Presiding Officer McCaffrey Recognizes West Babylon EMT In Celebration Of EMS Week

An impressive group of emergency services (EMS) personnel were recognized for their efforts and achievements as each of the 18 members of the Suffolk County Legislature introduced an honoree from their district on Tuesday, May 20, 2025, in the Rose Caracappa Auditorium of the William H. Rogers Legislative Building.

With these awards, the Legislature marked the third week of May as “EMS Appreciation Week” in Suffolk County and paid tribute to “National EMS Week.” The calendar designations honor all EMS personnel who provide lifesaving services every day.

Presiding Officer Kevin J. McCaffrey was proud to recognize Olivia Golebiewski, a volunteer emergency medical technician (EMT) with

the West Babylon Fire Department’s Rescue Squad.

When Olivia Golebiewski joined the West Babylon Fire Department Rescue Squad in March 2022, she immediately began riding on the Saturday night crew and often fills other shifts when needed. She also serves as a director of the Junior Brigade and assists in training the next generation of first responders.

Olivia works as a Clinical Assistant at Stony Brook Hospital. She works overnights in the Emergency Room and helps nurses and doctors care for patients. As a Clinical Assistant, she takes vital signs, electrocardiograms, and provides emotional care for her patients.

Olivia also volunteers at the Mary Brennan Soup Kitchen, where she helps

make and serve meals to those with food insecurity. She is also a dedicated student and has been tutoring college students in chemistry for three years as a teaching assistant in chemistry.

Olivia will start medical school this fall after an arduous application cycle. She wants to become a

doctor for the simple reason that she believes health is the most important aspect of our lives. She has seen firsthand the worry, pain and suffering that medical conditions can bring and wants to have a positive effect on the health of people.

“Day in and day out, Olivia embodies what it

means to be community servant,” said McCaffrey. “She gives back to her community through her work at the soup kitchen, she gives back to her department by serving as a director of the junior brigade, and she gives back to us all through her dedication to becoming a medical professional.”

In 2024 alone, Suffolk County Fire, Rescue and Emergency Services reported handling almost 300,000 emergency calls, with over 80% of those related to EMS incidents resulting in 205,000 EMS runs. Further, in 2024, REMSCO recognized 133 providers for life saving awards for CPR saves.

This year, mentored by science teacher Andrea Durbin, a small group of West Babylon Senior High School students met afterschool to conduct hands-on, cutting-edge research. These nine students – Joel Colas, Julian Cruz, Erin Fider, Melanie Jastrzebski, Maria Moreno Lopez, Dheera Misra, Nandini Ramesh, Nicole Rex and Saad Syed –became part of the Student Participants for Advanced Research and Knowledge program at Brookhaven National Laboratory.

Students immersed themselves in structural biology, exploring the threedimensional structure of a protein found in the bacteria Burkholderia cenocepacia. Proteins are

macromolecules that help build various parts of an organism. Though we know how proteins work, their appearance is not completely understood.

Deciphering their structure can aid scientists in understanding their function and how they affect our well-being.

In conjunction with Eastport-South Manor High School, Islip High School and Longwood High School, West Babylon students began the twoyear endeavor to discover this protein’s shape by utilizing Brookhaven National Laboratory’s National Synchrotron Light Source II. Using incredibly powerful X-rays, students took “pictures” of their protein using

protein crystallography.

Interpreting these images can take months, though once completed, the known 3D shape would then be published on an international database for scientists across the world to use.

On May 21, more than 200 students from 19 different school districts gathered at Brookhaven National Laboratory to present their research at a poster presentation. These students represented those involved in the SPARK program, a “Day in the Life” as well as many other programs affiliated with Brookhaven National Laboratory. Students presented their research to their peers and guests during the symposium.

RECIPE OF THE WEEK: Pecan-Stuffed Pork Chops

Families celebrate Dad in unique ways on Father’s Day. Gifts are customary, but so is a delicious meal Dad will love. Many dads will appreciate a meal that goes above and beyond the ordinary, preferably something that is hearty and delicious. These “Pecan-Stuffed Pork Chops” from “Jon Bonnell’s Texas Favorites” (Gibbs Smith) are a great dish to serve family style when everyone gathers around the table for Father’s Day.

Serves 7-8

1 large rack of pork chops, bones in

4 tablespoons butter

1⁄2 yellow onion, chopped

2 ribs celery, chopped

5 cloves garlic, minced

1 1⁄2 cups chicken stock

DIRECTIONS:

Clean the rack of pork well and cut in between the bones to get thick individual pork chops. Cut a large slit down the back side of each chop and insert the tip of a knife 2 to 3 inches inside the chop to create a pocket for the stuffing. Do not poke completely through the pork or the stuffing will not stay in. In a large saucepan, melt the butter and sauté the onion, celery and garlic until the onion has slightly softened. Add the chicken stock, salt and cayenne and bring to a light simmer. Pour the contents into a mixing bowl and

2 cups roasted pecans, chopped

More kosher salt and pepper, to taste

add the panko bread crumbs and pecans. Mix together and let cool to room temperature. Stuff as much of the mixture into each pork chop as will fit (overstuffing is okay, too). Sprinkle both sides of each chop with salt and pepper to taste, then roast in a preheated 400 F oven for 12 minutes. Turn the chops over once and roast an additional 15 minutes. Check for doneness with a meat thermometer. Cook to medium, or 135 to 140 F.
