2. Using your hands, mix the beef, water, ketchup and pepper in a bowl until well blended; do not overmix. Using a light touch, form into 6 patties no more than 1 inch thick.

Juicy, mouthwatering hamburgers are a warm weather staple that taste perfect right off the grill.

Everyone can benefit from having a tried-and-true burger recipe in his or her repertoire when enjoying a cozy weeknight meal with the family.

Many things constitute a great burger, including flavorful meat, the right ratio of fat content, a crispy roll or bun and fresh, cold toppings and condiments. That’s all guaranteed and more in this recipe for “The Great American Hamburger and Cheeseburger” from “Mastering the Grill: The Owner’s Manual for Outdoor Cooking” (Chronicle Books), by Andrew Schloss & David Joachim.

Did you know?

According to the high-quality ground beef purveyor Schweid & Sons, the most common ground beef choice among burger chefs is 80 percent lean, 20 percent fat.

Law prohibits the sale of any ground beef with a fat content above 30 percent. While some consumers may scoff at the notion of

buying beef that’s 20 percent fat, Schweid & Sons notes that the fat that surrounds the meat gives it a rich, juicy flavor. In fact, Schweid & Sons says that beef with lowerfat compositions, such as 85 percent lean and 15 percent fat, tends to dry out fast, which can adversely affect the flavor of the burger.

3. Brush the grill grate and coat it with oil. Put the burgers on the grill, cover and cook for 7 minutes, flipping after about 4 minutes, for mediumdone (150 F, slightly pink).

Add a minute per side for well-done (160 F).

4. If you are making cheeseburgers, put 2 slices of cheese on each burger 1 minute before the burgers are going to be done.

5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking.

6. If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and the burgers separate until just before eating.

The best garnishes for burgers are the classics: a slice of ripe beefsteak tomato, a mound of sautéed onions, a leaf of romaine lettuce, a dollop of coleslaw or a few slices of dill pickles.

It's always the right time of year for fresh apple pie

C

ertain foods are synonymous with particular holidays or times of year. For example, few people can imagine celebrating Valentine’s Day without ample supplies of chocolate on hand. And what summer barbecue is complete without grilled hot dogs and hamburgers? While these foods and others are must-haves during certain times of the year, that doesn’t mean they cannot be enjoyed whenever a craving arises.

Apples, and particularly apple pie, are a staple of many holiday season celebrations. But apple pie is just as delicious in March, April, May, etc., as it is during the weeks between Thanksgiving and Christmas. That’s especially true when the apples are fresh. Whether yours is a seasonal or non-seasonal craving for apple pie, be sure to satisfy it with this recipe for “French Apple Pie” from Mollie Cox Bryan’s “Mrs. Rowe’s Little Book of Southern Pies” (Ten Speed Press).

FRENCH APPLE PIE

apples (preferably a tart variety)

1 recipe Plain Pie Pastry (see below)

Makes one 9-inch pie

RAISIN FILLING

cup raisins

teaspoon lemon juice

ICING

DIRECTIONS To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat. Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes.

Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust.

PLAIN PIE PASTRY Makes two 9-inch pie crusts cups all-purpose flour teaspoon salt cup vegetable shortening to 7 tablespoons cold milk

tablespoon butter, softened

tablespoons water

Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then add to the apples and gently stir until evenly mixed.

Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center.

Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.

To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving.

Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas. Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl. Repeat with the remaining milk until all of the flour mixture is moistened.

Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1⁄8 inch. Use a light touch and handle the dough as little as possible.

The Charity of The Month for May is: Guardians of Rescue will still go out and put themselves at risk to get food for their pets. However, Paws of War will at times arrive at their homes with no warning, knock on their door and tell them that they have some items to drop off for them. “You always see that tear in their eye” says Robert. “That someone actually cares enough to come to their home and bring them something is very special.”

A lot of these veterans suffered for many years, all of which now have lifelong disabilities due to their service to our country. Paws of War feels that at the very least they can bring them pet food to give them a helping hand during these tough times.

Additionally, Paws of War has partnered with Cambridge Catering, who is providing hot cooked meals free of charge to our veterans. Hank, a Smithtown resident and veteran, was someone that Paws of War helped. When they arrived at his home, they noticed a his two very proud flags were destroyed.

They handed off the pet food and trays of hot food that Cambridge Catering has provided, but they didn’t stop there.

They then went to the hardware store and purchased everything to fix and replace his flags.

Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals.

We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans.

Animals are also being impacted in numerous ways by this situation.

Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times.

They are overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the animals, building doghouses, taking in new rescues and trying to cover all their expenses.

“The pandemic has created a host of problem for the animals,” says Robert Misseri, President of this organization.

“I hope that we can make it through this difficult time, so that we can continue to help the animals in need.”

Robert is also the President of Paws of War, another non-profit right here on Long Island. This organization trains and places shelter dogs to serve and provide independence to our U.S. military veterans that suffer from the emotional effects of war. In turn, each veteran can experience the therapeutic and unconditional love only a companion animal can bring.

Throughout this pandemic, they have been tending to the most at risk veterans.

They find that their older senior veterans typically are very prideful and refuse to ask for any handouts. Many live alone and

The Village of Farmingdale acquired a limited number of masks for distribution to village residents and to seniors at the senior housing complexes.

Masks were delivered to the senior housing complexes in the Village, including Grand Haven, The Knolls, Hardscrabble and Woodbridge. The management companies at the senior housing facilities were glad and surprised that the Village was doing this for the seniors and gave many thanks.

The Village of Farmingdale also

distributed masks to Village residents, those who are 60 and over, as well as those who are immunodeficient.

Additionally, Ken Marcus from Allstate Insurance, worked with Mayor Ralph Ekstrand, and Eric Alexander of Vision Long Island donating 100 N95 masks to Daleview nursing home.

“On behalf of the Farmingdale Village Board of Trustees and myself, we are pleased to have provided masks to Village residents and seniors during this crisis. We thank all essential, health care and frontline workers for their heroic dedication,

as well as thank residents, community members, volunteers, organizations and merchants that continue to donate and help those in need during this pandemic. Please continue to support the local merchants and those in the community.

We hope everyone is well and staying safe. Governor Cuomo’s New York Pause is shifting into a phased opening by region in New York State, and Nassau County is close to meeting the criteria (5 of the 7 goals) to move into phase 1 for re-opening.

Some spring flowers are planted throughout the Village, and we are happy to announce that the Farmers Market run by Schneider’s Farm, will return to the Farmingdale Village Green on Sundays, starting June 7, from 10am-3pm, weather permitting with social distancing.

Re-construction work is progressing at Parking Lot 4, the last lot downtown to be revitalized as part of the parking lot upgrade project in the Village. This parking lot is located behind the Fire Department/317 Main Street/Dark Horse).

Lot 4 will get a top coat of paving on Friday then striping on Saturday or Monday, depending opon rainfall. However, due the coronavirius the manufacturing and thus the supply of many of the light poles will not be able to be installed until mid to late June. The resurfacing and upgrades will provide enhanced safety, walkability, new led lighting, self watering planters, and signage.

Farmingdale School District Hosts Marathon Daler Parade

FARMINGDALE SCHOOL DISTRICT HOSTS MARATHON DALER PARADE - FHS Principal Dr. Thompson and BOE Trustee Arlene Soete. Photo courtesy of Farmingdale UFSD On Wednesday, April 29, 2020, Farmingdale teachers and administrative staff gave the town of Farmingdale a parade to remember. Beginning at 9am and continuing for ten hours, they zigzagged their way through nearly every street in the district, waving and beeping their horns for all the students and families who came out of their homes to hold up signs and cheer them on. A total of six hundred staff members participated during the course of the day, decorating their vehicles in unique ways and writing notes of inspiration on their windows.

“This was a once in a lifetime opportunity to drive through our entire district and wave at our kids,” said Mr. Defendini.

“They’ve been through a tough couple of weeks, as have all of us, and this was a way to bring the community together.”

“We were in the queue for three and a half hours waiting to join, but it was so worth the wait!” said ENL high school teacher Michelle Angiulo. “I got a little choked up when I saw all the families waiting in the cold with signs thanking us.”

“The sense of family and community that we have here in Farmingdale is like

no other,” said Woodward Parkway Elementary School Principal Patrick Klocek. “We are so grateful to our faculty and staff for coming out in full force, as there were nearly 200 cars in the parade at different times of the day. To get such a warm and emotional response from our students and their families meant the world to us!”

“My participation in the parade is something I’ll never forget,” said Carey Persico, a Senior ClerkTypist at Saltzman East Memorial Elementary School. “The outpouring of love was overwhelming as we drove through the community and heard the cheers of the students and saw their beautiful signs.

I’m so proud to be a member of the Daler family.”

“As a lifelong Daler, I couldn’t have been more proud than I was during our parade!” said Board of Education Trustee Arlene Soete, who participated in the procession. “It was full of smiles, laughter, and true love for a great community.

It gave us all hope and inspiration for better days ahead.”

“Today I became a true Daler!” said Supervisor of Transportation Marc Medina as the parade came to a finish. He spent two weeks planning the

route, using software he traditionally uses to route buses. “This was a monumental task for Dispatcher Troy Hill, who led the parade in our school bus. He did an outstanding job of navigating through the entire district.”

Transportation staffer Mari Del Gais and Mr. Medina took turns monitoring the GPS and helping with directions. Text messages were sent throughout the day to update residents on where the parade was, and when it could be getting close to them.

The Nassau County Police Department and the local fire departments escorted it during the morning hours, and Farmingdale Village Code Enforcement accompanied the procession for all ten hours.

“With the exception of a few momentous days, this may very well have been the best day of my life.” said Superintendent Paul Defendini. “There are so many people to thank but most notably I would like to thank our amazing staff for stepping up. We took over the town and spread an infectious dose of goodwill.

This will live on for a long time as a day to remember in Farmingdale’s history.

Split The Bill NY Brings Business To Local Restaurants; by Paying For 50% Of Your Meal Split The Bill NY, a charitable initiative created by the Sidgmore Family Foundation, announced the May 15th launch of their campaign, which aims to drive business to local restaurants struggling due to the coronavirus pandemic!

Split The Bill NY encourages locals to order takeout, delivery or drivethrough from any of the Participating Restaurants listed on their website. After they have enjoyed their meal, customers can then submit a Reimbursement Form confirming purchase of their meal, and within 3-7 days they will receive a reimbursement for 50% of their restaurant receipt, up to $50. Many restaurants in the Village of Farmingdale have applied to become a Participating Restaurant in the initiative.

“Local restaurants are struggling,” explained Randi Sidgmore, Founder and

Director of Sidgmore Family Foundation, the private family foundation behind the creation of Split The Bill NY. “Split The Bill NY is a way for locals to support these restaurants and their community, in a mutually beneficial way.”

Split The Bill NY is keeping local officials optimistic about the future of our downtowns.

“Before Covid-19, we were experiencing a renaissance here in the Village of Farmingdale,” said Farmingdale Village Mayor Ralph Ekstrand. “While this revitalization seems to be on hold for the foreseeable future, there are still ways we can come together to support our local restaurants. These establishments and their hardworking employees are the heart and soul of our town. We need to do whatever we can to support them, and Split The Bill NY is helping to make that possible.”

currently in its pilot phase, taking place only in Farmingdale Village.

However, they hope to expand to more locations in the future, contingent on available funds.

And so far, reaction by the Farmingdale Village Restaurant owners is one of gratitude!

About Split The Bill NY: Split The Bill NY is an initiative created by the Sidgmore Family Foundation, that aims to support local restaurants, their hardworking employees and the community during this time of economic hardship caused by the coronavirus pandemic.

They will reimburse 50% of your restaurant receipt, up to $50 per order, when you order takeout, delivery, or drive-through at any of their partner restaurants in Village of Farmingdale.
