The Charity of the Month for January is: YMCA Long Island www.ymcali.org

The YMCA of Long Island is a leading non-profit organization that works daily to improve lives through programs and services that nurture youth, foster healthy living and inspire social responsibility.

Simply put, their mission is to improve the quality of life of children, adults and families through programs that develop body, mind and spirit.

The Y of Long Island has many different branches: East Hampton, Patchogue, Holtsville, Huntington, Bay Shore and Glen Cove. They also run the Boulton Center for the Performing Arts in Bay Shore and the YMCA Family Services (a counseling center) in Holtsville.

This January they kicked off their Annual Support Campaign, which provides scholarships to children, teens, adults, seniors and families in need.

These scholarships provide access to the YMCA for membership, programs and services such as swim lessons, pre-school, before and after school, summer day camp, health and wellness programs and chronic disease prevention and recovery programs such as LIVESTRONG® at the YMCA for cancer survivors, Moving for Better Balance, a fall prevention program, EnhanceFitness for people with arthritis and more.

The Y believes that when people come together for a common cause, the entire community is strengthened.

When someone becomes

a volunteer, they have the opportunity to share their blessings with those who need it most. You can take an active role in strengthening your community by volunteering at the Y! Volunteers can serve on their Board of Directors/Board of Managers/ committees, raise funds to ensure their organization is accessible to all members of the community, motivate and support youth, extend a hand to help adults who want to do more, be more or live healthier, advocate for their efforts and participate in opportunities to give back and support neighbors.

Local Entrepreneur Honored Avid environmentalist, local business owner, and Save The Great South Bay Board Member, Karen Vaccaro Marvin, was recently honored with the 2019 South Shore Estuary Reserve (SSER) Award Stewardship for her outstanding efforts to clean the Great South Bay. Marvin is the owner of South Shore Paddle Boards in Babylon VIllage and was recognized for leading her paddle tribe on dozens of clean ups along the South Shore as well as for her partnerships with other local organizations, such as Operation SPLASH! According to SSER Coordinator Jeremy Campbell, Marvin’s initiatives demonstrate that a single person can spur positive change in protecting and restoring the South Shore Estuary.

The Reserve Council Stewardship Award is an annual award that is designed to recognize

citizens and organizations that have made significant contributions to protect and restore the South Shore Estuary’s unique and natural environment and maritime traditions.

Move over bouquets and centerpieces, flowers are taking over weddings in a big way. While wedding trends come and go, flowers will always have a place at the wedding table.

Catering Wedding Menus To Your Guests’ Dietary Needs

Gone are the days when wedding reception menus were limited to the one-sizefits-all offerings of meat, chicken or fish. Thanks to modern diets, couples hoping to accommodate guests may need to provide a wide array of food choices.

It is impossible to pinpoint an exact number, as there are no definitive surveys classifying all dietary preferences, but there are believed to be around 7.9 million people in the United States who follow a vegetarian-based diet. Of those people, around one million are strictly vegan, according to data in The Economist. In addition, NYU Langone Health says onethird of Americans are trying to avoid gluten. The Gluten Free Agency, which is a consulting group dedicated to helping advertisers, says some nine million people in

Canada are going gluten-free now for medical or personal reasons. Toss in the scores of people with peanut or other allergies and even more caution is needed when designing wedding menus.

Savvy couples who have guests’ health and comfort in mind recognize the importance of offering a varied meal plan for wedding-related parties and receptions. The following are some ideas to consider when planning wedding menus.

• Consider a buffet-style service. Although couples might like the tradition and flair that a seated/plated meal offers, it creates a much more limited selection of meal options. Buffet-style dinner service often provides couples with multiple choices, and it’s much more likely they can come up with a combination that caters to any food allergies or dietary

restrictions guests may have.

• Opt for food stations. In lieu of one long buffet table, a modern approach is to have staffed food stations. Foods as well as their ingredients can be clearly stated on food table placards so guests can make appropriate choices.

• Offer alternatives for dessert. Wedding cake can be a challenge to someone with a gluten sensitivity or an egg or a nut allergy. While not every guest indulges in dessert, make it a point to offer an alternative to cake.

Perhaps a groom’s cake can be revamped into glutenfree cookie bars or a nut-free trifle.

Couples who know in advance which types of dietary restrictions their guests have can work with caterers to devise a menu that suits everyone.

The North Babylon School District has a lot to celebrate, as five students were selected to participate in the LISFA Suffolk Chamber Music Festival on Jan. 4 at Stony Brook University. This is the sixth consecutive year North Babylon has participated in the prestigious LISFA Chamber Festival, as they were one of five districts in the county selected this year. High School student participants included Molly Battaglia, Thomas Bruggemann, Esther Duclair, Ruby Haberman and Heather O’Leary.

In addition, several other

students from across the district were also selected to participate in LISFA’s Suffolk Secondary Festival and LISFA’s Suffolk Intermediate Festival. For the Secondary Festival, which was held on Jan. 12 at St. John the Baptist High School, high school student participants included Gavin Aquino, Thomas Bruggemann, Jake Cosentino and Esther Duclair.

The Intermediate Festival will be held on Jan. 25 at Northport High School and will include students Eren Alptekin, Cynthia Chen and Marilin Chicas

from Marion G. Vedder Elementary School; Jason Cusumano and Kendel Wilson from William E. DeLuca Jr. Elementary School; and Robert Moses Middle School’s sixth grader Melanie Kamalic and eighth grader Andrea Ramirez.

Students were selected based on their exemplary recordings of pieces they performed during a rigorous audition process, as well as teacher nomination.

The district congratulates all those who were selected for these prestigious events.

5 Ways To Cut Wedding Reception Costs Weddings have a tendency to be expensive endeavors.

According to The Knot’s 2018 Real Weddings Study, the national average cost of a wedding is $33,931. Nearly half of that ($15,439) is spent on the reception venue alone.

As expensive as wedding receptions can be, couples should know that there are many ways to reduce reception costs without sacrificing fun.

1. Choose Foods Wisely Pour over the details of catering costs. The Knot says the average price for catering will be $68 per person. If you opt for an appetizers and cocktails reception, you may be able to shave several dollars off the bill. Look closely at the pricing for buffet versus plated meals.

Buffet service often means having a greater quantity of food on hand, which could drive up the cost. Find out if the catering hall can work

with your budget to provide cost-conscious options, like familiar comfort foods instead of gourmet fare.

2. Serve A Custom-Made Cocktail A themed drink, such as punch or a classic spirit with a reimagined, weddingfriendly name, can be less expensive than offering full open bar service. Some couples also opt to pay for only wine and beer rather than a full open bar that includes liquor and mixed drinks.

3. Book A Weeknight Weekend weddings are easier on guests’ schedules, but not on couples’ budgets.

Couples can save thousands of dollars by hosting weeknight weddings instead of weekend affairs. Book the venue from Monday through Friday, as even Sunday prices have escalated. The further away from the weekend, the lower the prices are.

4. Fake The Cake The Knot indicates a wedding cake runs roughly $530. Consider displaying a mock cake for photos and then serve a sheet cake during dessert hour.

Decorating foam tiers to look like an extravagant cake can save a few hundred dollars, and guests won’t know the difference when they’re biting into a delicious, less costly dessert.

5. Skip The Extras Reception venues may upcharge for all the little details, such as linens in custom colors or chair covers. If you can live without these extras, do so.

Ask for a list of itemized extras so you can assess what you want to pay for and what you’d prefer to avoid.

They discussed how the fish help to feed the plants located in the system and how the plants filter the water that is returned to the fish. Students made observations about the different plants found growing in the classroom, the fish in the system and took an up-close look at both.

Town of Babylon Supervisor Rich Schaffer joined with members of the Babylon Town Board, fellow local officials and community members to dedicate the Anthony J. Tatti Youth Center in North Babylon, formerly known as the North Babylon Teen Center. Anthony J. Tatti, a lifelong North Babylon resident who has run youth programs in the area for over 45 years, was recognized by the various local officials and community members in attendance at the dedication ceremony, who discussed his various contributions to North Babylon and the surrounding area.

“It is a true honor to rename the North Babylon Teen Center for Anthony Tatti, who has done so

much for the North Babylon community and was a driving force behind both the youth center and the programs that it hosts,” said Supervisor Schaffer.

“Being that these programs have created cherished memories for many residents and contributed to the development of so many children within the Town of Babylon, it is only right and tremendously fitting that the center be named after him.”

Anthony Tatti was integral to the development of the center, leading efforts for it to be built in 2003 and serving as executive director of North Babylon Community Youth Services, the non-profit organization that is housed there. In this role, Tatti created

and maintained robust recreational and educational programing for children from kindergarten through high school to take part in year-round. Programs offered include camps, teen employment, volunteer services, tutoring and drama programs.

Tatti’s other contributions to the community include his continued service as a volunteer for the North Babylon school district as part of the Parent and Youth Activities Committee (PYAC), which created student workshop programs and summer drama classes for middle school students.

He also was instrumental in starting Parent University, a series of annual workshops for parenting and parent concerns.

For those who aren’t fans of the game, Super Bowl Sunday is still a chance to chow down and socialize with friends and family.

There’s no right or wrong way to watch the Super Bowl, but some might consider a Super Bowl soiree without chicken wings a major faux pas. For those who want to avoid such a misstep, this recipe for “Virgil’s Smoked Chicken Wings With Blue Cheese Dip” from Neal Corman’s “Virgil’s Barbecue Road Trip Cookbook” (St. Martin’s Press) is sure to please.

1 teaspoon cornstarch 4 tablespoons white vinegar 3⁄4 cup hot sauce 1⁄4 teaspoon cayenne pepper

11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side.
