Seaford High School celebrated its senior athletes by lighting up its athletic complex on May 1, joining high schools across Nassau County in honoring the Class of 2020. In addition, Seaford families were encouraged to turn their lights on and off beginning at 8:20 p.m., which is 20:20 in military time.

With spring sports canceled due to the COVID-19 pandemic, dozens of athletes were

unable to suit up as Vikings for their final season. A small gathering of administrators, donning masks and practicing social distancing, came out to the field for Light up the Night, an initiative of Section VIII which oversees high school athletics in Nassau County.

In addition to the stadium lights on the main field – which hosts lacrosse games and track meets in the spring – the scoreboard was also illuminated with “20� in every spot. Seaford

fire engines in front of the school sounded their sirens when the clock hit 8:20. “Thank you to everyone in the Seaford community for participating in Light up the Night, recognizing the Class of 2020,� Mr. Witt said. “Our Viking seniors, and student-athletes across Section VIII will be remembered for their character and commitment through their high school careers.�

of Los Angeles. Ms. Degnan’s students were particularly captured by the return of bees to the farm to serve as pollinators, creating a more complex and healthier ecosystem. That’s why she sent them the seeds that will grow into bee-friendly flowers. ‘It’s nice to do something good for the environment,� she said.

Ms. Degnan said that while she and her students do meet over Zoom videoconferences, she misses the personal interaction with them in school, and wanted to give them a project to uplift their spirits and help them all still feel connected. Several students were supposed to join her

for a trip to the Galapagos during the April break, but it was canceled due to the pandemic.

Senior Erica Albert planted the seeds on Earth Day and said she was enthusiastic about participating in an activity that would better the environment. “We learn about the necessity of helping the environment in school and online, but some people don’t know exactly what to do to help,� she said. “This project is great because it allows us to do something that will help the planet and we can later educate others about how they can help.�

Lifting Up Their Spirits In Seaford April 22 marked the 50th anniversary of Earth Day and students in Seaford High School’s Advanced Placement Environmental Science class did their part to make the environment a little better from their own backyards.

With schools closed during the COVID-19 pandemic, teacher Keri Degnan mailed each of her students a packet of wildflower seeds along with a letter that asked them to “go out and save the world one flower at a time.�

Earlier in the year, students in the class watched the movie, “Biggest Little Farm� about organic farming. It follows a couple through their development of a sustainable farm outside

Woodloch Pines Launches A Series Of Initiatives To Provide Support During Its Temporarily Closure The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait.

Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives.

Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the

Couch” series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other.

On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22.

The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters.

Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial.

Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17.

Woodloch owns and

operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station.

As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods.

“Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines.

The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of.

We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans.

Animals are also being impacted in numerous ways by this situation.

Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times.

Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can.

Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

animals, building doghouses, taking in new rescues and trying to cover all their expenses.

“We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.”

“The pandemic has created a host of problem for the animals,” says Misseri.

“I hope that we can make it through this difficult time, so that we can continue to help the animals in need.”

National Grid is warning customers to beware of a new phone scam where imposters are demanding immediate bill payment and threatening service disconnection. This latest scam, which is targeting customers already facing hardships due to COVID-19, involves callers who pretend to be National Grid representatives. They tell customers that unless payment is made within 30 minutes, their power will be shut off. The customer is then directed to call “the direct billing department to make a payment and avoid power disconnection.”

The Seaford School District is providing teachers with extensive training on digital resources to provide instruction during the school closure from the COVID-19 pandemic. Since distance learning began on March 16, faculty members have been participating in virtual professional development workshops.

Model School Days, facilitated by a BOCES trainer through Zoom videoconferences, have been ongoing for teachers to learn more about Microsoft Teams and other online platforms such as EdPuzzle, Flipgrid and Quizziz. Each session begins with a one-hour demonstration. Teachers then have time to explore the programs before returning for a question and answer session.

Seaford’s Executive Director of Instructional Technology and STEM Tom Lynch has been providing individual and small-group support to teachers, students and parents to help them access digital resources.

He has also provided

professional development on software functions such as converting PDFs to Microsoft Word documents and transforming PowerPoint presentations into movies.

There have also been training sessions spearheaded by building administrators. At Seaford Harbor Elementary School, Principal Tom Burke and Assistant Principal Caroline Schozer host several sessions each week for teachers and staff.

One popular activity has been the steal and share sessions, which is when teachers get together to discuss effective strategies for digital instruction that they colleague can implement.

Seaford Manor Elementary School Principal Debra Emmerich and Assistant Principal Mary Ellen Kakalos have facilitated training sessions on activities to keep students engaged such as virtual field trips and writing celebrations.

Training Supports Transition To Digital Learning Microsoft Teams, Think Central and Zoom.

Spearheaded by Principal Dan Smith and Assistant Principal Lisa Dunn, Seaford Middle School offers three types of virtual training sessions – large-group for introduction to programs, small-group for advancing to the next level and one-to-one for specific questions.

Supporting videos were created for teachers to use or share with students. Ms. Dunn has also led technologybased workshops on more than a dozen topics.

Seaford High School Principal Scott Bersin, along with Assistant Principals Jennifer Bisulca and Nicole Schnabel facilitated professional development sessions on digital resources such as Flipgrid, Microsoft Teams and Zoom.

Serve Steak Alongside A Backyard Barbecue Staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening.

Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame.

The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue.

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)

Melt 1 tablespoon of the butter in a medium skillet over medium-low heat.

Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate.

In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes.

Transfer to the plate with the shallot and let cool.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined.

Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log.

Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes.

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

Add the salt and stir.

Uncover and let sit for 15 to 20 minutes before serving.
