Improve Visibility while Trick-or-Treating

T

housands of costumeclad children will embark on treat-finding missions in neighborhoods all across the country this Halloween. Everyone wants their Halloween festivities to be fun, but it is important that trickor-treaters and their chaperones prioritize safety as well.

The child welfare organization Safe Kids says that twice as many child pedestrians are killed while walking on Halloween compared to other days of the year. In addition, the National Safety Council states that darting out or running into the road accounts for about 70 percent of pedestrian deaths or injuries among children between the ages of five

and nine and about 47 percent of incidents for kids between the ages of 10 and 14.

Ensuring trick-or-treating youngsters are visible to motorists can make Halloween safer for everyone involved. The American Academy of Pediatrics and other safety groups suggest the following strategies for safe trickor-treating:

Supervise the festivities. Adults should chaperone young trick-or-treaters who are unlikely to be focused on safety in the midst of Halloween excitement.

Use reflective tape or LED lights. Dark costumes coupled with twilight can make it difficult for motorists to see trick-or-treating youngsters. Parents can improve the chances of their kids being seen by motorists by adhering reflective tape onto kids’ costumes. Glow sticks and wearable LED lights

also can illuminate trick-or-treaters.

Carry lanterns or flashlights.

Children and/or chaperones who carry flashlights and lanterns can improve their own visibility while also making themselves more visible to motorists. Lanterns and flashlights help trick-or-treaters avoid holes, cracked pavement and other obstacles. For those children who want to free up their hands for better treat gathering, lights that strap to the head are an option.

Keep the lights on. Homeowners can do their part by keeping outdoor flood lights and accent lighting on to make paths safer for youngsters on the prowl for Halloween candy.

Choose face makeup over masks.

Children wearing masks may not spot oncoming cars or other hazards. Face makeup won’t affect kids’ visibility but will still help them look scary.

With the right combination of caution and fun, Halloween can be an enjoyable time for youngsters and adults.

'Tis September, that magical time between summer and autumn, where the last lingering golden rays of sunshine give way to a slight chill in the air, along with the promise of all that fall has to offer. Our latest issue of Seasons® brings with it the usual array of Autumn Activities and Seasonal Selections, along with many timely features designed to help you transition into the last leg of the year.

School is just beginning, and for many students {and parents}, these next few months will be a time of transition as schedules are adjusted to and routines are developed anew. Halloween and Thanksgiving will be upon us before we know it, and plans will be made to take advantage of all that fall on Long Island brings ~ from annual outdoor craft festivals to pumpkin and apple picking excursions, haunted house tours, corn mazes and more.

Home improvements tend to move to the top of the "To Do" list at this time as well, as all those renovations neglected during the summer months take top priority. Whether painting or refurbishing your living space or prepping your lawn and garden for the upcoming winter months, we think you will find plenty of helpful hints within these pages to take your home to the next level.

Home cooking, too, is a task we all seem to enjoy a bit more as the days grow shorter and the temperature drops lower. Celebrate Thanksgiving with Foods from the First Feast

T

hanksgiving is celebrated each November in the United States and each October in Canada. People traditionally gather around the dinner table flanked by friends and extended members of their families to give thanks for the blessings they enjoyed throughout the year as they dig into a delicious feast.

Turkey is typically the centerpiece of the Thanksgiving meal. Although turkey can be a delicious and nutritious addition to the table, individuals looking to expand their culinary horizons may want to borrow from the other foods believed to have been shared among the Plymouth Colony Pilgrims and Wampanoag natives during the 1621 feast that inspired Thanksgiving.

Waterfowl

Wild turkey were available in abundance in the New World, but historians believe that, during the first Thanksgiving meal, participants likely feasted on waterfowl instead

of turkey. In fact, turkey wasn’t common Thanksgiving fare until after 1800. Waterfowl, according to National Geographic, includes ducks, mallards, swans and geese.

Those looking to experiment can take a break from turkey and make duck the centerpiece of their meals this Thanksgiving.

Seafood

Plymouth, Massachusetts, is located where Cape Cod Bay and the Atlantic Ocean meet. As a result, indigenous people and the pilgrims likely relied on the bounties afforded by the ocean for their sustenance.

fish and clams were likely served.

People who enjoy seafood or those who prefer to abstain from meat or poultry can embrace seafood at their Thanksgiving gathering.

Fruits and Vegetables

Fruits native to the region where the first Thanksgiving took place included blueberries, plums, grapes, gooseberries, raspberries and cranberries. Cranberry sauce was an unlikely menu option because sugar that traveled over on the Mayflower was probably depleted

by November 1621, according to History.com. Also, cooks didn’t begin boiling cranberries with sugar until about 50 years later. To recreate the first Thanksgiving, enjoy raw fruit as a tasty dessert, which can be healthier than sugar-laden sauces.

Vegetables to enjoy include onions, beans, spinach, cabbage, carrots and corn. Corn was likely turned into cornmeal and pounded into a thick corn porridge. Experimenting with a cornmeal recipe can liven up this year’s festivities.

Plant roots found in 1621 included parsnips and turnips, and not the popular potatoes that often accompany turkey at modern Thanksgiving gatherings. The potato was not yet popular enough among the English to warrant space on the Mayflower as it made its way to present-day North America. Purées of parsnips and turnips can be delectable on their own or used as a basis for a Thanksgiving soup.

Pumpkin Custard

Although pumpkins and other gourds were available in the New World, baking was not yet popularized because of the lack of wheat flour.

Instead, it is possible pilgrims would hollow out gourds, add spices with milk and honey, and then roll the gourds in hot flames to form a sort of custard. Home cooks can replicate a pumpkin custard in their kitchens and serve it in lieu of pumpkin pie.

Borrowing foods from the first Thanksgiving can expand menu possibilities this November.

Use the proper gear. A leaf rake fans out like a triangle and comes in various widths. Choose a lightweight material that can be easily maneuvered. A metal rake is for stones and dirt and shouldn’t be used for leaves. To get between bushes, a smaller version of a leaf rake, called a shrub rake, should be used.

Make the Most of Oktoberfest

O

ktoberfest dates back to 1810, when festivities commenced on October 12th to celebrate the marriage of Bavarian Crown Prince Ludwig to Princess Therese von SachsenHildburghausen. While the Crown Prince and his bride have long since passed away, Oktoberfest celebrations continue, and the standard-bearing party in Munich is annually among the world’s most anticipated events.

Those who can’t make it to Germany

this October can rest assured that there is likely an Oktoberfest celebration in close proximity to their homes. Making the most of these celebrations can help revelers feel as if they’re in Munich after all.

Celebrate with a group.

Oktoberfest celebrations are social gatherings where the notion of “the more, the merrier” certainly applies.

Many Oktoberfest celebrations are held outdoors, where celebrants sit at communal picnic tables when they aren’t hoisting steins filled with

German beer or dancing up a storm as live music plays. Celebrating with a group is not just fun, but also a lot safer than partying alone. Some traditional German beers generally contain more alcohol than other beers - making intoxication occur more quickly. Groups can resolve to look out for one another to ensure no one overdoes it with regard to alcohol.

Resolve to try new cuisine.

While beer might garner the bulk of the attention at Oktoberfest celebrations, food is just as big a part of the festivities. Celebrants who want to get a true Oktoberfest experience outside of Munich can try dishes such as Weisswurst, a type of sausage that is typically made from minced veal and pork back bacon. Schweinshaxe, a roasted ham hock sometimes referred to as “pork knuckle,” is a popular Bavarian dish that can make any Oktoberfest celebration more authentic.

Get home safe. Arrange transportation home before attending an Oktoberfest celebration. Such celebrations tend to be rowdy, and the lively spirit of the festival can make it easy for revelers to lose track of how many steins they have hoisted throughout the day. To ensure everyone arrives home safely, revelers can assign a designated driver from their group or arrange for a taxi or ridesharing service to take them to and from the festival so no one feels the need to get behind the wheel.

How to Help Veterans in Need

M

illions of men and women serve in the military and make the sacrifices that such service requires. Risking their lives to serve their countries, veterans sometimes endure mental and physical trauma, returning home to face uphill battles as they deal with their injuries.

Many veterans in need are not just in need of medical attention. Learning that their efforts and sacrifices are recognized and appreciated by the ordinary citizens they protect can make a world of difference to veterans as they recover from their injuries. Men, women and children who want to help veterans in need can do so in various ways.

Visit a veterans hospital. Contact a local veterans’ hospital to inquire about their volunteer programs.

The U.S. Department of Veterans Affairs notes that each year more than 75,000 volunteers spend more than 11 million hours in service to America’s veterans. Visiting veterans at the hospital to hear their stories can lift their spirits and aid in their recoveries. In addition, veterans’ hospitals may have

volunteer opportunities that make it easier for hospitals to operate at optimal capacity.

Help a neighbor. Unfortunately, many veterans return home with injuries that affect their ability to make it through a typical day without assistance. Disabled veterans may be unable to do their own grocery shopping or maintain their homes.

If a neighbor or nearby veteran is facing such hurdles, offer to do his or her shopping or mow his or her lawn. Such tasks won’t take much time but can make a world of difference to veterans.

B

obbing for apples is a game that has been around for centuries. An autumn tradition often associated with Halloween and other fall festivals, the concept of bobbing for apples is, according to History.com, rooted more in romance than Halloween trickery.

As a British courting ritual, young ladies and their potential suitors would vie for certain apples to land a potential mate. Eventually, the tradition faded into obscurity. But apple bobbing was reinvented in the Americas when immigrants introduced the game to children and adults during Halloween parties.

Recently, apple bobbing has fallen out of favor again, with parents lamenting the unsanitary conditions and potential spread of germs, not to mention the hazard of drowning.

Thankfully, there are various alternatives to apple bobbing that can still make for an exciting Halloween game.

Hanging Apples

Rather than putting apples in a barrel full of water to float, tie strings to the stems.

Then hang each individual apple to a clothesline. Without using their hands, participants must eat the majority of the apple of their choosing. Apples can be replaced with other treats, such as doughnuts.

Fishing for Apples

Attach a magnet to an end of string tied to a stick to make a fishing rod of sorts. Cut out

paper apples and adhere something metallic to the cut-outs, such as paper clips. Kids take chances fishing out their selections. Each cut-out earns players a prize.

Candy Catch

Participants line up holding a small receptacle, such as a cone-shaped party hat turned upside down or a small plastic pumpkin. While an adult tosses candy into the air, the children try to catch it in their containers.

Apple Toss

As a variation on a beanbag game or ring toss activity, players can aim a plastic apple or pumpkin into a hole or barrel. Red ping pong balls tossed into canning jars or plastic cups can work as well.

Bobbing Twist

Party hosts can still float apples in a bucket of water, having participants bob in a different way. They can try to scoop apples out with a small spoon or two chopsticks. Let imaginations reign supreme while keeping germs out of the apples.

How to Prep Your Lawn & Garden for Winter

W

inter weather can be harsh.

Homeowners who spend much of the year tending to their lawns and gardens may worry that winter will undo all of their hard work. Though homeowners cannot do anything to prevent snow, wind and ice from affecting their properties, they can take various steps to prepare their lawns and gardens for whatever winter has in

store.

Mulch leaves. Falling leaves are a telltale sign that winter is coming. In lieu of raking leaves as they begin to fall, homeowners can mulch them into their lawns. Mulching leaves is a great way for homeowners to recycle a natural resource and enrich the soil of their lawns.

While it might not be possible to mulch fallen leaves in late autumn

when they begin to fall en masse, doing so in the early stages of fall should be possible so long as the lawn is not being suffocated. It is recommended to mulch the leaves to dime-size pieces to a point where half an inch of grass can be seen through the mulched leaf layer.

Rake leaves as they start to fall more heavily. Once leaves begin to fall more heavily, rake them up and add them to compost piles.

Composting leaves creates a dark, rich and organic matter that can add nutrients to garden soil and loosen compacted earth. Leaving leaves on the lawn once they start to fall in great numbers makes it hard for grass blades to breathe, and the leaves can block moisture from reaching the soil, which needs water to maintain strong roots. In addition, potentially harmful pathogens can breed on damp leaves left on a lawn, and such bacteria can cause significant damage to the turf over time.

Apply a winterizing fertilizer.

Winterizing fertilizers can help lawns store food they need to survive through winter and also can

help them bounce back strong in spring. Such fertilizers are typically formulated for cool-season grasses such as fescue and bluegrass and are often best applied after the final cut of fall. Warm-season grasses go dormant in winter, so homeowners whose lawns contain these types of grasses won’t want to apply a winterizing fertilizer. Homeowners who don’t know which type of grass they have or are concerned about when to apply a winterizing fertilizer should consult with a lawncare professional before fertilizing.

Remove annuals from the garden.

Annuals won’t be coming back in spring, so it’s best to remove ones that are no longer producing from the garden before the arrival of winter. Doing so can prevent the onset of fungal diseases that may adversely affect the garden in spring.

Fall is the perfect time for homeowners who spend months making their lawns and gardens as lush as possible to take steps to prepare such areas for potentially harsh winter weather.

Autumn is a Prime Time to Tend Gardens

utumn is gardening season.

That statement may not seem right to those who think of the spring as the peak time to care for lawns and gardens. However, autumn is an ideal time to get into the garden and ensure that flowers, trees and garden beds will overwinter successfully.

A number of things make autumn a prime gardening season. The cooler days of fall enable gardeners to spend ample time outdoors without the threat of blazing heat. In addition, soil harbors a lot of residual warmth in autumn. Also, the colder temperatures haven’t yet arrived in autumn, nor have the leaves completely fallen, making fall a prime time to assess what’s already in the landscape, what needs pruning back and where to address planting for next year.

Gardening enthusiasts can focus their attention on these areas this fall:

Pamper perennials. As annuals and perennials start to fall back, mark the spots where perennials www.seasonsmagazineonline.com

are located so they can be easily identified later on. This way, when planning spots for spring bulbs or other spring layouts for next year, perennials won’t be overlooked or covered over.

Dig up herbs. Relocate herbs like parsley or basil to indoor gardens.

Otherwise, strip all leaves and freeze for storage during winter.

Clean up borders. Weed and tidy up borders and lawn edging.

Fertilize the lawn. Fertilizing in autumn helps ensure grass will stay healthy throughout the winter.

Prune shrubs. Look at shrubs and trees and cut out dead or diseased wood.

Consider mums. Chrysanthemum plants are perennials. While they look beautiful in pots, if planted, maintained and winterized, they can bloom every fall.

Install pavers or rock wall.

Embrace the cooler temperatures to work on labor-intensive projects, such as putting in a garden bed, retaining wall or walkway.

Add mulch and compost to the garden. Replenish spent soil with mulch and compost so garden beds will be revitalized for spring planting.

Prune hedges. Tidy up hedges, as they won’t be growing much more this year.

Remove spent summer veggies.

Take out vegetable garden plants that have already bloomed and borne fruit. Tidy up vegetable gardens and start to sow cooler weather plants, such as onions, garlic, beans and sweet peas.

Rake and compost. Rake the leaves and gather grass clippings to add to the compost pile.

Plant spring bulbs. Get tulips and other spring bulbs ready for planting so they’ll burst with color next year.

Clean and store equipment. Clean, sharpen and oil all equipment, storing lawn and garden tools properly so they are ready for spring and not lying out all winter.

Give Campus Life a “Green” Makeover

C

ollege is full of challenges.

While studying, socializing, joining clubs and getting good grades are probably on college students’ priority lists, young people also can think about living green on campus.

Data from Nielsen points to millennials as being an ecoconscious generation. Millennials are willing to pay extra for sustainable offerings, and they tend to stick to brands that have established a reputation for environmental stewardship.

Even though college students may have packed schedules, they can still manage to keep the planet in mind as they live and educate themselves. Here are just a few ways college students can live green in dorms and incorporate eco-friendly practices into their studies as well: Live on campus. One green idea is to skip the commute to and from classes and reside right on campus in dormitories or nearby student housing. According to the United States Environmental Protection Agency, transportation is responsible for 13 percent of the

world’s greenhouse gas emissions.

Living close to the classroom can help reduce emissions.

Recycle as much as you can.

Whether it’s plastic, paper, aluminum or books, put recyclable items in the proper receptacles. Find ways to lend or give away items that you may no longer need, such as last semester’s textbooks. Recycling cuts back on the size of landfills and lowers the demand for the production of new materials.

Take e-notes. Bring a tablet or laptop to class and take electronic notes. This cuts back on paper usage and will enable you to have all notes in a compact file.

Buy and dine locally. Choose sustainable, organic and locally produced items when shopping or dining out. This can include locally made furnishings and supplies, as well as farm-to-table restaurants.

Walk or bike. Leave the car in its parking spot and walk or bike to nearby events. It’s good exercise and good for the planet as well.

Borrow dorm room items. Scout out items from family members or friends that can be used to equip a dorm room. Chances are you can find people willing to give you or loan out chairs, a small table, desk, electronics and more. Borrowing

Coping with Fewer Hours of Daylight

aylight saving time comes to an end each fall, at a time when the hours of available sunlight already are beginning to decline.

Some people are more accustomed to darkness than others. Norwegians, Swedes and people living in Alaska and the upper reaches of Canada near or above the Arctic Circle may go through a period when winters can be especially dark. Fairbanks, Alaska, gets just three hours and

42 minutes of sunlight on the winter solstice. Those in Barrow, Alaska, will endure a period of 67 days of darkness, according to Alaska.org.

Residents of Seattle, which is even further north than cities such as Fargo, North Dakota or Portland, Maine, deal with more darkness than those living outside the city may know.

Although much of the rest of North America doesn’t experience such profound periods of darkness, when the darkness of fall and winter arrives, it can be difficult to

Make daylight hours count. Spend time outdoors while the sun is bright in the sky. Make an effort to switch your schedule if work interferes with getting outdoors, even if all that can be managed is an outdoor walk at lunch. Sit by a bright window and soak up rays whenever possible.

Socialize more often. Instead of holing up indoors alone, frequent the places that become indoor gathering spots for locals. These can include coffee houses, breweries, restaurants or even the local church. Plan more social occasions with friends and families so everyone can collectively shoo away the winter blues.

Exercise more. Use the darker hours as an excuse to exercise more, be it at the gym or outside.

The Mayo Clinic says that exercise and other types of physical activity can relieve anxiety and depression, lifting an individual’s mood as a result.

Light a fire. Set the kindling ablaze in a fire pit, fireplace or woodburning stove, or just light a handful of candles. Flames can be soothing and less harsh on the eyes than artificial light.

Fall and winter darkness does not have to send a person into the doldrums if he or she embraces the right attitude.

Breast Cancer Survival Rates Soar

A

breast cancer diagnosis can be a devastating blow.

Upon receiving such a diagnosis, people may begin to ask questions about treatment and the impact cancer may have on their personal lives. Many people who are diagnosed with cancer also begin to wonder about their mortality.

An estimated 266,120 new cases of invasive breast cancer and 63,960 new cases of non-invasive, or in situ, breast cancer are expected to be diagnosed among women in the United States this year, according to Breastcancer.org. According to the latest statistics presented by the Canadian Breast Cancer foundation, 26,300 women and 230 men had been diagnosed with breast cancer in Canada in 2017.

The good news is that breast cancer incidence rates began decreasing in 2000 after increasing for the previous two decades. In addition, death rates from breast cancer have been decreasingly steadily since 1989.

The National Cancer Institute says that the change in age-adjusted mortality rates are an indicator of

the progress being made in the fight against breast cancer. The most recent SEER Cancer Statistics Review released in April 2018 indicates cancer death rates among women decreased by 1.4 percent per year between the years of 2006 and 2015. The American Cancer Society says that decreasing death rates among major cancer types, including prostate, colorectal, lung and breast cancers, are driving the overall shift in survival. The ACS says breast cancer death rates among women declined by 39 percent from 1989 to 2015. That progress is attributed to improvements in early detection and treatment protocols.

For anyone doing the math, over the last 25 years or so, 322,000 lives have been saved from breast cancer.

Breast cancer mortality rates in Canada recently decreased to 21.4 percent, down from 21.8 percent in 2011, states data from the Canadian Cancer Society. Currently, the fiveyear survival rate for breast cancer among Canadians is 87 percent, and the five-year net survival in the United States is 85 percent.

Increased knowledge about breast cancer, early detection through examinations and mammography and improved treatments are helping to drive up the survival rates of breast cancer. Although this does not make diagnosis any less scary, it does offer hope to those recently diagnosed.

A similar scenario has unfolded in Canada.

Natural Ways to Fight Fall Allergies

A

s the days become shorter and the weather cools down, a new crop of allergy symptoms can arise, turning the autumn season into one marked by sneezing, scratchy throats and itchy eyes. Medications can alleviate such symptoms, but allergy sufferers may want to investigate some natural ways to beat allergies.

According to the American College of Allergy, Asthma & Immunology, ragweed is one of the more common triggers of autumnal allergies. Ragweed contributes

to “hay fever,” which is a term to describe allergic rhinitis that occurs as a symptom of ragweed pollen in the air. Ragweed releases pollen in mid-August, and it can continue to be problematic until a deep freeze arrives.

Other sources of fall allergies include leaf mold and pollen that is present on fallen leaves. This gets circulated when people begin to rake or blow fallen leaves.

Classroom pets and chalk dust in schools (although chalkboards are largely a thing of the past) are other autumn allergens.

The good news is that many natural remedies work just as effectively as over-thecounter

medications in regard to combatting ragweed and pollen problems.

Here’s how to beat the fall allergy blues: Stay away from pollen. Stay away from pollen and prevent it from being tracked indoors. Remove shoes when walking through the door. Take off clothes worn outside and launder them promptly, showering to wash pollen off of the body. Use an air conditioner or keep windows closed when the pollen count is high.

Increase omega-3 fatty acids.

It is well documented that fatty acids are good for brain health and cardiovascular well-being. But these acids also may help with allergies. A German study linked foods high in omega-3 fatty acids with the ability to fight inflammation, which is a hallmark of allergy suffering. Foods that are high in fatty acids include walnuts, flax, eggs, and cold-water fatty fish.

Rinse off pollen. Use a mild cleanser to rinse the eyelids and eyelashes of pollen, as this is where it tends to congregate after being outdoors. Use saline spray to clear

nasal passages of excess pollen as well.

Take natural supplements. A study published in the journal Clinical and Experimental Allergy found participants who used tablets of the herb butterbar showed significant allergy relief after only one week.

Select herbs from reputable manufacturers who certify them.

Use eucalyptus oil. This oil is great to have in the house to help clear up sinuses and provide nasal congestion relief. Mix a small amount with coconut oil and rub onto the chest. There also is some evidence that adding a few drops of eucalyptus oil to cleansing products can help kill dust mites around the house.

Wear a mask. When doing housework or yard work, wear a mask to reduce the inhalation of specific allergens.

Avoid seasonal allergies by exploring natural ways to find prevention or relief of symptoms.

Ways to Preserve Carved Pumpkins

Halloween Pumpkin Carving Pointers

T

ransforming pumpkins into cleverly carved creations is a Halloween tradition. Each October, glowing pumpkins take up residence near doorsteps and porches, adding to the magical ambiance of the season. Young and old spend time designing their themes and then taking knife to pumpkin to achieve the desired effects.

Carving pumpkins into jack-o’lanterns can be traced back centuries to Ireland and a story about “Stingy Jack.” The tale involves Jack outwitting the Devil twice, the second time freeing the Devil from a prank in exchange for the promise that he would not claim Jack’s soul should Jack die. When Jack did die, God did not want the unsavory character in heaven, but the Devil could not claim Jack for hell. Therefore, Jack was relegated to roam the planet indefinitely with only a burning coal to light his way.

Jack put that coal into a carvedout turnip. His ghostly figure was referred to as “Jack of the Lantern.”

Later on it was shortened to “Jack O’Lantern.” When Irish immigrants arrived in North America, turnips weren’t plentiful, so jack-o’-lanterns were instead carved into pumpkins.

Today, many people carve jacko’-lanterns, with some featuring

just smiling or grimacing faces while others are far more artistic creations. These tips can help anyone carve a pumpkin.

Begin with a fresh pumpkin. Look for a pumpkin with a green stem. If the pumpkin has been sitting around for too long or has been handled too much, the stem can get brittle and/ or fall off. A thick, fresh pumpkin is best for carving.

Plan your ideas. Draw a plan for your pumpkin before you make your first cut. Then transfer that design to the pumpkin with pen or a thin marker. Pumpkin-carving kits come with designs that can be “traced” by poking small holes to create the outline of the design.

Don’t cut all the way through.

Many professional pumpkin artists do not actually cut clear through the flesh of the pumpkin. They carve and shave off layers of the outer rind until it becomes more translucent.

The level of transparency can be adjusted based on how much skin is removed and as a way to add texture and shadowing. The more air that is allowed to penetrate the pumpkin, the faster it will start to degrade.

Delay carving until the last minute. Wait until the day before Halloween to begin carving.

Pumpkins are a perishable item, and they’ll begin to rot as soon as you begin carving. Spritzing them with water can help them stay fresh, but there’s no turning back the clock once the first cut is made.

Cut a hole in the back.

According to Brooklynbased Maniac Pumpkin Carvers, cutting off the top of the pumpkin can affect its structural integrity and cause it to rot faster. Instead, cut a hole in the back of the pumpkin and use an electric light to illuminate it. LEDs are adviseable because they don’t generate much heat, which can cook and rot the pumpkin from the inside out.

ack-o’-lanterns and other carved pumpkin designs are frequently the centerpieces of Halloween festivities. The twinkling lights and orange glow of jack-o’lanterns can add ambiance to any autumn event. The trouble with carving pumpkins is that most people want to do it right away, only to discover their pumpkins wilt and decay long before Halloween.

Nothing ruins Halloween more than visiting a home to trick-or-treat and not getting candy. Equally disappointing is a sad pumpkin display withering away on a front porch. Even though all pumpkins will eventually rot, certain tips can keep carvings from collapsing too soon.

Choose a sturdy pumpkin. Inspect the pumpkin of your choosing carefully, looking for gouges, spots and holes. Even a small blemish can quickly expand into a mushy mess.

Select pumpkins with even color and firm flesh, and make sure that the pumpkin doesn’t feel tender when you push on the skin.

Visit local pumpkin stands.

Pumpkins that have been shipped miles and miles in hot cargo trucks may be overly ripened or battered.

Pumpkins that were grown nearby may be fresher. Plus, buying pumpkins locally supports local farmers.

Use an artificial light source.

Reduce the heat inside of the pumpkin and encourage hydration by selecting a battery-powered light instead of a lit candle to illuminate the carving.

Skip the carving. Once pumpkin skin is compromised, microbes can enter. In lieu of carving, paint or decorate pumpkins in other ways if you want them to stay fresh for a long time. Glow in the dark paint can help pumpkins stand out at night.

Carved pumpkins may last a week or two, while uncut pumpkins can last for a month or more. Keeping pumpkins hydrated and mold-free will prolong your designs.

Scrape the insides of the pumpkin thoroughly. Any moist bits inside the pumpkin will mold quickly.

The pumpkin carving experts at Pumpkin Masters recommend scraping as much of the “guts” out as possible, leaving about a one-inch thickness of the wall of the pumpkin.

2. Preheat broiler. Sprinkle meat with basil; season with salt and black pepper, if desired.

Place meat on broiler pan. Broil 4 inches from heat, about 6 minutes on each side, or until no longer pink in center.

3. Combine sauce and green pepper in microwavable dish.

Cover with plastic wrap; slit to vent. Microwave on high for 5 to 6 minutes, or until green pepper is tender-crisp and sauce is heated through. Add meat; cover with sauce. Microwave for 1 minute. Serve over hot rice.

Elsie’s Stewed Apples

Serves 6 to 8

Get creative with apples this fall

Autumn is apple-picking season, and many farmers markers, grocery stores and even roadside apple stands are chock-full of delicious apples this time of year. That makes fall the perfect time to whip up some apple-inspired foods. This recipe for “Elsie’s Stewed Apples” from Laurey Masterton’s “The Fresh Honey Cookbook” (Storey) requires a tad more effort than traditional applesauce recipes, but the extra work is well worth it in the end. When shopping for apples in advance of preparing this recipe, avoid apples that have a mealy texture as well as those that are overly sweet.

INGREDIENTS

2 to 3 tablespoons unsalted butter 2 pounds apples, peeled, cored

and cut into thick slices 1⁄2 cup honey, preferably sage honey 1⁄2 cup white wine

Zest of 1 lemon

Juice of 1 lemon

Fresh sage sprigs for garnish

DIRECTIONS

1. Melt the butter in a large skillet over medium heat. Add the apples, turn the heat to high and sauté until they begin to brown on the edges, about 5 minutes. If some are getting too well done, remove them and place on a plate while the rest continue to cook, then return them to the skillet when all are done.

2. Reduce the heat to low and add the honey, wine, lemon zest, lemon juice and 1⁄2 cup water. Cover and allow to cook until the apples are tender but still firm; you don’t want them to turn into applesauce.

3. Serve this in a bowl, tuck in a couple sprigs of fresh sage from your garden, and tell your guests all about sage honey.
