Volunteer Opportunity To Help Terrapin Turtles Survive
June 15th Survival Day Includes Beach Cleanup
In an effort to help Terrapin turtles survive predators, Oyster Bay Town Councilwoman Laura Maier announces that the Town and Friends of the Bay are co-hosting a Terrapin Survival and Beach Cleanup Day on Saturday, June 15th from 9am to 11am at Centre Island Beach.
“The Town of Oyster Bay joined forces with Friends of the Bay to launch ‘Team Terrapin,’ to help protect the Diamondback Terrapin turtle, as this small species lives in fresh or brackish waters in our Town,” said Councilwoman Maier. “These turtles, which have distinctive diamond-shaped rings covering their shells,
have a near-threatened conservation status and we are working with our environmental partners and local volunteers to help protect this vulnerable species.”
During this Terrapin Survival and Beach Cleanup Day, volunteers will be trained to identify signs of nesting terrapins, briefed on how to collect data and how to deploy protective cages around nests. These structures keep natural predators like raccoons and fox away from the terrapins, thus contributing to their survival. The event features a beach cleanup and tours of nesting sites.
Terrapin monitoring will take place for four to six weeks after
the event and Team Terrapin volunteers will be encouraged to sign up for half-hour or one-hour monitoring shifts during weekdays and weekends. This is an excellent citizen science opportunity for people of all ages. Community service hours and certificates of participation will be provided upon request.
Terrapins can be found along the northern shore of Oyster Bay, especially at Centre Island Beach, with a large population at the head of Mill Neck Creek near Beaver Dam. To register for the event, volunteers should visit https://www. friendsofthebay.org/ volunteer-opportunities. html

Town & PSEG Long Island Team Up To Save Protected Species
Oyster Bay Town Supervisor Joseph Saladino and members of the Town Board recently collaborated with PSEG Long Island to save the protected osprey species in Oyster Bay. After an osprey nest was destroyed by a fire on a utility pole at Theodore Roosevelt Park, PSEG Long Island and the Town took swift action to relocate the nest and build a dedicated platform.
“I’m so proud to stand with PSEG Long Island today as we save the osprey in Oyster Bay! Ospreys are a protected species and an important indicator of ecosystem health. They’ve also become beloved symbols of our area, akin to mascots for the community,” Supervisor Saladino said. “After a recent fire threatened an osprey nest, we worked with PSEG Long Island to ensure their safety and preserve their habitat. I’m happy to report that the
osprey have taken well to their new home!”
A fire broke out on a utility pole at the Town of Oyster Bay’s Theodore Roosevelt Park, resulting in the loss of an Osprey nest that had been a fixture at the site for several years. The town had planned to construct a new Osprey stand at the same location. However, before construction could commence, the Ospreys had already begun building a new nest on a neighboring utility pole.
Working closely with town officials and wildlife experts, PSEG Long Island had a crew remove the newly built nest from the utility pole and relocate it to the new Osprey stand constructed by the town. The osprey pair have already been sighted making themselves at home on their new platform.
“PSEG Long Island is pleased to collaborate
with the Town of Oyster Bay and a local wildlife conservation group to relocate this nest to a safe platform, encouraging the osprey to nest away from the power lines and equipment,” said Dave Lyons, PSEG Long Island’s interim president and chief operating officer. “Protecting these birds from highvoltage equipment improves reliability for the customers we serve. We look forward to many more years of enjoying this osprey pair at Theodore Roosevelt Park.”
Both the Town of Oyster Bay and PSEG Long Island also thank Jim Jones of the Bayville Environmental Conservation Committee, who played a tremendous role in making this rescue possible.

• Take to the great outdoors. Father’s Day is celebrated in midJune, making the day a perfect time to enjoy the great outdoors (weather permitting). Plan a day
around Dad’s favorite outdoor activity. If Dad is an avid fisherman, book a family outing on a charter boat so Dad can focus on catching fish and not navigating. A kayaking trip, a skydiving session, a round of paintball, or even tickets to a rock concert on Father’s Day weekend can connect Dad with his inner adventurer. For Warm Evenings
Lighter fare is more popular when the weather warms up, as many people don’t want to feel weighed down by their diet. Fish is a popular summertime meal for many reasons, not the least of which is that fish tends to be light but still flavorful. In addition, many meals featuring fish can be whipped up rather quickly. Such is the case with the following recipe for “Grilled Garlic Shrimp With a Fresh Heirloom Tomato Sauce” from Laurey Masterton’s “The Fresh Honey Cookbook” (Storey Publishing). Fresh and simple, this meal can be enjoyed as a change of pace at summer barbecues or simply as a light weeknight meal with the family.
Grilled Garlic Shrimp With A Fresh Heirloom Tomato Sauce
Serves 6w
For the marinated shrimp
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 garlic cloves, minced
36 large shrimp, peeled and deveined
12 6-inch wooden skewers
For the tomato sauce
3 pounds assorted large heirloom tomatoes
1 small sweet onion, minced
1 garlic clove, minced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 tablespoon honey, preferably sourwood honey
1/4 cup fresh basil leaves, cut into thin strips (chiffonade is the formal name for this cut), plus more for garnish

Directions:
1. To marinate the shrimp, combine the olive oil, red wine vinegar and garlic in a large bowl. Stir to combine. Add the shrimp and allow to sit, covered, for 1 hour. Stir occasionally.
2. Prepare a medium fire in a charcoal or gas grill. Soak the skewers in water for at least 30 minutes to prevent them from burning.
3. To make the tomato sauce, bring a medium pot of water to a boil. Place one or two tomatoes at a time into the boiling water. Watch them and, as you see the skin split, remove with a slotted spoon and place in a bowl of cool water. At this point, it will be very easy to slip off the skins.
4. Cut the peeled tomatoes into a small dice. Put the cut tomatoes into a large bowl. Add the onion, garlic, salt, pepper, and honey. Stir gently to combine.
5. Skewer the shrimp, 3 per skewer. Grill the skewered shrimp for 1 to 2 minutes on each side, until they are pink. Sprinkle lightly with sea salt and a couple grinds of fresh pepper.
6. Just before serving, add the basil leaves to the tomato sauce. Taste and add more salt if necessary.
7. Ladle the tomato sauce onto a serving platter and arrange the skewers on top of the sauce. Garnish with more basil leaves and enjoy!

Oyster Bay Town Supervisor Joseph Saladino commended retired United States Army Staff Sergeant Arturo Jerome Edwards of Farmingdale for his service to our nation and for serving as Grand Marshal of the PlainviewOld Bethpage Memorial Day Parade. Arturo served in the United States Army for two years, earning the rank of Staff Sergeant E-6. He served 18 months in Vietnam from May of 1966 to November of 1967. Arturo later served 16 years active duty the United States Army Reserve and became a member of New York’s finest as a New York City Police Officer.

Oyster Bay Town Supervisor Joseph Saladino joined with Town Clerk Richard LaMarca and Tax Receiver Jeff Pravato to announce the Town’s partnership with Empire State Ride Long Island to host Long Island’s largest charitable cycling fundraiser to benefit cancer research, scheduled for Saturday, June 8th.
Town officials were joined by Co-Chairman of Empire State Ride Long Island, Steve Mars, Chair of Cancer Services for Catholic Health and Director of The Cancer Institute at St. Francis Hospital, Dr. Bhoomi Mehrotra, cancer survivor and retired News 12 anchor, Carol Silva, and cancer survivor Donna Marano, who was treated at Good Samaritan University Hospital funded by events like the Empire State Ride Long Island.

For those who can’t cycle but wish to attend and support the event, downtown Oyster Bay will also host a street fair, hosted in partnership with the Oyster Bay Main Street Association and Oyster Bay-East Norwich Chamber of Commerce –as local businesses will line the streets with food, live music and fun activities for families.

Mobile App To Ease Registration For Sports & Programs
Oyster Bay Town Supervisor Joseph Saladino and the Town Board unveiled a new mobile app today that allows residents to sign up for a variety of sports and recreational programs. The app is available for download through the AppStore and Google Play Store by searching ‘Town of Oyster Bay Parks & Rec,’ and allows residents to set up an account to sign up for year-round recreational opportunities.
“Through this great new Town of Oyster Bay Parks & Rec app, our residents can easily register for their favorite sports and
recreation programs with just a few taps on their phones, simplifying the process for all who enjoy recreation in our Town,” said Supervisor Saladino. “This new app helps streamline the registration process and keeps all your favorite activities conveniently in one place. Registration is currently available for golf, marina memberships, night fishing, kayak and rowing rack rentals, and various adult and youth programs including ice hockey, tennis, toddler programs, basketball, and sports & fitness. Residents can also sign up for special events,

The National External Diploma Program offers adults 21 and over, the opportunity to receive credit for their life experiences, and earn a high school equivalency diploma without the challenge of taking lengthy timed examinations. NEDP, is a competency based program for students who are unable to attend classes or who prefer to work at home. Successful candidates
for NEDP include former ESL students, students who have been out of school for prolonged periods of time, or students who fare better without the structure of tests. This program is an alternative to other programs.

Healthier Salad Makes Barbecues Better
WGreek Yogurt Potato Salad
Serves 6
2 pounds potatoes (Yukon Gold or red potatoes)
1/2 onion
6 eggs
1 cup plain Greek yogurt
4 tablespoons sour cream
1 tablespoon vinegar
2 tablespoons yellow mustard
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery seed
1/2 teaspoon dried dill weed or 1 teaspoon fresh
1/2 cup dill pickles, chopped
Paprika, for garnish (optional)
Parsley, for garnish (optional)

Al fresco dining offers a chance to spend even more time outdoors, and many people will attest that no outdoor gathering is complete without the requisite grilled fare and complementary sides that are staples of spring and summer dining. Potato salad is one such food that turns up regularly this time of year in many shapes and forms. Traditional potato salad is delicious, but it may not be so great for health-conscious individuals, as it’s typically swimming in mayonnaise. A lighter version featuring Greek yogurt in the dressing is ideal for those who want to eat healthy. Greek yogurt also adds gut-healthy live active cultures to the recipe, which may provide gastrointestinal benefits. Directions:
1. Peel and dice potatoes and onions. Put them and a teaspoon of salt in a pressure cooker and cover with an inch of water. Close valve. Set pressure cooker to high pressure. Set timer for 5 minutes, cook and quick release when it’s done. Drain potatoes. Cool until just warm. (If you don’t have a pressure cooker, boil potatoes in a pot of water on the stove until tender.)
2. Set eggs on a rack in the pressure cooker. Add 1/2 inch of water. Close valve, set to high pressure for 5 minutes. Cook for 5 minutes, quick release, and leave lid closed for 5 minutes. After 5 minutes, take lid off. Drain eggs and cover with ice water to stop the cooking process. Let sit in ice water bath for about 5 minutes, then peel eggs. (If you don’t have a pressure cooker, hard-boil eggs according to your favorite recipe.)
3. Add Greek yogurt, sour cream, mustard, vinegar, salt, pepper, celery seed, and dill weed to a large mixing bowl. Stir until smooth. You can taste test to see if you need to add ingredients.
4. Add cooled, diced potatoes, pickles and hard-boiled eggs. Gently stir until potatoes are coated with dressing. Adjust seasonings to taste. Refrigerate for at least 1 hour.
Notes: Yukon Gold or red potatoes hold their shape best in potato salad. White distilled vinegar is classic in potato salad, but you also can use cider vinegar, white wine vinegar or even lemon juice.
