Key Club: Successfully Saving Lives Via Blood Drives

Walter G. O’Connell Copiague High School’s Key Club successfully completed three blood drives during the 2024-25 school year. These events resulted in the collection of 86 pints of blood, which have the potential to save up to 258 lives. The blood drives saw enthusiastic participation from numerous students and staff members, all united by the common goal of making a difference and saving lives. Their generous donations will provide critical support to those in need through the New York Blood Center, demonstrating the power of community and compassion. Middle School Students Take Top Honors At Reworld Contest

Five students from Copiague Middle School’s science research program were recently recognized for their work in the annual Town of Babylon Reworld Contest. Guided by their teacher Ms. Mason, the students were honored for their science research achievements at a ceremony held at Geiger Lake Memorial Park. Congratulations to the following winners: Lenna Karwowska (first place), Dean Coleman (second place), Emilio Reyes (third place), Stanislaw Krasnowski (fourth place) and Mya Nunez (fifth place). The Nassau-Suffolk Hospital Council (NSHC) announces a $2,000 scholarship for college juniors/seniors or post graduate students who are studying Journalism, Marketing/Communications, or Healthcare Administration. (The scholarship is not for clinical-based study.) The Ann Marie Brown Memorial Scholarship honors the late Ann Marie Brown, who served as vice president for government and public relations for the Hospital Council from 1983 to 1993. The scholarship is administered by the Hospital Council’s Communications Committee. Filing deadline is June 20, 2025. RECIPE OF THE WEEK: Charred Green Beans with Lemon Verbena Pesto

Fire Up The Grill For Fresh Veggies

Vegetables are more versatile than many people may know. Steaming or sautéing vegetables might be among the most popular ways to cook veggies, but grillmasters know that it’s not just main dishes that taste great when cooked over an open flame.

As the following recipe for “Charred Green Beans with Lemon Verbena Pesto” from Karen Adler and Judith Fertig’s “The Gardener & The Grill” (Running Press) can attest, grilled vegetables make for simple yet satisfying side dishes.

Serves 2 to 4

1 1⁄2 pounds slender green beans

2 teaspoons olive oil

Lemon Verbena Pesto

1 cup fresh lemon verbena leaves (substitute fresh lemon balm leaves)

2 garlic cloves

1⁄4 cup grated Parmesan cheese

1⁄4 cup pine nuts or English walnuts

1⁄2 cup olive oil

Fine kosher or sea salt and freshly ground black pepper to taste

Directions:

Prepare a hot fire in your grill.

Toss the beans with olive oil and place in a perforated grill basket or wok set on a baking sheet.

For the Lemon Verbena Pesto, combine the lemon verbena, garlic, cheese, and nuts in a food processor and pulse to puree. Slowly add the olive oil with the processor running until the mixture thickens and emulsifies, about 1 minute. Season to taste with salt and pepper. The pesto will keep in the refrigerator for 7 to 10 days, or it may be frozen for up to 3 months.

Place the grill wok or basket directly over the fire and stir-grill, tossing the beans with wooden paddles or grill spatulas until crisp-tender, about 5 to 8 minutes. Transfer the grilled beans to a large bowl and toss with about 1⁄4 cup of the Lemon Verbena Pesto or to taste.
