Master Burger Cooking In Time For Grilling Season Juicy, mouthwatering hamburgers are a warm weather staple that taste perfect right off the grill.

Everyone can benefit from having a tried-and-true burger recipe in his or her repertoire when enjoying a cozy weeknight meal with the family.

Many things constitute a great burger, including flavorful meat, the right ratio of fat content, a crispy roll or bun and fresh, cold toppings and condiments. That’s all guaranteed and more in this recipe for “The Great American Hamburger and Cheeseburger” from “Mastering the Grill: The Owner’s Manual for Outdoor Cooking” (Chronicle Books), by Andrew Schloss & David Joachim.

The Great American Hamburger and Cheeseburger (6 servings) 2 pounds ground beef chuck, 85 percent lean 5 tablespoons ice-cold water 1 teaspoon ketchup 1⁄2 teaspoon ground black pepper Oil for coating grill grate 12 slices good-quality American, provolone, or cheddar cheese (optional)

6 hamburger buns, split 1. Heat the grill to 425 F for gas or achieve light ash for charcoal or light ash for wood.

2. Using your hands, mix the beef, water, ketchup and pepper in a bowl until well blended; do not overmix. Using a light touch, form into 6 patties no more than 1 inch thick.

Refrigerate the burgers until the grill is ready.

Did you know?

According to the high-quality ground beef purveyor Schweid & Sons, the most common ground beef choice among burger chefs is 80 percent lean, 20 percent fat.

Law prohibits the sale of any ground beef with a fat content above 30 percent. While some consumers may scoff at the notion of

buying beef that’s 20 percent fat, Schweid & Sons notes that the fat that surrounds the meat gives it a rich, juicy flavor. In fact, Schweid & Sons says that beef with lowerfat compositions, such as 85 percent lean and 15 percent fat, tends to dry out fast, which can adversely affect the flavor of the burger.

3. Brush the grill grate and coat it with oil. Put the burgers on the grill, cover and cook for 7 minutes, flipping after about 4 minutes, for mediumdone (150 F, slightly pink).

Add a minute per side for well-done (160 F).

4. If you are making cheeseburgers, put 2 slices of cheese on each burger 1 minute before the burgers are going to be done.

5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking.

6. If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and the burgers separate until just before eating.

The best garnishes for burgers are the classics: a slice of ripe beefsteak tomato, a mound of sautéed onions, a leaf of romaine lettuce, a dollop of coleslaw or a few slices of dill pickles.

ertain foods are synonymous with particular holidays or times of year. For example, few people can imagine celebrating Valentine’s Day without ample supplies of chocolate on hand. And what summer barbecue is complete without grilled hot dogs and hamburgers? While these foods and others are must-haves during certain times of the year, that doesn’t mean they cannot be enjoyed whenever a craving arises.

Apples, and particularly apple pie, are a staple of many holiday season celebrations. But apple pie is just as delicious in March, April, May, etc., as it is during the weeks between Thanksgiving and Christmas. That’s especially true when the apples are fresh. Whether yours is a seasonal or non-seasonal craving for apple pie, be sure to satisfy it with this recipe for “French Apple Pie” from Mollie Cox Bryan’s “Mrs. Rowe’s Little Book of Southern Pies” (Ten Speed Press).

DIRECTIONS To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat. Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes.

Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust.

Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then add to the apples and gently stir until evenly mixed.

Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center.

Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.

To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving.

Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas. Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl. Repeat with the remaining milk until all of the flour mixture is moistened.

Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1⁄8 inch. Use a light touch and handle the dough as little as possible.

The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals.

We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans.

Animals are also being impacted in numerous ways by this situation.

Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times.

They are overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the animals, building doghouses, taking in new rescues and trying to cover all their expenses.

“The pandemic has created a host of problem for the animals,” says Robert Misseri, President of this organization.

“I hope that we can make it through this difficult time, so that we can continue to help the animals in need.”

Robert is also the President of Paws of War, another non-profit right here on Long Island. This organization trains and places shelter dogs to serve and provide independence to our U.S. military veterans that suffer from the emotional effects of war. In turn, each veteran can experience the therapeutic and unconditional love only a companion animal can bring.

Throughout this pandemic, they have been tending to the most at risk veterans.

They find that their older senior veterans typically are very prideful and refuse to ask for any handouts. Many live alone and

will still go out and put themselves at risk to get food for their pets. However, Paws of War will at times arrive at their homes with no warning, knock on their door and tell them that they have some items to drop off for them. “You always see that tear in their eye” says Robert. “That someone actually cares enough to come to their home and bring them something is very special.”

A lot of these veterans suffered for many years, all of which now have lifelong disabilities due to their service to our country. Paws of War feels that at the very least they can bring them pet food to give them a helping hand during these tough times.

Additionally, Paws of War has partnered with Cambridge Catering, who is providing hot cooked meals free of charge to our veterans. Hank, a Smithtown resident and veteran, was someone that Paws of War helped. When they arrived at his home, they noticed a his two very proud flags were destroyed.

They handed off the pet food and trays of hot food that Cambridge Catering has provided, but they didn’t stop there.

They then went to the hardware store and purchased everything to fix and replace his flags.

Dear Members, I would never have imagined that I would be sending out an April message that would have the content looking as it does. Who would have thought that we would be in the midst of an international pandemic, and that we all would be affected - both personally and professionally - on such a profound level. And while I could go on and on about the devastating statistics and its implications, I instead choose to focus on those things in the world that we can control. We are such a resilient community. I have watched in awe as so many of our members have stepped up and altered how they conduct their businesses in order to do the best that they can during this tumultuous time. I have watched our first responders do what they do best - treat those in need and sacrifice their own personal safety so that others are okay. Our dedicated Police and Firefighters, our EMTs, nurses, doctors, and members of the healthcare community have been extraordinary - making a difference moment to moment!

But certainly, there are so many unsung heroes...like our employees who continue to keep their doors open, keep shelves stocked at our local ShopRite and Uncle Giuseppe’s, serve food, and refine takeout capabilities donned with gloves and masks. I know that takeout from Smokin Al’s, Gusto Divino, Paddy’s Loft, Corner Galley, Sergio’s, Leonardo’s, Krisch’s, Chicken Au Go Go, and so many more have made life feel a bit more normal. So many of our other members have also been remarkable during this time. Our news publications including the Massapequa Post, Massapequa Observer, All Island Media, Newsday, and South Bay’s Neighbor have kept information flowing to our doors in spite of the obstacles. I know that at YES Community Counseling Center, the organization continues to provide help and support to our vulnerable children and families.

Working remotely, counselors continue to be available to help anyone in the community who needs resources and support. Food pantries are open for families, and we are blessed to have those resources available throughout the community - not only through YES, but through our local parishes as well. I would be remiss if I did not acknowledge all those who, in spite of the hardships, are able to donate funds and food so that others can be fed. And so many more are doing such invaluable work so that our community stays strong. For instance, our members Greg and Robin Massimi of TLC Companions are adding 10% to the pay of their healthcare workers to show appreciation for their heroic actions and service. And Karen Gawrych of Mary Kay was able to donate almost 50 bottles of Mary Kay’s Satin Hand Creams to the healthcare workers at St. Joseph Hospital. It is always amazing to watch our members come together and put others first. That is the strength and magic of our community!! Selflessness when others need it most.

1st Infantry Division Commander Thomas O’Connor received a promotion to Brigadier General on April 23, 2020 in Poznan, Poland. Thomas was born and raised in Massapequa Park and played football and lacrosse at Massapequa High School.

Massapequa’s Proposed Budget Is Below Tax Cap the economic impact on residents as a result of the COVID-19 pandemic, the board of education decided to use an additional $1 million from reserves to fund next year’s budget and offset the cost to local taxpayers. The district also continues to apply funds from the tax reduction reserve, which was created following the sale of the Carman Road School in 2017.

“We are very mindful of the current state of the economy and the effect that it has had on our families,” Board of Education President Kerry Wachter said. “It was important to the entire board to put forth a budget proposal that is sensitive to the financial hardship that our community is facing while maintaining the quality education that Massapequa families expect and our students deserve.”

Distance learning has continued throughout the school closure, and the board recently authorized the purchase of additional Chromebooks from the current budget for students in grades K-2 for the 2020-21

school year. This expansion will allow all students K-12 to have access to a takehome device should the need for distance learning be required in the future.

A virtual budget hearing will be held on Thursday, May 28 at 8 p.m. Residents can visit the Board of Education page on the district website, www.msd. k12.ny.us. All qualified voters of the district will be sent an absentee ballot together with a postagepaid return envelope and instructions for completing the same. To be counted, all completed absentee ballots must be received in the Office of the District Clerk, 4925 Merrick Road, Massapequa, no later than 5 p.m. on June 9.

The Massapequa School District Board of Education adopted its proposed budget for the 2020-21 school year, which includes a tax levy increase significantly below the district’s allowable tax cap limit. Residents will vote on the $207,675,646 spending plan and board of education trustees via mailin absentee ballot only on June 9.

The proposed budget supports all current academic programs in the district, as well as all social and emotional support services, athletics and extracurricular activities.

It also funds debt service related to capital bond referendums previously approved by the community.

Much of the work authorized in the January 2018 bond, including classroom renovations at the elementary schools and Berner Middle School as well as the installation of classroom air conditioning districtwide, will take place this summer.

The tax levy increase of 2.18% is below the district’s limit under the New York State property tax cap legislation.
