties.

Those interested in baking with apples can select among Granny Smith, Jonagold and McIntosh.

These apples tend to be crisp and tart and hold up better in recipes.

Apples have been enjoyed for thousands of years. While apples are a staple of autumn, they can be enjoyed all year long thanks to their widespread availability.

Practice School Bus Safety Every Day

Millions of students rely on public transportation to get them to and from school each and every day.

The National Safety Council says 25 million students in the United States begin and end their school days on school buses.

Throw a Hauntingly Good Halloween Party Halloween is a special day that delights children of all ages and helps adults feel like kids at heart.

Few people want the fun to end once trick-or-treating is over.

By throwing a Halloween party, revelers can continue celebrating well into the evening.

When hosting a Halloween party, it helps to determine who will be in attendance before making any plans. Parties that include children should be PG in nature, and hosts should find the right balance between scary and fun.

While you want to have a certain measure of the macabre, make sure you don’t send young guests home with nightmares. Reserve gruesome decorations and details for adult-only parties.

Halloween parties do not necessarily need to be ghoulish to be fun. Try a glittery gala masquerade party or decorate exclusively in orange and black.

Classically eerie parties may

feature ravens and crows, or they can be subtlely spooky with red candles and heavy curtains.

Many people can’t wait to dress up for a Halloween party, even picking out their costumes months in advance. Still, not everyone feels comfortable donning a costume. To welcome all guests, don’t make costumes mandatory. One way around this is to set up a Halloween Disguise Table full of accessories that anyone can borrow and use to alter their appearance. Goofy glasses, strange hats, adhesive mustaches or masks can be fun. If someone didn’t feel comfortable dressing in full costume, he or she may be more apt to pop in a set of plastic fangs or put on a spinning bow tie.

Put Pumpkins to Good Use Few items signal the fall harvest season more than the bright, orange pumpkins that dot fields and liven up displays outside of homes and businesses. Come fall, many pumpkins are turned into grinning jack-o-lanterns just in time for Halloween. But there are many other uses for pumpkins as well.

Pumpkins are believed to have originated in North America.

Early Native Americans relied on pumpkins as a source of food that helped them survive long winters.

Pumpkins could be roasted, baked, boiled and dried, and they were eaten and used as medicine.

Pumpkin blossoms were added to stews. The shells of the pumpkins could be dried and used as eating and storage vessels.

While pumpkins may now be symbolic of Halloween, the following are a handful of additional ways this versatile fruit can be put to use: Beauty Regimen Pumpkins contain a number of essential vitamins and minerals that can help replenish the skin.

Pumpkin purée can be mixed with honey, aloe vera gel, olive oil and a bit of cornmeal to create an exfoliating mask for the face or body. Pumpkin also can be used to rejuvenate dry or tired skin from cold weather.

Honey, pumpkin and yogurt can be mixed together and used to condition hair. Let the mixture sit for 15 to 20 minutes, and then wash it out and shampoo.

Foods and Beverages Pumpkin purée is the basis for many tasty, pumpkin-infused treats. Purée can be used in pies, cakes, muffins, breads and many additional foods. Pumpkin purée also may be found in certain beverages, such as smoothies and shakes. A bit

Foodies suggest using the seeds from “sugar pumpkins” or the ones best for making pies. Boil the seeds for a few minutes before draining.

Spray a baking sheet with nonstick spray and put the seeds in a single layer. Bake at 400º F for 20 minutes. Allow to cool and serve.

Larger pumpkins may be used as natural flower pots for mums or other seasonal floral displays. As the Native Americans once did, pumpkins can be hollowed-out and used as bowls to serve favorite soups and dips.

Pumpkin wines and beers are popular as well. There are many recipes for developing sweet, fermented beverages, which tend to be especially popular in the fall.

Use a hollowed, small pumpkin as a natural aromatic candle holder.

Cut holes in the sides to vent the exhaust. Rub aromatic spices, such as cloves, nutmeg, allspice, cinnamon and vanilla bean, on the inside of the pumpkin. Insert a beeswax candle in the bottom of the pumpkin and let it send inviting aromas into the air.

The “guts” of the pumpkin can be simmered along with aromatics and other vegetables to create a vegetable stock perfect for soups and broths.

10 Fun Facts in Time for Fall Autumn is a season of many changes, with some of the most notable including the dramatic multicolored displays that occur just prior to trees shedding their leaves. It’s also a time of year when many people feel reenergized by cooler temperatures and spend many hours outdoors enjoying all that fall has to offer.

Whether one is collecting leaves, picking apples, exploring corn mazes or driving the countryside enjoying the foliage, autumn is full of fun facts that can make the season that much more enjoyable.

1. Autumn begins on the autumnal equinox, which occurs on or near September 22nd in the northern hemisphere. This year, September 22nd is the day when the sun crosses the celestial equator moving southward.

When the equinox occurs, there are an equal number of daylight and nighttime hours.

2. Since ancient times, autumn

has been an important time of year for many civilizations.

Autumn is a main harvesting time in many areas, and a successful harvest was once necessary for survival. Many steps are, and have long been, taken to ensure a bountiful autumn harvest.

3. Fall is a time when trees and other plants prepare for dormancy during winter. As autumn progresses and the hours of daylight gradually decrease, trees begin to close down their food production systems and reduce the amount of chlorophyll in leaves. Chlorophyll is the chemical that makes tree leaves green, and as it declines, other chemicals become more prominent and shine through in the leaves. That is why leaves change color.

4. Some scientists believe that global climate change can impact autumn colors, such as delaying the change in trees. Also, red

pigments may start to decline as trees use sugary fuel to grow new twigs rather than to cause red leaf displays.

5. Americans more readily refer to this time of year as “fall,” while the British use “autumn.” Both terms date back to around the 16th century. Prior to this period, autumn was known as “harvest.”

6. Much of the United States bids farewell to monarch butterflies in the fall. Each autumn, monarch butterflies migrate from the United States to Mexico and some parts of Southern California. They fly at speeds ranging between 12 and 25 miles per hour.

7. A study of U.S. centenarians born between 1880 to 1895 published in the Journal of Aging Research, found that babies born during autumn months are more likely to live to age 100 than those born during the rest of the year. Thirty percent of the centenarians followed were

born during the fall.

8. Squash, pumpkins and other gourds are prominent in the fall.

The largest squash grown on record belonged to Joel Jarvis of Ontario, and his huge winner weighed in at 1,486.6 pounds in 2011.

9. The many-colored leaves are not the only display one might see during the fall. The autumn equinox signals the aurora borealis, also called the Northern Lights. Besides the lengthening of nights and cool evening weather, which are great for stargazers, autumn is “aurora season,” according to NASA. That’s because, during the fall, geomagnetic storms are about twice as frequent as the annual average.

10. Full moons are named for the month or season in which they rise. The Harvest Moon is the full moon closest to the autumnal equinox.

Simplify Fall Clean-Up Apple pie, pumpkins and blooming chrysanthemums are symbols of autumn. But nothing signals the arrival of fall more than the millions of leaves that begin to cascade from the trees as the temperatures dip.

Many people feel nothing is more beautiful than the yellow, red, purple and orange leaves that coat neighborhoods and countrysides each fall. But in spite of their beauty, leaves might be a nuisance to homeowners tasked with removing the growing piles of them from their lawns. Those with large oak and maple trees in front of their homes understand the seemingly endless work of leaf removal.

As the days begin to grow shorter and colder, these changes trigger a hormone release in trees, prompting them to drop their leaves. This chemical message causes the formation of abscission cells where the leaf stem meets the branch, say botanists at the Missouri Botanical Garden. So rather than merely dropping off of trees when the wind blows, the leaves actually fall off deliberately.

Left untouched, fallen leaves can contribute to lawn problems such as poor aeration, mold growth and moisture issues. Leaves also can cause staining on driveways and walkways. Prompt removal can help prevent any problems.

To make faster and easier work of leaf removal, keep these tips in mind: Mow over thin leaf coverage. If only a few leaves have fallen, use a mulching mower to shred the leaves until they are small enough that they won’t suffocate the lawn.

Use an ergonomic leaf rake.

Ergonomic rakes can prevent back and arm pain, much in the way that ergonomic shovels do when shoveling snow.

Invest in a quality leaf blower.

Using a rake is good exercise, but homeowners with large properties might want to use a leaf blower. These machines can dislodge leaves from bushes and hard-to-reach crevices, and they work faster than rakes.

Use a tarp. Rake or blow leaves onto a tarp and then drag the tarp to the curbside or to the back of a truck for proper disposal.

Special leaf scoopers enable you to grab more leaves if they need to be picked up and transported.

Otherwise, you can use the covers from two garbage pails to achieve a similar effect.

Work with the wind. Rake in the direction the wind is blowing and downhill if your property slopes.

This way it will be easier on you, and you won’t be working against Mother Nature.

Spread out the job. Do not attempt to remove all fallen leaves in a single day. Schedule a few cleaning days during the season to make lighter work of the job than if you tried to do it all at once. Keep in mind that leaves will continue to fall throughout the season and you may need to spend a few days removing leaves from your yard.

Pre-Winter Lawn Care Pointers Winter weather can be harsh, especially on lawns. Homeowners who spend much of spring and summer tending to their lawns may fear the impact that winter will have on their once-lush landscapes, making the fall a great time to fortify lawns against any harsh conditions to come.

Homeowners must take grass type into consideration before taking steps to prepare their lawns for the winter. Some grasses are best fertilized in latesummer, while others should be fertilized in autumn. Coolseason grasses, including fescue and bluegrass, are best fertilized sometime between the months of September and November. Warmseason grasses, such as Bermuda or zoysia, should be fertilized between July and September.

Once homeowners have gained a greater understanding of their lawns, they can begin exploring the various ways to prepare their lawns for whatever winter has in store.

Potassium helps strengthen and harden plants, and cool-season grasses may need extra potassium as winter settles in. Homeowners who are not sure if they should apply winterizing fertilizer can conduct soil tests to determine the potassium levels in their soil. If the test indicates the soil has sufficient potassium, then applying a winterizing fertilizer is likely unnecessary. In addition, homeowners who have fed their lawn a balance of nutrients throughout spring and summer likely will not need to apply winterizing fertilizer.

PIE FILLING 2 apples (preferably a tart variety) ¼ cup brown sugar ½ cup sugar ¼ teaspoon ground cinnamon ½ teaspoon ground nutmeg 1½ teaspoons cornstarch

ICING 1 cup confectioners’ sugar 2 tablespoons water 1 tablespoon butter, softened

DIRECTIONS To make the raisin filling, combine the raisins, water

and lemon juice in a heavy saucepan over medium heat.

Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes.

Preheat the oven to 400º F. Line a 9-inch pie plate with 1 rolled-out crust.

Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg and cornstarch, then add to the apples and gently stir until evenly mixed.

Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center.

Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.

To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the

top of the cooled pie before serving.

PLAIN PIE PASTRY Makes two 9-inch pie crusts 2 cups all-purpose flour 1 teaspoon salt ¾ cup vegetable shortening 5 to 7 tablespoons cold milk Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas.

Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl. Repeat with the remaining milk until all of the flour mixture is moistened.

Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness o f 1/8 inch. Use a light touch and handle t h e dough as little as possible

How to Handle the Transition to Middle School A child’s school-aged years are filled with many different lessons and experiences. While in school, kids have the opportunity to broaden their horizons and meet new people.

Many students will attend various schools before moving on to college, and therefore they must learn how to adjust to new schools.

While

many students attend elementary school together for years, students may not know their classmates once they make it to middle school, which tends to boast larger student bodies than elementary schools. That’s because many middle schools’ student bodies are a combination of several elementary schools.

Making the transition from elementary school to middle school or junior high can spark anxiety in students, but that does not have to be.

The National Education Association says a common element of a successful middle

school experience is a smooth and positive transition from elementary school. The following are a few ways students can handle their transition to middle school: Participate in a school-based transition program. Middle schools frequently host open houses for elementary school students, who can take tours of the campus. Parents can take part in these events with their children.

If your schedule does not allow you to attend, then schedule a private tour with the middle school principal or a faculty member. Middle school guidance counselors or guest speakers also may make the rounds, visiting elementary schools directly. Be sure your student attends such information sessions so he or she can get an idea of what to expect during middle school.

Dispel any myths your youngster might have heard about middle school. Youngsters hear lots of things about middle schools, and much of what kids

hear might be untrue. Ask kids what they have heard about the schools they will be moving on to, and then do your best to dispel any myths.

Find a middle school buddy. Ask an older sibling or invite someone who is currently enrolled in the school to speak with your child and answer any questions he or she may have. Hearing directly from a fellow student may make your child feel more comfortable about what to expect.

Talk about any other fears.

Engage in an open dialogue with your son or daughter about any additional fears he or she may have. If students are worried about academics, spend some time over the summer going over the curriculum. If the potential for peer pressure is a cause for concern, reinforce advice on how to react to peer pressure.

Parents and their children can take several steps to make students’ transitions to middle school as smooth as possible.

Family Activities Tailor-Made for Fall Fall is a great time to enjoy the great outdoors. Beautiful fall foliage coupled with great weather compel many people to spend ample time outdoors before the arrival of harsh winter weather drives them back indoors. The following are a handful of actvities that are tailor-made for fall: Raking Leaves: While raking leaves might not jump out at you as a great way to spend a nice fall afternoon, families often find raking leaves together soon turns into a fun day in the yard. Build leaf piles and let the kids jump in, and then do it again. When raking, encourage kids to collect some colorful leaves and set them aside. Once the raking is done, you can then enjoy making some homemade crafts with the leaves you and your youngsters just collected.

adults and children alike. Though adolescents can often be trusted to find their way through corn mazes, younger kids should be accompanied by an adult.

Pumpkin Picking: Much like apple picking is best in fall, so is pumpkin picking. Rather than buying your Halloween pumpkin from the grocery store, where your options may be limited, go straight to the source and pick your future jack-o’-lantern from a nearby pumpkin patch, which will provide a much wider selection.

Let your youngsters pick their own pumpkins and then spend the rest of the day carving them at home. And don’t forget to save those seeds, which can be roasted over an open flame to make a delicious snack.
