South Shore Audubon Offers Scholarships

The South Shore Audubon Society has begun accepting applications for two $1000 Environmental Scholarships. The scholarships will be awarded to college juniors, seniors, or graduate students earning a degree in areas of biological or environmental science, or sustainable and renewable energy .

The Alzheimer’s Disease Resource Center (ADRC) will host its Annual Memory Walk and Spring Festival at Marjorie R. Post Community Park, 451 Unqua Road, Massapequa, NY on Saturday, April 22, 2023. The walk will begin with registration at 8:30 am, a light breakfast, and opening ceremony. The Memory Walk and Spring Festival is being held on Earth Day and will have activities celebrating the planet as well as a Memory Tree to honor loved ones, archery activities, music, photos, food, beverages and more! In addition, many other community organizations are joining us and will be sharing resources with participants. This is an event you do not want to miss.

Each year, the Memory Walk serves to raise awareness about Alzheimer’s

Disease and other forms of dementia, honor and remember those impacted by the disease, and raise funds for ADRC to continue to provide support and services to families on Long Island. All funds raised stay on Long Island and are put right back into serving local families impacted by the disease.

Pet Food Drive In Partnership With Baxter’s Pet Pantry & Long Island Cares

Assemblyman Michael Durso (Massapequa Park) is inviting the community to participate in his Annual Pet Food Drive to help families keep their pets out

of shelters and remain at home where they belong. The pet food drive will take place through Wednesday, April 5, 2023

Assemblyman Durso is asking community members and organizations to kindly donate unopened bags of dog and cat food, canned pet food and pet supplies. All items collected will be donated to Baxter’s Pet Pantry, operated by Long Island Cares, which provides free pet food and pet supplies to petowning families in need throughout Long Island.

“Our pets offer us unconditional love and companionship. However, for families on a tight budget, it can be a struggle to afford these extra costs,” said Durso.

Canine Companions is a non-profit organization that enhances the lives of people by providing highly trained service dogs and ongoing support to ensure quality partnerships. They proudly o er their support services free of charge to recipients.

Clients come to Canine Companions because of their reputation, the quality of their dogs, the experience of their training sta and the desire to lead a life with greater independence. The organization is proud to have various chapters and training centers across our nation, with their Northeast Region (Long Island Chapter) located right here on Long Island, in Medford.

Did you know this non-profit runs a Veterans Initiative™? Through this initiative they place service dogs with veterans. Canine Companions’ expertly trained service dogs can perform physical tasks to enhance independence including opening doors, picking up prosthetics and alerting a veteran with hearing loss to important sounds in their environment.

With the increase in veterans facing post-traumatic stress disorder (PTSD), Canine Companions launched a program in 2018 to directly place service dogs with veterans with PTSD. Dogs are trained to identify each veteran’s unique stressors and perform tasks that directly disrupt escalation of symptoms, thus enhancing their quality of life. The dog supports their handler in crowded public situations by creating barriers and distance that might provoke anxiety for individuals with PTSD. Additional tasks such as nightmare interruption, turning on lights and retrieving items are taught to support veterans’ daily lives.

“When I see a veteran with a Canine Companions service dog, it still gives me goosebumps,” said Colonel E. David Woycik Jr., a highly decorated retired Army O cer and an active Canine Companions Board Member. “I see the satisfaction these veterans get...

the fulfillment of their lives through these dogs. The service dogs are not just partners, they are their right hand, their left hand, their legs and more. We can’t pay the veterans back enough, and I’m proud to be part of an organization serving them.” Mr. Woycik helped organize a Veterans Day event, Salute Independence , which awards local veterans who continue to serve their communities.

Thanks to his tireless work, this annual event has raised more than $500,000 in total so far to support the organization’s Veterans Initiative™.

Corned beef and cabbage might not be a part of many people’s diet regimens throughout the year. But come March 17, it’s not uncommon to find people from all walks of life indulging in this beloved meal. March 17 marks the celebration of St. Patrick, the patron saint of Ireland. Over the years, the day has also become a celebration of the Emerald Isle. Such celebrations tend to feature corned beef

Corned Beef and Cabbage

Serves 6 to 8

Cook a whole brisket with both sections together with all its fat. (You can trim off the fat after the meat is cooked.) Whole brisket and second-cut corned beef brisket are hard to find, but your supermarket should have first-cut corned beef vacuumpacked in plastic. Choose the fattiest piece in the case and treat it gently.

You can cook the cabbage and potatoes in the same water as the corned beef. Because the other vegetables need to be cooked in water that simmers more than the meat, scoop out water from the corned beef pot and cook the vegetables in a separate pot or pots.

1 4- to 5-pound corned beef brisket

1 teaspoon pickling spices

1 head cabbage

2 pounds boiling potatoes

6 to 8 small carrots (optional)

Parsnips (optional)

Turnips (optional)

Directions:

Place the corned beef in a pot that holds at least 5 quarts of water. Cover completely with cold water. Place over high heat and bring to a simmer.

As soon as bubbles start to break on the surface of the water, adjust the heat so the water simmers very, very gently. With a slotted spoon, skim off the residue that accumulates on the surface. When the residue stops coming to the surface, add the pickling spices.

Continue to cook, with bubbles just gently breaking on the surface, for 3 to 4 hours, until fork tender.

The meat can be safely held in its water for about 2 hours; reheat gently.

Those who want to cook up their own can try this recipe for “Corned Beef and Cabbage” from Arthur Schwartz’s “New York City Food” (Stewart, Tabori & Chang).

Cook the vegetables until fork tender in separate pots of boiling fresh water or especially for the cabbage, use some of the water in which the corned beef was cooked.

Slice the corned beef and serve with mustard and/or horseradish on a platter, surrounded with some of the vegetables or with vegetables in a separate bowl.

North Babylon Resident Reveals New Children’s Book

Cheryl Williams is a North Babylon resident that worked as an elementary school nurse for nearly six years. During that time, she had the opportunity to bond with students, which then served as her inspiration and motivation to write her book, A Lesson A Day: A Child’s Way, published by Dorrance Publishing

The book teaches important life lessons about life, including kindness, strength and love. It touches on appreciating others, as well as yourself and encourages people to stand up and be unapologetically you! She hopes this book will empower and inspire children everywhere; it is ideal for ages five through ten, yet children as old as fourteen and as young as two have been moved by it.

A Lesson A Day; A Child’s Way appeals to both the imaginative and playful side. Written in the form of a fable with colorful animals and inanimate objects, it teaches lessons along the way as a means to help children work their way through life’s problems. “My hope is that my book will reach as many children as possible,” said Williams. “This book is dedicated to every boy and girl around the world.”

United States Air Force Thunderbirds To Headline 19th Annual

Bethpage Air Show At Jones Beach Taking Place May 27-28, 2023

Bethpage Federal Credit Union, New York State’s largest credit union, and the New York State Office of Parks, Recreation and Historic Preservation, are pleased to announce that the United States Air Force Thunderbirds will headline the 19th Annual Bethpage Air Show at Jones Beach taking place on Saturday, May 27, 2023 and Sunday, May

28, 2023. This will be the demonstration team’s 9th performance at the Bethpage Air Show.

It was announced at the annual International Council of Air Shows (ICAS) Convention yesterday that the United States Army Golden Knights Parachute Team and the United States Marine Corps F35B Lighting II will

be performing, along with the world famous Skytpers, Long Island’s David Windmiller and Mike Goulian, North America’s most decorated aerobatic pilot.

“Last year, we were very grateful that the Thunderbirds changed their schedule to perform for us on Memorial Day, after the Saturday and Sunday weekend

shows were rained out,” said George Gorman, Regional Director, New York State Office of Parks, Recreation and Historic Preservation. “Suffice to say, we couldn’t be happier to welcome the team back to Long Island for our 2023 show!”

“The Bethpage Air Show continues to be one of New York’s most treasured events,” said

Linda Armyn, Chief Strategy & Marketing Officer, Bethpage Federal Credit Union. “After 19 years, the pilots and performers, show organizers and fans have grown to become a big family. We look forward to organizing a very special show for our fans this year.”

It was also announced that the United States

Navy Blue Angels will return as headliners for the special 20th Anniversary Bethpage Air Show at Jones Beach, which will take place on Saturday, May 25, 2024 and Sunday, May 26, 2024.
